What I Spent

This week was heavy on the leftovers! Which is a little unusual for me. 🙂

This week, I spent:

  • $95 at Aldi

Annnnnd that was it! Also....zero takeout for us this week.

What We Ate

Saturday

I had an extremely productive day in many ways, but the productivity did not involve cooking. Ha. I just baked a frozen pizza for us.

Sunday

I made a Cook's Country recipe for what is basically a chili over cilantro lime rice, topped with a cilantro/lime crema.

I ate a peanut butter sandwich on a dinner break at clinical (I have a later shift for peds. BOO.) and I think Zoe ate some leftover chicken from Monday.

Wednesday

Chili leftovers.

Thursday

Zoe was out with a friend for some Halloween fun, and I ate the last of the chicken tikka masala.

Friday

I think both Zoe and I will be home tonight and I think neither of us has a pressing due-in-short-order school assignment so, perhaps we will do some takeout and Gilmore Girls. 🙂

  1. WIS: I spent all over the place this week. My husband got pizzas for dinner when I got back late from visiting a friend and I spent about 104 @Giant for a bunch of clearance items, but I was overcharged so I'll have to go back for a refund tomorrow. I also spent about 78 @Aldi and then about 50 at two stores for Halloween treats for my kids plus another 11 on a take out pizza for my coworker. Well, some weeks are just like that. I think this week I might skip shopping.

    WWA:

    Fri: salad and focaccia.

    Sat: salad and Halloween shaped pasta with pumpkin chipotle sauce. Did I find the pasta at Aldi for .26 cents a bag? Yes. Did I buy several bags? Yes, yes I did.

    Sun: this was the night I got home late so we had takeout pizza.

    Mon: salad, baked potatoes stuffed with creamed spinach, leftover Korean barbecue from lunch out with my friend.

    Tue: salad, roasted honeynut squash, homemade bagels with cream cheese, smoked salmon, olives and capers and pumpkin cake roll for dessert.

    Wed: salad, yummy mummies (hotdogs wrapped in crescent dough) and chocolate pudding pie.

    Thu: my parents visited for Halloween and we had Halloween shaped pasta with pumpkin chipotle sauce and homemade bread sticks.

    Tonight: focaccia and salad.

    1. @AFVirginia, aka as pigs in a blanket. An occasional, not considered healthy by dieticians but better than a lot of foods, treat.

  2. Those recipes sound good!
    Friday and Saturday have left my brain completely. Probably take out on Friday.
    Sunday: pan fried cod with rice and veggies
    Monday: chicken gyro rice bowls with roasted vegetables, hummus, and avocado
    Tuesday: Asian tofu with veggies and rice
    Wednesday: salmon with roasted carrots and roasted potatoes
    Thursday: grabbed some fried chicken with my grocery pickup and we had that with salad for the adults and fruit/cucumbers for the little before trick or treating
    Classic small child moment: there was a brief tantrum because my little is dressed like a cat for Halloween and so OBVIOUSLY we should have had fish and milk for dinner. Where do kids get these ideas!
    Friday: good question! I am in the mood for mashed potatoes and corn, so probably that and something else

  3. I like the idea of "cook once, eat twice" and all of your dinners sounded good to me! This week at my house:
    Monday - kitchen closed, and I think I ate pasta with chicken and broccoli
    Tuesday - Chicken Pad Thai (chicken, stir fry shredded veggies, a bit of ramen, some spicy Bangkok peanut sauce)
    Wednesday - Grilled Pork Chop, (freezer) baked sweet potato, some sauteed onions
    Thursday - Pizza Rolls, Stuffed Crust Pizza, chopped salad, and chocolate chip cookies to celebrate my new 29 year old who was born on Halloween!
    Friday - (crockpot) Pulled Pork, half an acorn squash, rest of the chopped salad
    Saturday and Sunday - kitchen closed, but I will take B, L, and D with me to work!

    1. @Gina from The Cannary Family, "cook once, eat twice" is a great menu plan. When I was first married, I made a lasagne thinking I'd be off the hook for a week. My husband looked at the pan and said, "Oh good - here's lunch for the rest of the week!"

  4. Saturday: Most of the family was at the village Halloween celebration, at which they had hot dogs and baked potatoes with many toppings. Plus lots of sugary things, of course. I stayed home with the sick child. He wasn't eating. I made a skillet meal for myself that included a leftover pork chop, roasted carrots, and sauerkraut.

    Sunday: I made a pork stir-fry that included the some of the last garden harvest in the form of green beans, peppers, and beet greens. Rice with that, of course. And no Sunday dessert, because no one needs any extra sugar the week of Halloween.

    Monday: I was at a volleyball game with the cheerleader, so I left tuna salad at home for the boys to have sandwiches. And then I made a tuna melt for the cheerleader when we got home.

