WIS, WWA | I made a dumb pork mistake

What I Spent

I made a trip to Aldi, where I spent $86.

Aldi shopping carts

And then the next day, because of my pork mistake (See Tuesday in the section below), I went to Harris Teeter and spent another $32.

I also got a Hungry Harvest box, and it cost $20 instead of $25 because I had a $5 order credit from when something was wrong with a previous order.

So, my total this week is $138.

Which means I am continuing my streak of unusually low grocery spending in January. Yay me!

January Grocery Spending

Week 1: $101

Week 2: $59

Week 3: $138

What We Ate

Saturday

The girls ate Chick-Fil-A while Mr. FG and I got Potbelly, which we ate while watching Law and Order. 🙂

DIY Potbelly Wreck sandwich

Sunday

Local takeout night: we tried a poke and ramen place nearby, and it was good; we'd definitely order from them again.

And I was freshly reminded how much I love soy-marinated eggs!

ramen takeout bowl

The servings were very generous; we all had leftovers for the next day.

And for some reason, we drew cats on the lids of our leftover containers.

Monday

I made grilled teriyaki chicken over rice (a Cook's Country recipe that uses boneless chicken thighs), and we had raw produce on the side.

This recipe makes quite a bit, but the leftovers are really good for lunch. So all is well.

Tuesday (the day the pork went wrong)

Well. I tried to make pork tinga with rice. But I carelessly picked up pork loin, not pork butt at Aldi.

(WHEN will I learn to be more careful??)

By the time I realized this, the pork loin was cooked to chewy oblivion. You can't bake pork loin for two hours any more than you can bake chicken breasts for two hours!

I was pretty frustrated with myself, but I:

  • removed the leathery pork and threw it out (seriously inedible)
  • saved the cooking sauce
  • went to the store and bought a pork butt
  • also bought two bags of ravioli, because pork butt takes a long time to cook

So, we had ravioli and jarred sauce for dinner. And at least I hung in there and didn't get takeout.

Wednesday

I made pork tinga and rice, this time with pork butt. Ha. That worked out much better.

ATK pork tinga
Apologies for the dark photo! This is more delicious than it looks.

We had raw produce and applesauce on the side of our pork and rice.

Thursday

I tried a Cook's Country recipe for brioche rolls and a Cook's Illustrated recipe for smoked and pulled chicken.

Surprise, surprise: raw produce on the side.

smoked chicken

I think I shaped my rolls too flat; they are definitely supposed to be taller than this.

But, this is the sort of thing you learn when you try a new recipe. There's always next time to get it right!

Friday

I'm at the end of the meals that I planned out, so today I need to sit down and plan the next seven nights of food.

I sort of feel like making French bread pizzas tonight, which would be nice and simple.

What did you have for dinner this week?

  1. I was planning on Asian wraps with either ground pork or chicken. Went to store picked up ground pork at 7.99. Realized they had their BOGO sale when I grabbed flyer on my way out. Ground chicken and turkey buy one get one free at 7.99.
Heading back today to pick up the chicken and turkey.

  2. I use pork loin instead of pork butt for pulled pork. I do this by cooking it in the crockpot with apple juice. I wonder if you could cook the pork tinga in the crockpot.

    1. Hmm, maybe the really, really low heat of a crock pot would work? This was a 300 degree oven, so definitely hotter than a crock pot.

  3. Lets see what I remember.

Saturday- Home made beef Barley soup, and pork roll sandwiches at mom dads,
Sunday- home made beef stew, at mom/dads kids had chicken/fries
    Monday-Sausage/peppers/onion/Potatoes, kids had naan pizza
Tuesday- Home made chicken/turkey pot pie. Kids had pasta w/sauce
    Wednesday- Hot dog, tater tots
Thursday- Both kids had practice, me and DD had Panera , dh, ds stopped for something after.
Friday- its going to be between Breakfast for dinner, or fish/ and mac n cheese. going to see what the kids want.

