WIS, WWA | Annnd I have Covid
In an odd happenstance, here I am with Covid again, almost exactly a year after I got it the first time.

I'm having a major sense of deja vu.
Just like last time, I'm not experiencing any concerning symptoms; I just feel like crap. And I am very tired.
SO TIRED.

If this post seems briefer than usual, that's probably why.
So far no one else has it, and let's hope it stays that way.
You know what's wild? I made it through a whole semester of multiple classes and did not get sick at all. And now that I'm not at school, I got Covid.
So weird!

I got together with a friend from my online support group (she lives semi-close, and we were able to meet at an in-between spot!). The girls fended for themselves while I was gone.

We had BLTs, which I never, ever get tired of.
Monday
Sonia was over for dinner, so I made one of her favorites: Swedish meatballs.
Tuesday
I got out a bag of pulled pork from the freezer, which we ate on buns, with fresh produce on the side.
Wednesday
Bacon and cheese quesadillas, plus some fresh fruit, and chips and queso.
Thursday
More pulled pork from the freezer.
Friday
Man, I really do not know. Maybe we will get delivery from somewhere.

P.S. I just took the Covid test yesterday; I was fine earlier in the week, which is why I met up with my friend and also had Sonia over. Wednesday was the first day I felt off, and yesterday I REALLY felt off.

Oh no! Rest well. My family always jokes that my immune system is higher during the semester or when I have things to do and then it lets down its guard when it knows my responsibilities are over - thus I get sick almost every holiday or vacation.

That was exactly what would happen to me during college. Full time classes and 32+ working hours and the minute exams were over I was full on sick or dealing with a migraine.

I remember reading/watching somewhere where some experts were encouraging folk who were going on holiday to find an intense 15 minute workout to do every day - something that would get their hearts racing and themselves panting. Something that will keep their 'stress' level a bit higher so their bodies don't let down their guard...

Ugh! Order in - you deserve it. I had my first Covid test this week - I went in for gastritis and they swabbed me for Covid which I thought was weird. I guess the results were negative? I feel fine, except for my tummy trouble. I hope this is a shorter bout for you! Here's what I ate this week:
Monday - Spanish Chicken and Rice with olives, collards
Tuesday - Salmon Patty, green beans, cheesy pasta
Wednesday - Comfort Chicken in my mini crockpot, butter rice, rest of collards
Thursday - Stuffed Yellow Bell Pepper (1/2 lb ground turkey with leftover rice, egg, and seasonings) THIS was so good after a hard day! Hot cocoa and early bed for dessert.
Tonight - going grocery shopping after work, so tonight I am eating a serving the Taco Soup I made in my mini crockpot on Tuesday, plus a piece of garlic bread.
Saturday - Enchiladas Con Carne for one, salad with romaine, Roma tomato, green onion
Sunday - TBD

Today is compensation for last weekend's overtime and I did some household chores, quite at leisure. So I have more time for both us and me in the weekend. I am looking forward and feeling very happy about that.
I'm sorry. I hope you feel better soon. The newer variants are no match for the vaccines, and ever more contagious. Still, thank goodness for the vaccines. You could ask your doctor about taking an anti-viral, I have heard of good results.

