Yes, my fridge is a little empty. 😉 But luckily I had gotten a Hungry Harvest box last week, so that kept me supplied with produce.

What We Ate

Saturday

I pan-sauteed some baked sweet potato slices, fried some eggs, added some cilantro sauce, and called it dinner.

It was my last study session with my classmates! We started out at Starbucks and then ended up at Noodles and Company again to finish up while eating dinner.

This was the day I got my grades back, and someone had sent me $50 as a graduation gift, soooo Zoe and I went out to a little local restaurant for dinner. Yay!!

Wednesday

Ummm...I made pancakes. Whole wheat blueberry pancakes. IT'S BEEN A LITTLE WHILE.

And once again, I rejoiced at how much more delicious they are than the Kodiak mix pancakes.

Thursday

Mashed sweet potatoes, avocado with lime and salt, and pan-sauteed chicken tenderloins.

Friday

Today is my pinning ceremony and my parents are taking me out for dinner afterward. 🙂

Yesterday, some of the other honors society members and I did some decorating for the ceremony, and I was grateful I had my van to haul a big pile of balloons.

Also, we assembled a balloon arch, and I now understand why buying one of these already-made is rather expensive. It's SO many balloons to inflate!

    This week was a bit all over the place, but we did cook at home.
    Meals included
    fresh pasta with grilled vegetables and grated old Dutch farmmade cheese (we had both yound and old cheese in the fridge, so no need to go out for parmesan)
    homemade tomato soup with fresh basil
    asparagus and salad with entrecote and baked potatoes
    more salad, cauliflower, potatoes and I think sausage
    and tonight will be potatoes and meat balls with french beans and again, salad of some kind.
    The remaining tomato soup will be claimed for lunch.

    I cannot recall anything much else. Over the weekend I will make more vegetable bouillon from odds and ends, and possibly a tin of Frugal Girl granola. Also possibly walnut/parsley sauce (not pesto - not including cheese). I still have ample homemade yoghurt.
    Weather forecast for next week is nice but dry spring weather, so more salads are in order.

  5. Yay! Bask in your glory! One of my friends--also one of the the teachers at our school--is really into parties and decorating, and thanks to her we always have balloon arches at our big school events. She bought a machine to inflate the balloons, which I guess makes it easier, but it's still a lot of work, so I'm glad she's into it because it is not my sort of thing.

    Anyway. Food.

    Saturday: I used a bag of lamb stew meat from the freezer to make a saucy dish of lamb and chickpeas, which we ate over mashed potatoes. And then we had carrot sticks.

    Sunday: My usual plan for my birthday and Mother's Day is to have something that pretty much just needs to be re-heated for dinner, so I can eat my own food (always my favorite) without actually cooking on that day. This year for Mother's Day, that was elk taco meat leftover the week before that I froze. I heated that up, set out a bag of generic Fritos and a bag of tortilla chips, plus toppings, and let everyone make their own nachos or Frito pie. I had Frito pie, which I love but rarely eat. Ice cream for dessert.

    Monday: I had a lot of pintos and ham left from the week before, so I used those with flour tortillas and cheese to make toasted burritos after work.

    Tuesday: Pizza. Only four of us at home, which meant I only needed to make one pizza. Half of it was bacon and pickled onions, the other half was just cheese. We also had fresh cherries, which were not as ripe as they should be because of course it's too early for cherries still, but I couldn't resist when I saw the truck on the side of the road in town. They were ripe enough to still be good, but they'll be better in a few weeks. I'll have to make sure to get back to that town within the month. Yes, I plan my trips around the Colorado produce truck in the summer. 🙂

    Wednesday: I had baked meatballs the day before, which I heated up with barbecue sauce after work. I had also made baked beans the day before with the rest of the pintos and ham, so we had the meatballs, baked beans, bread and butter, and radishes.

