What I Spent
If you're on social media, you've already seen these Chiquita pics. But since some of you aren't on social media, I'll include them here. 🙂

So, $160, but that's not too shocking for a week that included a Sam's run!
What We Ate
Saturday
Whole wheat pancakes with blueberries. I hadn't made these in a while, and I forgot how good they are.
Also, they're not too shabby on the protein front, even without modifications (I added the recipe to My Fitness Pal to check the protein!)
Sunday
Mashed potato bowl topped with eggs, jarred hot peppers, and fresh basil. SO GOOD.
Monday
Mashed potatoes (I was trying to use up my Hungry Harvest potatoes!), pan-sauteed marked-down beef slices, and asparagus.
Tuesday
I made the executive decision to cook whole-wheat blueberry pancakes again.
I have zero regrets. 🙂
Wednesday
Beef quesadillas (using up the rest of that marked-down beef), cucumber slices, and strawberries.
Thursday
I had some ham that needed to be used up so...the obvious solution was a sandwich. 😉
Friday
Well, I work 12-hour shifts today and tomorrow so whatever is for dinner tonight is going to be quick. Maybe some sauteed fish?
But if I am feeling very tired, it might be tuna fish sandwiches. Ha.

Wednesday: I went out for Lebanese food with a friend. I had falafel salad and mint lemonade.
Thursday: Leftover chilli
Friday: Undecided. Possibly a mushroom omelette.
I made some delicious tofu fajitas, had a salad three times- pumpkin seeds, red onion and cucumbers included, ate homemade Hummus (I’m thinking I prefer store bought which is unusual for me- I almost always like from scratch food better), and ate sauerkraut, eggs and cottage cheese a few meals. I spent nothing this week! Grandson is leaving for college tomorrow and I never got him to help me in the back yard this summer- my fault. So I guess this weekend I’ll be doing yard work.
@Nan, didja take the skins off the garbanzos? it makes a difference in homemade hummus.

These were canned. I’ve cooked dried ones before but I had 4 cans and I did add Tahini.
@Nan, even canned ones have the skins and should be removed for a creamier hummus.

WWA: Leftover spaghetti with marinara sauce that was portioned up as individual freezer meals. Roast pork shoulder with carrots. Veggie burgers on English muffins garnished with chopped cherry tomatoes and cucumbers from the garden. Cantaloupe, nectarines, red grapes with cheese, nuts and crackers. Protein smoothies with frozen mixed berries. Vegetarian casserole. Barbecue sandwich made from some of the pork shoulder.
OOh I have been thinking about pancakes lately myself! I have two over ripe bananas that are just waiting for some pancake batter - ha! This week I think I was under $100 for groceries, and that included some fillers I picked up yesterday. I ate:
Monday - kitchen closed - I had half a turkey sando and a protein shake
Tuesday - Taco Salad
Wednesday - Bun-less Burger with a serving of mac and cheese
Thursday - Cranberry Pecan Turkey Salad Lettuce wraps
Friday plans - Rotisserie chicken, broccoli, a small potato
Saturday and Sunday - kitchen closed, but as per usual, I have some easy meals planned to take to work.

Saturday: It was relatively cool, so in the morning I stewed a bag of lamb shanks and stew pieces I had pulled from the freezer. They were still frozen when I put them in the pot with aromatics, so I pretty much just made broth and then pulled all the meat off. I used that meat and a little of the broth, plus spices and yogurt and cornstarch, to make a saucy meat to put over rice.
Sunday: My plan had been tuna/salmon patties, but I was out of breadcrumbs and was too lazy to make more. So instead I used the leftover rice with a can of tuna to make something like tuna-noodle, but with rice and in a skillet. For our Sunday dessert, we had three kinds of ice cream, two kinds of cookies to crumble up, and chocolate syrup, so everyone chose their combinations to make sundaes.
Monday: First day of work/school. I had saved a bag of pork shoulder pieces just for this, so all I had to do was fry them with spices when I got home from work. I added bread and butter and homemade dill pickles to complete the meal in the easiest way possible, because I am always exhausted on the first day of school. We also had celebratory ice cream, but not sundaes.
Tuesday: I made rice with the rest of the lamb broth. My husband had the last of the stewed lamb, two children had the last of the fried pork, and two children had canned beans with their rice. We had raw radishes and green beans (from the garden, yay!) for vegetables, and some lemon jello I had made for a sick kid but that everyone else ate because he didn't want it.
Wednesday: We stayed at school between the end of the school day at 4 p.m. and Mass for the Assumption at 5:30 p.m., since school and church are in the same village and it's not the one we live in. I brought everything to make sandwiches, plus store-brand Cheetos. And then when we got home around 6:30, I made more sandwiches and put out cottage cheese and cherries.
Thursday: Pasta with pesto and chicken for the children, sausage and potatoes for the adults, cucumbers with salt and vinegar, plus watermelon, for everyone.
Tonight: I have one child at the moment who can't stomach many kinds of protein, but he can eat chicken. So I shall make chicken. I bought some drumsticks and have to bake bread this afternoon, so I'll most likely season the drumsticks and shove them in the oven with the chicken. I have a lot of leftover rice, and lots of cucumbers. Since I'm not working today, I might make a real cucumber salad with sour cream and shallots, as opposed to just cutting them up and throwing them on plates. And we have a LOT more watermelon.
@kristin@going country, we have a friend who can't eat red meat or pork. Suffice it to say he eats a lot of chicken and seafood.
That's the perk of being the chef 😉