  4. Tonight we're having pan roasted chicken, roasted veggies, and a salad. Our "bubble" friends are coming for dinner for the first time since...who can remember?
Last night we had bbq shrimp tacos with all the sides: rice, beans, slaw
Wednesday I made a big pot of vegetable soup, which we'll have either for lunch today or dinner tomorrow again
Tuesday we had pizza which I accidentally broiled instead of baking! Fortunately I caught it in time and it was still edible
Sunday or Monday we had mac and cheese from the freezer, lima beans, and fresh bread (we call it "country veg night.")
That's as much as I can remember!

  5. Kristen, I really appreciated learning that Pork Loin cannot be subbed in for Pork Shoulder. (I bought 16 pounds of Pork loin during a butcher sale and had thought I might use it in some of my pork shoulder recipes. I figured it couldn't be a big difference and am glad to learn before I made the mistake.)

    1. Yeah, as I understand it, it will not become tender with long cooking, just like chicken breasts will not become tender with long cooking. They just get tougher!

I hope you find a good recipe to use your pork loin in. 🙂

  6. Two thumbs up for saving the sauce. This is why you have an e-course about food waste. 🙂

We had pork a lot this week, too, along with some more-exotic things.

Friday: The fish from our ice-fishing expedition, which we thought were trout, but now my husband thinks were actually a variety of salmon found in that lake. I was thinking the trout looked pretty pink. It was really good, in any case. I just roasted those whole with butter and lemon slices inside and served them with mayonnaise and lemon. Plus some leftover pasta and pesto or mashed potatoes, frozen corn, leftover mashed squash

Saturday: Fish cakes make with the leftover fish (with bread crumbs, egg, mayonnaise, mustard, and dill), leftover pork, rice, mashed squash, green salad with vinaigrette

Sunday: Bull chili using some of the meat I pressure-canned, rice, chocolate chip cookies made my my eldest son

Monday: Bunless cheeseburgers, fried onnions, bread and butter, green salad with ranch dressing

Tuesday: If only I could have shared some of our pork butt with you. My husband bought two packages of pork a few months back that contained two of the absolutely ridiculously large pork butts I have ever seen. It was intimidating. I managed to hack off some of the pork from one of those packages and get the rest back in the freezer--they were already frozen when he bought them, which was incredibly inconvenient given the quantity--and then cooked that for awhile until I could pull it apart and broil it to get it crispy. We also had mashed potatoes, roasted onions, and steamed broccoli.

Wednesday: The kids had pulled pork sandwiches, my husband and I had fried pork, we all had green salad with ranch dressing (I've had a glut of lettuce lately, and I am NOT COMPLAINING)

Thursday: Breakfast sausage patties, leftover mashed potatoes with shredded cheese added, frozen corn, mashed squash

Tonight: I took out a huge package of chicken quarters (are you seeing a theme of large quantities of meat in my kitchen?), which I think I'll poach, then chop into manageable pieces and put in a curry sauce with onions, carrots, and potato. Frozen peas and rice, and Bob's your uncle. (I delight in the randomness of that expression.)

    1. There are only two of us, so we will look a large pork butt (we use the "No Waste Tacos de Carnitas" from Serious Eats) and then freeze in 1-lb portions. This has worked really well for us for nights when you want an easy meal. (We don't make the salsa verde, but save the broth from the carnitas for ramen night.)

      1. I did consider cooking it all at once, but then I realized I didn't have any cooking vessel big enough. Each of the packages had two giant pork butts, so the one package I took out was 22 pounds of meat. I posted a picture of it today, because it was just so ridiculous. This is what happens when my husband is in charge of buying meat. Now to look up that recipe . . .