    Thursday: Last day of school. Before dinner, my husband and I had vodka cocktails to celebrate, made with a rhubarb syrup he had made the day before. For dinner, I roasted potatoes and ham steaks, and we had cucumbers. After dinner, the children had ice cream sandwiches to celebrate.

    Tonight: I have to go to town and won't be getting back until about dinner time. I have one ham steak left, and a LOT of potatoes still on hand from the excess commodities, so I think I will make a casserole of cheesy potatoes and ham before I leave that can just be put in the oven to heat and brown when I get home. I have a lot of garden lettuce right now, too (yay!), and leftover ranch dressing, so a salad with that, and that's dinner.

    M - skipped dinner as I had "heavy appetizers" at an awards thing at work

    W - Mole Chicken Tostadas with avocado and refried beans
    T - Meatballs with basmati rice and peas (skillet meal)- made three meals
    F - I'm going to stir fry some peppers, onion, possibly carrot and broccoli with some TJ potstickers before heading to the symphony (:

    WIA: My most frugal (if not very culinarily impressive) effort was a chicken cacciatore with boneless/skinless thighs, plus a jar of tomato sauce past its best-by date and some mushrooms, a couple of tomatoes, and spinach that needed to be used up.

  9. I’m so happy that you are getting to experience all these milestones! Congratulations!

    WIS: about 150 at the local farmers” market.

    WWA:

    Fri: salad and focaccia.

    Sat: grilled cheese sandwiches made with farmers’ market focaccia bread and Gouda cheese. We topped them with kimchi and spicy pickles also from the market as well as guacamole (from Aldi) and strawberries on the side.

    Sun: more farmers’ market bounty: another focaccia grill cheese with whole wheat noodles topped with butter and Parmesan plus blanched cauliflower florets.

    Mon: salad and nachos.

    Tue: ten year old made grits with smoked sausage, fried duck eggs and broiled asparagus. Salad on the side.

    Wed: chicken leg quarters in a rhubarb sauce, jasmine rice and salad.

    Thu: twelve year old made tuna melts with spinach on brioche hotdog buns, grapes, figs, and lemon cookies on the side. I had a late night work event so I had a bag a chips and opted for a nap in my classroom’s closet instead of eating a bigger dinner.

    Tonight: salad and focaccia, of course!

    I’m thinking back on these years you have shared with us and I marvel at how many balls you have kept in the air. Kids leaving home and going out on their own, separation and divorce,rebuilding your own home/nest of comfort beauty and security,lawyer bills!! ALL WHILE MAINTAINING an A average in nursing school,which is one tough curriculum,complete with clinical days, care plan prep, and med card preparations.Not to mention the hours of STUDYING !!!!

    WOO HOO! You made it! All that comes next will be so awesome. AND INVOLVES NICE PAYCHECKS!! BENEFITS!

  11. My husband was out of town. I’m happy with myself that the kids and I didn’t do any restaurant food while he was gone. I don’t especially like cooking p.

    - Saturday I remember making a salad and half of us had rotisserie chicken. I have no idea what else was eaten.

    - Mother’s Day I got my favorite takeout veggie sushi. There was so much confusion with the online menu being wrong, that I got a weird combination of things I mostly didn’t like. Thankfully, I wasn’t hungry!

    - Ground beef, noodles, some sort of veg I forgot. Maybe broccoli?

    - Baked fish, sticky rice, nori, raw carrots and peppers. My fridge was pretty much empty so I’m proud of myself for putting this meal together with the odds and ends I could find. Funny enough, it was the best meal of the week.

    - Turkey meatballs, baked potatoes, sautéed green beans.

    - Leftovers and random freezer food.

    - Tonight will probably be hamburgers.

  13. WIS: $53.24 on groceries. $20.00 (tax and tip included) for lunch out with friends (and enough food for 2 or 3 meals). So $73.24 for the week.

    WIA: At home, chicken quesadillas and chicken fajitas with sides of grilled corn with red and green peppers and refried beans; egg, ham and Havarti cheese on toasted baguettes; mixed green salad with shredded rotisserie chicken and Cheddar Bay Biscuits (not to be confused with Tuna Cheddar Chowder).

