52 New Recipes | Herb-Marinated Kebabs

This week, I tried a marinated chicken kebab recipe from my ATK Quick Family Cookbook.

Happily, this used up the last of my cilantro and parsley, plus some chicken thighs that had been hanging out in my freezer.

And it used a zucchini, yellow squash, and red onion that came in my Hungry Harvest box.

So, it was a big win on the using-things-up front.

However, on the flavor front, I felt just kind of eh about the chicken, even though I marinated it for several hours.

I part of the problem is that I prefer chicken breasts for kebabs.

But I also just think something like these chipotle chicken kebabs taste more interesting, and I like that those have a dipping sauce as well.

The veggies were really good with the marinade, though, so maybe I'll use that part of the recipe again.

The recipe called for grilling some bread, but I just made some garlic breadsticks instead.

Next Week's Recipe

I think I'm going to try a recipe for Carnitas, from my ATK Mexican recipe book.

Which means I need to see if I can find a pork butt roast on sale somewhere, as I have none in my freezer. Hmm..

  1. Oh man. I LOVE carnitas. The initial idea of the cooking method kind of turned me off, what with the boiling of the meat first and then frying it in its own rendered fat, but the end result is phenomenal. And easy.

    I didn't try anything new really this week, but I did make stir-fried vegetables with a made-up brown sauce (I accidentally received a mushroom-flavored soy sauce when I ordered regular and got to keep it at no charge, so I used that, plus rice vinegar, ginger, sugar, and sesame oil) this week. I thought I was mostly making them for me (and this in-house fourth baby who apparently mostly wants starch and vegetables all the time) and no one else would eat them. They were kind of an odd side dish with scrambled eggs for dinner, but it turned out every single member of the family loved them so much I didn't get nearly as much as I'd hoped. And I discovered that mixing scrambled eggs right into stiry-fry is really good. I suppose, given the popularity of fried rice with egg, this shouldn't have been a surprise, but it was a pleasant surprise to me.

  2. You win some, you lose some.. but anything that uses up multiple articles of food and prevents waste or impromptu spending is a win! Tuesday was a busy day off work and I had not preplanned anything for supper.. It was a rainy day and the temp was dropping and I chose to go straight home and not hit the store for supper ideas... I eventually looked at my freezer list and decided to make crescent wrapped hot dogs- to appeal to the kids.. and tossed a large container of homemade chicken broth into a pot along with a bag of frozen mixed veggies, herbs, extra seasoning.. a bag of frozen cooked chicken and eventually 3 handfuls of bow tie noodles... They did not balk over the soup at all!

  3. We haven't tried any new recipes this week despite plans to. We are working our way through leftovers and eating up some frozen odds and ends after cleaning out the freezer. I'm hoping to try granola bars for the first time this weekend. We'll see how that goes!

  4. I didn't make anything new this week, altho I did whip up a double batch of spaghetti with meatsauce last night so I could freeze half for the future. I sauteed red and green bell peppers, used my homemade marinara, and boiled up some whole wheat spaghetti. I loaded the top with cheese and baked it while I heated up peas. It was delightful!

  5. This recipe is perfect for an outdoor BBQ. Mr. FAF and I have also been thinking about having Korean BBQ at home (it's cheaper than at a restaurant), but it does make the house a bit smokey.

    I just friend up a rice cake that was getting old, and it tasted delicious!

    Cubed Steak with Peppers and Onions I think was my biggest hit of the week. It was whole30 friendly for me (no rice) and the rest of the family enjoyed it too. Cubed steak is fairly inexpensive, so this will be in my rotation even after my whole 30 is done.

  7. Ooohhhh, you've inspired me! I want to grill some kebabs for next week's dinner. 🙂 Sorry the chicken was "meh." I like to brush the chicken with a lemon juice mixture after grilling them. It helps a bit with the moisture and flavor.

  8. My hubby has been making carnitas this winter as his new-to-us recipe. I think the recipe may be from ATK and it smells soooooooooo good while cooking that waiting for dinner is hard!

  9. I tried a new barbacoa recipe and it was a flop. Probably because it wasn't true barbacoa but a Chipotle copycat recipe...oh well. As someone said above, you win some and you lose some 🙂

  10. I think Aldi's may have pork butt on sale next Wednesday for a 1.69, last on I got used to make Carnitas was really good.

  11. No new recipes here but hubby does not like to cook from scratch but I appreciate if he gets something ready for dinner. I bought the Aldi frozen bagged chicken fried rice (there are only a couple pieces of chicken in the bag) but he made it and claimed it was the best fried rice he ever had...much better than my homemade...ha ha ha that's ok. It was pretty good but does not go far. Added chicken and more rice but it's quick!