  7. Saturday: Chicken thighs, sweet potatoes, stuffing. The bummer about this meal was that I baked a little over 5 pounds of chicken thighs and had plans for the leftover meat but all 5 pounds got eaten in that one meal! I couldn't believe it. Were all of the kids having a growth spurt at the same time??? (One kid does suddenly have his ankles showing at the bottom of 2 pairs of jeans.)
Sunday: Pork BBQ sandwiches, grapes, green beans, chips
Monday: Leftover pork BBW sandwiches, fried potatoes, peas
Tuesday: Chicken legs, mashed potatoes and gravy, corn
    Wednesday: Quesadillas, pineapple
    Thursday: Chili, baked potatoes
    Friday: Meatloaf, zucchini, California-blend veggies

  8. Our meals have been sketchy as our son and I have Covid (mercifully we both have very mild symptoms) and my husband cannot cook. (We've tried: he can barely make toast in a toaster.) However, he resorted to a sack of burgers only one night, instead relying on a shopping list of healthy snacks, fresh fruit, cereals, and microwave meals. One night I scrubbed my hands, masked up, put on a clean apron and went into the empty kitchen to make an easy pork and rice dish that stretched to two lunches and suppers. I also scrambled eggs and made toast for our son, who felt a bit worse than I have. It worked out and we all stayed fed.

  9. I really appreciate the moments of silly, shared joy you show us with your kids, like the cats on the boxes. It makes me smile.

I have 3, all younger than yours. Sometimes it’s hard to remember to have fun when I’m in the midst of all the things. Thanks for reminder:)

  10. --Saturday- (Wow that feels like so long ago!)- Chicken tacos with cut up bell peppers on the side
--Sunday- Chicken and dumplings to use up the last of the chicken finally. Apparently it takes our family an inordinately long time to eat our way through three chicken breasts. We ate applesauce on the side because I was lazy and didn't feel like making anything else.
--Monday- Pizza and wings for the game my husband was so excited about. (Supporting our local pizza place!) My husband is a frugal man but he does love to eat pizza during the games he watches.
--Tuesday- Pierogies (frozen from Aldi), with peppers and onions, chicken sausages, and green beans mixed with corn.
--Wednesday- the plan was Cottage Pie to use up some leftover mashed potatoes. I had the meat and veggies all ready to put into the baking dish and then when I took the lid off of the potatoes, I knew something was wrong. They smelled a little off. (I do lose track of time, even with leftovers; I guess I let them sit in the fridge for too long 🙁 ) Luckily I had some Bisquick and so I turned it into Impossible Cheeseburger Pie instead. Since it contained meat, green beans, carrots, and a carb top, I served it by itself.
--Thursday- Crockpot Tortellini Soup. It was a busy evening so I didn't serve anything with it. Which I believe is just fine, since it has lots of vegetables, meat, plus the tortellini!
--Friday- There was a good amount of the soup left, so we'll have that again. I will probably have some biscuits on the side, and some sliced cucumbers or applesauce too, to keep it from being too boring again.

      1. Sarahbeth, I typically put all of my cooking effort into the main dish and and do the easy peasy method for sides .... although I DID chop apples up to go on top of the spinach leaves that I plopped on each plate as a side salad tonight, which for me is kind of a lot of effort. We frequently serve applesauce as a side ... or steamed veggies .... anyway, you are not alone in taking the easy road to get a meal on the table! So far everyone in my family is still alive ....

  11. WWS: $116 WWA:
Sat. Argentine empanadas (made with ground turkey and black beans); cabbage & red pepper salad; avocado; chimichurri
Sun: Take out from local restaurant
    Mon: leftovers
Tues: herb-crusted cauliflower steaks with beans and tomatoes (epicurious - we thought this was DELICIOUS!)
Wed: homemade 3-meat & ricotta meatballs with sauce & pasta
Thurs: Moroccan-spiced spaghetti squash (smitten kitchen); chickpeas sautéed with zucchini, sumac/lemon and toped with feta
Fri: Roasted chicken with herbs & gravy; mashed cauliflower/potato; roasted Brussel sprouts & carrots.

      1. Clearly, our household is not as cool as yours! (But we do have 2 very spoiled cats who would think it appropriate that we do so moving forward....)

