WIS, WWA | A week of double meals

I think I'm entering a leftovers-heavy stage of life or something, because three times this week, dinners were repeats!

What I Spent

I spent:

  • $45 at Safeway
  • $28 on a Hungry Harvest box

And that was it! A light grocery-shopping week.

Oh, wait. I also ordered this bag of red wheat berries because I wanted to use my grain grinder to make some whole wheat flour.

The bag was $50 (it seems to have gone up by $10 now!), but I had $39 of Amazon credit (from my Amazon rewards credit card), so I only paid $11 for it.

What We Ate

Saturday

Monday

I made open-faced sandwiches that were kind of like this, except I didn't add any bacon. In my experience, if you add bacon to a sandwich that has seafood in it, you mostly just taste the bacon and not the seafood.

One time I made lobster BLT sandwiches and man, I really felt like the bacon totally overpowered the lobster. And that makes the lobster sort of a waste of money!

Anyway...the avocado was really good in the sandwiches, and so was the squeeze of lemon.

Tuesday

A repeat of Monday.

Wednesday

I breaded some chicken tenderloins in panko and shallow-fried them. I also made some of these roasted carrots, and I cut up some fresh fruit.

Thursday

An easy meal: leftovers from Wednesday. I reheated the chicken in a skillet because breaded chicken is very not-good if it's microwaved!

Honestly, I think leftovers are often at their best if you use either the oven or the stovetop for reheating...dry heat usually beats the microwave.

Friday

I think it might just be me here for dinner and we know what that probably means: a clean-out-the-refrigerator bowl topped with fried eggs. 😉

  1. Potato-kale soup (again), cockaleekie soup from leftover roast chicken (with prunes because it's great), pizza, Chinese. Well, we had dishwasher issues and I couldn't face washing. Tonight, leftovers. I am going for a massage this afternoon to offset wedding anniversary sadness and I am planning to be too relaxed to cook, ha!

    1. Oh, friend. I am so sorry about the anniversary; as you know, I had my first experience with that this year and even tho my circumstances are different, it still really sucked.

      I hope your massage is wonderful.

    2. @Kristen, Thanks, pal. I am in a good mood today, probably for the first time in a long time on this day. I think I used up all my sadness on your post about your anniversary! I told my son I would be out this afternoon and why and he said, "Hey, how come you get a massage," joking because that's how we roll, and I said, "I married your dad 33 years ago today. I loved him so much. I get a massage twice a year, on my birthday and on my anniversary."

      One day soon I hope to be able to afford monthly massages--they really do help with my issues. Onwards and upwards, friend.

    5. My first time ever experiencing this was last Monday...and the Non-Husband who abandoned me 2 months ago did NOTHING for our Anniversary---except hang up for no reason when I called him. Lovely memory. 24 years.

    6. @Kimberly, Oh sweetie, do it. I'm so sorry. It's so hard. My best advice is, please treat yourself kindly and please start alternative traditions if you feel bad on big days. For example, I couldn't bear to put out my kids' Christmas stockings any more because we all, as a family, had the same ones. So I bought new ones.

      Also, please just accept that you may be angry and upset about this for the rest of your life and ignore anyone who says "you should be over it by now" or something. You're entitled to your feelings, whatever they are. If you are over it at some point in the future--fine! If you're not--also fine! Other people don't get to decide how you feel about something because it makes them uncomfortable.

      Now if you'll excuse me, I'm going to go practice my Emperor Palpitine vibes to make your ex unhappy. Muahahahahahaha!

    Thursday: burgers, corn on the cob
    Tonight is salmon burgers I think. My family does like burgers.

    In total I spent $360 at the store. It was a little more than I expected because my kids and husband asked me to pick up ingredients for a blueberry cheesecake they want to make today, and it involved getting 3 lbs of cream cheese, heavy cream, and sour cream...should be interesting.

    1. @Kristen, I think it will be interesting; they asked me to get readymade graham cracker crusts, and the original recipe said to make it in a springform pan, so... I made sure to get an extra crust in case I broke one on the way home, and the youngest broke one, as it turned out, and was so grateful I got an extra one! Ha.

