WIS, WWA | Whoops, I ate a lot of salad

It's kind of ridiculous how often I do not even realize that my meals had a theme until I sit down and write this post.

This time around it was green salads with chicken. Apparently, that's about all I knew how to eat this week. 😉

What We Ate

Saturday

I made a green salad with chicken, and there is a dressing on here, but it's a vinaigrette, which makes it hard to see.

Sunday

I worked, and I packed a bowl made of mashed potatoes, BBQ chicken, jalapenos, and spinach.

Then I had a bowl of Cheerios with blueberries for dinner at home, plus some cottage cheese with peaches.

Monday

I had some leftover chicken in the fridge, so I cooked some Barilla protein pasta, added some jarred pesto, the chicken, and topped it with some shredded Parmesan. And we had some fruit on the side.

Tuesday

Zoe had a craving for Chick-Fil-A, so I picked some up for us. She got a chicken sandwich, and I opted for the Cobb salad because it had the most protein of all of their salad options (42 grams, if you wanted to know).

Wednesday

I made a green salad with chicken, in the spirit of a burrito bowl: greens, chicken, corn, jalapenos, cilantro-lime sauce, and so on.

Thursday

A work shift day for me; I packed leftovers from Wednesday's dinner as my lunch, and I ate Cheerios and fruit when I got home.

Friday

As we know, I will be working today because I am the unofficial Friday nurse. 😉 It's salad again for lunch today, this time with shrimp.

And I will probably eat a bowl of yogurt and fruit when I get home.

  1. When temperatures are up, we also eat a lot of salads. When it is colder I like to add home pickled veg asa side.

    Our meals:
    Weekend away. Panfried fish, surf n turf, corn soup.
    Home again: storecupboard mac n cheese, shakshuka with spinach and eggplant, couscous salad with feta cheese, and tonight most likely captains dinner.

  2. Saturday: I baked bread and used some of the dough to make buns, which in turn were used for cheeseburgers. I had also thawed a quart container of baked beans I found in my little freezer, and then we had cucumbers and radishes.

    Sunday: We went to a graduation barbecue at which hamburgers and hotdogs were provided and the sides were potluck. The graduate can only eat sourdough bread, so I brought him some of the hamburger buns. Then I also contributed deviled eggs and carrot salad. I have fed this particular graduate many times at my house, so I know he likes both of those things.

    Monday: I went to the sports awards banquet with my older two, at which we were fed pulled pork, etc. For the three at home, I handily had three leftover hamburgers AND three leftover buns. I cooked some bacon for those, too. They had their hamburgers with Fritos and leftover carrot salad, plus a few crispy rice treats from the ones I made for the requested dessert contribution to the banquet.

    Tuesday: Spanish tortilla with tomato, bell pepper, and collard greens in it, and a gluten-free strawberry-rhubarb crisp. I made the topping with pulverized almonds and oats, plus some chopped pecans, and that made a very nice topping.

    Wednesday: I found out in the morning that a single friend had a bad cold, and I had a chunk of pork on hand from the giant pork shoulder I was cooking. I used that chunk to make a soup with potatoes and cream in it to share with the invalid. We had it, too, along with fried bread and chocolate chip cookies.

    Thursday: I used some of the giant pork shoulder I had cooked the day before for dinner this night. I just broiled it with maple syrup and spices while I was baking cornbread. We also had a green salad with a vinaigrette, and the baked rice pudding I had made the day before while I was slowly cooking the pork.

    Tonight: I'm leaving shortly with my younger two to drive to Phoenix for my niece's graduation party tomorrow. I have no idea what we will have for dinner. My parents rented a house and will be there already, but I don't know if we'll eat there, or with my sister and my brother and his family, or what. I'm just focused on the drive for now. 🙂 My older boys are staying here with their dad because they're leaving for the state FFA convention on Monday. The bachelors have plenty of pork and leftover cornbread on hand for today at least. And then they're on their own. I'm sure ground beef will feature heavily in the next few days . . .

    Sunday: Marry Me Chickpeas with naan bread

    Monday: Leftovers with brown rice

    Tuesday: I ordered Indian food and had some of the leftovers for lunch at work

    Wednesday: Chilli mac and cheese

    Thursday: Leftovers

    Friday: I'm thinking a potato and spinach frittata

  4. I've been trying to cook four nights out of 7 and I usually rotate proteins. Chicken, fish, beef, pork. Anything leftover gets packed for lunches, but I usually stick to one person portions. I think I spent around $75 this week.

