What I Spent, What We Ate | Back after a hiatus!
What I Spent
I didn't do one of these last week, but I'm back at it this week!
I went to Aldi and spent $117.40.

And one day when I picked Lisey up from work, I spent $4.32 on flour, cornstarch, and parsley.

I must say, it IS super handy to have a kid who works at a grocery store. It makes it very easy to pick up an odd or end in conjunction with dropping her off or picking her up!
Another day, I spent $2.34 on bananas while picking her up.
And of course, I got a Hungry Harvest box. This is my first week with the full harvest size instead of the mini harvest, so I spent $25.
So, my total for this week is $147.06.
Perfect.
What We Ate
Monday
This was the night I made the Chicken Francese.
I am having THE most dreadful time remembering what we ate with this.
Oh! I do remember that I made biscuits to use up the buttermilk in my fridge.
And we had a green salad.
It's amazing how hard it is to remember what you ate a few days ago.
Tuesday
I made this chicken enchilada recipe, except I used the leftover carnitas in the filling instead. It was a pretty good substitute, and now the carnitas is (are?) not in my freezer. Yay!
Wednesday
I roasted a spatchcocked, salted chicken and I made a batch of stuffing/dressing to use up the bread cubes I'd frozen.
I virtuously planned to make a salad with dinner, but ran out of time. So we had watermelon instead. 😉
Thursday
I baked a pan of stuffed pasta shells that I had in the freezer, and I also made two loaves of French bread.
And we ate some more of our watermelon.
Friday
Since we had stuffed shells last night, I'm thinking pizza tonight might be too much Italian in a row. So, I'm thinking of maybe making the shrimp cobb salad I tried a few weeks ago.
That might be perfect because I have some lettuce from Hungry Harvest that needs to be used anyway.
Your turn!
What have you been eating for dinner this week?

Monday-burgers with feta cheese, roasted potatoes, broccoli, and sourdough
Tuesday-ravioli with green salad
Wednesday-leftovers
Thursday-green chili chicken dish with black beans and rice
Friday-ham pot pie with buttermilk biscuits
I do my grocery shopping on weekends, mostly, so as of this Saturday I will probably have spent about $90 this week -- woo hoo!
I usually start with Monday, and this past Sunday was just leftovers anyway, so let's start with Monday again.
Monday was meatloaf, mashed potatoes, and sautéed Swiss chard
Tuesday was baked sweet potato, fresh tomato slices, sugar snap peas, cottage cheese and fruit, no meat
Wednesday was salmon patties with chopped salad.
Thursday was almost no meat -- squash n' onions (with an onion from our garden) fried in the skillet after cooking bacon end pieces, sautéed okra, fresh tomato slices and the bacon end pieces themselves mixed in the veggies.
Tonight is a up in the air so far but maybe a new recipe will appear, since I haven't done one all week.
Monday: Chicken and rice with veggies/salad
Tuesday: Spaghetti with veggies/salad
Wednesday: Green chili chicken tacos/salad (I'm not eating grains right now, so all of my food is over salad.
Thursday: Chicken curry with broccoli and peas (and rice for the toddler)
Friday: Crawfish....my friend's dad puts on the most amazing crawfish boil every year. It's $25/person, but I happily pay because it is DELICIOUS. There will also be potatoes, corn, and sausage in the mix. It's all you can eat, but I'll try to show some restraint 🙂
Your post makes me sooo hungry! =) I've been eating leftovers from what Mr. FAF and I cooked a couple of days ago (i.e. braised fish, deep-fried breaded pork) and lots of mangoes! I got some mangoes on sale and have been enjoying them this whole week. ^.^
I love mangoes. So, so good.
Monday: meatloaf and mashed potatoes, we had a veggie but I can't remember what it was....
Tuesday: baked cream cheese spaghetti, salad and garlic bread
Wednesday: hamburger for me, leftover spaghetti for hubby
Thursday : homemade Italian tomato chicken soup
Friday: possibly takeout Chinese.
This week was not good for me cooking-wise. I had a bit of a stomach bug all week. I did manage to cook a little.
Monday: Pizza
Tuesday: Roast (Instant Pot) with potatoes, carrots and onions, corn on the cob. So easy and good!
Wednesday: Chick-fil-a
Thursday: Leftover roast
Friday: Not sure...my oldest daughter graduates tomorrow and my parents are coming into town any minute!
You totally get a pass, then!
I hope your stomach is feeling good now.
Thank you. I'm much better. I ended up making tacos and spanish rice for dinner last night.
Sunday: pasta w homemade meat sauce, broccoli, clementines; with visiting family.
Monday: Pork chops, I think.
Tuesday: Sandwiches or sandwich meat (depending on the diner's preference), spinach, clementines and apples. It was a late dinner because we were unhooking and taking away a free, working dishwasher.
Wednesday: Chick-fil-a, paid for by someone else.
Thursday: I meant to make Tex-Mex but I was falling asleep on my feet and needed to go to the gym, so it was heated ham[1], cukes and tomatoes, and strawberries.
Friday: Tex-Mex - ground meat , guac, pico, salad & taco makings; not sure about the fruit.
I'm having guests over the holiday weekend, so I expect we'll be going out a lot. We'll be part of a crowd each time. Based on past experience, I will provide food at home and others will pay when we're out.
[1] Got the most amazing deal on this ham. Hams were half price, and on top of that a $5 coupon. I got two half hams, originally $20, for $5 each.
Holy moly, that IS a good deal on the hams!
Keep an eye out at Target after a holiday like Easter, Thanksgiving and Christmas. They will mark their spiral-sliced, glazed hams down to $3-$5. I got three last year and have cooked them all. They are so good.
It's tough remembering what you eat, right?! We always write ours down, but sometimes it inevitably changes. I always have such a tough time remembering what I ate even yesterday, let alone four days ago lol.
This week we ate:
Monday: Minestrone soup
Tuesday: Bolognese pasta
Wednesday: Pizza.
Thursday: Grilled fajita tacos
Friday: Potstickers.
Our house has been a revolving door since the semester ended at the university our youngest attends. Three of her friends have stayed with us for varying periods of time. Cooking for 4-5 each meal has thrown me for a loop (it's been just the 2 of us for 3 years so it's an adjustment!). Our grocery bill has increased and I have found myself making a 9x13 quantity at every meal. Love having the girls with us so I'm not complaining, just stating that things in the kitchen have been different. And to add to that, hubby had emergency oral surgery a week ago and is on soft foods for 3 weeks and possibly longer (he had a bone graft and that takes 6 months to heal).
Monday - grilled ham & cheese sandwiches, applesauce, cottage cheese, salad
Tuesday - Cheeseburger soup, saltines
Wednesday - Buffalo chicken sandwiches (no idea what they had on the side as I was at a conference for work)
Thursday - carry-out pizza
Friday - breakfast for dinner (pancakes & sausage links)
Enjoy the long weekend!
Hi Kristen,
This week I tried a few things recipe wise, a cheesy meatball skillet, a warm Brussel sprout, blue cheese and pomegranate salad and a lemon, garlic prawn pasta dish with Parmesan crumb, they were all totally delicious. The other dinners we cooked are tempura whiting, steamed rice and Asian greens (twice) feta and spinach savoury rolls (that's what the Brussels went with) and a slow cooked beef and red wine casserole with parsley dumplings, all yummy, easy and not too hard on the budget! Have a lovely weekend.

