What I Spent

I successfully avoided going grocery shopping for a two-week period. Yay me!

This every-two-week shopping thing is working out better than I expected, especially now that I am getting used to it.

It's a little bit annoying to not be able to get fresh produce more often, but we just have to be flexible and eat hardy things like oranges, carrots, and kale at the end of the two weeks.

(Note: I did leave my house on Saturday and Sunday, as you'll see below. But both of those times involved curbside pickup, which is definitely less full of contact than grocery shopping is!)

What We Ate

Saturday

Mr. FG and I did a takeout date night from a local seafood sandwich shop.

Sunday

I got an email from Potbelly telling me that you can order sandwich makings for curbside pickup.

So, I gave that a try and placed an order for six sub rolls and six servings of meat to make a Potbelly Wreck sandwich.

I just had to use lettuce, tomatoes, mayo, and cheese from my own fridge.

This is definitely way cheaper than ordering assembled sandwiches from Potbelly, and I think it's a pretty creative way for Potbelly to pivot and work under the current restrictions.

Monday

I made orange glazed chicken from the ATK quick family cookbook.

(Click the above link and look for the used copies, which start at just a few dollars. It's out of print, and the price for new copies is stupid high.)

And I halved and roasted some baby potatoes.

On the side, we had some raw veggies.

Tuesday

We had shrimp orecchiette with parmesan and pepperoncinis.

Usually we have fresh basil with this, but alas, my baby basil plants are too small, and I didn't want to go to the store to buy a basil plant.

I also roasted some carrots and cut up some oranges.

Wednesday

I made ham and Swiss roll-ups, except I used a mixture of provolone and smoked gouda because that is what was in my drawer.

Thursday

I made Aussie chicken:

I really would like to make pizza. But I still have no mozzarella.

(I am definitely going to remember to buy this next time!)

So, I think I'm going to make pulled chicken sandwiches instead.

    Saturday: Chicken drumsticks, garlic bread, coleslaw (that was the absolute last of our fresh produce, except the lettuce in the garden)

    Sunday: Leftover, fried potatoes, eggs, oatmeal-raisin cookies

    Monday: A skillet of potatoes, bacon, cheese, and peas

    Tuesday: Roasted Italian sausage, roasted potatoes, frozen green beans

    Wednesday: Mutton backstrap--just sliced and fried and SO good--personalized garlic breads--I let my kids choose spices to put in their own pieces of dough--and frozen green beans

    Thursday: Bunless cheeseburgers, oven fries, fried onions, frozen peas, frozen squash from last year's garden

    Friday: I have more of the mutton backstrap. And maybe I'll indulge my kids with pasta.

  2. All these days are just rolling together.... feeling a bit crazy!

    Saturday- ordered in from a small shop owner, Portuguese take out. We all had something different. I had BBQ chicken, dh/dd had fried shrimp, Ds-chicken fingers that they make and are great! all included rice, Portuguese chips.

    Sunday- I hit up the grocery store early. Chicken alfrado (pintrest) side salad.

    Monday- Dh was out, work- Kids and I had homemade Belgium waffles, pork roll.

    Tuesday-sausage peppers onions, potatoes. DS had pizza bagels. (yes he is a pain)

    Wednesday- Hot dogs on the grill, tarter tots, and a pasta salad.

    Thursday- Made chicken Françoise from scratch, )pinterest) butter noodles, corn.

    Friday- dh will be out. so I think the kids and I are going to finish up the fish stick in the freezer, mac cheese, pasta salad.

    Tuesday - Gnocci with link sausage and marinara (didn't make this last week), salad
    Wednesday - Pot of Pinto Beans with ground turkey, corn muffins with honey butter
    Thursday - Meatloaf, twice baked potatoes, salad
    Friday - Ranch Bacon Chicken Salad in pita pockets, low salt potato chips
    Saturday - Take-out
    Sunday - Pesto Tilapia, seasoned rice, peas and carrots
    Dessert this week was Apple Pie with some ice cream I found in the freezer!
    ***I plan on going two weeks without shopping, too. I will be relying on what we already have, plus my produce boxes. We have more than enough for two people!***

  4. Monday: My wife made a peanut chicken recipe along with some rice and some carrots and broccoli.

    Tuesday: Cleaning up some leftovers. We've been pretty good about having minimal food waste at least.

