America's Test Kitchen just put out The Healthy Slow Cooker Revolution, a photo-filled cookbook comprised of lighter, healthier fare than you'd usually expect from a slow-cooker cookbook.

And because I am a lucky blogger, I got a review copy to try out, plus two to give away!

This book is the same size as the DIY cookbook and the 6-Ingredient cookbook, and like those two, it has tons of pictures.   I'd say probably ⅔ of the recipes have accompanying full-color photos, which I love.   Photos make it so much easier to pick out which recipes you'd want to try.

Most of the recipes in the book are for main dishes, such as soups, stews, slow-cooked meats, and so on.   But there are also a few recipes for very unconventional slow-cooking...as it turns out, you can make brownies and cakes in your slow cooker by putting a loaf pan right inside!

Unfortunately, I have a super old, super cheap, super 90's Crock Pot, which is the vertical shape rather than the new oval shape, so I wasn't able to try out any of the "baking" recipes.

Honestly, since I have a functional oven, I'm more interested in non-baking sorts of recipes. But for someone who doesn't have an oven, the baking recipes could be super handy.

I opted instead to try out a shredded chicken taco recipe, because I pretty much can never ever eat too much Tex-Mex food.

I actually have a chicken taco recipe that we all love (a riff on a Cook's Illustrated recipe), but that one has a green sauce, so the red sauce here intrigued me.

The chicken tacos call for bone-in chicken breasts, and luckily, I happened to have some in the freezer.

A   number of Cook's Illustrated/ATK recipes call for them, so when I happen to see them on sale, I stash some away for future use.

So, you salt and pepper the breasts, and then in the microwave, you combine oil, spices, and chipotle chili in adobo sauce.

This is in lieu of blooming the spices in a pan the way you would during stovetop cooking, and if you don't have a microwave, you could certainly just cook the spices and oil in a pan for a minute or two.

Then you mix the spices with tomato sauce, nestle the chicken into the sauce, and cook for three hours, or until the chicken breasts register 165 ° F.

Then all that's left is to remove the chicken from the sauce, let it cool a bit, shred it, and return it to the sauce.

The recipe also includes instructions for making a pineapple salsa, and in addition to that, I sliced avocado on top of my taco.

Because I add avocado to everything.

(Interestingly enough, all the recipes I bookmarked to try were either Tex-Mex or included avocado.   I am nothing if not predictable.)

We also tried the tacos with toppings like shredded lettuce and cheese, and we actually thought that was more delicious than the pineapple salsa.

Pineapple salsa is awesome, but I think I prefer it on the side with chips rather than in my taco (Totally a matter of personal preference.)

  1. I love making slow-cooked pepper steak in the crockpot. It's a meal that's "fancy enough" to make my family ask if we're having company for dinner, but it's also easy enough to be for just us!

  2. I have a recipe for hot fudge cake that I make in my slow cooker. It is amazing, especially over vanilla ice cream.

  3. We use our slow cooker a lot for cooking a whole chicken and then making homemade chicken broth. Yum! But we also love using it for soups and stews.

  4. There are so many good uses for a crockpot. I love to make beans in mine, so I don't have to babysit them. But, I also like to use it to keep things warm, like chili, so that my family can eat it whenever they are hungry throughout the day. If I needed to pick a recipe though, I'd have to say my favorite thing to make in the crockpot is a Deer Roast, my BIL turned me onto the recipe. I used to not like venison, but this recipe is delicious and I cannot tell that I am eating a game meat. Very good indeed. 🙂

  5. I use my (super old, super 90's) crock pot all the time. My current favourite thing to make is pulled-chicken sandwiches. Piled high on toasted kaiser buns and paired with a great salad is just a lovely meal. I am getting hungry now!!!

  6. Any kind of chicken! Whole, thighs, drumsticks, breasts! I hated cooking them in the oven and then discovered how juicy, perfect ans effortless it was to use the crockpot!

