Since this post is about food...look at this weird ad that came up on Instagram for me this week! Apparently, you can chat with an AI cheese character?
I do like cheese but I don't feel the need to have a whole discussion with it. 😉
I wonder if AI cheeses have different personalities. Like, would a Parmigiano Reggiano be rather snooty?
I am thinking about this way too hard....
What We Ate
Be prepared: I did a terrible job of remembering to photograph my meals this week! I will do better next week. Hopefully.
Saturday
Zoe was out, so I made myself a mashed potato bowl topped with shrimp and veggies.
Sunday
Roasted chicken, with sweet potatoes and some asparagus.
Monday
Just me here and I pressed the easy button and cooked some frozen chicken and veggie dumplings from Aldi. I think they were a special purchase item, and I kinda wish I'd bought more than one bag because they were really good!
Tuesday
Waffles with berries and whipped cream. 🙂
Wednesday
I was at my aunt and uncle's house, and my aunt made some steak with French fries and some broccoli on the side. Plus some ice cream for dessert because my dad's side of the family ALWAYS has ice cream. 🙂 It's kind of their thing.

Thursday
Ummmmm....I feel a little bit sheepish about it, but I did make myself blueberry pancakes. Heh.

Zoe gets off of work mid-evening...soo, hmm, I should think of something that can be easily reheated.







Isn't that often the way with the "special finds?" My husband is sometimes like "um, why did you buy eight boxes of this?" Because I had a feeling, that's why!
WIS: This was supposed to be a no-spend week, but then yesterday I got a text that one of my kids was a barfy boy, so I ran into Aldi for some BRAT diet replenishments and spent about 28 bucks on things like crackers and apple juice. He's still feeling crummy, but also very happy to have some "delicious juice" to drink. Want easy to please kids? Deprive them a little. 😉
WWA:
Fri: salad and focaccia, of course!
Sat: salad, "hotdogs" made using a mixture of black beans, egg and panko crumbs on brioche buns and topped with smoked cheddar cheese. I made these as a sort of invented recipe, and they were a bit dry-edible, but not that good. The next morning I mashed up the leftover dogs with about 1/3 of a pound of raw ground turkey and made breakfast sausage patties that were much better. My take away is that there are very few "bean" hotdog recipes for a reason-patties just work better. And yes, I've heard of carrot "hotdogs," but that's just too weird, even for me.
Sun: stir fried tofu and veggies served over jasmine rice on top of a bed of salad greens.
Mon: salad, Louisiana red beans and rice made in the crock pot while we were out and about at a children's museum (which was probably where barfy boy picked up his virus)
Tue: not-yet-barfy boy made two lasagnas with daddy-one with sausage and ricotta more like my husband's childhood lasagna and one with ground turkey and cottage cheese that was modeled after my childhood lasagna. Neither one were authentic because we no longer eat pork or beef, but they were both excellently made. We had salad on the side.
Wed: leftover pasta fazool and leftover stir fried tofu and rice with salad on the side. Chocolate truffles for dessert.
Thu: Fancy ramen with veggies, chicken and soy eggs made by my oldest son (and his favorite cookies, too), oyster crackers and apple sauce for barfy boy.
Tonight: focaccia and salad for those of the stronger stomached variety, BRAT for any barfies.

I know what you mean about the special buys! Current Me is thankful that Past Me didn't stock up on the Aldi dark chocolate covered marzipan logs they have at Christmas time. Wayyyyy too much tempation. Last year, they had frozen tamales that I wanted to try, but they were gone before I had the chance to snag some.