    Wednesday: Breakfast for dinner with homemade biscuits, eggs, bacon, fruit etc.

    Thursday: We had BLTs, hash browns and some fruit.

    Friday: I have no idea. I suggested to my wife that for her sake we get something out. I don't know what I need to do but I do need to do something.

  5. Sunday we packed snacky picnic lunch and took a hike through a local park trail.. I had decided we were going to order out for supper..1st time! I needed a break.. Our local chinese places are closed due to not being able to order from their NYC supplier... Went with a local place- pizza, chicken and broasted potatos... IT WAS AMAZING! lol Husband asked if it was just that good b/c I did not make it! I was ready for it to be blah cause they are so busy.. but it truly was one of the best orders I have had from them in a really long time! Worth the cost! 1 leftover portion of pizza for lunch and a few portions of chicken left!

    Monday- made 2 meatloaves... baked potatoes and fruit.
    Tuesday- more meatloaf, diced the leftover potatoes and fried them up.. ate the last of the salad...
    Weds- cooked a pork shoulder in the crock pot.. made a batch of alfredo mac n cheese to use up the open heavy cream... frozen peas
    Thursday- Cooked a bag of Tyson Chicken tenders.. and a box of spaghetti noodles... Opened a can of Skyline chili for the husband and defrosted a container of homemade chili for the others... Fresh berries... Everyone ate, everyone happy.. odd food pairings...
    Friday- Weather looking good so planning to grill burgers... Need to plan sides.. need to get some groceries...

  6. Try Conshohocken pizza when you don't have mozzarella cheese. It is basically tomato pie. You cook one 28 oz can of crushed tomatoes with olive oil, a clove of minced garlic and a chopped onion for 45 minutes. You can add spices too like oregano or basil and red pepper flakes. Let the sauce cool. Stretch your pizza dough into a rectangular jelly roll pan greased with olive oil. Top with the sauce and cook for 20 minutes in a 450 degree oven. Serve at room temperature and you can top with Romano cheese. But my kids like it without the cheese.

    1. That's a little like what I do to make a dairy-free pizza for Sonia; just a simple sauce, plus a bit of Parmesan.

      As long as you have delicious pizza dough with good flavor, it does pretty well without cheese!

  7. Things seem to have settled down at the grocery store. There still wasn't any yeast or flour but there was lots of milk and bread and toilet paper.

    Monday we had shepherd's pie with spinach.

    Tuesday I made fishcakes which we had with roast carrots and cauliflower puree.

    Wednesday we finished the fishcakes this time with roast potatoes and apple carrot salad.

    Thursday was our usual pizza night with asparagus on the side

    Tonight we're having chicken with onions and peppers, asparagus and probably mashed potatoes.

      1. I actually put Colby Jack on pizza all the time, but not the whole pizza, just a generous sprinkle on top of mozz. Next time you make pizza, try it with one - it's really good! It gives it a little extra dimension.

      2. I sprinkle our pizzas last time with parmesan when we were out of mozz and it was surprisingly tasty!

      3. Maybe reimagine your pizza flavors. Instead of Italian, do Mexican. Or leave off red sauce and try something else. If you have ricotta, it’s great on pizza. If you think of the pizza crust as more of a flatbread, you could go any direction—Indian, Greek (so you have any feta?). Then the crust just becomes the delivery system for getting toppings to your mouth!

      4. Hey girl one of my proudest 'WTH/Chopped' lunches was a $3 frozen 5 cheese pizza from ?? With a can of chicken- also??, Some grilled onions & BBQ sauce. Delish lunch for two.Plus a pre-dinner snack go me!!!

  8. 19 SUN - Insta-pot beef stew with crusty bread. Used trimmings from the chain of a whole beef tenderloin purchased on sale ($9.99/lb) and split a few months ago. I know this is still expensive, but I like to have the filets and roasts on hand in the freezer for special occasion splurge meals.

    20 MON - Mexican lasagna made with extra veggies and a salad. Sadly out of sour cream, but it was still good and provided lunches for 2 days.

    21 TUE - leftovers

    22 WED - Kielbasa and potato soup with a salad. Able to use up leftover chicken broth, onion and carrots. Tasty and looks like 3-4 servings leftover.