Tonight will probably be frozen pizza because I plan to can as many peaches as are ripe today, which will take most of the afternoon
Chiquita has some beautiful eyes.
Spent $143.85, but a good $30 was canned tomatoes/beans/etc that was half off so I stocked up for winter.
Saturday: Ate out for lunch at a place we hadn’t tried before. Found out they have a great rueben sandwich.
Sunday: Breakfast for supper…pancakes/sausage/fruit
Monday: fried chicken breast/mashed potatoes/slaw
Tuesday: taco bake to use up some canned items we didn’t really like (creamed corn went in the cornbread topping, some flavored black beans…rinsed them and added to the taco meat, also added some hatch chilis I found among my canned goods). Was an easy meal to just mix and bake after going into the office that day.
Wednesday: BLTs and salad
Thursday: bbq poutine (pulled pork over potato wedges with a bbq/cheese sauce). Salads
Friday: grilling some chicken breasts and not sure on a side dish yet.
@Marlena, don't know where you live but getting to be the time of year for me to be stocking up for winter (on the mostly non-food front). But I do put a tiny bug in better half's ear re: having a bit more food on hand. I've fought the battle "if you check expiration dates, you'll find that you don't need to consume all X number of canned Y foods as fast as you can". I know the formative years event that made him this way but have yet to help him to get past it. I used to buy a flats of 12 cans of tomato etc. soup when the kids were growing up. He seemed to make it his mission to use up 24+ cans of soup in 24 days.
Home now and easing back into a routine of sorts. WWA:

Sunday - beef kabobs, sweet potato fries
Monday - Greek village salad
Tuesday - garlic noodles with beef and broccoli
Wednesday - air fryer jerk chicken drumsticks, Caesar salad with leftover focaccia croutons
Thursday - frozen deep dish pizza from Costco (surprisingly good)
Friday - out for dinner and a show (DS’s band playing at a local pub)

WWS - A ridiculous amount of money for 2 people. $150 at Costco, $120 for dinner out, $10 at Publix, $35 Trader Joe’s, and $9 at Whole Foods for a total of $324.

Saturday - ? I can’t remember. It must have been mundane.
Sunday - My great nephew turned 13 this week and he was in town visiting my SIL.
He wanted to go out to dinner so we let him pick the restaurant. It was not a good experience food or service wise, but he had fun. We did buy starters for the table, but my $30 entree was gross. I have gotten to the point where I prefer not to eat out.
Monday - DH was out of town. I had cottage cheese and a fresh peach. I should’ve eaten my restaurant leftovers, but I didn’t. I didn’t enjoy them the first time. I don’t know why I expected to eat them later. I eventually threw them away.
Tuesday- I made some Gluten-free ravioli
Wednesday - Roasted chicken, rice, and a spinach/peach salad
Thursday - Shrimp, roasted corn on the cob, and a berry-spinach salad. Ice cream for dessert.
Friday - I’m going to dig through the freezer and see what I can find. I try not to let too much accumulate during hurricane season. If a storm comes through, we may lose electricity I’ve lost an entire freezer of food before.

@Bee, "I didn’t enjoy them the first time. I don’t know why I expected to eat them later. I eventually threw them away." This perfectly describes why some don't like leftovers. If not good the first time, likely not any better the second time. Unless you can "repurpose" it.

@Rose and @ Selena, I was afraid to feed them to Rescue Pup. I didn’t want to upset her stomach. The food sure upset mine the first time. I think they were beyond saving.
@Rose, my mom said she made some type of apple dessert when she and dad were first married that was so bad even the farm dog wouldn't eat it.
@Bee, My hounds never get upset stomachs. I think scent hounds' stomachs are lined with lead. This morning, my own rescue puppy decided to pick a jalapeno from the garden and munch on it a little. Sigh. It's mostly intact, though.