    Saturday...I had a lovely group of ladies at my house and I spoiled them with Dutch oven lasagna, Chicken Florentine, Lemon & Parsley Linguini, homemade focaccia with olives, red onions and rosemary, & tiramisu

    Tuesday...leftovers for everyone; I ate a bowl of shredded wheat
    Wednesday...homemade chicken noodle soup
    Thursday...leftover soup for some, grilled cheese sandwiches for some
    Friday...Spanish pork roast, rice, stewed beans, green salad
    Saturday...I know there will be leftovers for this day so I can take advantage of great weather to plant my fall garden 🙂

  4. I thought of you this week, when I added eggs to leftover fried rice to make two additional meals. 😉

    My husband was traveling, so we went with creative meal options this week:
    -Burgers x2
    -Chicken curry
    -Fried rice & orange chicken
    -Chicken patty sandwiches
    -Pasta & baked chicken

    Unsure what tonight will hold, but something from the freezer, most likely.

  5. As a follow-up to your Facebook post, yeah, lining the pan is rarely necessary! For vegetables tossed in olive oil, or even with bacon, if you spray the pan with baking spray, the cleanup is very easy. It also works if you just put some vegetable oil (or canola, not olive) on the pan and squoosh it around with your fingers. (Why olive oil doesn't help, I cannot say, but that's been my experience.)

    1. @Karen., Thank you. How I could be this old and not realize that cleanup would be easier if I used baking spray first? I don't like bacon but the husband does so I make it fairly frequently and always dread the clean up...

      I usually line the pan with parchment paper, just because I don't want to have to clean up any residual oil left on the pan when cleaning up - but it's good to know you don't *have* to line it, and just use baking spray.

    3. @Lindsey, My husband always wants to do the dishes after I cook, but he's developing nerve damage in his hands (the docs do not know why) and some things are getting hard for him to do. So lately I line pans with foil for the easiest clean up, even if it is wasteful.

      For cleaning the stainless steel frying pans after cooking, I've been using a trick taught to me by a friend who was a professional chef, which is to add water and a squirt of Dawn dishwashing liquid, then bring the water to a boil and gently scrape the pan with a metal spoon to help loosen things. This gets them clean in no time without scrubbing.

  6. We were on vacation, so not as much cooking. We had rented a house with a kitchen so had planned to cook but hazardous wildfire smoke in the area changed our plans and we ended up at a hotel with no kitchen. Nice cooking break if a bit more expensive (also makes me think of Wednesday topic on the why of being frugal, being able to last minute change vacation plans with no worry about the cost is a definite perk of being frugal most of the time)

    Saturday - takeout ramen

    Sunday - smoked chicken wings, Au gratin potatoes, steamed broccoli and carrots

    Monday - first day of vacation, we ordered from the poolside menu as the kids were so excited to be swimming they didn’t want to leave.

    Tuesday - picked up takeout pasta to bring back to our room (eating at a restaurant with our youngest right now is very unpleasant, once she’s done sitting at the table, there’s no convincing her to stay seated!)

    Wednesday - both kids picked up some sort of illness and had fevers, nonstop coughing (not Covid luckily) so we just ordered room service

    Thursday - arrived home from vacation, simple dinner of canned clam chowder and crescent rolls

    Friday - Swedish meatballs

    Monday: Chicken enchiladas
    Tuesday: leftover chicken enchiladas
    Wednesday: Sheet pan sausage, peppers, and onions
    Thursday: BBQ takeout
    Friday: leftover BBQ takeout

  8. So I don't think the oven or stove top is best for leftovers. Of course, it depends on what one is re-heating. A casserole in the oven again, sure. A plate of food in the oven, no. Rice on the stove top again, no.

    That's all personal preferences, though, so no big deal.

    Let's see, I spent more this past week than the two weeks before, which I expected, about $174, but it included bigger farm orders and was, of course, for two weeks.

    What I ate:

    I got home late Friday and made a salad with cheese in it for protein. I used vegetables I had on hand plus the "spinach" I have growing in a big container. Also with raisins, because I love a bit of fruit in my salads.

    I browned chicken pieces then finished them in the oven, cooked beets in balsamic vinegar with a little honey, and made cauliflower rice plus gravy from the chicken juices. I had that three times this week, so leftover week was this week, it seems.