  7. I've never made anything I thought was excellent in my crockpot - until this week! I put in 4 chicken breasts and covered them in this sauce: 1/2 cup water, 1/2 cup bottled salad dressing (I used balsamic vinaigrette), 1 packet taco seasoning, and 1 packet Hidden Valley Ranch. Mix the sauce in a measuring cup and pour over the chicken. It doesn't sound like much, but I promise it was the best chicken ever! I shredded it and we used it in tacos.

  8. I love making pot roast in my slow cooker! There is nothing better than putting everything in the cooker Saturday am, completing all my chores and errands to come home to a house that smells sooo wonderful. It makes life in the kitchen easy since I don't have a lot of room to spread out.

  9. The crockpot is wonderful during soccer and lacrosse seasons. Favorites are chicken noodle (or rice) soup, pulled pork, chicken taco, chili, and chicken and black beans.

  10. My favorite thing to make in the crockpot is kalua pork. It only uses three ingredients (pork shoulder, sea salt, and liquid smoke) but tastes so good!

  11. I'm still experimenting with my slow cooker. I've made meats, soups and stews in it. I did enjoy the stews.

I change it up by adding in the leftovers from Saturday night's usual grill, and I am trying new types of beans. I didn't realize there were so many varieties - so good for you, too.

  13. I've mostly used my crock-pot to make shredded chicken for tacos or bbq. I have yet to find that "favorite" recipe, but with baseball season soon approaching and four children playing, I think I am going to need to find some favorite recipes! 😉

  14. One of my favorite things to make is vegetable stock. I throw all the bits, ends and peelings from various veggies in the freezer, then throw the whole thing in a slow cooker and let it go all day. A quick run through a sieve and voila, a beautiful vegetable stock! Although, the last thing I made in my slow cooker was carne guisada and it was all sorts of good. My slow cooker is one of the old school vertical ones too.

  16. Well, shoot, I can't think of a favorite family recipe because every time I cook *anything* in the crockpot my kids exclaim "crockpot! I love crockpot!" as if that were the dish itself. And every time I think that they're pulling my leg but no... they really do love anything I cook in the crockpot. Anyhoo, I think my own favorite recipe is the Southwestern Chicken because it's so darn easy (chicken breasts, jar of salsa, 2 cans of corn, 1 can of black beans) and yummy with homemade corn bread.

  17. Chili, hands down. The flavors have all kinds of time to meld in that slow, steady heat. But I do like it for lots of other things, too.

  18. I like making a whole chicken in my slow cooker. It's so easy~ just add some carrots, celery and onions and let it cook for the afternoon. Bonus: the broth is wonderful to save for chicken soup later in the week!

  19. My favorite crockpot recipes are a variation on the crockpot lasagna from Eat Live Run, and a variation on chicken tortilla soup from Heather Likes Food.

    6-8 lb frozen breast thawed enough to get under the skin

    1 packet Onion soup mix rubbed under the skin.

    On low til it reaches temp. Moist every time!

  22. It's so easy to make beans in the slow cooker! I use 2 c beans + 6 c water + 1 TB salt + red pepper flakes. Pinto beans, black beans and garbanzos (w/o red pepper) all work great! They cook in maybe 4-6 hours on high or overnight on low.

  23. I use my slow cooker most for beans, stock and chili, but our favorite is slow cooked round steak with carmelized onions and roasted chilies. It gets tender and falls apart and I serve it on toasted rolls with a good melting cheese, like Monterey Jack. I think I found and and simplified a recipe from a Bobby Flay cookbook, from the library or I would check. Anyway, my husband loves it and asks for it often. Off to check to see if my library has the newest ATK cookbook and to find out how to make cheesecake in the slow cooker!

  24. I just picked up the ATK Quick Family Cookbook from the library yesterday based on your previous recommendation and would LOVE to win the healthy slow cooker cookbook from them as well. (I would do more in the slow cooker, but I pretty much detest the canned mushroom soup, etc., that is called for in a number of slow cooker cookbooks).