    23 THU - Insta-pot Sesame chicken (Taste of Home's recipe) with mixed veg over rice. Surprisingly easy and good! Family ate every last bite. Wish I had leftovers.

    24 FRI - usually our pizza night, so we will probably do that

    We are definitely eating more carbs and especially refined carbs than I would like during this shut in. It's just so easy to fall into this trap of comfort foods that are heavy on the starches. I am going to try to move these meals in a healthier direction.

  9. Of course it is super easy to make mozzarella. I personally think it is fantastic, but it is nowhere near as easy as remembering to buy it, and you do have to own rennet tabs to make it happen. 😉

    The first day the kids were out of school, I made a list of possible meal ideas. To my surprise, I've only repeated a few things — pizza, big salads, sandwiches, hot dogs over a fire — and have several ideas remaining.

    I could go a really long time without going to the store, but we still drink a ton of milk so I still go to town more frequently than otherwise would be warranted. On one trip to the store, I impulse bought potatoes because they were so beautiful — the best potatoes I've seen in a grocery store in ages — clearly restaurant redirects. Those have been awesome to have in our options.

    This week we've had smoked brisket, crack chip dip, potato soup, steak and baked potatoes, hot dogs on a fire, sandwiches, tacos, and leftovers. One night I did buy takeout pizza in town. They've got a deal at the moment — three pizzas for $20 — which is hard to say no to when I'm so subject to cooking fatigue even in the most normal of days.

  10. I bought a pork shoulder roast and cut in half and cooked half as carnitas on the stovetop and the other half as pulled pork- I froze part of it because we are a 3 person household and don’t want to eat it forever. We had grilled flank steak from our freezer one night- we buy several at a time and my husband marinated them and freezes them. I bought a 3 pound roll of hamburger and made taco meat with part of it- we froze part for a future meal. I also made a homemade hamburger helper type meal last night- I didn’t love the recipe but it says it freezes well so I will freeze individual portions for lunches. I am shopping once per week so I buy fresh produce when I go plus I have frozen corn, peas etc in our freezer and I keep a well stocked pantry of rice, beans, pasta etc to fill out our meals.

  11. FYI I used everything up! So I made an Aldi delivery order and ordered double or triple of everything. I’ve never had so many groceries in the house at one time. I could go 6 weeks or more. Just have to replace perishables but almost everything can be frozen. (like cheese, butter, milk, berries. Cooked fruit...)

    Wednesday, Thursday- coconut peanut curry with vegetables and brown rice
    Friday, Saturday- chicken paninis with homemade Chipotle mayo and roasted potatoes

    Our grocery bill for last week was only $70. But, this week it was a bit higher ($110) due to buying some meat.

  13. I don’t have any
    Mozzarella either! I made fried green tomatoes twice with cornmeal, eggplant Parmesan again with no Mozarella, meat loaf with mashed potatoes, broccoli salad and sautéed zucchini, and ate lots of leftovers. I haven’t left the house since March 12th but I get a produce delivery once a week. I still have plenty of food left!

  14. I am so grateful to be able to eat well during the pandemic. Since time runs together (as Tom Hanks said, "every day is today"), I can remember WHAT we ate but not WHEN we ate it. Here goes:
    1. Sweet potatoes with curried eggs and spinach
    2. Baked mashed potatoes with parmesan cheese and bread crumbs along with asparagus
    3. Peanut noodles with gingered vegetables and tofu
    4. Lentil stew
    5. Pineapple black bean enchiladas

  15. I am growing herbs for the first time in my life. So someday I'll get to experience fresh basil on things. 🙂

    Sunday - Tacos for lunch, pizza for dinner. I was reminded of how quick and easy tacos are and am glad that I picked up 2 packs of shells when I was at the store last.
    Monday - Grilled chicken thighs, strawberries, chips
    Tuesday - Take out from Culver's
    Wednesday - Sloppy joes and broccoli with cheese
    Thursday - Burritos inspired from one of the frugal blogs you posted about. (Not my plan A, but burritos sounded better.) The filling was rice, pinto beans, lentils, and onions with taco seasoning, plus toppings like cheese, salsa, and lettuce. Super cheap and really good! The pintos I had were dry beans. The lentils had been unopened in my pantry for longer than I care to admit because I've never made lentils before, but they're not as scary as I imagined. I made the whole bag of lentils and will freeze what I didn't use. We had blueberries with our burritos.
    Friday - The weather is nice. (Hallelujah!) We're going to have hot dogs over the fire, fruit, maybe broccoli with cheese, and s'mores.