  12. Good save on your pork meal! Maybe sometime we should all share meal disasters to give us all a good laugh.

Working backwards: Fri--something with cooked chicken that I pulled from the freezer. Haven't made up my mind yet.
    Thurs--venison chili and cornbread
Wed--Mexican chicken bowl dinner (except we had it on a plate and had a side salad with it)
Tues--Brinner .... egg casserole and muffins and fruit (to use up oops purchase of jumbo eggs instead of large eggs. Why do the packages look so much alike?????)
    Mon--homemade pizza and salad

    1. Egg casserole is a great way to use jumbo eggs! Much more forgiving than a precise baking recipe.

You know what's funny about my pork story? As I was cutting up the pork to put in the pot, I noticed how lean it was. I was like, "Wow, what a nice lean cut of pork butt." lol!

That should have tipped me off...

    2. We also have x-large eggs this week although not by accident. We thought that they wouldn't be that much bigger.

Yesterday's breakfast sandwich proved us wrong when it completely slid of the edges of the English muffin making a mess of the whole thing...still delicious. Won't be in a hurry to buy those eggs again though.

  13. No idea WIS. What we ate:
BBQ Meatballs with au gratin potatoes and peas
    Take-out Tacos
    Grilled Chicken Shawarma Hummus Bowls
Baked Chicken Thighs, Baked Potatoes, Garlicky Green Beans
Marlboro Man's Favorite Steak Sandwiches with Tater Tots and Green Beans
    Chili (I think)

  14. I have a horrible memory with this so I usually don't comment but I'll give it a go:

Saturday-Takeout night to support local, we split a Whiskey Tango Foxtrot burger topped with pulled pork, mac & cheese, onion rings, pickles, and BBQ sauce, housemade chips, and Ranch boneless wings
Sunday-Black sea bass with homemade buckwheat noodles.
Monday-Leftover eggplant w/ saffron rice casserole type dish (???)
Tuesday-Spinach/mushroom stuffed chicken, creamed green beans, and pasta
Wednsday-Delicatta squash stuffed with quinoa, minimal spinach, fire roasted peach bacon bourbon sausage, and some random cheese
Thursday- Leftover spinach/mushroom stuffed chicken and creamed green beans. Sweet potato fries instead of the pasta.

Took me a bit to remember bit I think that's right 🙂

      1. Think like small green flecks. Almost like something like parsley mixed in. I would have put more but my husband made it and thought the small handful of frozen spinach would have gone further. Lol.

        And thank you!

          1. No just the quantity.

However, the spinach in the stuffed chicken was savoy spinach which I had never heard of before.

Its crinkly, curly dark green leaves typically used more in cooking than for eating raw which is prefect for me because I hate raw spinach.

  15. I would like a low-spend month at the grocery store. I've started out well, but this week may blow it.

We had grill-pan grilled steak with potatoes - white for him, sweet for me. That was it. I was tired and got home late.

A long day of housework and errands on Saturday, so it was tuna salad, which I make with a lot of shredded vegetables in it, and sliced apples and pears.

Eggplant Parmesan, to which I added a half-pound of ground beef and some mushrooms. I ate very little of it, as tomatoes and eggplants can give me sore spots in my mouth, but my husband had two helpings. We had a vegetable on the side, whatever it was.

The rest of the ground beef went to hamburgers the next day, with bun for him, without for me, cole slaw, and chips for him.

Thawed Christmas ham leftovers, roasted red and golden beets, and sautéed zucchini.

I pulled leftover smoked pork butt from the freezer and cooked it in a sauce of balsamic vinegar, blackstrap molasses, a little water and a lively AIP-friendly spice blend. Then I shredded it and we had it with leftover cole slaw and something I'd been craving again since Thanksgiving -- cranberry sauce.

Last night I got home late again, so I made salmon cakes with a crushed-pork-rind and cassava flour crust, plus sliced raw veggies and homemade dip as the side. Note - the salmon cakes do NOT taste like pork rinds, but they do get a nice crisp crust.

  16. In no order....
    Jersey Mikes Yum!
Tacos, nachos & corn, veggies on the side.
Marinated grilled chicken, noodles and cauliflower with mushrooms.
Beef roast, taters and carrots. The beef was so tough it required a jack hammer and I cooked it low and slow, about 5 hours. Usually they are fork tender.
French toast with homemade bread & applesauce. I used an Oatmeal bread recipe and it was the softest best bread I have ever made.
I cut the roast into tiny pieces so hope to make open face sandwiches with peppers, onions, mushrooms and cheese. Cauliflower and carrots on the side.