    *Korean BBQ Chicken Drums (mini crockpot), zucchini, roll
    *TJ's Garlicky Pasta with added chicken breast, corn
    *Ground beef with (crockpot) pinto beans and rotel, some tortilla chips
    I made an apple cake this week to use up some wrinkly apples, and I might make cookie dough for treats to pack in my lunches. (:

  5. This was my first regular work week after surgery and we were spreaded thin because of many irregular appoinments on top.
    But at least we managed to eat properly:

    Friday: We had a sleepover and we served Ikea Veggie HotDogs with homemade whole-wheat buns and homemade tatar sauce (my second daughter loves to make it)

    Saturday: Potatoes with a salad

    Sunday: “Häschen-Spaghetti” aka Spaghetti with carrots, parsley and sesame seeds

    Monday: Thai curry with beluga lentils and brown rice

    Tuesday: German Abendbrot with a salad of different beans and lentils

    Wednesday: Ricepudding with apple puree

    Thursday: Wraps with homemade hummus, tofu and lots of vegetables

    Today: I don’t know. Something fast and easy, I think.

    1. Of all ttpes of lentils, I think I like beluga best. They are also great in warm salads ("salade tiède") with onion, mushroom, goats cheese, walnut and roasted red beetroot.

      1. Yes! Especially because they stay firm after cooking and don't loose their shape. Some time ago I got mountain lentils around here, they are quite similar, but right now they are out of stock everywhere.

      1. I loved this as a child too. Now it's good for busy days. And the kids like it. This day I tried my mothers method of finishing the ricepudding in thick blankets in the bed for the first time. Saved me 30 minutes stirring at the stovetop and some power.

    2. Anne: Your menu sounds delish and amazing being just one week out from surgery. I’m going to try to replicate this for my family. I’ve never heard of the spaghetti and suspect my kiddos would love that!

      1. Oh Laura, I'm twelve weeks out of surgery. 😉 After the first week, I was happy to be able to shower and use the bathroom without help. But this was my first regular week teaching at school plus everyday chores at home.
        My kids like the spaghettis too and it's a quick dish.

  6. WIS: $4 Food4Less, $13 Panera

    I also went to Aldi, but used a debit card from a class action settlement, so I don't count that. I think it was $8.

    Saturday: Baked mac and cheese with broccoli and carrots

    Sunday: Carrot soup

    Monday: Pick Two at Panera. I had half a tomato basil BLT and onion soup.

    Tuesday: An off day. I had peanut butter and jelly on toast.

    Wednesday: Welsh rarebit

    Thursday: Mushroom pizza on naan

    Today I'm planning on making some chili. It's definitely chili weather!

  7. Saturday and Sunday we had two separate beach gatherings (on the same beach, but different people). We brought some food for the potluck on each day.

    Saturday: I made a tofu, cucumber, and avocado salad with mung beans and ginger sesame dressing for the potluck.

    Sunday: Two kinds of baked beans (one with salt pork, one without) made from scratch, and corn on the cob.

    Monday: Leftover baked beans and stovetop mac n' cheese (also made from scratch) with the corn on cob that was still left.

    Tuesday: Pasta with tomato sauce, green salad.

    Wednesday: Pork tenderloin, chickpea tofu, small boiler potatoes and roasted carrots, green beans and onions.

    Thursday: A food truck came to our neighborhood so we had takeout burritos.

    Friday: It's a cold start to the Memorial Day weekend, but I do have a lot of salad ingredients so at last that.

  8. Happy Friday, everyone!  We spent $195 ($21 at Trader Joe's, $75 at Target, $62 at Eastside Co-op and $37 at Fresh Thyme).

    - Penne pasta with steamed broccoli, olive oil and Parmesan
    - Salad: greens, chickpeas, radishes, cucumbers, walnuts, homemade croutons, homemade vinaigrette (twice)
    - Spaghetti squash with homemade marinara sauce, to which I added some cooked red lentils for more heft and nutrition
    - Spanish tortilla with Kristen's cilantro lime sauce and sliced jalapenos
    - Vegetarian BLT
    - Popcorn and cuties

  9. I'm not sure I'd have the energy, or would want to cook a whole meal, after doing a job like a nursing when you're on your feet all day. I spent a whole caree mostly sitting in an air conditioned office. I just know that nursing is a hard job. My sister spent 40 years in nursing mostly as a floor nurse. So thank you for everything you do Kristen and thanks to all the other nurses and medical professionals who are on this blog
    Here's what I spent and what we ate this week
    I spent just $40 at Walmart.

    Sat – leftover Mexican lasagna, salads.
    S – out to eat with our son at a local Korean BBQ/ hotpot restaurant
    M – meat and cheese sliders with a lettuce/onion/pepper mayo topping and chips. These are so good. We grazed on the leftovers as cold sandwiches for a few days. I managed to get a package of Hawaiian rolls that were reduced at Walmart a while back and put them in the freezer to use for this. I later found that Walmart has their own package of Hawaiian-like rolls in the bakery section. I think Hawaiian rolls are terribly overpriced
    T – baked chicken, rice, cucumber kimchi.
    W – seasoned packaged salmon, pesto linguine, green beans,cucumber kimchi.
    Th – baked shrimp, au gratin potatoes, cole slaw
    F – we will probably have pot pies, leftover pesto linguine and a green salad.