  16. I love reading menu plans. So thank you for this post and for all the comments too. Here’s what we had but I will work backwards since I think better that way…

    Thursday: Tallarini. A dish my mom used to make us growing up. Brown rice pasta, ground turkey, mushrooms, chopped orange pepper, Garlic, Corn, crushed tomatoes, and tomato sauce.
    A little salad made with onions, celery, and kidney beans, olive oil, and vinegar.
    Sliced apples.

    Wednesday: Costco frozen cauliflower rice stirfried with some brown rice. Sautéed bok choy choy and sautéed mushrooms, sliced hard boiled egg, and Mandarin.

    Tuesday: scrambled eggs, waffles, chicken and maple breakfast sausage by Applegate, orange slices

    Monday: Chicken tenders over brown rice, green beans, back chow. and orange slices.

    Sunday: chili made with pinto and kidney beans and ground chicken, Schar GF baguette, green salad.

    Tonight it’s baked potatoes With chicken and vegetables. Haven’t decided which ones yet.

  17. Hubby grilled a whole pork loin on Tues. so we had bbq sauced loin slices. We had Cuban Sandwiches one night that used some of the leftover pork loin (mmmm.) Another night I made ham & bean soup from a ham bone I had leftover from a week ago. I added some turkey smoked sausage to it since there wasn't much ham in the soup. I made pork tacos last night with more of the leftover pork from the grilled loin. I am going easy tonight & making homemade Manwhich. Going to be hot here in San Diego tomorrow, so I'll be making something in the slow-cooker. Something that isn't pork! lol I'm blessed because my freezer is still well stocked!

  18. Butternut squash soup. Roast the butternut squash cut in half seeds removed with a bit of butter to coat, in the oven @400 for 45 to 50 min covered with a lid. Boil a couple of potatoes, one yam, two large carrots and enough water to cover. Add the scooped out of the shell, baked butternut squash to the water with the vegetables still in the water and your chosen seasoning, I add 1/2 a vegetable broth cube. Blend with and immersion blender. Enjoy thick nutritions Butternut Squash soup!

    Frozen vegetable casserole. About 9 no bake Lasagne noodles. Mix 1 can mushroom soup in a bowl with 1/2 cup of milk , add more if needed to make it sauce like. Boil frozen spinach and green beans for 1 minute or the frozen vegetables of your choice. Sauté two sticks of chopped celery. Grate 2 cups of cheese. Grate 1 large carrot. Assemble. Place enough mushroom soup sauce to coat bottom of casserole then lasagne noodle layer, beans and Spinach layer ,1 cup of cheese layer and mushroom soup layer. Save enough mushroom soup for the top layer. Repeat. On the top layer add lasagne noodles with a bit of the mushroom soup, celery and carrots. Finish with cheese. Bake lightly covered @ 375 degrees for 45 minutes. Top with Panko bread crumbs bake uncovered for another 15 minutes until the crumbs are toasted and casserole is bubbling. Enjoy!

  19. WIS (ou should probably sit down before reading this): about $500.

    I'm concerned about multiple slaughterhouses shutting down because of covid-19 infections. Tyson's and Smithfield both say they will test everyone and institute protective measures, but if you know anything about how a slaughterhouse works, you'll agree that the companies will have to decrease throughput by at least 50% in order to keep workers at least 6' apart. Further, if covid-19 is just showing up now, it's only going to get worse for at least 2 weeks.

    So I stuffed my deep freeze with beef, pork, and some chicken.

    WIA:
    - taco night
    - Popeyes and a shortage-influenced fruit fondue kit that my father sent me from Edible Arrangements. I now have 6 more lbs of strawberries, a dozen more bananas, and a cup of chocolate chips (I'm guessing they ran out of chocolate melting disks). My father can be very sweet.
    - frozen pizza
    - sandwich board
    - pork chops, strawberries, sauteed green beans

    and I'm drawing a blank on the rest.

    1. I am slightly worried about the meat situation too, but I can only fit so much in my freezer.

      I suppose if worse comes to worse, we will just eat more vegetarian for a while?