    BTW, your white sandwich bread recipe is AWESOME. Made it yesterday for the very first time and my husband texted me from work to say how fantastic his humble turkey sandwich was. He is very, very particular, so this was a huge compliment. Thank you for all you do!

Since I've been trying to stock the freezer before baby #2 arrives (2 weeks - eek!), chicken stock (ATK and Smitten Kitchen) has perking away in my crock pot (another 1990s one - with lovely blue flowers). But we just made posole (New Mexican pork and hominy stew) which was fantastic. Thanks for fantastic giveaway.

  31. I don't have a favorite thing to make in my slow cooker, because I just got it a year ago. I am having trouble finding recipes for the things I like to eat (mostly vegetarian, no red meat, etc.). That's why I need this cookbook!

    1. Another good slow cooker vegetarian cookbook to look for is Gourmet Vegetarian Slow Cooker: Simple and Sophisticated Meals from Around the World by Lynn Alley. Her recipes are delicious and a staple in our home. I'm a huge fan of her Lentil Risotto from this book.

      She has a collection of slow cooker cookbooks that I couldn't recommend more! They are a refreshing break from the typical soups, roasts and chilies that are typical of most slow cooker cookbooks.

  33. I love making chicken tacos in mine too! Our recipe calls for chicken thighs, frozen corn, black beans, and Rotel tomatoes with chilis along with taco seasoning and can go right from the freezer into the crockpot, which makes it perfect for weeknights.

  34. I love using mine for turkey breast. I just used up the last of the leftover turkey to make a curried turkey sandwich spread that was fab!!!

  35. I have a Mexican Beef recipe that I like to make, but the thing I use it most often for is bone broth made from organic chicken bones and bits. Good for what ails you!

  36. Cooking a whole chicken. No liquid of any kind. Just rub the chicken with herbs and spices and set on a bed of chopped onion. Then I have delicious, moist chicken for all kinds of other recipes, as well as eating as is. Yum!

  37. While we use the crockpot for so many things, baked potatoes are one of my favorites! It makes for an easy Sunday lunch with leftover bits of meat, cheese, and veggies for toppings.

  38. I use my crock pot at least once a week. My favorite meal that comes from the slow cooker is chili. There's nothing quite like coming home to a delicious smelling home with a hot meal waiting!

  39. I actually love to make baked potatoes in my crockpot! Just wrap them in tinfoil (add some butter and salt to tinfoil) wrap the and put in the cooker all day long on low.... They come out wonderful!!!

  40. Our favorite slow cooker recipe is for pulled pork- we just made some this week and it is ohhhhh so tasty! I tried chocolate truffles in the slow cooker a while back, too. Turned out pretty darn decadent!

  42. My favorite thing to make in my slow cooker is any freezer-to-slow cooker meal. 🙂 For Valentine's Day, we just made chocolate cake with fudgy sauce and it was awesome! Meatball soup is another good one, but we substitute stew-cut venison!

  43. I have an ancient slow cooker too, but it still works and I love using it. I use it for anything that needs lengthy simmering. I have a gas stove and, even with a flame tamer, it gets a bit hot. Also, one time I found a cat curled around the pot on the stove and the smell of singed tail hair in the kitchen! Stupid cat. 🙂 Specifically I love to make chili and soups. And I would dearly love a new slow cooker. BTW, I adore ATK. I listen to Christopher Kimball at night on my tablet. It does sometimes take me a few night to stay awake to hear the whole podcast. LOL!

  45. I make all kinds of stuff in my crockpot, but I really enjoy making chicken and beef for tacos, casseroles, etc. The way they melt into the crockpot is just amazing.

  46. I make a Crockpot Creole Chicken. You can make it mild or as spicy as you like. Put it over rice and some cornbread and it is a heavenly dish.

I'm not very creative in the kitchen (I do have the heart, just not the skills!) Having an ATK slow cooker cookbook would put me on the right track, I'd love some proven recipes.