I don't normally comment on these posts because I don't keep track of how much I spent and I usually forget what we ate/don't take the time to look at my meal plan for the past week, but I had something special this week.
Monday-Pho! --Okay, this was for lunch because of my appointment far away, but I've been wanting to try it since you've been on a pho kick. Yum. Supper-- chicken patty sandwiches on homemade buns and broccoli with everything bagel seasoning. My husband bought the chicken patties against his will because I begged because my college boy said he had one at his cafeteria last week, and suddenly a chicken patty sandwich was the most important thing in the world for me to eat--not because of missing my son-- but because it just sounds so good. Yes, I know that's a crazy run-on.
Tuesday-steamed shrimp, roasted potatoes, green beans
Wednesday- taco salad
Thursday- a curry lentil stew with rice and chicken. This was the first time I've made lentils that I thought it was absolutely delicious. And even my (picky-eater) dad (who normally turns his nose up at curry and spinach and lentils) took seconds! And homemade bread.
Friday- The plan is homemade soft pretzels, sliced cheese, and some kind of fruit smoothie. And probably homemade pickles and store-bought pickled beets.
I’m so sorry you have COVID again! I got COVID in October and I definitely had pho more than once as I recovered 😉 Take care of yourself!
I often get sick once I've just finished with a lot of responsibility too. It's like your body's way of insisting you take time for yourself. I hope you feel better soon so that you can enjoy the time you take for yourself!
WIS: 331.77 @Aldi, 27.34 @Taco Bell and 35.50 @Little Caesar's for a total of 394.61 this week. That seems like a lot, but I'm at 888.77 for the month of January right now, which averages out to just under 225/week. I'm pretty happy with that considering I was thinking I would need to spend more like 250/week this year. However, we've mostly been eating off of frozen proteins this month, and as I need to start replacing my stash, my bill might increase a bit. Time will tell.
WWA:
Sat: salad (lettuce, blackberries, radishes, carrots and feta), spicy pork soup topped with snap peas and cilantro, jasmine rice.
Sun: salad, crumbled tofu mixed with jarred pasta sauce served over some kind of pasta. I forgot to take a picture of this meal, so I am fuzzy on the details.
Mon: watermelon, rice and beans with chorizo, fresh cilantro and sour cream.
Tue: salad (romaine, asian trail mix, honey sesame balsamic dressing), Little Cesar's pizza (2 veggie and 1 pepperoni).
Wed: salad (romaine and red lettuce, raspberries, feta and crispy onions), Aldi take & bake cheese pizza.
Thu: salad (mixed greens, sliced radishes and carrots, pepita's and balsamic drizzle), broccoli and potato soup, sourdough epi bread.
Tonight: salad and focaccia, I think, but I still haven't bought pepperoni, so it will probably be just cheese.

Oh no! I truly hope you do get well soon. My husband always used to get sick right after he finished up semesters in law school. It was like his body was pushing through until all of sudden it went, "Ah, NOW I can fall apart." So many Christmases with strep throat . . .
Saturday: I used some more of the chewy bull meat--pressure cooked and then food processed (yeah, it's a verb now)--to make an enchilada casserole. We also had pureed squash, and the kids had pie crust trimmings baked with cinnamon-sugar.
Sunday: Sheperd's pie and pumpkin pie with whipped cream. I made the pumpkin pie because I had just cooked a really big squash the day before and had a single pie crust in the freezer from making pumpkin pie at Thanksgiving.
Monday: Many leftovers for this Monday workday, plus still-frozen green beans for the children, who aren't enthused about squash whether it's freshly cooked or a leftover.
Tuesday: Sirloin steaks, mashed potatoes, leftover squash, sauerkraut, and more frozen green beans. Can you tell we were out of fresh vegetables? There are always points in the winter where squash, sauerkraut, and whatever I froze from the summer's garden are it for vegetables. This is what seasonal eating looks like. And it's why I am always amazed and appreciative that Misfits Market will deliver a box of fresh produce literally to my door. Miracles of the modern age, indeed. I also made oatmeal/peanut butter/walnut/chocolate chip cookies (there was a lot going on in these cookies) for our cookie jar this week, so my kids had those too.
Wednesday: I made a big pot of hamburger-vegetable soup on Sunday for my work lunches, and that's what I served my family this night, with the addition of bread and butter and cheese. And more cookies, because one of the main uses for cookies in my house is to bribe my second grader to practice his spelling words every night. 🙂 Oh, and I got one of those miraculous Misfits Market boxes this day, too, so we all ate some grapes from that while we were waiting for my husband to finish up the school bus run.
Thursday: We all went to the homecoming basketball games at our school, which always makes for a long day. I let the kids get their dinner from the concession stand. I ate some leftover Fritos from a Frito pie, walnuts and apples and cookies I had brought with me, and some granola when I got home.
Tonight: I'm making bread today, so I think I'll steal some dough for pizza. And I have salad stuff (again, miraculous Misfits Market for the win), so a green salad with ranch dressing.

WIS: $13 at Wegmans. I'm gearing up for (1) a low-spend February and (2) the installation of my dental implant on 1/31, after which I plan to take my own advice about doing whatever's easiest!
WIA: I've mentioned the "sort of" boeuf bourguignon I made Saturday night as a consolation prize for not getting to the JASNA luncheon. This was quite good and furnished several meals for both me and the Bestest Neighbors. Meals later in the week were less exciting, such as broiled tilapia and Rice-a-Roni (a favorite comfort food dish of mine). But at least I did get a box of Rice-a-Roni that was past its sell-by date out of the pantry.
@A. Marie, I love rice-a-roni, too. and now you have me wondering if there is one floating around in MY pantry. unlikely, and possible....