We have a saying in our house: "Keep your expectations tiny. That way you won't be so whiny."
My husband has been quite sick all week and barely eating, so all I made was a pot of zuppa Toscana-style soup. Other than that I finished off leftovers and ate peanut butter and jelly sandwiches to use up bread in the freezer.
Aww, I hope he is on the mend soon!
@Kristen, thank you. He finally got to see the doctor yesterday and has some strong cough medicine that is finally letting him get some sleep. He got checked for all the things and it appears it's "just" a wicked cold that also worked its way up to his eyes.
It’s so hard when a cough keeps you from sleeping, because rest is super important for healing!
Waffled AND pancakes. A breakfast-y week indeed. Also, the cheese thing is weird (and creepy, as most AI stuff is to me), but the funniest thing about it is that it's "by gandalf." Not sure how that works . . .
Saturday: I made a casserole with a can of cream of chicken soup I found under my car in the Walmart parking lot, canned chicken, shredded cheddar. And then I added a bunch of frozen corn and pureed calabaza (a winter squash), because it was almost inedibly salty with all that canned stuff. It came out okay, and everyone liked it. Still pretty salty, though. We also had a green salad with vinaigrette.
Sunday: This was the sick birthday boy's delayed birthday meal. He had originally requested pork ribs, but when he heard I was cooking brisket, he said that was his second choice anyway, so I could just go ahead and make the other things he had asked for. Which was pureed potatoes, strawberry/rhubarb crisp, and butter-pecan ice cream. I also added a salad with ranch dressing on there. He had not requested a vegetable, because he never does, but that's the mother's prerogative. And he does prefer ranch to vinaigrette, so it was really for him, even if it was salad. 🙂
Monday: The brisket I cooked was a whole brisket, which meant it was a little over 18 pounds. So I had plenty of leftovers to work with the rest of the week. We had some of it just re-heated this night, with a choice of various leftover starches--rice, pasta, and potatoes--plus raw radishes.
Tuesday: Lamb chops, garlic bread, green salad with vinaigrette
Wednesday: Barbecue brisket sandwiches with the buns I had baked the day before, carrot sticks with curry dip, store canned peaches with or without cottage cheese
Thursday: I made a lamb chili and peanut butter/chocolate chip cookies for the family at home. I was at a basketball game. The basketball player ate at the concession stand, courtesy of the school, before we started our drive home. I had some egg salad before I left and some potato chips before I went into the game. And then a few cookies on the ride home.
Tonight: I think chicken. I need to make some chicken stock in advance of the jambalaya I make for Fat Tuesday--in about a week and a half--so I think I'll make roasted leg quarters tonight and then use those bones to make the stock. And to go with the chicken . . . roasted potatoes and green peas, maybe? We'll see how things evolve.
Sunday we had spaghetti with meat sauce my husband made.
Monday my husband had salmon and I had some yogurt and fruit (no seafood for me).
Tuesday we had overcooked pork fajitas - new sheet pan recipe and it was ok, but overcooked.
Wednesday we had cauliflower vegetable stir fry. I had a leftover piece of chicken with mine and my husband had shrimp with his.
Thursday was leftover spaghetti before the remains were frozen.
Tonight it will be an Aldi Fusia Asian Inspirations stir fry with chicken.
And I can't believe we ate at home all week. But then again, it is another cold week and we did have some snow. We will probably eat at home this upcoming week, too, because vacation starts next Friday!!!
This week we enjoyed:
- Tomato soup (Trader Joe's Creamy Tomato Basic Pasta Sauce mixed with milk)
- Pasta, broccoli, walnuts and Parm
- Spinach quesadillas
- Vegetarian corn dogs for husband; egg salad and spinach sandwich for me

- Hot chocolate and cinnamon-raisin toast

If you notice thst everything is made with poultry, you'd be right. One child will not eat pork or beef. THe baked sandwich is turkey pepperoni and honey turkey.
Frozen dumplings from Sam’s are remarkably delicious! I was truly surprised & impressed by the quality of them.
WIS: $12.50 at Price Chopper, $15 at Ollie's (after 15% off coupon), and $63.50 at Aldi.
WIA: The Aldi run was mainly a chicken stock-up trip (given the bird flu situation, we may not see drumsticks at 89 cents/lb. again). But I also found a nice big piece of salmon for 50% off, which was my culinary highlight of the week. I cut it into portion-size pieces and cooked it all up at once, in a few defrosted cubes of basil and olive oil. Remarkably good, and a change from my usual salmon with dill.
Saturday - My husband and girls went to Bob Evans before a Daddy/Daughter Dance and my son and I went to McDonald's before heading to the theater to see DogMan.
Sunday - Venison roast, strawberries, and broccoli with cheese
Monday - For my daughter's birthday party, she requested a taco bar (perfect when you have one kiddo that's gluten-free and dairy-free), strawberries and blueberries, and instead of a cake, she wanted candy salad. Since candy salad also works with GF/DF, we went with it. You're only 11 once! Ha.
Tuesday - A Frugal Girl dinner... Kristen's baked potato soup and french bread
Wednesday - Philly cheesesteaks (0/3 kids liked this), potato wedges, fruit, and veggies
Thursday - Cilantro lime chicken over rice with mango on the side
Friday - I don't think I have a plan yet. But I am getting groceries later today, so I will come up with something! I shop on Tuesdays and Fridays and usually plan out 4-ish days at a time.
@Ruth T, are y'all fans of Christina Tosi? I learned about candy salad from her. She's my favorite.
@Marlena, Interesting! No, I had to Google her. My daughter's version of candy salad (something they did at school) is literally just lots of candy in a bowl! We got around ten boxes of candy (gummy worms, Swedish Fish, Mike & Ike, etc), dumped them in a bowl, and mixed them up.
@Ruth T, I've seen some blogs by Mormons where they reference a 'candy bar'--like a salad bar--and those are very popular, apparently, at Mormon wedding celebrations.
@Karen A., Our daughter had a candy bar at her wedding twelve years ago - we filled glass jars with sweets - kind of like a "pick and mix" - it was very popular!