    Eating out: Delicious “Housemade Meatballs, Pepperoni, Homemade Marinara, Ricotta, and Basil Crema with mixed greens and a toasted Italian roll” because … too much chicken the rest of the week.

    Tues. pasta with meatless red sauce. I sautéed a bunch of peppers onions and mushrooms
    Wed. Grilled pork loin chops. Rice. Green beans. Sliced strawberries.
    Thurs. leftovers buffet
    Fri. Making sub sandwiches and twice baked potatoes

  16. It's an exciting day for you! Get someone to take pictures!

    I didn't grocery shop this last week, but I will today.

    WIA: It was getting hotter, so my desire to cook got cooler as the week progressed.

    On Mother's Day, Daughter #2 cooked steaks, baked sweet potatoes and fried not-breaded okra. Delicious.

    I cooked chicken hearts and gizzards and made a big bowl of white-fleshed sweet potato salad. I had home canned pear sauce with it.

    Goat chops with lots of sautéed mushrooms and onions; cut up fresh cucumber on the side.

    A one-pan meal of eggs, mushrooms, chopped green onions, longevity spinach. Sliced jicama on the side.

    Cold Lebanon bologna with cold cooked and chopped beet, sliced carrots and cucumbers. Ranch with the carrots and cucumbers.

    Grilled cheese on GF bread, potato salad and a berry bowl consisting of Boysenberries from my garden and strawberries from the store.

  18. This week was an odd ball in our home in every possible way. We moved my aunt into a personal care home last weekend and this week without her here has been an adjustment for all of us. Emotions have run high and there has been a grief that my whole family has walked into. We are processing but giving ourselves loads of grace, not rushing and just trying to adjust back to normal life after having taken care of her full time for the last 4+ years. All of this certainly impacted dinner plans.
    Saturday: This was moving day for her. We worked all day and when it was done I had not one ounce of energy physical or emotional. I picked up pizza on the way home and called it good.
    Sunday: This was Mother's Day and I originally intended to cook but after church I realized that would not happen. We waited for a table at Texas Roadhouse and then went home and collapsed from exhaustion.
    Monday: Leftovers from both dining excursions.
    Tuesday: Out for Chinese and then looking at a sofa since we have to replace ours.
    Wednesday: Out of the grief mist a bit and baked a ham. We had potato salad, broccoli salad, and a new salad I made with Farro, grape tomatoes, basil, roasted red peppers, fresh mozzarella and cucumbers - drizzled with balsamic glaze it was Heaven!
    Thursday: Leftovers
    Friday: I think we will enjoy baked ham sandwiches on Hawaiian rolls and the leftovers salads.

      I know it is difficult to put a loved one in a home. But you went above and beyond the call of duty taking care of Auntie for 4 long years. Get yourself some rest and visit her often. That will help you both adjust to the new situation. Peace and love to you all.

    I spent $47 on groceries and $51 out of my dining budget
    We ate:
    Saturday: We ate out at a new place for us. Local place. It was just ok, but could have done the same meal much cheaper elsewhere.
    Sunday: Mothers Day. DH grilled ribeyes, and we had baked potatoes, grilled asparagus, and salad with that. The kids all came.
    Monday: ham and hashbrown casserole with salad.
    Tuesday: leftovers
    Wednesday: chicken with noodles and broccoli
    Thursday: We went to visit my parents for the day and my mom made a baked bbq chicken lunch with mashed potatoes, corn, and green beans. We got home later in the evening and ate a chicken/wild rice soup I had made the night before.
    Friday: tonight we are having chicken enchiladas. It's been a very chicken week.

    WWA: Salads, sandwiches, pepper jack cheese, nuts, black bean burgers with coleslaw, protein shakes with fruit, frozen pizza. Had graham crackers and fudgesicals for desserts.