Spent $75 at Aldi and might make a quick Costco run today for 2-3 items.

Thursday-chicken nuggets, pickles, potato chips and broccoli (kids were in charge because of how yucky I was feeling)
Friday-potatoes and sausage with veggies is the plan. Let’s see what happens.
Hope you get to feeling better soon! I've been sick since last Saturday, with something that just wants to hang on. I didn't test for Covid, I'm just staying away from people so there's that. I've been sick so often this past year. I need to do something to boost my immunity.
Oh, Kristen, I am so sorry. The hybrid variants are so very contagious. And I am another one, having spent decades working in churches and schools, who routinely got sick at Christmas when the pressure was off.
For WIS, this week was $100.02, which included $10 on ground beef on sale at a price not seen in a year. The package made enough ten big burger patties that I froze for future burger nights for the family.
WWA: Meatloaf, green peas, cheddar-herb corn muffins, applesauce. Leftover lentil-leek-barley soup from the freezer with rye crackers and oranges. Nuts, cheese, Truscuit-like crackers and fresh cherries. Leftover spaghetti with meat sauce from the freezer. One night I was tired and had a protein shake and an apple while the family foraged. We did not eat out, though.

This week I managed to stay out of the grocery store all week, which is good, because it was snowy and icy and gross outside. The Saturday before we spent $257 at the store.
Sunday was leftover pizza stuff, as usual.
Monday: tuna burgers with mashed potatoes, gravy, and frozen mixed vegetables.
Tuesday was burgers, cooked by #2 kiddo, and tater tots. I think I sliced up some cucumbers too. It is hard to convince teens and young adults that vegetables are food sometimes.
Wednesday was hamburger stew, cooked by my oldest, and the youngest had leftover hamburgers and chips and apple slices.
Thursday was #2's 18th birthday, and he requested homemade lasagna, corn (he thinks it's a vegetable side dish, sigh), garlic bread, and brownies.
Friday, tonight, will be leftover lasagna (we have two pans! I made three), leftover hamburger stew, and whatever else people want. Easy.
Oh gosh! That really stinks! I hope you feel better soon. Rest well.

There will be a trip to Costco this weekend, the first in a while and I am afraid to see the total as we are very low on meat & veg. Batch cooking & Meal planning are my very good friends with all of these crazy prices.
Saturday: This was a the second week that I completed 5 boot camps in a single week and when I got home my body seriously told me so. I could barely lift my fork to get breakfast into my mouth. After that I went into my room to lay down and somehow 4.5 hours went by. I woke cooked a whole chicken and made white chicken chili, took a hot bath and went back to bed.
Sunday: More rest for my tired and sore muscles. I made beef tips in the oven with jasmine rice and carrots with rosemary & ginger. Yum.

Wednesday: I cooked a package of boneless skinless thighs in the crockpot, shredded them and we have chicken caesar salad wraps & apples for dinner

Tuesday: My husband was at a meeting at church and ate there. I made shells and cheese for the kids and I had a salad.
Wednesday: Baked chicken wings, pineapple, and those baked beans with the Dr. Pepper logo on the front... The beans were definitely interesting! I got them because I had a B1G2 coupon and we like Dr. Pepper, but I don't think I'll be getting those beans again.
Thursday: Sausage hash (a new recipe for us) with pineapple and blueberries.
Friday: Date night!! We have a little bit left on a gift certificate for a local Mexican restaurant and I'm hoping that's where we go.

This week, I managed to finish one (1) BRAT diet meal. It's not even so much that a meal of plain white rice with no flavorings, ditto dry toast, applesauce (not my favorite but I'll eat it), and a banana (possibly my least favorite fruit, but I'll eat it) is so unbearable; it's that once you trudge through eating half of it for breakfast, you know you're having the exact same thing for lunch and dinner today and tomorrow. I came this close to asking a friend to smuggle me some butter or soy sauce.

About three days? or until I begged my doctor to eat real food again? I called him Dr Spaceman because instead of a mask/face shield he wore a space helmet with a hose pumping air into it and also because I couldn't recall his actual name.
The food wasn't half bad once it was actual food, heh.

