WIS, WWA | a sunny kitchen!
What I Spent

I spent:
- $29 at Safeway
- $32 at Aldi
- $22 at Chick Fil A
So, $83 this week.
What We Ate
Saturday

I made homemade chicken fingers and potato wedges, and we dipped both in buffalo sauce.
What did we have on the side? Man, I don't know. And I didn't catch a picture.
Sunday
At dinnertime, we were both home, just the two of us, so we ate sandwiches and watched Gilmore Girls together (with Shelley too, of course, because she always joins us when we watch TV!)
Monday
The first of two clinical days for the week!
I used this brinerade on some chicken and grilled it. I packed that with some roasted sweet potatoes and sauteed green peppers, with some chipotle mayo for a sauce.
Also: grapefruit, a plum, and a mango.
Everything except the chicken and the chipotle sauce is from Hungry Harvest, actually! 😉
Tuesday
A repeat of Monday...eating the same thing twice in a row has been my groove for clinical meals this semester.
Wednesday
We had tortellini with tomato sauce and parmesan, with some fruit on the side.
Thursday
I spent my whole day doing responsible things like...
- taking an exam
- doing two quizzes
- filling out a homework assignment
- reading textbook chapters
- organizing papers for a lonnnnnnng day of school tomorrow
- sending business tax info to my CPA
And when I looked up at the clock at 6:30, I said, "Zoe, I do not feel like being responsible anymore." And she said, "How about Chick Fil A?"
So that's what we did.
Chiquita really wanted to get up on the table, but we said no.
Friday
Zoe's got an evening shift tonight, so, you know....probably eggs and veggies for me. 😉

WIS: 11.19 @Aldi and 55.90 @Giant so a low-spend week at just 67.09.
WWA:
Fri: watermelon and hotdogs grilled over the fire pit in brioche buns. We also made s'mores over the fire pit.
Sat: watermelon sticks with tajin, and quiche with a hash brown crust. We are not gluten-free, but this meal happened to be gluten-free naturally and it was delicious.
Sun: watermelon sticks, deviled eggs, tuna steaks, and hot cross buns (thanks for the recipe!)
Mon: facey dinner: leftover quiche cubes for eyes, leftover tuna triangles for noses and broiled asparagus for mouths.
Tue: salad (mixed greens, shredded carrots, diced celery, roasted sweet potato cubes, feta cheese, quick pickled red onion made with apple cider vinegar, sugar, honey, mirin, gojuchang spice and Korean sesame oil), chicken quesadillas using canned chicken, cheddar cheese, salsa and roasted frozen corn on corn tortillas, spicy guacamole.
Wed: salad (mixed greens, finely diced Swiss chard stems, carrots, celery and red onion, spicy guacamole, apple cider vinegar, honey, and spray olive oil), cornflake crusted chicken breasts, brioche rolls. Mango mochi for dessert.
Thu: salad (spinach, red onion, carrots, sliced hard-boiled eggs, salt and pepper, crispy onions, spray dressing), overnight blueberry French toast casserole (holy crap, this was good! I found the recipe watching meals with Maria on YouTube), sausage patties made from ground turkey, baguette twists with butter.
Tonight: salad and pizza, but we are going to have the yeasted kind instead of sourdough focaccia.
@Becca, I like the sound of a hashbrown crust for quiche!
@Becca, love the idea of a facet dinner. This could be really fun with kids.
@Bee, *facey.
@Becca,
Your salads sound fantastic!
@Bee,
The facey dinner was all my husband. He makes facey lunches too and also "lunchbot" which is a sandwich body with various fruits and vegetables for eyes, arms, legs, etc. The kids definitely love them.
@KathyL,
Thanks! I get to claim all credit for the salads! 😉 They are definitely my thing.
@Ruth T,
Yes, I thought it was a clever use of about two cups of leftover frozen shredded hash browns. It was tasty too. I just found the recipe online after I saw Maria (of Meals with Maria) make a quiche-like casserole using the frozen hash brown patties as the base.
