52 New Recipes, Week 8 | Sausage Pasta

This Week’s Recipe

I originally saw this recipe on Kevin and Amanda’s blog, but I read that they got the recipe from an ATK cookbook, which I promptly put on hold at the library.

One can never try too many ATK cookbooks, people.

(It’s their Best Simple Recipe cookbook.)

Anyway!   The original recipe called for chorizo, Rotel, and pepper jack cheese.   And I’d totally have used all of those things except…I have four hot-food-wusses at my house.

And Joshua, who is my only spicy food lover, wasn’t at home the night I made this.

So I made a pretty vanilla version of this with kielbasa, regular diced tomatoes, and plain Monterey Jack cheese.   My girls all loved it.

But if I make this again when Joshua is home, I’ll probably split the mixture between two pans when it’s time to add the tomatoes and I’ll use Ro-tel in one pan.

Something kind of funny: I made this on the night when Sonia and Zoe have dance class. I get home from that right around the time we eat, so I need something speedy for dinner.

I chopped and prepped everything ahead of time so I could get dinner on the table quickly after class, and we headed off to dance.

Once we got there, we realized that oh! Dance class is apparently off the week of President’s Day.   Whoops.

But hey, it was handy to have everything chopped and portioned and ready to go. Ha.

Next Week’s Recipe

In a my June/July 2016 Cook’s Country magazine, there’s a recipe for pulled turkey sandwiches with a white BBQ sauce.

I make pulled chicken, pork, and beef, but the concept of pulled turkey is new to me. And the white sauce sounds very interesting.

I have the turkey breasts and the foil pans, but I’m going to need to find some wood chips, which I’ve never used on the grill before.

Adventure awaits!

I see that wood chips are available on Amazon, but they appear to be cheaper at home/hardware stores.   So I think I’ll look for them there.

My husband doesn't like spicy food but this recipe from Kevin & Amanda's site is one of his favorites (I have to use mild rotel though!). He would have me make it every week if he got his way. And it is even one of the few leftovers he likes!

We are still doing the "new recipe of the week" too! And I am really enjoying this. In fact, we decided to include our daughters in the process. They are 5 and 7 so I'm sure we will get some interesting ideas from them! This week, hubby's recipe was a beef in a chocolate-coffee sauce, and my 7 year old choice was a shrimps and pasta salad. This coming week, my husband is making a green curry, I'm planning a mac-and-cheese with a sauce hiding lots of veggies, and my 5 yo decided on rolled ricotta-spinach lasagnas. Yummy!

We also had pizza on naan bread and.... can't remember what else...

I made a version of an American recipe. It was interesting because we didn't have all the ingredients and I also had to alter it to suit the FODMAP diet. It was called a lasagna but really it was potato bake and instead of white sauce I used a little strongly flavoured cheese and a little cream. The layers were potato slices, ham and then the cheese. IT pleased mum and I could eat it so that as good.

I tried a new recipe for cheesecake this week, to serve at the most recent meeting of my book club. It turned out really, really well.

Your sausage and pasta dish looks very yummy! I make something similar using smoked sausage and Rotel -- kind of splitting the difference in spice, I guess (mostly this is because I've never cooked with chorizo -- something I need to rectify!).

I'm in a total and utter recipe slump lately. My husband has been traveling for work, so I'm not inclined to do much in the way of dinner. We've been falling back on our old stand-bys...like chalupas and grilled chicken thighs. That spicy sausage pasta looks so good though!