    Tuesday: So sick. Three of the six of us were not eating. Luckily, I had a container of chili in the freezer and a bag of tortilla chips my sister left here, so that was dinner for the three younger ones.

    Wednesday: The three of us who were sick were kind of able to eat, but not up for anything digestively challenging. So I made plain hamburgers and rice for us. I had managed to harvest the rest of the basil and make pesto in anticipation of an overnight freeze, so the three younger kids had pasta with pesto. They also had cucumbers with ranch. Which was the first vegetable they had had since Sunday.

    Thursday: Still sort of shaky with eating, so I used my frozen chicken bones to make a chicken and rice soup. That's what we all ended up eating when we got home kind of late from trick-or-treating. I added cheese to it for those who could handle that.

    Tonight: I have leftover chili and rice, so I think I will combine them in a skillet with cheese. Those of us who are still being careful with food can have the soup.

  5. Hmmm....

    Thursday: red chili with fresh pineapple on the side. I ate too much pineapple.
    Wednesday: a wild rice, chicken, mushroom and cream sauce casserole with sliced almonds on top. It was delicious. Plus salad.
    Tuesday: sausage & pepper heroes.
    Monday: Spaghetti.
    Sunday: steak stir fry.

    also no idea today. Pizza, maybe?

    WIS: Local grocery store: 19, Aldi: 34, Amazon: 21 (case of individual Popcorners for lunches)

    WIA:
    Friday: Pineapple pizza
    Saturday: I don't remember at all
    Sunday: BBQ chicken thighs, baked potato
    Monday: Chicken and cheese enchiladas, cornbread
    Tuesday: Panera (I work 8-5 and have class from 6-9 and Panera is right on the way).
    Wednesday: Leftover enchiladas, cornbread
    Thursday: more enchiladas, cornbread
    Friday: most likely pineapple pizza!

    Typing this out makes me realize I need to start getting more veggies!

  7. This week was my off week for shopping, so WIS = Nada

    WIA - I veered off my menu a bit because I took receipt of the third of a hog.

    "Green soup" - soup based on the broth from the leftover chicken carcass, with the last of the meat added in along with green onions, zucchini, regular onion, chopped kale, rice and chunks of avocado. I had this two or three times, plus lunches. I suppose it should be called green and white soup.

    Lamb chops with baked sweet potato and fried zucchini n' onions. I had this twice.

    Boston butt steaks twice, with various sides like spinach and mashed celeriac and the last of the beet slaw. I finally have a way to eat beets in hot weather - raw beet slaw.

    Tonight remains to be seen. I will shop today, so I might buy some fish or something. A fried egg sandwich might do me, though.

    1. @JD, I'm a big fan of the fried egg sandwich. DH and I bought one apiece at a long-ago British outdoor antiques fair where the rain was lashing down. Under those conditions, I'd have been grateful to get it no matter how it was cooked--but it was from that vendor that I learned the trick of breaking up the yolk during the cooking process so that the egg comes out looking like a yellow-and-white marbleized masterpiece.

    2. @A. Marie, But then the yolk doesn't ooze.

      I know lots of women who hate the word "moist," but gotta say, "ooze" is worse.

      I love fried egg sandwiches. NYC/LI is known for the "BEC" on a roll: bacon, egg and cheese.

      Haven't had one in many years. That, and a potato knish. Food memories....happy sigh.

  8. It seems that leftovers are our reward for launching 4 kids and having an an empty nest! WWA:

    Saturday - leftover chicken rice casserole
    Sunday - pot roast, gravy, mashed potatoes, corn, sour cream raisin pie
    Monday - leftover pot roast etc
    Tuesday - sandwiches
    Wednesday - chicken and sundried tomato pasta
    Thursday - leftover pasta
    Friday - maybe hamburgers

  9. WIS: $20 at Tops (on two trips there with my next-door neighbor) and $27 at Ollie's. My purchases at Tops included some good Reduced for Quick Sale meat finds: a pound of beef/pork/veal meatloaf mix, a whole Springer Mountain chicken, and two family packs of chicken drumsticks, for $11 and change.

    WIA: Chicken drumsticks (natch!), plus a shrimp curry earlier in the week (which enabled me to use up some aging cauliflower, since about the only way I can eat cauliflower is in a curry).

      My most recent way of cauliflower is oven roasted cauliflower with a pesto-ish red sauce:
      Cook a head of cauliflower until nearly (but not quite) tender, then cut in quarts, next slice in inch thick chuncks, then... put on a baking sheet and sprinkle with olive oil, cumin, kosher salt and pepper. Roast for 30 mins on 200celsius.
      Serve with sauce made from roasted bell peppers/ some tomato paste/ ground walnuts/ olive oil/ cumin/ spanish roast pepper powder. Blitz the sauce ingredients. Delicious with the cauliflower and any leftovers of the sauce are great on toast.
      We eat a head of cauliflower with three adults and have no leftovers of that.