    One of "my" farmers is selling homemade brats now, made with no red pepper, so I had brats with zucchini & onion and a little sauerkraut.

    I fried some bacon then drained most of the grease and cooked okra in what was left. With that I had carrots.

    Tonight, I'm probably going to finish that chicken. The vegetable sides are gone, so I may cut it up and serve it with cassava pasta.

    1. @JD, that bacon and okra description is reminding me of my Southern roots. Will put that on the menu if okra's still available the next time I go to the Regional Market.

  9. WIS: I decided last Saturday to look at what needed to be used up and turn that into my lunches for the week before going grocery shopping. That and my husband radically cutting back on snacks made for a small shopping list: we spent $73.29, all at Food Lion. $15.69 of that was for a very nice chuck roast that I made into Saturday night supper and four days of leftovers.
    WWA: Saturday's leftover pot roast until it was gone, then I had a peanut butter sandwich and a piece of fruit every evening, except for one night when I cooked a frozen crab cake.

    This week's shopping trip will be pretty large, as we've eaten everything in the fridge pretty much except eggs and condiments!

  10. Leftovers are great in my air fryer too. We honestly don’t use the microwave much at all anymore.

    I love fried eggs! I miss so much cheap egg prices.

    We did not cook much this week nor did we eat out. Kinda a sad week.

    83 dollars spent at Kroger pickup.

    M. leftover grilled hotdogs. Baked beans. Roasted corn.
    T. Leftover pork loin with mashed potatoes. Leftover coleslaw.
    W. Tuna salad with hard boiled eggs on rye crisp

    F. Leftover salad and cold cut wraps. Popcorn. Gourmet given by a neighbor.
    S. We will be out all day.
    S. I am planning Mexican something and Spanish rice. Maybe enchiladas.

  11. Saturday: Fried bull meat, fried leftover potatoes, carrot sticks with ranch dip, baked custard

    Sunday: Chuck eye steaks, mashed potatoes, raw tomatoes, and rooster noodle soup for the (first) sick child

    Monday: Leftover steak and mashed potatoes, quesadillas made with bull meat, carrot sticks with ranch dip

    Tuesday: Leftovers, ham from the school cafeteria fried in butter, green salad with ranch dressing, chocolate pudding because I had like two gallons of milk that was getting too old

    Wednesday: Fried bull, rice, raw tomatoes, some of the peaches in syrup that the canner was too full for

    Thursday: Pot roast, leftover rice, sauteed calabacitas, raw tomatoes, potato soup for the next two kids felled by the cold, and Otter Pops for the same kids, who had sore throats

    Tonight: Maybe everyone will be able to eat solid foods without hurting their throats? Here's hoping. I took out some top sirloin to thaw and will make more mashed potatoes (in case of continuing throat issues, mashed potatoes with melted cheese are a good meal stand-in), and I have a TON of lettuce in the garden right now, so a salad. Probably with ranch dressing, as that is what my family prefers, so if I'm not the only one eating the salad, I usually make that for them.

    1. @kristin @ going country, Oh, I forgot the rice pudding! I made that Sunday. Last time I mentioned it, there was some discussion here about the recipe I use, since I gather it's unusual in America. Baked rice puddings are now considered the British method. However, My MiL's family were from England and have been in this country for so long that's it's very possible the recipe came with them from England and has been passed down for two hundred or so years. Anyway, I posted it this week.

    2. @kristin @ going country, Thanks for the recipe; my daughter loves rice pudding and I haven't made it for a while (oddly, I'm realizing that I tend to make it in colder weather - strange since we like it cold).

    3. @Suz, I only make it in cold weather because it requires the oven to be on for four hours, but we actually eat it cold, as well.