That is, um, different. I like candy fine, but it is never replacing my salad OR my wine...
I get on food kicks too. My vice is ramen noodles, but I try to add extra veg or protein to them and make them with bone broth. So comforting to me! This week:
Monday - Chikfila grilled nuggets and a small mac and cheese
Tuesday - a Bruschetta Salmon patty from HEB with some green beans and a twice baked potato. I had a turkey and cheese quesadilla for lunch.
Wednesday - I threw some freezer stuff into my mini crockpot and called it soup: stock, pulled pork, white beans, some seasonings and a bit of salsa. I made Mexican cornbread to go with.
Thursday - Some cooked chicken with spring salad mix. I had a HUGE sammie from Ike's for lunch, so a salad seemed reasonable for dinner...
Friday - tonight I'm going to make a mini meatloaf and probably the other half of the twice baked potato with a frozen veggie.

@Gina from The Cannary Family, I have heard that ramen is quite a fad these days with entire restaurants devoted to serving them. This doesn’t make sense to me. Aren’t they the cheapest (and probably least nutritional) thing that can sort of pass for a meal? I don’t get out much, so maybe the Commentariat will have more info about those ramen eateries.
@Central Calif. Artist Jana, my son and DIL have a favorite ramen place. Ramen places use good pho or rich bone broth, add all kinds of meat, veggies, soft boiled eggs, etc. The noodles are the base of the bowl and then whatever you want to add goes on it. I'm not a fan because I don't like most of the veggies (bok choy/bamboo shoots/bean sprouts/seaweed) and ginger and cilantro both tastes soapy to DH and I. But they LOVE it! And it's about $20 for a good size bowl depending on what you add.
But like Gina above, I love the cheap packaged ramen if I drain the water and add butter and make a creamy sauce. I don't eat it but maybe once a month because of the salt and high blood pressure, but I love it!
@Central Calif. Artist Jana, I thank maybe you’re thinking of the extremely cheap ramen packages at the store that come wrapped in plastic, with a package of dry seasoning/powdered meat&herbs? That indeed is a very cheap meal with little nutrition.
But there is also a more authentic version of ramen noodle soup that you can have in restaurant. It is a traditional Japanese dish, much more nutritious and qualitative than the cheap packages, made with fresh veggies, real meat, real stock, etc. It’s actually really good!

I don't know anything about ramen restaurants, but we love to have "fancy" ramen here at home. It's just basic ramen as a base (we use pasta and baking soda instead of the cheap packets only because of allergies) and then fancied up with various toppings and homemade broth. So, so good! And the bonus is it's super cheap. Kind of like a soup version of bibimbap bowls.