  56. Ham and potato soup ... crockpot steel cut oats ... lasagna ... whole chicken ... an assorted variety of soups and stews ... I love the fix-it-and-forget-it mindset. I've made cakes in my crockpot and haven't had to use a bread pan in it. I have 2 crockpots--an old 80's style (which I actually prefer for soups--AND it doesn't take up as much room on my kitchen counter) and a larger, newer, programmable oblong one. So I can have 2 crockpots going at once .... ha!

  57. I most often use my crock pot to make pork BBQ. Yum! I usually make a large batch and freeze it in individual portions. later I use it to make quesadillas, nachos, sandwiches, etc.

  59. I was all primed to put in my two cents worth, and since the rules say to do so I guess I have to (roast, potatoes, carrots, celery, onions, completely overstuff the slow cooker, 18 hours on low, yum) but instead I'm distracted into finding out what kalua pork is and figuring out cheesecake.

    1. Kalua pig/pork is a dish from Hawaii. The native Hawaiians would bury an entire pig in an underground pit and let it slow cook. They used heated rocks as the heat source. Salt for taste and over the hours it would get the smoky flavor. They would wrap it in banana and ti leaves and even wet burlap.

      It's something I like to make/eat too. Super simple. Think pork shoulder, salt, and liquid smoke. The trick is low and slow.

      It's served shredded like pulled pork. Hope that helps. (It's making me hungry.)

  60. I love making black beans and brown rice in my slow cookers. My four year old loves to make curried chicken. The slow cooker is a wonderful tool to let little ones help in the kitchen. He gets to put all the ingredients into the slow cooker and turn it on so he gets to make dinner for the family!

    We use our slow cooker the most in the summer. It helps me make dinner or side dishes without heating up my kitchen. In the winter I would much rather turn on my stove or oven and have a warm toasty kitchen.

  61. The crock-pot is my go to for roast beef and chili. I have been meaning to try one of those baking recipes but I am a traditional baker. I find that if something works, why change it. Although, Courtney F commented above about hot fudge cake so I am intrigued and considering changing my ways.

  62. We love making Pot Roast in the Crock Pot. Chili, pulled pork and an asian pork with noodles dish. I am looking for some more go-to recipes since we have an almost 7 month old and both work outside the home.

  65. I love making baked beans in the slow cooker!! In our house though it gets used most for roasts and rabbits!! Nothing like nice fall off the bone roasted meat on a cold winters day!!

  74. I love to make lemon chicken in the slow cooker. It has garlic, lemon, butter, chicken broth, etc. your brown it in the pan then put in the slow cooker for a few hours and it has the best texture and flavor. It's like pulled chicken. So yummy! Great in quesadillas and with any side. Yummy!

  78. Favorite thing to make? Hmmmm...probably pulled pork or chicken! It's so easy! Just put in the meat and sauce/spices and then it gets so tender you can just pull it apart with a fork and stir it up. then place on a roll and enjoy!!

  81. I recently made some aloo gobi in my crockpot that my boyfriend loved. The recipe is now in my regular rotation. My favorite thing to make, though, is marinara sauce. Customizing it to our tastes and always having some sauce on hand for busy nights when pasta is my only option really helps keep me sane!

  103. So this isn't my FAVORITE thing to eat- but I do love that I can put dried/soaked beans in the crockpot with spices and water at night and they come out as a delicious meal the next morning. My husband takes Beans and rice to work for lunches (he will top with salsa, greek yogurt, and any available greens), and we always make a huge pot, and make 10-12 lunches at a time. Being a hybrid of the midwest, Central Illinois and north Texas, I blended my two chili recipes into one which is not too sweet and not too spicy. Beans had to make it into the recipe to satisfy my "damn yankee" soul at much consternation to my Texan friends, but course ground beef tenderloin satisfied the Texan in me. We always said that chilis and stewes tasted better the second day, so the slow cooker gives the chili that extra flavor melding time and richness in the sauce.