  17. Saturday: Cuban quesadillas, oranges and carrot sticks.
    Sunday: Posole
Monday: Pasta with bacon and cheese and a side salad
Tuesday: I had green chile burritos planned, but my husband found out he had to be at the hospital at 5 in the morning for his surgery and didn't want to eat anything that might give him heartburn and keep him awake, so we all found our own.
Wednesday: Chicken noodle soup (I figured that was a good post-surgery meal)
Thursday: Meatloaf, mac and cheese and green beans (needed to use up the ground beef I didn't make green chile burritos with)
    Tonight is leftovers.

    1. Spent $100 at Aldi.
Saturday: ribs on the grill: sweet potato, coleslaw
      Sunday: homemade taco soup, tamales
Monday: shepherds pie, fresh green beans, homemade pull apart rolls
Tuesday: chicken and rice, broccoli, glazed carrots in the air fryer
      Wednesday:takeout chicken
Thursday: stuffed peppers, buttered cabbage, sautéed yellow squash and zucchini
Tonight: wonderful shrimp dinner out with gift cards

  18. I spent $51 at the grocery store, which included last-minute stuff my daughter needed for school. Here's what we ate:

    Saturday - Chinese takeout leftovers.
Sunday - Lemon and butter broiled scallops with rice and brussels sprouts and corn.
Monday - Soup and grilled cheese sandwiches.
Tuesday - Eggs benedict and home fries.
Wednesday - Buckwheat pancakes with real maple syrup.
    Thursday - Leftovers.
Friday - The birthday girl (my youngest) chose homemade mac and cheese with baguette and chocolate pie.

      1. I have one kid who will ONLY eat buckwheat pancakes/waffles/crepes. He doesn't like any made with all-purpose flour. I have to admit, I see his point.

  19. Saturday - Chinese food from a local spot
    Sunday - Leftovers
    Monday - Meatloaf
Tuesday - Roasted Salmon, Quinoa Salad with veggies, cilantro & lime, Avocado
Wednesday - Roasted Chicken, Broccoli & wild rice casserole, Green Salad
Thursday - Chicken Alfredo with spinach
Friday - Per usual I am not sure what we will eat this evening. Perhaps leftovers, breakfast or sandwiches.

  20. Neighbor and I go weekly to mellow mushroom for salads....screwdriver or margarita...small pizza...very expensive....so I made a salad yesterday better than theirs and my own dressing.

  21. I do love to look over what people made for the week to get inspiration for future meals. I may have to try those brioche rolls. Even at Aldi, they are a bit more than I usually pay for just "hamburger" rolls. I have also tried your recommended hamburger roll recipe and like those.
    Saturday: I do not remember.
Sunday my daughter made a turkey dinner and I supplied the squash.
Monday Pancakes. Just because I had not taken out anything in the morning.
Tuesday My daughter gave me the extra from her turkey pie filling and I took out 2 breaded chicken breasts and some beets.
Wednesday For some reason I did not take out anything to eat. To avoid going out to pick up (and expense of) take out, my husband and I had 2 breaded chicken breasts and some vegetables.
Thursday: For Christmas I bought the kids a cooking program and we were suppose to do it Thursday with the kids; but the older kids lost their "fun" privileges. So I made the pastry dough from the newsletter. After I took the 2-year-old home, I attempted empanadas. It made for a late supper. They were okay. I think I would add a little more season to them. It really was a first time for a pastry dough for me and it came out well (I think!).
Friday (tonight): I am going to make fish sandwiches. I bought the Gorton's fish sandwich fillets, some everything brioche rolls, fries, and I have fresh green beans from our harvest box.