We have a ramen restaurant and several Japanese places that have ramen in the menu. It is so delicious. A rich pho broth, you may choose beef or pork, choice of proteins from all of the meats to seafood, loaded with tasty veggies, and optional whole egg. I can’t finish the huge bowl in one sitting so I have nice leftovers. The nutrition is off the charts. A real treat.
WIS: $0 this week, so (still) $93.74 on groceries for now the first three weeks (3/4ths) of February. But next week will see some big $$$$ for restaurant outings for some friends’ milestone events.
WIA: Leftovers from last week! I repurposed leftover sirloin and rotisserie chicken for steak and chicken fajitas and chicken quesadillas, and ate the last two hamburgers with sauteed mushrooms and Havarti cheese; leftover oatmeal/walnut/craisin bars for dessert.
Sunday: grilled ham & swiss cheese sandwich, sliced apples as a side
Monday: tortellini soup & breadsticks
Tuesday: Hamburger gravy over mashed potatoes
Wednesday: ribs, french fries, garlicky green beans
Thursday: spicy chicken sandwiches, chips, mini oreo ice cream sandwiches for dessert

AI cheese...I'm wondering how long in the future before that seems normal and when young kids will say "AI cheese wasn't always around??"
Also, the shrimp on potatoes always makes me "hmmmm". I guess being in the Charleston, SC area for 25 years, I just can't think of shrimp except with grits or pasta, but definitely not mashed potatoes although I know it's about the same idea.
We ate:

biscuits and gravy/eggs/fruit - this used up some milk that was about expired and some buttermilk that was going to be tossed.
take out pizza - family was here all day working on cabinets so hit the easy button and we worked through dinner.
meatball subs/roast potatoes/green beans
mexican chicken/rice/corn/salad
pork tenderloin/mashed potatoes/gravy/asparagus
One dinner stands out to me (as opposed to my usual none). I made a pizza, mimicking one that we love from a take-n-bake place. Instead of red pizza sauce, it uses ranch dressing. Thanks to JD sharing her ranch recipe, I had some. It has chicken (had some leftover), artichoke hearts (happened to have been given a jar last summer), fresh spinach (yeppers, had that), and mushrooms (robbed Husband’s salad making stash), and mozzarella. Then I got fancier than the take-n-bake by adding parmesan and olives. And yes, I made the crust from scratch. It was scary good . . . I almost completely lost all restraint. (Take that, you stupid Pre-Diabetes!!)
The great freezer cleanout continues!
Friday: Valentine’s Dinner at home! Smoked Salmon (freezer), Lobster Mushroom Risotto, and Garlic Cheddar Biscuits. The lobster mushrooms (dried) had been in our pantry for a while so I was excited to use them.
Saturday: Jamaican Beef Patties (freezer) with Puerto Rican beans and rice
Sunday: Pulled Pork sandwiches, tater tots, fresh veggies. I slow cooked the pork in the remaining BBQ sauce from the Super Bowl and the buns were homemade.
Monday: Chili with cheddar biscuits. I made the chili based on a recipe I’ve used for years but I changed one ingredient and it was a disaster. I made and froze a tomato sauce using yellow tomatoes from our CSA this summer and for some reason using this tomato sauce changed the recipe from delicious to almost inedible. This was a freezer cleanout fail.
Tuesday: Leftover pulled pork over baked potatoes with fresh veggies
Wednesday: Sheet pan sausage (freezer) and veggies – potatoes, sweet potatoes, broccoli, and mushrooms.
Thursday: Chicken Coconut Curry (freezer) over rice (freezer) and homemade naan.

Funny that the yellow tomatoes made it inedible? I know they tend to be sweeter and less acidic than red tomatoes. Can the leftovers be saved or reinvented?

Wednesday: Pasta with bolognese from the freezer, stir-fried book choy.
Thursday: Takeout pizza from the grocery store.

We're kind of limping into the weekend with not a lot of groceries, plus I'm working a 14h shift on Sunday. I'm hoping I can leave work early enough to hit a grocery store on my way home.

Tuesday: Leftovers for all except me - I had a theology class so I ate a sandwich from Jimmy Johns
Wednesday: Take out pizza - this Mama was exhausted y'all
Thursday: Turkey meatloaf, green beans cooked with remaining sauteed peppers and onions, corn o the cob and homemade mashed potatoes