  119. Well there are two that are great and one that was a newly wed staple. The first two are apple butter and apple sauce. When it comes to the third one it was a chicken stew that is really simple that I concocted myself which included 2 chicken breasts cut up, 2 cans of veggies/equivalent frozen/fresh, 2 cans chicken brother/cream of chicken soup, and spices to your taste. That was it. I used I think it was a 6 qt crockpot and just let it steep for the longest lowest setting. Super simple just dump in the ingredients and let er rip over night and worked nicely for a new couple.

  120. my favorite thing to cook in the slow cooker is chili though I found a new love yesterday- roast! well I had a 1 lb piece of pork tenderloin I thawed out, added a roughly chopped onion, red potatoes(had 3), 1 lb baby carrots (the chunky ones), and dumped a jar of pepperoncini peppers with the juice - stems and all - on top and let cook. had a vinegar-y taste but not too strong and a bit of a kick from the peppers(pulled thestems out as I dished out of the crockpot). I got the idea of the pepperoncinis from one of the year of slowcooking blogs- Stephanie O'Dea's - she dumped them on a beef roast (that's delish too esp in crusty rolls with swiss and/ or mozzarella under the toaster/broiler) as well as with chicken breasts shredded (I always add onion too if I have it and leave it in big chunks)

    but the chili recipe called for a lot of stovetop stirring so I cooked the meat/onion them dumped it all in the crockpot and it came out delicious every time. I basically followed the Wendy's chili recipe on topsecretrecipes.com and used rotel tomatoes for the green chilis and fresh tomatoes but would be delish probalbhy with the 'real deal' I just didn't have the real deal on hand and didnt' want a trip to the store when I had the canned goodies already

    1. oops forgot to say - the only thing so far that hasn't done well for me in the crockpot has been pasta - tried a couple of pasta recipes and I just don't know my cooker well enough and hate checking and letting the heat out - but I don't like my pasta mushy or crunchy and the 2 hour range between cooking times allows for some failures for me. a friend made a good crockpot lasagna so maybe that's more forgiving and I may get that recipe and try it sometime...but as of now I haven't been successful with pasta in my slowcooker. I also don't use mine all the time - I only use it when I'm home or running errands because 1) I have a big dog and it's hard to keep stuff out of her reach and the crockpot has to be moved to a room with a door that shuts! and 2) I work 12 hour shifts and chili and a few soups are about the only thing I can leave cooking that long and even that's pushing it IMO. usually I do chili or something when I get off night shift so it can cook while I sleep. the roast yesterday was while I was home decluttering upstairs and could keep an eye on the dog!

  121. I love being able to make fruit butters and sauces in the slow cooker. I also make batches of stew for my dogs. Two days of cooking chicken scraps and bones, and adding mixed vegetables, sweet potato, carrots, any leftovers, brown rice or oatmeal. I mix that with their dry food. I heat it up in the mornings, and they get a hot breakfast, too 🙂

I made some last Sunday and "cheated" (by my opinion only) and used the McCormick Savory Pot Roast packet, but I bloomed that by adding it to some onions that were cooked in bacon fat, then added the water to deglaze the pan and dumped it over the roast and vegetables. Cook on low for 5 - 6 hours, then take off lid, and use two forks to shred chicken. Makes great tacos, burritos, enchiladas and is also great over rice.

  166. I just made chicken enchilada chili last night: 1 onion, 1.5 lbs chicken, 2 cans of beans, 2 cans diced tomatoes, 1.5 cups enchilada sauce, cumin and chili powder. Cook for 7 hours on low. Garnish with shredded cheddar and sour cream. Yummy!

  167. My favorite and easy thing to make in a crock pot is BBQ chicken sliders. Put six boneless chicken breasts in the bottom of the crockpot and then dump a bottle of your BBQ sauce on top of the chicken breasts (Sweet Baby Ray's BBQ sauce is the best!). Cook on slow for 6-8 hours then take the chicken breasts out of the crockpot and shred them and then stir put them back in the pot with the BBQ sauce. Easy and so delicious!

    take a whole chicken (remove the inner packet, found that out the hard way). Place 4 stalks of celery at the bottom of the crock pocket, place chicken on top. Add any chicken seasoning packet. Cook 8 hrs then pull chicken apart. The possibilities from chicken tacos to chicken sandwiches are endless when you have yummy cooked chicken easily at hand.