    Friday: Husband and I were invited to a baseball game so we ate the food that the host provided – traditional stadium fare. My son made a box of mac and cheese at home.

    Saturday: Paprika Chicken and Potatoes with fresh veggies and ranch

    Sunday: My son and husband made Mother’s Day dinner – Linguine with Clam Sauce, Grilled Caesar Salad, garlic bread. My husband also made lemon bars for a sweet treat.

    Monday: Husband and I enjoyed dinner at his foundation’s annual golf fundraiser – Beef and Mashed Potatoes or Chicken and Rice Pilaf, salads, veggies, breads. When we got home I reheated the paprika chicken and potatoes to feed my son and my parents (who ran my son to all his events that night so I could be at the fundraiser).

    Tuesday: Leftover linguine with clam sauce

    Wednesday: Beef Quinoa Enchilada Bake (from the freezer)

    Thursday: Cuban Quesadillas with raw veggies

    Fri - not sure. Might be something a friend drops off, might be whatever strikes better half at the store (as in not walmart)

    1. @Selena, Fri was safe baked chicken breasts, mashed potatoes and corn. Too healthy of a meal, far too low fat. Nixed any snacks after supper for myself.
      Congrats Kristen - I have no doubt women are the stronger sex. Though the poster telling you to strut evokes rock-n-roll songs you might not deem appropriate for the stage lol - Bob Seger and Right Said Fred.

  30. Man, I have just been grinning ear-to-ear for you this week. I am thrilled for you!!

    My brother took the NCLEX last summer, and was promised something similar - if he had done well on all of his tests, he'd pass with flying colors. He panicked when the test stopped at the minimum number of questions. We spent hours googling to find out what that meant. In his case, it meant he had indeed passed with flying colors.

    I am 100% confident that your story will be the same. I can't wait to hear!

  31. Congratulations, Kristen! Celebrate yourself! You have done an amazing thing, between changing your life completely around, tackling school and work and parenting and doing it all with such grace.

    Saturday/Sunday: homemade pizzas, as usual, only I've made a firm decision to not buy anymore of the plastic vegan cheeses and am exploring making my own at home. So far I'm just at the level of vegan cheese sauces, but they're delicious and much healthier than the processed stuff. Cheaper, too.

    Monday: Tomato chickpea soup (delicious), tuna burgers.

    Tuesday: Chicken drumsticks (super on sale), fried rice in the crockpot and I think some sort of vegetable. This was DS #1's first day at his new job and I knew fried rice would be appreciated more than plain steamed rice.

    Wednesday: Split pea soup made by DS #2 and various leftovers.

    Thursday: Normally this was DS#1's day to make dinner, but for obvious reasons it fell to me! 😉 Not that I mind one particle. We had burgers and baked potato bar, and a salad bar I pulled together at the last minute.

    Tonight: taco night, courtesy of DS#3, who is over the moon with his good grade in his first college class that counts for his degree!

  34. Happiness looks good on you! I have been noticing in the pictures you have posted over the last several weeks that you look like you’re glowing :). What an amazing accomplishment to finish nursing school! I would definitely want a nurse like you if anyone in my family was hospitalized. Hope you enjoy the weekend of festivities!