Today I spent $57 at local grocery and $25 at Aldi (everything brioche rolls, yogurt, some vegetables). It is surprising how quickly it adds up. The local grocery store had the Gorton's 2/1--so I have stocked up on them now. Their initial price was higher than another store I go to once in a while but at 2/1 it comes out to less.
Planning for next week--They also had 80% ground been for $1.97/lb. I think next week I'll have a meatloaf with gravy and potatoes. And I have several kinds of cheese in the 'fridge, so I may go with a mac & cheese (and I'll make sure I take some to my sister-in-law).

    Thank you everyone.

  22. Still trying to use potatoes and carrots, but really NEEDED to use the broccoli & lettuce this week as they were only going to hold on so much longer.

Sat - chicken with walnuts, brown rice, broccoli
Sun - younger kids had mac & cheese with spinach salad (an odd favorite here) while the adults & oldest had beef tenderloins that was a store error during my last grocery pickup. Unfortunately not enough beef for all of us.
Mon - fajitas (went to a different store to purchase the correct beef cut) for the little one's birthday
Tues - roast beef sandwiches, veggies, tater tots
Wed - haddock with parsley sauce, roasted potatoes, salad
    Thurs - chili, cornbread, veggies

  23. We ate the following this week:
-Lots of ham & bean soup with your French bread recipe
    -Egg roll in a bowl
-Salmon (mostly my husband, because he hast to eat a Keto diet, and can't always eat what the rest of us eat) & coleslaw
    -Enchilada rice

As for tonight, it's going to be a mish mash of leftovers:
    -Enchilada rice
    -Egg roll in a bowl
    -Salmon/coleslaw

  24. Sunday: Shrimp and Corn Chowder from Sam's, Homemade French Bread
Monday: FOOTBALL! Jimmy Johns for me, Papa Johns for him
Tuesday: Lighter Chinese Chicken Salad https://www.gimmesomeoven.com/lighter-chinese-chicken-salad/ I swap out Edamame with Bean Sprouts and just use bottled Kikkoman Teriyaki sauce for the chicken marinade and we grill it.
Wednesday: Spaghetti, Homemade French Bread, Salad
Thursday: Italian Vegetable Soup from Gooseberry Patch, Homemade Bread
    Friday: Calzones and leftover soup
Saturday: Grilled out Italian Chicken, Grilled Zucchini, Chicken Rice
Sunday: Out to eat Mexican with my parents! 😉

  25. For food, I spent $132 ( Jan 8-15th)
    $138 ( Jan 1-7th)

I'd like to keep my grocery spending to $100/wk but these costs included stocking up on canned goods and donating food to a needy family.

For dinners, we had chicken enchiladas, pasta in a meat sauce, fried cod and oven fries, baked chicken with mashed potatoes & gravy, roast beef with veg/mashed potatoes/gravy.... Bananas, frozen yogurt pops and fruit pops were dessert. Sometimes, something sweet and icy is calling my name.....

  26. Its been a very busy week, work-wise and I am back to feeding two people. We ate:
Monday - Parmesan Chicken Thighs, fresh green beans
    Tuesday - Tuna Bowls {Albacore tuna, chick peas, spinach, tomato, green onion, Feta}
Wednesday - Crock Pot Beans with Christmas ham hock, corn muffins
Thursday - Tacos al Pastor Salad (instead of in tacos) with romaine, black beans, cheese, avocado
Friday - Buttermilk Herb Chicken Breasts, cornbread dressing, brussels sprouts
Saturday - Free choice all day - we are going to a winery
    Sunday - Alamo Bowls with shrimp {rice, red and green bell peppers, onions}
Dessert this week will be Christmas cookies from the freezer!