Tuesday: I made hard boiled eggs and miso soup with rice noodles. I may have sliced a cucumber. I tried a new recipe, Chinese-style steamed eggs. I loved it, my daughter refused to try it.
Wednesday: Mr. B was out and my mom came over, so I defrosted some beef and made well-done broiled burgers and carrot sticks.
Thursday: I worked overnight and my supervisor bought pizza, which gave me a stomach ache.
Friday: Mr. B will make fish with vegetables and challah.
@Meira@meirathebear, also, since Kristen posted about eating cottage cheese, I've been having cottage cheese on toast for breakfast daily. Consider me influenced lol.

LOL! Same here.....I'm stopping to buy some cottage cheese on the way home from work today, so I can eat it with the cherry tomatoes, fresh basil, and (to be) freshly ground pepper I have at home. 🙂

WWS: $580 at Kroger. I console myself by reminding myself that breaks down to $13 per person, per day and that is cheaper than most single meals eaten out.
Saturday/Sunday: homemade pizzas, and very good they were, too.
Monday: I made chicken drumsticks and crispy wings, brown rice and roasted broccoli. I oversalted the broccoli because Selective Eater likes it salted, but I'd forgotten I already salted it so I salted it twice. Poor DH said he felt his blood pressure rising as he ate it. The kids didn't care, obviously. Next time I'll just tell them to salt it before they eat it, if they want salt so bad. I also made a cauliflower/carrot/red onion roasted medley that was delicious. These days I prefer cauliflower to broccoli.
Tuesday: My TEAS test day, DH cooked burgers and hot dogs outside. He cooked enough burgers for stew the next day, bless him.
Wednesday: Hamburger stew, mac and cheese for Selective Eaters.
Thursday: Tacos after cat shelter night. I was glad to see some of our favorite cats getting adopted. It's a no-kill shelter, so some of those cats will be there for the duration. We saw a miniature Clark!
Friday--tonight DH is making his famous fish burgers, i'll make some garlic potatoes. Clark will enjoy the juice from the cans and then toddle off for a food coma nap, per usual.
@Karen A., yes comparing a per person cost to what a meal costs dine out (including Mickey D's and other "fine" dining establishments) is the right thing to do. And you have more control over the quality and safe cooking of the food.
@Selena, Indeed! Having once caught norovirus (or rotavirus; some nasty gastrointestinal bug) after eating at Burger King, that ran through the whole family like wildfire, I am doubly shy of restaurants. And our homecooked food is pretty healthy compared to restaurant food.
At least as seen in these photos, Chiquita and my oldest have the same color eyes. We've referred to her as having "cat eyes" all of her life.
Last week I spent $136 and change for groceries, this week I will probably pick up an item or two, but that should be it.
Like Bee, I am not putting a lot in my freezer until we get farther through the hurricane season.
WIA: I've struggled to get back on the normal menu planning train and sticking to it. Hurricane Debby didn't help with that. This week I decided to try a couple of international recipes again and get motivated.
Not international, but I had a chuck roast in the freezer so I cooked it in the pressure cooker with lots of carrots, onion, mushrooms and celeriac. I had this three times plus lunch. The roast wasn't large, but I really loaded it up with vegetables.
I had pan-grilled fish with asparagus and something else, but I forget what.
I made "pastasalat" with cassava pasta. I tried the bell peppers in my salad and had no reaction, so they are, thankfully, back on my menu.
I made Königsberger Klopse, which is meatballs in a creamy caper sauce. I had some zucchini to use up, so I served that on the side, which is not traditional, but I wasn't going to let the zucchini go bad and I didn't have potatoes anyway. I had this twice, plus lunch.
Tonight is probably super easy - eggs, maybe.
@JD, "Zucchini to use up" is the Song of the Summer. NYT just published 22 zucchini recipes as a public service, and I printed out every. single. one.

So very true. A friend at work has been bringing in zucchini to share with everyone. The really BIG zucchini, as well as overgrown cucumbers and a watermelon that split in the garden, she gives to a work friend who's husband raises chickens.
@Liz B., I've warned the neighbors not to leave the windows down on their parked cars unless they want "extra" zucchini suddenly appearing in their back seats.