I honestly cannot remember every meal this week. I know I blew over $160 (AUS) for the three of us today. To be fair about $55 of it was on things for the cats. Also the weather here has affected some crops so tomatoes are approximately $5 a pound.
On Sunday my vegan daughter came for dinner so we had vegan sausages and lots of baked vegetables. Monday was roast chicken and baked vegetables. I am pretty sure Tuesday involved leftovers from the chicken. Wednesday was eat out night as it was knitting group. Thursday was Japanese Curry soup. Can't remember Friday. Tonight, Saturday, we have had platters with all special deli treats and salad.
We have eaten our way through many mandarins (clementines), bananas and apples too.
Monday- Chicken and dumplings
Tuesday- Put hamburger patties in tin foil with potatoes, carrots and onions and baked it in the oven.
Wednesday- Pepperoni pizza
Thursday- Salmon, Sweet potato and mixed veggies
Friday- hot dogs in a bun with mustard and a lettuce salad
Was it really just 4.32 for the flour, cornstarch, and parsley? Thought maybe it was 14.32 because that's how much it would be (or likely more) in my small town.
Yup, because the flour was only $0.97! It's a brand new store and it was on a crazy sale.
WOW, that WAS a good sale!
.97 for Gold Medal Unbleached?! I'm so jealous, as that is all I use, and consider a good deal when it's 1.99!!
I know, me too! There was a limit of two, but you could get two every time you went that week. So, I picked up sets of two several times while picking Lisey up from work.
I agree about it being so hard to remember! Our collard, kale, and chard are growing like crazy right now so they have been featuring prominently in our meals!
Monday--baked pasta with home-made red sauce, veggies (including home-grown kale), and cheese
Tuesday--TV dinner kind of night (husband cooked!)--breaded fish, oven fries, broccoli
Wednesday--stir fry with tofu, brown rice, some Indian sauce, and veggies including home-grown greens
Thursday--roast potatoes, salmon, home-grown greens
Friday--we ate out, spent too much money and it wasn't very good.
Here's what we're having:
-Chicken risotto (leftovers)
-Pizza (leftovers from a swimming party)
-Kebabs & rice (leftovers)
-From the freezer night (gyozos & grilled chicken) with salad
-Likely out to celebrate the end of the school year (almost there!)
I don't usually cook during the week. I cook bigger meals on weekends, and make enough for leftovers during the work week. This has worked well for almost 10 years, but now the boys are getting big enough that they are eating too much & throwing off my plan. 😉 May need fresh ideas for meal planning come the fall.
Great post Kristen! I love seeing the meals you made and how much you spent on them, it really gives me some awesome ideas to make my family.
I also wanted to say that I've been reading your blog for some time now and you were one of my biggest inspirations to start my own - so thank you!The
Aww, that is so encouraging to hear. Yay!