  12. I spent $55 on groceries last Saturday, but can go at least a few more days before I go back to the grocery store. I’m loving all this yummy end of summer produce. I love these posts because they are good meal planning inspiration for the upcoming week for me.
    Saturday- Pizza
    Sunday- I had family over for dinner. My sister made bruschetta with her garden tomatoes, I made Thai basil beef bowls with coconut rice that were topped with lots of yummy things! Carrots, cucumbers, spring greens, peanuts, peanut sauce, and fresh peaches. People were skeptical about fresh peaches, but everyone loved it!
    Monday- leftovers
    Tuesday- taco salad
    Wednesday- caprese chicken, mashed potatoes, green beans, salad, and fruit
    Thursday- church dinner! No cooking!
    Friday- pretty sure tonight will be leftover night

  13. Double meals are nice and easy, but I admit to not liking them back to back.

    M - pork roast with potatoes, biscuits, and spinach salad
    T - chicken & walnuts with brown rice and broccoli
    W - fish tacos
    R - spaghetti & meatballs with cut veggies
    F - Take out pizza. I had other plans but then there was a last minute sports dinner for some of the kids that required we bring pizza. I figured if I was already picking up for that I might as well get pizza for us too.

  14. We frequently have leftovers for dinner. Often I will make a double batch of something so that we’ll definitely have the same dinner once or twice more during the week ( if I don’t freeze portions). This week we had scrumptious cheesy, baked spinach/ tomatoes on Monday. Tuesday we had a big salad for dinner. Wednesday evening Small Group gathering was bacon quiche and salad. Thursday was leftovers from that meal. Tonight will be a chicken and broccoli casserole… leftovers from tonight either tomorrow night or Sunday night. I’ll also be making a tuna/ macaroni salad for lunches throughout the weekend. Fresh fruit is always on hand.

  15. First, my apologies for making only brief or no comments this week. (No particular crises; I was just having a rough time with a few things.) My belated Thankful Thursday is that (1) the week is almost over and (2) I too am enjoying the cooler weather.

    Now, on with today's business. WIS: $28 at the Regional Market, $10 at Ollie's, $30 at Trader Joe's, and $45 at Price Chopper (in two trips). I got chicken drumsticks for 99 cents/lb., and some great Reduced for Quick Sale deals on pork (chops and boneless ribs) and fat-free milk, on the second PC trip.

    WIA: One of my frugal fails this week was trying to use an ancient package of Mrs. T's pierogies from the freezer. Unless you like crunchy pierogies, don't try this in your own home.

    I had more success with some sheet-pan chicken thighs and russet potatoes, on which I dined for three nights in a row. I can eat leftovers almost indefinitely as long as chicken is involved.

  16. Pumpkin Pumpkin Pumpkin
    I forgot how much I love fall. Even though it's still in the 90s the nights and mornings are cooler. Aldis has pumpkin spice maple syrup that I grabbed. Hope its good. Costco had pumpkin seed granola 4 bucks off and chicken sausages 4 bucks off so I'm eating lots of that and 4 bucks off a bag of pumpkin seeds. Made a really good grilled cheese and drank a homemade almond milk pumpkin latte. Fall.

  17. Our Friday is going to look similar to your Monday. 🙂 And I'm happy to say that I'm getting the hang of making a quick and easy dinner to go with our evening activities Tuesday through Thursday.

  18. I love that you are practical and will eat leftovers. I am volunteering at the USO tonight so I am thawing left over pot roast for my husband to microwave for dinner with a side salad waiting in the frig (he is diabetic so no bread or potatoes for him!)

    You are a busy Mom and college student. Give yourself grace on dinners etc. Meals don't have to fancy!

  19. I've been in tomato-land the past few weeks and everything is a blur. Let's see if I can remember.

    Sat- we had plans to go out but it was a far drive so we decided not to go. I can't remember what we ate
    Sun- nephew's b-day for lunch...had the left over toasted ravs for dinner
    Mon- no clue. It was supposed to be the Cajun dish below but we opted for something easier due to canning. Can't remember what though.
    Tues- a Cajun type dish since we had pulled a ham hock from the freezer and didn't know what to do w/ it. It was red beans, peppers, onions, ham hock, smoked sausage, and rice
    Wed- left-over Cajun dish
    Thurs- a shrimp, spinach, broccoli, pasta dish in a white sauce
    Tonight- either meatloaf w/ mashed potatoes or stuffed poblano peppers

  20. Friday: Grab your own. I forgot I had an appt. in the evening and had to rush out. I had scones with clotted cream when I arrived back home.
    Saturday: Naan pizza
    Sunday: Salmon
    Monday: Naan pizza because I had spent the afternoon at a club tea and then was going to a fiber meet up. We knit, crochet, cross stitch--whatever handwork.
    Tuesday: Waffles & bacon using whey leftover from making clotted cream for the club tea.
    Wednesday: BLTs with the remaining bacon from Tuesday.
    Thursday: My remaining half sandwich from lunch and leftover waffles from Tues.