Friday: Chicken Gnocchi Soup. I didn’t feel like cooking and I needed to go to the grocery store, thankfully I had everything for this on hand.
Saturday: Unstuffed Bell Pepper Casserole. We had an overabundance of green peppers in the CSA box this week and this was a great recipe to use them. I didn’t love it, but my boys liked it. I’ll look for another recipe similar to this one because there will be more green peppers coming!
Sunday: My husband’s aunt came over and he wanted to recreate one of his favorite childhood memories with her so we made French Bread Pizzas and watched Bedknobs and Broomsticks. The movie is a favorite of mine too and we had a fun time singing along!
Monday: Sheet Pan Chicken Thighs with Spicy Corn and roasted broccoli and cauliflower
Tuesday: Meatloaf, mashed potatoes, Caesar salad
Wednesday: My son requested Black Beans and Rice on our way home. This was an easy yes!

I thought it might be interesting to write about what I will eat on my 16 day backpack around the Tahoe Rim Trail. I just got all my food vaccumed sealed and organized yesterday.
The trick to planning food is to understand I have to eat exactly OPPOSITE of how I eat on my food plan. I need the most calorie dense food possible to minimize weight yet insure that I get the proper nutrition. My Fit Pal is a wonderful resource. After compromising between smart food and food I like ( it is 16 days!) I decided on one menu for everyday. I am pretty good with redundancy. The only variable will be the dried backpack commercial dinner I purchased. So here is the menu. It weighs a little under 1.5 pounds for the day, has over 70 grams of protein and26 grams of fiber, and is about 2400 cals.
Breakfast:
Homemade Coffee mix of Starbucks Via, Keto Creamer and 2 t. of sugar.
Quaker instant Oats with flaxseed and almonds.
Lunch and Snacks:
Stroopwafles with peanut butter on top
Nature's Bakery Fig bar
Homemade trail mix with dried coconut chunks, banana chips and macadamia nuts.
Beef jerky
IV Fusion drink mix
Dinner:
Expedition dried meal. Day 1 is Pasta carbonara.
One of the great things about through hikes is that is one of the few times in my life that the mundane decisions of what to eat, what to wear, and what to do are already decided. It really allows me to be in the moment with a quiet brain in one of the most beautiful places in the world.
@mary ann, so fascinated by your hike & would love to know! Do you journal anywhere? If not, would you be willing to share a post hike update? Maybe with pictures? I've wanted to do this hike forever!!

@mary ann, my son has done many long distance hikes. He complete both the AT and the PCT. I have always done his resupply. It is difficult to get nutritionally dense, calorie-filled food that is not too heavy to carry. One suggestion - carry something like Liquid IV or Mio on your trip. It keeps your electrolytes in balance and there are time when your water has high mineral content. These drink additives help mask that flavor.
Chiquita is so cute! We are empty nesters now that our daughter moved out of state to attend law school so we are adjusting. Things we ate:
Costco rotisserie chicken that also became chicken salad and chicken Alfredo pasta with peas
Bratwurst with sauerkraut and potato salad
Melon with prosciutto, Brie with bread and apples
Chicken Sausage with air fried potatoes and salad
I’m working on next week’s meal plan because we flew by the seat of our pants this week and if we keep doing that we will waste a lot of food. I hope it gets cooler soon so we can start eating “fall food”…this summer has been extra hot and seems like it has lasted forever.

Setting the stage: I have a 17 year old & an 18 year old. DS18 has a girlfriend who regularly eats with us, and they both randomly appear & disappear for meals, and also often bring unexpected friends. As a result, meal planning is...difficult.
We shopped at three stores this week:
-Local grocery store = $70.41
-Trader Joes = $33.14
-Costco = $107.47
-Lunch from Subway for two (using gift cards)
I don't really track on a weekly basis, but this week was easy. We spent $211.02
We had:
-Chicken marsala over pasta
-DH grilled chicken & made Persian rice. We had this x2, and DH & I had it for another dinner as well. DS18 & GF showed up randomly, so luckily I had some Trader Joes options I could quickly add in for them.
-Garlic beef & broccoli noodles x2
As for tonight, I know I need to use a zucchini. Other than that, it will be something from the freezer. Maybe I'll see if we have any grilled burgers available.