  40. After experiencing how people are now caring for their food needs it made me reevaluate my own. What do I really need presently and what is just holdover habits of a bygone era.
    A pantry. I have established a small pantry of shelve stable foods. Did I really need to? Oatmeal. I don’t really like it, I have to make myself eat it which rarely happens. It may be time to finally say goodbye to a lonely container of oatmeal in my house.
    Beans. I love beans. In cold weather I love a pot of beans or soup simmering on the stove. In warm weather not so much. Cans of beans would suit my needs when it’s hot outside.
    Rice. I love chicken and rice but it too is a cold weather preference. I love fried rice but have never been able to make a batch at home that makes me happy.
    Cans of fish or chicken. I don’t like canned fish. I give myself permission to never buy or eat canned fish again. Canned chicken? It’s a quick way to solve being protein shy since I can’t have cottage cheese or Greek yogurt. A couple of back up cans will do.
    Spices. Pink sea salt and a grinder of fresh pepper are all I really use. I prefer fresh onion and garlic. I guess my favorite herb would be rosemary.
    A loaf of gluten free bread. I love toast and sandwiches. It’s a keeper. I reminisce about the amazing gluten free bread I made in the Zojirushi
    my children gifted me but it is no more. I’m not wasting my time trying to make any without that appliance. So no flour and other stuff. I like toast better than pancakes or waffles. I did love biscuits but have never made a gluten free biscuit I’d care to meet again. I’ve had ones at a breakfast place with bacon jam that tasted good but were so heavy you could use them as a weapon in combat.
    I like fresh fruit and vegetables. I can’t imagine someone buying those for me, would they see that bruise or flaw? lol. I do have a problem with buying too much. I can really only eat so much produce a week.
    I don’t need an oven. The only time the oven gets used is when someone heats a frozen pizza. I don’t buy frozen pizza.
    The microwave gets used but I could do the same cooking in a pan on a burner of some sort.
    A blender. It doesn’t get used often. I seem to go through a phase and then forget about it.
    All I really use and need is refrigeration with a little freezer for ice and leftovers. Bigger than a dorm model but not a family size monster either.
    And a single or double hot plate with a sauté pan and a small soup pot. Maybe a tea pot?
    Optional things would be a small microwave. A small toaster oven, and a small blender.
    Wow. I just streamlined my kitchen to fit in a small closet.

    1. @Tiana, I'm not familiar with the trend you're referencing, could you explain this trend a bit more? Is this some kind of food minimalism?

    2. @Bobi, I was recently around people who never go into a store for anything. They don’t cook either. Some don’t own cars or even want to. They have good jobs and a nice place to live and appliances they never use. I guess they are minimalists but they aren’t trying to be. They just don’t mess with everyday stuff. It’s new to me that
      modern lifestyles and preferences are increasingly shifting away from traditional home cooking.

  42. Let's see, what did we have this week? Out of the things I can remember:
    -DH made barbecued chicken for Mother's Day, which we had with potato salad, followed by cupcakes. We had that 2x.
    -I made chicken shawarma, which we had 2x as well.
    -We hosted an impromptu pool party for DS18 & his tennis team, when they got eliminated from regionals. DH grilled hot dogs, & I cut up a watermelon, and served with chips.
    -I know I didn't eat dinner last night (teaching my class), and I have no idea what anyone else ate.

    Apparently, we are DS18 is inviting friends over to swim again tonight, so maybe more hot dogs? Or, we might bake shrimp for the adults, and have that with salad.

  43. I will say that your meals do sometimes wish I didn't tend to concoct meals like rotini-cream-parmesan-broccoli-bacon ... but man, those speak my language just as much as sweet potatoes do. 😉

  45. I spent $92 at Kroger

    Sunday – simple – black bean/cheese quesadillas and stuffed jalapenos. We added leftover coleslaw and half a leftover grilled ribeye from the night before for hubby.

    Monday – baked pork chops, side dish of sauteed zucchini, yellow squash, onions with sun dried tomatoes, parsley buttered noodles.

    Tuesday – I made a recipe I found online – sheet pan shrimp dish with cherry tomatoes, fennel, garlic, onions, over rice with egg rolls, cucumber kimchi. Recipe was a keeper

    Wednesday – we had enough of the leftovers from Tuesday to eat for dinner tonight.

    Thursday – Teriyaki chicken thighs with peppers, pineapple, onions over ramen noodles with green beans.

    Friday – we ate out at a local Italian restaurant and had leftovers to bring home since I was out of town visiting an old friend all day.

    Saturday - had a late snack lunch at a friend's birthday party so later I just doctored up a frozen pizza with jalapeno slices and feta cheese for a light dinner.