It is absolutely freezing outside so I think there will be some meal prep done this week to include a ham or roasted turkey which will yield beans, soup etc. Also I am feeling the urge to bake bread so that may also happen.
I spent $49 at Kroger.
The meals:
- Chicken enchiladas from leftover rotisserie chicken from my freezer.
- Baked tofu stir fry over rice. This is a good way to use up odds and ends from my vegetable drawer. Also, tofu appears to have gone down in price!
- Flank steak with leftover rice and zucchini.
- Flank steak with yams and broccoli.
- Bean soup with kale. (Homemade chicken stock from freezer.)
I haven’t decided what we are having tonight!
We had a week that included a lot of house guests, sick family members, and a failed ski trip, so this wasn't a top notch dining week at our house.
We had:
-Tacos - x2
-Delivery pizza
-Spaghetti & meatballs
-I had a burger & DH had ahi, out while DS17 was napping in our hotel room. I think he later had crackers and Gatorade.
-Salmon for one diner & peanut butter toast & fruit for another (these decidedly don't go together, but I wasn't feeling great)
As for tonight, I have some ground beef in the fridge that needs to be used or frozen. If I feel inspired, I will make a beef/broccoli/noodle dish. If not, I'll be defrosting some lemon chicken I made a few weeks ago.

When you teased about eating pancakes, and then listed waffles, I thought you did a switcherhoo and had waffles instead of pancakes, to surprise your readers. 😉
WWS: $346.76 at Kroger. I attribute our lower food bill partly to me switching from Sumo mandarins to (mostly) grapefruit for my citrus fix. 😀 I never liked grapefruit as a kid, and now I love them. Weird.
We ate what we normally, eat, except I had DS#2 make ham and bean soup instead of hamburger stew, partly because I was making potato soup on Monday, and the stew has potatoes and I felt that was just too much potato in one week. The ham and bean soup was very tasty, and is stretching to several lunches as well.
Thanks to the Commentarian reminding me of aquafaba for egg replacement, I used the liquid from one can of chickpeas in my keto brownie recipe, and it worked even better than the flaxseed egg substitute I normally use. The batter was smooth, just like regular brownie batter, and didn't seize up and be difficult about being spread in the pan. Taste testers confirmed my assessment that the baked brownies held up better and were an improved texture. I'm not sure if it's a huge cost savings, but my bulk bag of flaxseed meal has to be ordered, since the small bags at the store are pricier, but cans of chickpeas are pretty cheap and easy to find.

Sadly, the last Sumo mandarins I bought were...not good. That was maybe two weeks ago. I haven't bought more since, because they're too expensive to be disappointed. Sigh.

@Karen A., I remember grapefruit when I was kid being much, much less sweet than the ones that are sold now. So maybe that's why you like them now and didn't then?
@Liz B., I got one today for a treat and yes, I think the season may be over...they were very good while they lasted!

I remember my dad would straight up eat halved grapefuit (we even had those serrated grapefruit spoons!, and that always surprised me, since he had/has a huge sweet tooth. He'd drink grapefruit juice, too. I'm sure they've bred some sweeter varieties since then. The ones I get at Kroger are "Ruby Rio" or some name like that, grown in Texas.
Nothing wrong with having a favorite that you eat often! I do it too, as you can see below.

It was time for my monthly stock up, so $212 (food and household), although the only meat I bought was bacon. I bought a bunch of eggs and froze them, scrambled in an ice cube tray (a first).