It was not our best dining week. I forgot to pick up ground beef for a recipe. Usually, we pivot well, but this week was a like a snowball rolling down hill. I had lots of late meetings, there were school soccer games, people working their side hustle, and it was just a week. Anyway, that's my intro to our uninspired meal plan.

So sorry to hear you are sick! Like the majority of comments, it seems we women power through situations until our bodies rebel. Feel free to pamper yourself as needed.

Lettuce prices are out of control so I have been making a large Greek salad on Sundays and we have been eating it with cottage cheese.

2 diced English cucumbers
Diced red onion
Olives if I have them
Juice of one lemon
Olive oil
Salt and pepper
Feta cheese if I have it.
Diced tomatoes if I have them.
It lasts from Sunday to Thursday without going bad like lettuce. Yummy
I continue to make a big pot of soup of some sort on Saturday. We eat the leftovers on Mondays. I hate cooking on Mondays!

I have almost eaten everything in the freezer! I bought a small food processor and have been playing with it. Made some tasty chicken burgers. I’ve been eating almond butter and cherry sandwiches everyday. This tastes like desert but is good for you? Mmm

Wednesday: Falafel – my husband was out of town and my son was with his dad so I made my favorite meal that I make whenever I have a night alone.
Thursday: Halal Cart Style Chicken and Rice with roasted cauliflower and homemade naan– I need to make a double batch next time, I could eat the leftovers for days!

@Jean, I make a kefir naan batch once a week (make 10 - 12 flatbreads) and it is SO easy (and it freezes well):
1.5 cups sifted AP organic flour
3/4 cup lifeway kefir organic milk
1 tbsp ghee
1/2 tsp salt
1/4 tsp baking soda
herbs (if want - I use rosemary, oregano, dill)
mix all ingredients, knead gently on floured surface; form a ball
cover for 30 mins
divide dough into 10-12 pieces
shape into balls, and cover; let rest for 30 mins
preheat skillet/griddle; use rolling pin to flatten dough (roughly size of palm) and cook approx 2-4 mins on each side
refridge for 4 days or freeze extras. delicious!

I’ve been using the AnyList app for a couple of years now and I like the meal planning feature. I have found that I need to schedule fewer “new” meals and more leftover nights and buy fewer groceries. Groceries really are one of our biggest expenses and I’m so bd bout running into a store for one or two things and coming out with ten things. I did have a success yesterday though- I ran into Costco for 2 rotisserie chickens and came out with just that…probably my least expensive Costco trip ever.

Tacos! Homemade cassava tortillas, mushroom, onion, chopped cucumber and persimmon ketchup. Weird, but it worked for me.
Tonight I shop, so we'll see what I buy to cook and eat. Or I'll finish the taco meat, one or the other.
Ugh, not Covid again!! I'm so sorry to hear this. Hope that you are soon on the mend and feeling much better.

Friday - is only two of us tonight, and it’s been a long week, so planning to get some takeout on the way home

A few weeks ago I made a huge pan of lasagna for a pot luck. As is usual here, when it hit 40 below most events are cancelled, so I put it in the freezer. (Partly because usually we have ice fog at those temps so hazardous to drive, and also because cars need to be plugged in at those temps because they can freeze up in a few hours---especially older ones.) It is week two of concentrating on cleaning out the freezer, so I pulled it out and we ate it Sat/Sun/Mon/Tues and Wednesday. That and a fruit salad of frozen fruits and berries made for a boring week of eating. Last night we had salmon patties. Tonight I am getting Filet-o-Fish and he is eating a bean soup. All we bought this week for groceries is milk and a $7 tomato.

The bacon I buy varies greatly, depending on what store I'm at and what's on sale!
And man, some packages seem to cook up very evenly and some do not. This must have just been a lucky package.
I usually just cook mine on the stovetop, although I have seen people sing the praises of oven-baked bacon because apparently that helps it cook evenly. I have never tried it, though!

@Kristen, oven cooked bacon is the way to go, in my opinion. I line a cookie sheet with either foil or parchment paper although the sheet doesn't have to be lined. It is started in a cold oven set to 300 degrees. I prefer thick bacon and it takes about 25ish minutes, I guess, to my preference of fully cooked but still a little chewy. I keep an eye on it tho. Bacon slices get flipped and the sheet gets rotated halfway thru cooking. If there is an abundance of grease I will pour that liquid gold into a bowl before returning the bacon to the oven to finish cooking.