  27. Saturday-pizza, salad
Sunday-I wasn't hungry so had nothing.
Monday-black bean quesadilla, chips and salsa
    Tuesday-eggnog french toast with blueberries
    Wednesday-leftover pizza
Thursday-meatloaf, french fries, butter beans, corn
    Friday-cereal with blueberries

  28. I did a major grocery shopping trip Friday, the first of 2021. $349 (yikes!) But I needed quite a few toiletries & OTC medicine, & since I shouldn’t have to go back for 2-3 weeks, I’m okay with that. Also signed up for a produce box delivery service. 1st order arrived on Thursday, $20 +/-. We ate:
Saturday - crispy chicken wrap, baked potato
Sunday - our niece gave us stuffed pepper soup, cheddar biscuits
Monday - chicken & dumplings with carrots & peas
Tuesday - delivery from local Italian restaurant, steak hoagie split between the 2 of us and we each had onion rings on the side. $22 including delivery tip.
Wednesday - leftover chicken & dumplings for DH, tomato soup for me
Thursday - braised pork chops in pineapple juice, hash brown casserole, broccoli, biscuits
Friday. - sushi from grocery for DH, broccoli cheddar soup for me to use up “end stage” broccoli

So, looking back I actually spent $391. I should only have produce delivery expense for the rest of the month.

  29. This week I made a ham and bean soup with the bone my mother in law dropped off with the leftovers they shared from the Christmas dinner we did not attend. We had fish tacos to use up some red cabbage and kale and I used more of the kale (seriously this bag was huge) in a chicken alfredo pasta. Next week's meal plan is already made: pasta e fagioli soup, salmon patties and a pork loin with roasted brussel sprouts and sweet potatoes. There's only the two of us so I tend to make 3 meals a week and we either get take out or eat something from the freezer if needed to fill in any gaps.

  30. F: foccacia w onions, peppers, tomatoes and cheese, mixed greens salad
    S: leftover foccacia and salad
    S: turkey tacos, salad
M: pasta carbonara (bacon and peas), salad
T: Brussels sprouts, rice, eggs, salad
W: shrimp fried rice, corn poele, salad
T: leftover fried rice, warm mustard greens salad, butternut squash au gratin, salad
F: foccacia with olives, tomatoes, peppers, mushrooms and cheese, salad

  31. Must try the Tinga!

Friday -- Take out from neighborhood Thai -- Yum 🙂
Saturday -- big salad with chicken breast
Sunday -- Homemade chicken soup from thighs, veggies, potatoes-growing-eyes, etc.
Monday --Last of the chicken soup, green salad
Tuesday -- Stinky Fish From A Can Day! Wild-caught red salmon (most fragrant but tasty) and a little marked down can of Portuguese mackerel that was very mild. Plus a green salad kit that came with chicken (on sale)
Wednesday -- Husband microwaved chicken breasts on bone and it was delish! with brown rice and steamed broccoli
Thursday -- 2nd green salad kit that came with chicken, plus leftover chicken
Friday -- Ah, treat night and my choice -- Mexican from a neighborhood place -- chicken flautas for me and steak for husband. Plus ice cream and a bottle of half-price beer.

    Happy Weekend to all!

  32. I love these posts! They always give me new ideas for dinner.

Sunday- I worked and had leftover pasta and salad. My family had takeout burritos.

Monday- Pan fried chicken breast with mushroom/wine sauce from America’s Test Kitchen. Boiled Yukon gold potatoes. Sautéed kale and skillet carrots from the Orangette blog (my family’s favorite cooked carrots).

Tuesday- Veggie stir fry with tofu, noodles and a fried egg on top.

Wednesday- Take out Pho (Vietnamese beef noodle soup).

Thursday- Homemade pizza with raw veggies on the side.

    Friday- Raviolis and salad

Saturday- Not sure yet. I have a lot of veggies in the fridge. I may make soup.

    Thanks for sharing!

  33. Saturday - we had takeout from a new sushi spot. Barely a 2 min walk from our apartment and the sushi was great!
Sunday - whole chicken roasted in the oven (!!! it fit !!! ). We roasted some tomatoes along with the chicken and had it on ciabatta.
    Monday - leftover chicken sandwiches
Tuesday - vegetable soup with orzo and white beans
Wednesday - pasta with pancetta, eggplant, onion and carrots
Thursday - Tofu and ground pork, loosely inspired by Mapo Tofu. It was my first time not ruining the tofu I tried making!
Friday - takeout dumplings from another spot down the road. This is resuming a tradition we had before the holidays.