      1. That's what I am planning to do -ration the meat I do have and eat vegetarian dishes more often. I did buy a little extra meat this week but my freezer is also full of assorted things. So I stocked up a little on other protein sources like beans and tuna. I would miss meat but would not be the end of the world.

    2. Here in Iowa they are trying to find places like local meat lockers and butchers to take some of the hogs for processing. Capacity to do that is limited and I’m sure millions of hogs will be euthanized and go to waste. I’ve actually considered purchasing a second freezer since mine is currently full. I have not done so yet as I consider whether I am overreacting. I don’t think this will impact beef as much as it is easier to keep cattle on the hoof for longer (say an extra year) than hogs which are much faster growing. However a glut of pork on the market now will cause shortages and price increases later.

      1. Thanks for explaining why cows are easier to keep longer, than pigs. As soon as you wrote "as it is easier to keep cattle on the hoof," I started wondering.

        1. I think a cow is typically two years at slaughter (sorry if that term offends) and a typical hog 9 months to a year. While many cows are raised in feedlots, if they are out on pasture, it is less expensive to let them go another year than pigs which are raised in a much more confined space on a higher percentage of purchased feed. When I raised pigs at home, we could get a pig bought as a weaner at 40 pounds to 250 pounds in about 6 months.

    3. That's good to think about... Perhaps I should look at my freezer and prioritize space. Use up things like veggies, fruit, and beans to make room for more meat.

    1. I love how much kale it uses up. Oftentimes I get the bunches in my Hungry Harvest box and I think, "How will I ever eat all of this??"

      But once you massage it and turn it into a salad, it suddenly is far more manageable.

I love grated tasty cheese on pizza; my fave is bought pita bread, tomato pasta sauce, baby spinach leaves, red onion, chopped red pepper, thin rounds of sliced zucchini, some chopped shredded ham and the tasty cheese on top; oven bake at 200 C for 10-15 min. The leftover pieces I sandwich the topping sides together & reheat for lunch wrapped in baking paper in George or a sandwich press.
    My dinners in no particular order - takeout pizza; ramen noodle soup made with 5 veg; pasta w bolognese; sausage in bread w tomato sauce; microwave nachos - plain corn chips spread out/2 slices of cheese/nuke for 25 secs, add heated leftover bolog/avo/greek yogurt/drizzle with sriracha

  21. Still spending too much - $132 this week. That included restocking the junk food for my husband and son.

    I really need to do a menu plan but I’ve been lazy. And dealing with allergies. You can’t sneeze anymore without everyone looking like a herd of gazelles ready to flee from you.

  22. For pizza, I generally use cheddar. Then if I have parmesan and mozzarella, I might add it.
    Monday: Steaks, potato salad and Brussel sprouts.
    Tuesday: Chicken with a red pepper alfredo sauce and pasta that a woman put up on my daughter's FB site. I could not believe how quick and easy it was. (Here is her site if you are interested in a quick recipe: https://www.facebook.com/groups/148783163230037/?ref=share) I did not have heavy cream--I did have a can of Nestle table cream that I bought at Aldi. It worked out well. I will restock. And I just used seasonings I had on shelf.
    Wednesday: I made a cream cheese filled French toast for the a.m. I had a 6 p.m. zoom committee meeting, so I had a piece of that and DH had the remaining chicken and pasta.
    Thursday: Chicken Parm, etc.
    Friday: Chicken breast, French fries, and corn. For dessert we had a mango cranberry quick bread. I had ripe mangoes and cranberries that needed to be used. I had no baking powder so I used a substitute 1/4 tsp baking soda + 1/2 tsp cream of tarter = 1 tsp BP.
    I am in the process of growing my sourdough starter. I think it is working--this morning there were bubbles. I'll feed it today and see what happens.

  23. I used to make pizza without cheese for the whole time my son was growing up as he had a dairy allergy.I'm pretty sure he thought that's how pizza was supposed to be! Cover it up with extra veggies!

  24. We just went to our local abattoir and restocked our freezer full of meat ($170) + a produce box ($30). YIKES. But we have not shopped in the grocery store in almost a month....