@Becca,
I love this idea...might have to try it
Whoa, nearly last yesterday, nearly first today. I did get ice cream and ice the first part of the week at Hy-Vee, but no other groceries as I could live from the freezer, fridge and pantry for 6mo probably. That said, the only meals I remember: Ordered supper from work (those meals are $3.00 and usually very good!) Roast beef, mashed potatoes and gravy, green beans, a roll, and cherry pie. that was Sunday night/Monday morning. Later in the afternoon, I fixed bacon, fried potatoes with mushrooms, onions and red peppers. Was heavier on veggies than potatoes. The next night I air-fried a frozen crab cake from Aldi, (with dill and mayo) a small potato cut in wedges, a chunk of onion and two large cremini mushrooms. Wednesday night, I was doing chores and ordered from Dominos. My favorite is a thin crust pizza with garlic parmesan sauce, bacon and onions. Had enough for work supper this past night.
Hope you all have a great and blessed weekend!
You would love my kitchen. Three big windows, and of course, all that New Mexican sun. So bright.
Saturday: Pork butt--slow cooked then shredded and broiled with mustard and maple syrup--cornbread, green salad with vinaigrette, baked rice pudding. More effort than I would usually make on the day before a big holiday meal, but we had guests.
Sunday: Leg of lamb, of course. 🙂 Also pita bread, hummus, tzatziki sauce, all the vegetable toppings for gyros, chiffon cake with whipped cream and strawberries, and some sugar cookies I had in the freezer that I let my daughter decorate with colored sugar. This was an involved meal, but quite a bit of it was made the day before, which left me with just roasting the meat and rolling out and cooking the pita. Any meal in which I am individually rolling out anything is best made as much ahead as possible.
Monday: The leftover cornbread gets pretty dry, so I decided to try frying it in bacon grease and butter, along with the leftover pork. I added a bit more maple syrup to the skillet, and it was very good. There was also leftover shrimp, a salad with a dressing made with the tzatziki sauce, and leftover chiffon cake.
Tuesday: We dye eggs with spices, and I always save the spice sludge after draining off most of the water. I use curry powder for yellow dye, so I made lamb curry with that sludge and the leftover lamb.
Wednesday: Leftover lamb curry and rice, bread and butter
Thursday: Two pizzas--one cheese, one bacon--and a green salad with ranch dressing.
Saturday - we had our big Easter meal at my in laws. Ham, mashed potato casserole, asparagus, green beans, scalloped pineapple, veggies tray, blueberries, strawberries.
Sunday - a repeat of Saturday's meal after church
Monday - grilled cheese and tomato soup
Tuesday - tacos
Wednesday - andouille sausage in a Cajun cream sauce with spinach and tomatoes, over pasta
Thursday - biscuits with creamed chipped beef, scrambled eggs
Tonight - probably leftovers...
@JP,
Scalloped pineapple? I had to look that one up. I've never heard of it. Interesting.
Sat: manicotti at our neighbors
Sun: leftover ham
Mon: tofu and book choy stir fry
Tue: fried rice
Wed: tacos and grains
Thurs: burritos, salad and carrots
Fri: leftovers
We have had our granddaughter for the week, so we were trying to make meals that were for a child and adults. Forgot how kinda hard it is because she is a pick eater.
On Sunday we had hamburgers and oven fries (leftover potato chunks from St. Patrick's Day were frozen individually and made for great oven fries.)
I think we had leftover spaghetti from Saturday's sauce for Monday.
On Tuesday we had Bangers and Mash. I really didn't think she would enjoy the Bangers part, but she ate a whole sausage and 2 servings of homemade mashed (she loved).
On Wednesday we had spaghetti with meatballs and italian bread. (you do see a pasta theme here, huh????) She was getting sick, so did not eat a lot. Still have leftovers.
On Thursday we went out because we had a $5.00 coupon and it was happy hour for my husband. I had a salad with chicken nuggets mixed in, my husband had a burger and fries (his favorite) and our granddaughter had mac n cheese with juice and applesauce. For 2 big beers (half priced) and an additional meal, it still was only $37. with coupon.
Don't know what is on tap for tonight; maybe a repeat of Sunday?