WWA:
Fri: frozen mixed veggies, open faced tuna melt sandwiches on brioche rolls topped with pickle slices, spinach and artichoke dip with tortilla chips.
Sat: sliced cucumbers, grapes, hotdogs in brioche buns.
Sun: salad (mixed greens and peach vinaigrette), jasmine rice, sweet and spicy crispy tofu with vegetables.
Mon: salad (mixed greens and peach vinaigrette), el quesadilla grande (canned chicken, black beans, salsa and shredded Mexican cheese wrapped in large tortillas and baked between two sheet pans) topped with sliced tomatoes, diced avocado, salsa and sour cream.
Tue: salad (mixed greens, peach slices and peach vinaigrette), sliced tomatoes, brie sourdough bread ring, and fried eggs.
Wed: salad (mixed greens and peach vinaigrette) and I made chili with mostly farm share vegetables: 10 shallots, 1 garlic bulb, 8 tomatoes, 6 tomatillos, 2 eggplant, 4 bell peppers, and 5 poblanos. The only non-farm share ingredients were ground turkey, 2 cans of beans and some spices. We topped it with slices of sourdough bread, shredded cheddar cheese, diced avocado and sour cream.
Thu: sweet corn, leftover chili and homemade chewy sourdough rolls.
Tonight: Breadrick (our sourdough starter) is awake after a stint in the fridge while we traveled, so focaccia is back on the menu, and we will probably have sliced cucumbers and tomatoes.

I have yet to go to the grocery store this week but I anticipate a small run to include milk, bananas, some fresh veggies and maybe some bread. We have everything else we need in the pantry and freezers.
Saturday: I made a large batch of ground turkey taco meat and we ate tacos that night and used the remainder for salads & tacos during the week.
Sunday: Homemade chicken noodle soup with protein pasta & veggies and sourdough bread.
Monday: leftovers
Tuesday: Roasted pork tenderloin & roasted potato wedges, yellow squash and onions, cantaloupe and blueberries for dessert
Wednesday: Leftovers for some, snacks on the road for me to see my newborn great niece
Thursday: I skipped dinner and went to bed while the remaining three had Jersey Mike's sandwiches for dinner
Friday: I laid out boneless chicken breasts so I will bake those in some manner and add a couple of veggies - something easy for a Friday night for sure.
About all we've had this week is munching on leftovers, cheese, crackers and garden produce. The one dinner we've had is my daughter's homemade kung pao with airfried chicken and rice, so to bulk out this post, this is how she makes it. Try not to sub too much because really, the right ingredients are needed for the best flavor. Don't sub sherry for the shaoxing rice wine--it makes a big difference. You can add more or less Chinese dried chilis if you like. We like our Chinese hot.
Saute minced garlic (4 teaspoons), 1T freshly grated ginger, the white parts of 3 scallions and dried chilis (about 12) in some oil (1/3 cup), deglaze with shaoxing wine (2T), add chicken broth (1/4 cup), 1 T doubanjiang, 2T soy sauce, 1T black vinegar, and turbinado sugar (about 2t), let it simmer and reduce a bit, add 1T cornstarch to thicken and drizzle sesame oil at the end.
Serve with anything: rice, noodles, vegetables, chicken, pork. Add peanuts and the green parts of the scallions on top.

WHE (what he spent) - $189 between the butcher shop, three grocery stores, and a local farm stand. He's quite at home in a grocery store and does all the cooking. He does watch prices and takes advantage of sales. He rarely purchases non-edibles, that is my department.
Fri - Fried spaghetti w/meat sauce and added veggies - foraging friends brought it the night they foraged but already had plans
Sat - Freddy’s - cheese burger and fries
Sun -Mexican - mixed fajitas take out as I worked the night shift Sat night/Sun morning
Mon - Leftover fajitas and spaghetti - we both ate some of each
Tue - Cheese burger with avocado/onion/dill pickles/mustard with oven crisped homegrown potato, home made pizza for him.
Wed - Cheese burger and a salad with red peppers, mushrooms, and onions. Rest of the pizza and salad for him.

Fri - Crusted tilapia with home grown potatoes that were boiled then baked with butter and garlic salt
Cleaning home grown red potatoes can be a challenge as their skins are so thin. And yes, I am unashamed red meat lover as you can tell.
@Kristen - cottage cheese on a baked potato is really good. A chili (meat and beans chili) or taco stuffed potato is also an easy meal.
@Selena, Or try Jackie Onassis' favorite lunch when she was a book editor: a baked potato topped with caviar. Probably helps to have Onassis' money to spend.
@Rose, I'd pass on caviar. Likely salty and the visual isn't particularly appearing to me. Looks more like something I'd step on in my yard lol.

We had salad with grilled chicken on top every night last week except Thursday. That night we were out with friends at a Mexican restaurant so that meal was a yummy change from salads.
Tonight, Monday, we’re having baked potatoes with various toppings. Tomorrow when one of my sisters comes for dinner, we’ll have crock pot beef, Brussels sprouts and potatoes.