    2. A couple days ago, the NYTimes food section's newsletter advertised "Slow-Cooker Cauliflower, Potato and White Bean Soup." OK! If I don't tell my son about the cauliflower. I adore it and have since I was a little kid.

  10. WIS: $142, divided between Aldi and Food Lion.
    WWA: Leftover spaghetti. Slow-cooker boneless pork ribs cooked in barbecue sauce in the crock pot. Salads. Potato-red beans-Italian sausage soup. Gluten-free bread for DH and rye crackers for me.

  11. WWS - spent $84.00 and $100 on take out.

    Saturday - This was the night of our neighborhood block party. We brought a dessert. They had Puerto Rican food which was wonderful.

    Sunday - DH and I took care of the littles all day. We had a snack-y dinner when we returned home.

    Monday - I made a pot of “clean out the refrigerator” veggie soup and cheese toast.

    Tuesday - A repeat of Monday with leftover soup

    Wednesday - Chicken taco bowls with black beans, corn, tomatoes, etc.

    Thursday - Surprise! 7 people and 2 kids for dinner. Takeout family meal from the local barbecue restaurant.

    Friday - I don’t know. I’ll dig around in the refrigerator and freezer and put something together.

    Sunday: chili lime chicken kabobs, herbed angel hair noodles, green beans
    Monday: lasagna and Italian Bread
    Tuesday: hubby had homemade flatbread pizzas ; i had lasagna leftovers
    Wednesday: grilled sausages, green beans, chicken fried rice
    Thursday: subs and chips
    Tonight: some sort of takeout after we do leaf cleanup for the 4th and final time within 10 days.

  13. I was happy to see chili on your menu – I’m making chili for dinner tonight and I forgot to defrost the beef! Crisis averted, thank you!

    Friday: (Las Vegas) My friend and I went out for something fancy at Mr. Chow. We split Mr. Chow Noodles and Fiery Beef.

    Saturday: (Las Vegas) We kept it easy and picked up burgers from Bobby’s Burgers.

    Sunday: I got home well after dinner so I picked up an Italian sub at the airport.

    Monday: Sheet pan Andouille sausages with potatoes, peppers, onion, and broccoli.

    Tuesday: Birthday dinner for my son – Pizza! If anyone has watched Netflix’s Chef’s Table: Pizza, we ate at Ann Kim’s Minneapolis pizza restaurant. The pizza is perfect and the ice cream with olive oil is confusingly delicious.

    Wednesday: Leftover soup that my husband made Sunday night.

    Thursday: I had a house full of teenage boys so I made a big pan of mac and cheese
    which I paired with pizza rolls, fresh veggies, and grapes. My husband and I had turkey/sweet potato burger patties to go with the mac and cheese.

  14. Saturday - takeout fish n chips

    Sunday - chicken with sour cream gravy for husband and kids, sweet potato and black bean chilli for me, bread dumpling, steamed broccoli and carrots

    Monday - turkey and mushroom stroganoff

    Tuesday - coconut rice pilaf with tofu

    Wednesday - leftover coconut rice pilaf fried in oil to make it more like fried rice, Trader Joe’s orange chicken

    Thursday - Halloween snack night! I put out a fruit tray, veggie tray with hummus, cheese and crackers, shrimp cocktail, 5 layer dip and chips and deviled eggs. Also plenty of candy of course.

    Friday - kfc bowls, with mashed potato, chicken, gravy, corn and cheese

    1. @LB, I like the idea of a Halloween snack night. I know that dinner on Halloween always has to be fast, but I like the thought of them being able to come inside between trick or treaters and grab more fruit or veggies.

  15. Last week at this time, I had a cobb salad on a flight back home. It wasn't as bad as I'd imagine an in flight cobb salad would be, minus the chicken.

    Other meals included:
    -DH made grilled chicken & rice for a large group (parents, uncle, DS17 & two of his friends + me)
    -DH grilled burgers, but we were then just down to the two of us + DS17 & my mom
    -Leftover chicken & rice
    -Leftover burgers
    -Fajitas from the freezer
    -Out for Halloween (our tradition). We shared a salad + prime rib sandwich

    I still need to figure out tonight, but I'm thinking of a leftover burger for DH (over salad) & some ravioli for me.

  16. 127 spent at Sam’s. I love the scan and go feature.

    Sunday. Homemade pesto baked salmon. Rice. Steamed broccoli.
    Monday. Aldi carnitas pork roast in slow cooker over lettuce rice and chopped peppers
    Tuesday. Bbq flatbread pizza with leftover carnitas meat
    Wed and Thurs. baked chicken and rice and broccoli dish.
    Friday. Frozen pizza with bagged salad. Our version of take out.
    Sat. I am making some kind of sausage based soup.