Tonight- hubby set some meat in the fridge to thaw. I haven't checked what it is, but I'm betting it'll be ground beef or deer, so likely tacos/taco bowl
I actually cooked something different this week instead of the flying-by-the-seat-of-my-pants same recipes I always make!
One new recipe was a sun-dried tomatoes and spinach chicken from Julia's Album
The other one I made up : mashed potatoes topped with saucy beef (ground meat + soy sauce+ garlic+brown sugar) + veggies
Monday -- soup and sandwiches day -- we had soup ( Zuppa Toscana I made on Sunday) and toasted beef and cheese sandwiches with potato chips.
Tuesday -- had more soup, potpies, rice and green beans.
Wednesday -- we had roasted pork from a big Boston Butt pork roast that I cut in half (other half is in the freezer for another day), a baked sweet potato (I cut in half for the two of us to share.) and sauteed zucchini, with garlic, onions, peppers and a leftover tomato.
Thursday -- we had bbq'd pork sandwiches I made from the leftover pork roast, tater tots and a salad.
Friday -- I'm making baked ziti in two 8 x 8 pans (one for tonight, one for the freezer). I'll add a veggie and some garlic bread. I'm using a container of spaghetti sauce with hamburger that I had frozen when I made way too much sauce a few weeks ago. I'm also going to add some spinach to the ricotta cheese mixture. I froze the spinach when I couldn't use it all in one meal a few weeks ago.
Saturday -- we're supposed to go out to eat we with family members.
This week we spent $72 at Aldi, $32 at Family Dollar, and $6 at 7-11 for emergency mayonnaise when I was halfway through making tuna salad. That is a $110 total, but I'm not sure that we can make it through the weekend without refreshing something. The kids have been home most of this week for President's day and then the snow, and they are eating everything in sight these days.
This week we ate:
Saturday--French bread pizzas with the french bread, mozzarella, and spinach my mother in law passed along to us from the food pantry distribution.
Sunday--Leftovers I think? With some ramen and stove top mac and cheese thrown in there.
Monday--I sautéed half of the giant cabbage from mother in law in bacon and chicken broth. Hoo boy it was good. We had that with a smattering of other things; mashed potatoes, boiled eggs, roasted chicken.
Tuesday--I made a creamy pasta with chicken thighs and spinach my mother in law passed along to us. We had a ceasar salad on the side also made with romaine from the mother in law stash.
Wednesday--My husband's homemade pizza; cheese and pepperoni for the kids, veggie for my husband and me.
Thursday--tuna salad sandwiches, mac and cheese, and side salads to eat up the rest of the romaine and a bag of spring mix that came with, you guessed it, the mother in law stash.
Friday--Tonight will probably be leftovers again with maybe some chicken nuggets in there to round it out. I have been cooking double duty all week because I have also been making everyone's lunch, so in addition to the smattering of little bits of the meals above, I made a big pot of spaghetti with homemade sauce one day.
Breakfast for dinner for the win! Yum, yum.

On occasion I buy a sumo orange at different stores. They have ranged in price from 2.49 a pound to 4.99 a pound. All of them have been sweet and delicious with the incredibly easy to peel skin. I’ve also tried different regular oranges, navel, Cara Cara, blood, raspberry and others and the most expensive was 1.89 a pound. They were all sweet and delicious but much harder to peel. I think my favorite is the raspberry orange. I also bought some of those pink strawberries and liked them. I noticed the riper they get the more they taste like pineapple. Bought some Cheetos for 2 dollars for when I run out of popcorn. I got some deli smoked turkey and have been having sandwiches. Aldi has a chopped salad I like with bacon and seeds and a sweet dressing. I’ve been looking for bone broth but the store shelves have been bare. I really splurged and bought a gluten free strawberry cream layer cake. I buy Aldi’s frozen gluten free general chicken and like it for a quick meal.
I wasn’t able to find my cat’s prescription cat food, I hope it’s not made in Canada. The store was nice enough to let me buy another brand of hydrolyzed cat food with my prescription and she likes it.
I often watch tv at dinner but when the mean leader pops on it can ruin a meal. I found a very childish gross way to cope. I sing the diarrhea song with different made up verses. He has that ozempic looking face so I figure he has diarrhea.

Sometimes I laugh so hard I snort water out my nose but it’s all worth it.

I finally did a big shop after doing a pantry/freezer challenge since January 1st. There were some good sales on allergy-friendly items I use frequently so I loaded up! Good thing I had some extra room in the freezer to accommodate the gluten-free breads. The only meat I bought was 1 lb ground lamb that was on sale + I had a coupon + it was military discount day so another 10% off. My total includes some non-food items, which I’m too lazy to subtract out.

Mon - leftovers from Sat night with salad for both of us
Tue - ready to eat chicken from grocery store (tile/grout cleaned afternoon and just too cold to go out) and mashed potatoes
Wed - salmon better half, steak for me, salad, leftover mashed potatoes
Thu - peanut butter sandwich and chips for me.
Fri - grilled cheeseburgers, wild rice with mushrooms and corn
WIS: $73, mostly at Food Lion but a bit at Dollar Tree for olives and popcorn.
WWA: Leftover skillet meal with ground beef, corn, red beans, squash, tomatoes and other yummy things. Chili. Spaghetti. The last serving of pot roast from the freezer. Oranges, nuts, crackers, and cheese. Chocolate pudding for desserts.
I'm just wondering... do you EVER eat rice, instead of potatoes?
And Husband would be thrilled if I served him as many blueberry pancakes as you eat...

When a single person buys a ten lb bag of potatoes, I think it is probably something similar to the eternity that is two people and a ham.