I'm just happy it's Friday and I get to take her home tomorrow. I love all the hugs I'm getting at my desk while I work and her calling me all day, but it is tough when she is not feeling 100%. I feel so bad that she is not eating. But as my daughter says, "she won't starve!" I'll just keep pushing fluids for her.
Sunday: uhhhh
Monday: sheet pan veggies and potatoes and kielbasa
Tuesday: quiche with sausage and kale
Wednesday: chili crunch chicken cutlets
Thursday: fake jambalaya
Friday: not sure
Oh, duhhh! Sunday was Easter and we gorged ourselves on the delicious brunch buffet. No dinner was served.
WIS: $14 at Tops, $23.50 at Ollie's, $27.50 at Trader Joe's, and 35 cents (plus $6.70 in container returns) at Wegmans.
However, I'm getting ready for a major trip to Wegmans with JASNA BFF this weekend. There are, of course, two Wegmans stores in the New York Metro area now--but our main store here is the biggest one by square footage in the whole chain, and BFF says she'd still rather shop at this one than take multiple subway/bus rides to get to either of hers!
WIA: I described my Easter lunch (pork roast, asparagus, sweet potatoes, and bread machine potato flake bread) in this week's FFT, so I won't repeat that here. Otherwise, I've been pretty much polishing off the Easter leftovers and eating this and that.
I love those days when I am so responsible it feels like I earned take-out! Sometimes I don't have the mental strength to cook, ha ha. This week at my house:
Monday - kitchen closed. I think I ate a quesadilla after work.
Tuesday - Asian Peanut Butter Pork, rice, brussels sprouts
Wednesday - Eggplant Casserole, chopped salad
Thursday - Crock Pot Pork Ribs, orange baked sweet potatoes, another salad! And I did Chik-Fil-A for lunch (:
Friday - Chicken and Peppers, baked potato, broccoli
Saturday and Sunday - kitchen closed - the boys can eat leftovers if I don't pack them for my lunches...likely I will pick up something for dinner on my way home
Monday - Bowl with turkey, brown rice and cucumber with a sweet spicy sauce. My kids don’t like cucumber so they had the option of leftover salad or raw sweet pepper.
Tuesday - I had not planned to cook today due to a kid’s soccer practice, but it was canceled due to weather. We had Mexican take-out. I had a bean burrito. Everyone else had something different.
Wednesday - Baked chicken, roasted potatoes, kale and zucchini.
Thursday - Another day I hadn’t planned to cook due to the rescheduled soccer practice. Another cancellation due to weather. We just ate yesterday’s leftovers.
Friday - I have ground beef and lettuce to use up, so probably hamburgers, baked beans, oven fries, and salad.
A Gilmore Girls night sounds delightful. 🙂
This week we ate...
Saturday - Chicken nuggets. Surely we had something with the nuggets, but I didn't write it down.
Sunday - This was a combined Easter celebration/celebrate my husband's birthday with my side of the family. I made a ham, sweet potato fries, asparagus, pineapple, and resurrection rolls, then we had carrot cake and vanilla ice cream for dessert.
Monday - Slow cooker chicken taco chili
Tuesday - My husband's actual birthday! Beef stroganoff, peas, and cantaloupe, then brownies and Reese's ice cream for dessert.
Wednesday - Leftover night. More ham, pineapple, cantaloupe, and brownies.
Thursday - I was catering and had delicious food there, but I made a crockpot ham and potato soup for the rest of the crew since I knew they wouldn't be getting home until 6:15. I think they also finished off the carrot cake and brownies
Friday - I think we will do ham and cheese paninis. I have another whole cantaloupe and whole pineapple to cut up, so we may have one of those on the side.
I love Gilmore Girls 😀 Which season did you watch?
I don't remember everything I ate this week but it included lasagne and chilli mac and cheese and a burger. A very tasty set of meals if not the healthiest:P
yay for sun! And yay for a window in the kitchen. My current house doesn't have one and it is a dark kitchen. I miss having a window so much!
I spent $39.12...mainly I was too busy to go to the store, but I planned ahead and mostly ate from the freezer so it worked out.
Saturday& Sunday: We were at my parents' house with my family for Easter. I brought homemade bread and ham. My mom and SIL made the other items.