  218. My favorite crockpot recipe is shredded beef. A 2# chuck roast, 1 packet Italian dressing mix, 16 oz jar of pepperocinis with the stems removed and a small amount of the pepperocini juice. Cook it on low for about 6 hours until the beef is tender. Remove the beef and shred it with a fork then return it to the pot. I serve it on tortillas with coleslaw.

I use my crockpot almost every night of the week (I work full time & go to school full time and I want my family to still eat healthy) I am always looking for new healthy recipes for my crockpot and my new favorite is a turkey chili with pinto and kidney beans, it was so good and it made enough for lunch leftovers. I also love making pulled pork and a hot and sour soup that my family loves.

  220. I use my crock-pot several nights a week. My favorite Sunday lunch meal is baked potatoes in one crock-pot and some type of chicken and sauce recipe in the other. I can start them when I wake up and they are ready when we get home from church.

  221. I love making pulled pork with homemade hamburger buns!! Always a hit in my house and SO easy! Can't beat that after a long day of work.

  223. We love soups in our slow cooker. Taco, potato, and chili are probably our favs. However, we also do a mean pork loin....

  225. Exciting - looks like a great book. I like making bbq chicken in the crock pot. Cook for a while, and shred the chicken easily.

  226. Lately I have been loving slow cooker chicken noodle soup with lots of garlic. My husband isn't as much of a fan for some reason! 😉

    Sidenote- I'm pretty sure that I'm going to have to search for a lot of the recipes that people have mentioned because they sound delicious!

  227. My mom makes a brisket in the slow-cooker for each Christmas Eve; it cooks 24 hours before being served on rolls with sour cream. Nothing is more festive to me than waking up to the scent of onions, beef, and beer simmering away. 🙂

  230. My favorite thing to make in the crock pot is any kind of mixed bean soup. Keep it vegetarian or add ham, sausage, pork or chicken for a comforting filling meal

  231. I like to make vegetable soup in the crock pot. I have checked the first ATK slow cooker book out of the library and really liked it. I think I would like this one better. Here's hoping...

  232. Mexican shredded beef. So easy and delicious! It's great for tacos, burritos, on top of salad, nachos...pretty much everything 🙂

  233. My favorite thing to make in my crockpot is chili. Everyone loves it and the smell of it cooking all day is complete torture...but torture in a good way. 🙂

  234. I make a marinara sauce with sausage and red peppers from America's Test Kitchen. It's delicious and makes the house smell wonderful when you come home from a day's work.

  235. Pork ribs - I add dark soy sauce, Worcestershire sauce &/or apple cider vinegar, brown sugar, ground ginger, garlic, onion flakes, salt & pepper. Everyone loves it even my picky eater who asks for seconds & loves dipping her garlic bread in the sauce.

  236. Tortilla soup or pot roast. You're a huge encouragement to me as I care for my family. You've taught me how to cook many things, encouraged me in contentment and frugality, motivated me to organize and simplify our home, and helped me to soak in all the sweet moments with my kids.   237. Our new favortite thing to make in the crockpot is ribs. 8 hours on low, soaking in Mexican Coke, then smothered in BBQ sauce and broiled for ten minutes. Super-yum.

    Serve with slow-cooker baked beans, and marvel at how easy it all was...

  238. I love to make pulled pork and pulled beef. I use it for BBQ, fajita, tacos, omlets, anything my family can think to make!

  239. Mexican chicken- boneless chicken breasts, black beans, corn, salsa! Serve over rice or inside a tortilla

  240. Like you, I like to make shredded chicken for tacos in my slow cooker. I cook chicken breasts with a jar of my favorite salsa and a little water and seasonings.

  241. Carmelized onions... Slice a bunch, drizzle with a little olive oil, cook on low 8 hours-- makes wonderful French onion soup, or in omelets and sandwiches, tacos, burritos, or a topping on steak/burgers/pizza.