I would put having covid while on break on my gratitude list. Not that I want covid but at least its better than while needing to attend classes. I hope this is a short burst, though, and you get to feeling better quickly.
Haha, well, when I wrote my thankful list, I did not know that I had Covid! But yes, I have thought about how thankful I am that I did not catch this during finals week.

Saturday - we were at a friend's house and she made cheese steaks, fries, and we had some of her canned pears and peaches with it. I brought an appetizer (jalapeno corn dip, tortilla chips) and dessert
Sunday - my parents were visiting and they treated us to Chinese takeout
Monday- I made hopping John and cornbread for my husband, me, and one kid who likes it; the other kids ate leftover Chinese plus other leftovers from the previous week
Tuesday - chicken pesto over rice, peas, applesauce
Wednesday - Salisbury steak, mashed potatoes, broccoli
Thursday - leftovers
Tonight - homemade pizza, maybe a salad if I get it together...
Isn't it amazing how our kitty cats just seem to know when we need them beside us and they are right there for us?
I really would not have believed it if I hadn't seen her do this multiple times. I don't know how she knows, but she does!

She can smell you. Human beings give off different pheromones when sick or stressed. The change in body odor is usually too subtle for other humans to consciously detect, but dogs and cats have stronger senses of smell. They even experimented with using dogs to detect COVID in crowds-not sure if this ever took off, but I remember reading about it.

Feel better soon! I got it for the first time New Years Eve. I'm just now starting to feel better. I'm so tired of coughing!! My daughter is a nurse and she felt so bad she got me sick.
I’m so sorry to hear you have Covid. When I had it, I felt that bone-deep fatigue and a lingering headache that wouldn’t respond to Aleve or Tylenol. I also lost my sense of smell. That did not return to normal for months. I truly hope that doesn’t happen to you. I’m praying you have a quick recovery and that your girls don’t get sick.
What we ate this week:
We had big salads for 3 dinners this week. Last night, we had a meal at Texas Roadhouse. Someone had given my husband a gift card to TR for his birthday so we used the card last night.
Tonight we split a Caesar wrap from 3 Brothers as we have an event to attend and we needed something quick.
Luckily, the current Covid variations do not seem to commonly cause loss of taste of smell. Whew! So far those two sense are working fine for me.

Hope you feel better! Covid is scary--- I mean for most people, it is like a weird bad cold and then? sometimes it is worse. Especially for those of us with underlying conditions or who are caring for those who have danger zone health issues (like asthma, heart problems, age, etc.). Please take care of yourself OK?

I totally understand how tired u are. I'm in recovery mode from Covid. I'm doing great since I have bad lungs &! Compromised immune system. I'm in week 3 where I'm still tired easily! &cry or frustrated very easily.

I’m so sorry. Our household just finished going through our first round of COVID, it sucked. Yes, the fatigue, exhaustion and brain fog are unbelievable. Sending hugs and prayers for a quick recovery.

We have done really well in January with not eating out, and I'm hoping to keep it up into February!
Sunday: We had not eaten out all month, so when two of my kids went to youth group (where they were getting pizza), the other four of us picked up a couple of pizzas from our favorite pizza place. It was a really nice treat!
Monday: Whole chicken in the instant pot, egg noodles, and a creamy mushroom sauce.
Tuesday: Crispy gnocchi and brussel sprouts (an Ali Sagle reciple from NYT Cooking that is so so good) with chicken
Wednesday: Husband was home due to snow day and made tacos
Thursday: Bread and creamy white chicken chili. I think I first found this recipe here and it's my go-to for bringing meals to people who aren't dairy-free. I brought it to a friend who recently had twins, and her 2yo son opened the container I'd put it in while we were chatting with the babies and starting eating it. He loved it. That recipe is a winner.
Friday: Shrimp fried rice with yum-yum sauce (another NYT Cooking recipe I love) for the older half of us, pizza bagels for the younger half
Saturday: Tonight fish cakes, mashed potatoes, and broccoli are on the menu
Feel better soon! I still mask up at all inside locations & have been covid free since the beginning. I am immune compromised so it is important to me.