  10. WIS: $122, mostly at Food Lion. I did a good bit of restocking the pantry with canned goods.

    WWA: made chili with cheddar-herb corn muffins for DH, followed by a meatloaf with roasted carrots and baked potato. For myself, I had another batch of hamburger-vegetable soup that lasted four days, tuna mac and cheese with green peas, and a vegetarian burger with a side of tangerine and Jell-O (it was a hot day). Desserts for the family were chocolate chip muffins and chocolate pudding

    1. I do believe I have found a fellow Southerner! Your menu looks amazingly like many of mine. My palate is very unsophisticated and plain compared to most of the food prepared by our fellow cooks, but is pretty much what my mom cooked (minus most of the oils, sugar and fried foods). Food Lion is also found near me, no Trader Joe's, Target, no Asian spices, etc. DH does our meal preparation with me as his "sous chef". We try to eat healthy and eat our meals together. Keep on sharing your delicious meal plans all. I enjoy them (I'm embarrassed to admit I had to look up naan bread!) Scrambled brain today. Will supply menus next week.

  11. I can't remember what we ate on Friday, but I'm guessing leftovers.
    I made picadillo with rice on Saturday, and we had that for 2 dinners.
    DH made grilled chicken & zereshk polo, and we also had that for 2 dinners.
    He made spaghetti & meatballs with garlic bread last night.
    And, I can't remember the other missing dinner. It must have been forgettable. 😉
    As for tonight, it will be heavily dependent upon who is home. I am pretty sure DS20 works. If DS19 is also gone, it will be something easy from the freezer (leftovers, etc).

  12. It was a huge restock shop this week. $251 @ Costco,
    $141 @ restaurant supply, $75 for hamburger pick up. I wrapped and portioned.
    It has been a quick minute since I cooked daily for a hungry crowd. Nowadays it is some kind of protein, green salad and a side veg. I make batches of green salad, store in quart jars in the fridge.
    Wednesday Community meal I brought chicken enchiladas, refried beans, Mexican rice, street corn casserole and white Texas sheet cake with rhubarb & strawberry sauce on the side.
    This weekend is the official start of camping season and parades.
    We are celebrating 3 birthdays this week and getting the second cutting of hay in the barn and decorating our family graves.

    1. I think I will give it a try also, preparing/portioning salad. It sounds lime something I could include in my weekend food prep session fairly easily, plus I have a lot of big jars.

  13. We started last week with three days of snow so no grilling for us. WWA:

    Saturday- sheet pan chicken and veggie fajitas
    Sunday- slow cooker sausage and tortellini soup, bread. Also tried a two ingredient Black Forest cake (cake mix + cherry pie filling) with cream cheese icing. It might have been okay with whipped cream instead but, as is, it’s not for me. DH has an insatiable sweet tooth and has been chipping away at it.
    Monday - leftovers
    Tuesday- ham and cheese sliders
    Wednesday- spaghetti with homemade meatballs and sauce
    Thursday- air fryer drumsticks, oven fries, sautéed kale
    Friday-I intend to try a new recipe, scampi-style shrimp with crispy gnocchi

  15. Saturday - I had takeout Indian food from a new restaurant that opened in town, it was delicious! No one else in my family eats Indian food though so they had dominos pizza.

    Sunday - I ran in a 9 mile race this day so wasn’t sure I’d even be up to cooking dinner! I did manage to make some impossible burgers, served with diced potatoes (microwaved first then cooked in a pan per your recipe here!) and leftover corn on the cob.

    Monday - Unexpectedly ended up working late so my husband cooked some mussels that were in the freezer (both kids love mussels, maybe they just like the process of extracting the meat?) and udon noodles from the freezer for the kids. I had a Buddha bowl that was already prepared in the fridge since I’d made a batch over the weekend.

    Tuesday - My planned day of working late, my mom fed the kids dinner, I had another Buddha bowl when I got home.

    Wednesday - Girl Scout meeting noght so an early dinner of refried bean burritos for the kids and homemade black bean dip spread on corn tortilla crisped in the oven, with avocado and salsa on top. Then when we got home I had a piece of homemade pumpkin bread with peanut butter on it and made a snack plate for each kid.

    Thursday - veggie and shrimp dumplings with steamed baby corn and broccoli for the kids, I had curried cauliflower soup and some toasted sourdough with bean spread and tomatoes on top.

    Friday - I’ll be making a tofu and broccoli instapot recipe which I’ll serve over ramen noodles.

  16. My FARMBOX came with a lot of greens, AND I had some spinach and romaine in refrigerator so we are eating MUCHO SALADS ALSO this week! It's Good for us!!

  17. This week is a typical one for me. My job is physically demanding with lots of walking as well.
    My dinners were Indian cuisine (chicken masala or briyani) along with fruit (pineapple or watermelon or peaches) and/or fruit bars. I did make a beef macaroni dinner on my day off. I wanted bread to go with it but the market was out of baguettes and so, I didn't have any.

  18. Well, now, this is interesting: As far as I can tell, my whole comment thread today (about Dr. Bestest Neighbor's and my Price Chopper seafood adventures) has disappeared. I wasn't aware that I'd said anything that would offend anybody. Whassup with this???