    Working backwards:
    Friday: ribollita soup (from freezer) and grilled cheese sandwiches
    Thursday: grilled salmon with Thai red curry vinaigrette, Asian slaw, grilled shishito, roasted cauliflower
    Wednesday: take out from local sub shop
    Tuesday: inspired by Spain: hake with garlic, chili and parsley, blistered shishito (playing the part of pimiento de padron), oil & garlic poached potatoes, sautéed Savoy with smoked paprika
    Monday: Homemade meatball subs on homemade Italian rolls (KAF), roasted potato wedges, big salad
    Sunday: (this was my favorite meal of the week): Buddha bowls with chickpeas roasted with sumac, farro, marinated kale, red pepper and feta, sautéed zucchini, farro & cilantro yogurt sauce.
    Saturday:

  25. Our week was pretty "normal".
    Monday: Cinnamon Chicken
    Tuesday: Meatloaf with lemon pie for dessert (aka DH birthday!)
    Wednesday- Take-Out Chinese- supporting the local restaurants
    Thursday- baked pork chops
    Friday- Kielbasa and potato casserole

    There were sides and veggies and fruit, but I am happy I remember the main item 🙂

  26. I was tempted to buy a meal kit from a local sub shop but I passed for now. Definitely will keep that as an option for later, though.

    I reluctantly masked up and made my biweekly trip to the grocery store. I find that in my area, the store that does not offer pickup or delivery is almost fully stocked on everything (except hand sanitizer and clorox wipes) with few buying limits, whereas the stores that do pickup or delivery still have gaping holes in availability of some products, buying limits, and wait times to get a pickup or delivery slot are a week or more. I actually bought more this week than I did when everyone was panic buying but that is because I am trying to stretch my trips to once every 3 weeks, instead of 2. We'll see. I really hate it when I run out of fresh produce.

    Anyway . . .

    Saturday - Tacos
    Sunday/Monday - I made the dragon noodles from the budget bytes website but subbed chicken and cashews for the pork and peanuts! I also added broccoli to make it a one dish meal.
    Tuesday - grilled cheese and tomato soup
    Wednesday - I picked up Five Guys for a late lunch so I just grazed on a few snacky things for dinner. I think cheese and pretzels and strawberries were involved.
    Thursday - Salad, strawberries and a banana (a celebration of the fresh produce!)
    Friday - Steak with roasted veggies and a baked potato

    I also baked a cherry crumb cake this week. But I have to lay off the baking. The "quarantine fifteen" is for real. LOL.

  27. I made a freezer list to use up the last of my "thats been in there too long" items.
    Alfredo, tortellini, sliders, sausages, spanish rice, grilled taters, stir fry and a lot of shrimp.

    Stopped into Sam's Club during senior hours and found t paper and wipes. Glad I found them, like searching for gold. Not many people in store and maintaining distance was easy. I use Sam's app so no interaction other than at exit door.

    I have been doing Shipt with Meijer. Last week I scored tomato soup & rice!! Hoping my order today might include bread flour. Such basic things are so hard to find here. My last order was $100 but only in stock came to $80 and I tip 20% off what my order should have been so it was an extra $20 tip plus the $5 fee. Well worth it to me to stay out of stores.

    I miss Aldi but the store is too small, isles to narrow and people last trip a month ago could not maintain any distance. I understand aisles are 1 way now. Not sure I'm willing to risk it. Here we have store limits on # of peeps allowed in store, most stores are 1 way traffic and masks required (unless medically can't). All employees must wear masks too.

  29. Considering I had a lumpectomy and sentinel lymph node biopsy done on April 15, the fact that our family hasn't eaten out once is a minor miracle. No money has been spent on groceries this week.

    Saturday - I honestly can't remember but think it was something I had prepared ahead of time in the freezer

    Sunday - A sweet Italian neighbours spaghetti and veggie meat balls, leftover roasted chicken for the carnivores and garlic sauteed rapini

    Monday - roast chicken, mac and cheese, small amount of brown rice for dh, steamed broccoli and cauliflower, quinoa - Tex Mex style

    Tuesday - leftover frozen turkey and gravy from Easter, brown rice, mushroom barley stew, sauteed Shanghai bok choy

    Wednesday - battered halibut, brown rice, zucchini strips, rosemary fries, braised fennel

    Thursday - homemade butternut squash soup, brown rice, leftover veggies - fennel, zucchini strips, small amount of mixed green salad (using up every remaining veggie produce in fridge)

    Friday - pot roast in gravy, roasted potatoes , last of the soup, steamed green beans