  21. I write this from Modena, Italy!
    We tried to eat leftovers on the days before leaving...
    Tues: airline food.
    Wed: tortellini (local is filled with ground mortadella, pork, etc) in brodo, tagliatelli with porcini mushrooms, pork ribs braised in lambrusco, salad, gnoccho fritto with proscuitto, mortadella, bufalo mozzerella & salad
    Thurs: tortolloni (big tortellini) but this time filled with ricotta & spinach tossed in butter and basil, sauteed zucchini, mache salad, proscuitto, olives (cooked in airbnb)
    Fri: lunch was the special meal: lasagne in Bologna, followed by proper gelato.

    1. @BettafrmdaVille, you are going to make a LOT of people jealous with this one--me included! But it sounds as if you're having a glorious time (at least at meals!).

    Meatballs and??? Cannot remember the vegetable
    Meatballs and cauliflower
    Cheese fondu
    Vegetarian "meat" balls with pilav and broccoli - I ate at Ikea's
    Sausage and French beans
    Beans and applesauce (DH) and lentil pasta with homemade ragu and the last shreds of cheese.

    Market day tomorrow, with fresh vegetables and fruits, nuts n seeds, and some cheese.
    I need to make some room in the freezer and am considering meat loaf and some fish meals.

  23. Pizza at a fundraiser

    Pork and vegetable stir fry with rice

    Fish and corn chowder. We had some cooler days so it was nice to finally be able to make a warm soup for dinner.

    Ham and pineapple pizza and a side salad. It was my son’s birthday and that is his favorite food.

    Creamy garlic mushroom pasta and a side salad.

    Spam musubi and cut up fruit.

    Tonight we are having whatever frozen thing looks good at the grocery store because my kids’ birthday party is tomorrow so I am cooking all day today and sure as heck not going to make dinner after that.

  24. Leftovers are my jam! Its so challenging to cook for one and not end up with them. I take my lunch to work, so I am A-OK with it. This week:
    Monday - Taco rice (freezer), brussels sprouts
    Tuesday - Crockpot BBQ Chicken, mashed potatoes (freezer), green beans
    Wednesday - Fish Tacos (with tomato, cheese, onion mixed baby greens), black beans e}
    Thursday - I didn't want what I had planned and I had to work late (on call), so I ordered veggie enchiladas with tomatillo sauce from Chuy's
    Friday - Veggie Lentil Soup, garlic cheese toast (making a mini version of this with hamburger buns)
    Saturday - TBD, wine club pick-up
    Sunday - Not sure - I was going to make pancakes, but I had them three (!) times for breakfast this week

    1. @gina, I love leftovers for lunch too! I pack them up when I'm cleaning up dinner, it makes it quick and easy in the mornings.

    WIS: 0.00! Yay, Shelftember! But we are running low on coffee and we are out of fresh fruit except for watermelon, so I do need to go tomorrow. Will I go crazy? Tune in next week to find out...

    WWA:

    Fri: watermelon quarters (it was a smaller melon) and pepperoni focaccia with eggplant tapenade and mozzarella cheese.

    Sat: sliced heirloom tomatoes, sungold tomatoes, air fried leftover focaccia.

    Sun: sliced heirloom tomatoes, sungold tomatoes, rice and beans, cheese and sour cream.

    Mon: sliced heirloom tomatoes, stir-fried tofu and peppers, rice. The tofu had been frozen per recommendations here. It was great! Great texture with no draining or pressing needed! We are renaming it frofu. Thanks for the tip!

    Tue: sliced heirloom tomatoes, broiled jalapenos, eggplant and tomato gratin with ricotta cheese and topped with broiled sourdough bread crumbs.

    Wed: grape tomatoes, buttered pasta, sweet Italian sausage, scrambled eggs and sauteed peppers and onions.

    Thu: watermelon sticks and "Thaco Thursday" which is just random leftovers stuffed into crunchy corn tacos, wrapped with a homemade tortilla for the crunch wrap effect and topped with cheese and salsa. My children will eat almost anything if you put it in a taco. Seriously. We put the eggplant gratin in tacos. They ate it.