  17. Well we were visting family in Italy, then traveling, so it's been a different kind of week.
    I did however try making mayo with my immersion blender yesterday and was surprised at how easy it was!
    Since cooking my own food again, we had:
    - Baked chicken legs (on sale), mashed potatoes and salad
    - Black eyed peas and rice

  18. WIS: I have no idea and that scares me a little. I don't remember multiple trips to the grocery store so hopefully it won't be too bad.
    Saturday: turkey tacos with crispy shells baked in the oven and all the toppings
    Sunday: Chicken noodle soup with homemade bone broth
    Monday: Leftovers
    Tuesday: Breakfast for dinner - pumpkin protein pancakes, cheesy scrambled eggs, breakfast pork chops and home fries.
    Wednesday: Japanese take out for some and Jersey Mike's sandwiches for others
    Thursday: ChickfilA for some, Zaxby's for some
    Friday: Spaghetti
    I am tired this week and the amount of takeout referenced here shows that. Giving myself grace as all were fed and this is not a regular occurrence.

  19. Two things:
    1. I am *very* intrigued by your cottage cheese/frozen banana/frozen strawberry thing. Is it more like a smoothie or ice cream or what? (We have a lot of strawberries right now.)

    2. I love that you're on peds. Every time you mention it, I think of how nice it would be to have you as one of my kids' nurses. One of my kids gets pretty anxious with medical things, so the person we get is a Very Big Deal. I have no doubt that you are a gift to these parents and kids.

    Now for food...
    Saturday - We were on our way home from a couple of nights at a campground and got Steak N Shake with my brother for dinner. This was my kids' first Steak N Shake experience, which was fun. My husband and I haven't really been there since college.

    Sunday - Pizza and breadsticks and a movie!

    Monday - Chicken sandwiches, tater tots, and peas

    Tuesday - A chicken/rice/veg combo

    Wednesday - Burgers, pineapple, and yellow peppers

    Thursday - Venison roast with carrots and potatoes with some leftover mac n cheese from work

    Friday - My husband is going to take my 5th grader out to dinner and I think I'll keep it simple for us at home. I just got a bunch of chicken, so probably chicken with fruits and veggies.

  20. I spent $59 at Kroger and $39 at Aldi, plus $152 at Amazon, most of which was for pet and household items - lots more than usual for me, but I'm well stocked now and shouldn't need to buy anything for at least 2 weeks.

    This week I had gluten free focaccia topped with olives, ham and potato soup with gluten free biscuits, and tortilla soup with crushed tortilla chips for dinner. There may have been something else too, but these are all I can remember.

  21. Saturday - CB, fries, coleslaw for better half
    Sunday - Steak, salmon, baked potatoes - late game for our FB team so no Mexican dineout
    Monday - Pecan crusted tilapia, mashed potatoes
    Tuesday - Grilled marinated chix, left over mashed potatoes, Mex corn bread
    Wednesday - Pancakes, bacon
    Thursday - Fried spinach tortelloni, salad, HM not-over cheesy garlic bread.
    Friday - Grilled Bacon/cheddar burgers, leftover pasta, corn
    Record number of trick or treaters this year - 11 or 12 - hard to count the all the "sharks" in the first group. Better half bought 4 bags of candy - have not quite 2 left and those will be shared on Election Day.
    $91 spent at the butcher shop, not sure how much.

    Monday: Refrigerator Soup (actually from the 3 lb tub that all veggies, meats
    get tossed). Freezer chicken stock, freezer white sauce, green salad
    Told niece's hubby came to learn and the kiddos made homemade
    rolls with some assistance (they are 7 & 4).
    Tuesday: Taco Salad for a crowd & apple slab pie - friends from over the mountain
    visiting, I invited all of their family that lives on this side of the state.
    Wed: Green Salad with chicken, apple, bacon, blue cheese crumbles & spiced walnuts
    Thurs: My parent's 60th anniversary Chicken Fried steak
    twice baked potato, sauteed broccoli and green salad
    Friday: Dia de Los Muertos: Table set: ofreda meal:Tamales,
    Mole, rice, beans pan roasted root veggies, sugar skull sugar cookies,
    Conchas and Cafe de Olla

  23. Question for the Hive Mind: I can't remember if I read it here or elsewhere, but someone mentioned a web site where you can plug in some ingredients you have on hand and get recipes that use these. Anyone? I just scored a late haul of oyster mushrooms after a non-existent mushroom foraging season (very dry in northern New England this year) and I'm looking for several recipes using other things I have in the house. Thanks in advance to anyone whose memory is better than mine!