    Tonight: watermelon cubes and focaccia.

  26. I had a "WE NEED MORE VEGETABLES" panic. I don't feel like I can manage side dishes most nights, so I'm trying to find some that are good for a few days in the fridge.

    Monday: Mushroom omelette, green beans, and carrot salad (made on Sunday.)

    Tuesday: Husband made frozen ravioli with tomato sauce, leftover green beans and salad.

    Wednesday: Chicken and broccoli stir-fry on rice.

    Thursday: Baked tilapia, fried rice with the leftover rice.

    Today: challah, sushi from the market for my husband, and I'll summon the energy to make a small batch of carrot-ginger-miso soup, since we're short on onions.

    1. @Meira @ meirathebear, I don't really do "side dishes" either. If the main dish has fruit/veg, I call it good. If not, we just have cut up fruit or veg on the side.

      I regularly have that same panic and it is what leads to my grocery overspending, I think. I will go to the store thinking "Ok, we need apples, some kind of lettuce, and fruits/veggies that can be eaten raw and packed in lunches..." A full cart and 200 dollars later, I leave the store thinking "Ok, I cannot come back here for at least two weeks..."

      Anyway, here's an idea of a salad/side made with super cheap ingredients that can last for multiple meals and actually gets tastier in the fridge: apple-cabbage coleslaw. My kids really like it. Struggle meals featured it in this video about Thanksgiving turkey burgers (which are also delicious and cheap, btw).   27. Sunday: Barefoot Contessa's weeknight Bolognese. This is one of our favorites, we had bought the ingredients last week but didn't get around to making it until this week.
    Monday: The green bean recipe from the Recipe Club podcast. I liked it, but my family....not so much. Oh well.
    Tuesday: Leftovers
    Wednesday: Mac and cheese with sliced bell peppers (by request of the preschooler)
    Thursday: Tacos! I've almost used all of the batch of pickled red onions I made a few weeks ago, so tacos might stop making a repeat appearance. Or maybe not, because tacos are delicious haha
    Friday/Saturday: Leftovers, cleaning out the fridge

  28. I need someone to stand over me and force me to make reasonable quantities of stuff. I mean to start out with just a small pot of something like soup but somehow I end up with a stewpot full.
    Sat/Sun/Monday: New England clam chowder and applesauce or leftover cinnamon rolls for dessert.
    Tuesday/Wednesday: Pot roast and salad full of cherry tomatoes picked before frost and now ripening bit by bit. Still had pot roast left but froze it because I have an extremely limited tolerance for the texture of pot roast.
    Thursday: a cauliflower pizza we got for free on a coupon. I wanted to try it and all I can say is, what a waste of one of my favorite vegetables. We ate it, but only because I added sausage to it after I realized what the first bite tasted like.
    Friday: It is going to be McDonald fish fillet for me, bologna (another oddly texture food item) and provolone cheese sandwich for him. Aging trail mix on ice cream for dessert.

  29. Squeaking in at the end of the day here. It was a long week but we now have a surprise long weekend due to HMTQ’s funeral on Monday.

    WWA:

    Saturday - chicken curry from the freezer and naan
    Sunday - BBQ pork chops and potatoes, green salad, watermelon
    Monday - leftovers
    Tuesday - lemon zucchini pasta
    Wednesday- sheet pan chicken fajitas
    Thursday - Mennonite garlic sausage, pierogies
    Friday - chicken, coleslaw, and taters (MB takeout)

    Chicken enchiladas with homemade refried beans, fruit plate
    Beef & broccoli, orange chicken, steamed rice
    Carne asada with tortillas and guacamole, refried beans, fruit plate
    Leftover night
    Pickety bits and fruit platter
    Pasta, salad, garlic bread

  31. Kristen, in reference to your Amazon purchase . . . I once read a frugal tip somewhere suggesting that it's better to apply your Amazon rewards as a credit to your account than it is to use the rewards to reduce the cost of the purchase. By reducing the cost of your purchase, you're also reducing the dollar amount on which your rewards are calculated. I’ve never taken the time to analyze my purchases and rewards to determine that this is actually true, but it does make sense to my logical, numbers-oriented brain.