Monday: homemade tomato soup/crackers/ apple slices
Tuesday: baked chicken sandwich/baked beans/coleslaw
Wednesday: a butter chicken wrap made with a piece of naan (like a shawarma wrap, but with butter chicken and dipped in the sauce)/rice/asparagus
Thursday: National burrito day....we had birria burritos (birria, cheese, onions, rice, tomatoes, etc) with beans
Friday: I think we are having cheeseburgers tonight and air fryer french fries.
Sunday: We had friends over and made them pasta with meatballs, kale salad with apples, and garlic bread. They brought lemon bars. It was lovely!
Monday: We kept it easy and had scrambled eggs and frozen French fries, plus I finished some leftover meatloaf. We probably had sliced apples on the side.
Tuesday: I was working overnight and I packed tofu and yu choy over brown rice for dinner. Mr. B and toddler had chicken and fruit.
Wednesday: I made another stir fry, this time including leftover chicken. Since rice doesn't agree with the smallest member of the family (sob; I love rice) I served it over quinoa.
Thursday: Mr B. made salmon, roasted potatoes, corn niblets, and peas (though my toddler claimed the bowl of peas and ate the whole thing on her own to the delighted bafflement of her parents.)
Friday: Chicken of some variety, yu choy with garlic, and challah.
@Meira@meirathebear, That's a bummer your daughter can't eat rice. I have never heard of that. Is it all rice, or just brown rice? My eldest son used to eat so much raw cabbage as a toddler that we had to take it away from him for fear of digestive upset. 🙂
@kristin @ going country, I'm trying to be vague so that no one is grossed out, but we've found that rice tends to, ah, stop things up too much, you know? It's not that she can't eat it so much as that she just ADORES it a bit too much. So we cut out rice and bananas and are trying to eat a more produce-and-protein-rich diet (featuring lots and lots of prunes.) I suspect that as she gets older we'll be able to re-introduce it.
On cabbage! I had to stop eating cabbage (and broccoli, kale, etc) when I was nursing because it made her bloated. I had no idea that the digestive effects of those vegetables would transfer.
@Meira@meirathebear, Something that we had to do in similar situations was to make sure the child is really hydrated.
@Jody S., absolutely! That does seem to help, too.
@Meira@meirathebear,
Two words from a mom who has been there: raisin bran.
You're welcome. 😉
Isn’t it nice to walk into a sunny kitchen?
WWS - I cannot be sure what we spent. DH is working from home this week. He has a tendency to go to the store a lot when he’s home just to get out of the house. He buys whatever he wants to eat on these trips. For example, yesterday he decided he wanted onion rolls for something I was serving, so he took a trip to the grocery and came home with onion rolls, two bags of potato chips, two pints of gelato, two cucumbers and a bunch of celery. So I spent $44 this week at Trader Joe’s. DH spent ?. I’ll use up the leftovers next week when he’s gone although we don’t eat the same things.
WWA -
Saturday - DH cooked hamburgers, oven fries and salad. DH had a bun. I did not.
Sunday - We attended a family Easter gathering.
Monday - Leftovers from the family Easter gathering. SIL sent quite a bit home with us.
Tuesday - I had a PEO meeting. DH ate from the frig. I ate at the meeting.
Wednesday - I made pork carnitas in the crockpot. This with lime-cilantro rice and salad.
Thursday - Leftover carnitas. DH made his into a bar-b-que sandwich on an onion roll. He made oven fries and raw veggies. I had carnitas and salad.
Friday - I am thinking about making fish. It has been a meat heavy week.
Happy weekend!
Lots of adult kids home this week. Yay
( soon leaving!)
248 Kroger pick up and Aldi
Sun. Steaks. Baked potatoes. Asparagus. Brussels sprouts. Green bean salad. Choc chunk cookies. Easter candy.
Monday. Chicken sausage and pasta. Green salad.
Tuesday. BIG SALAD BAR lots of fun fixings
Wed. Cod. Rice. Asparagus. Salad leftovers.
Thurs. Chic fil a.
Friday. Burgers and brats on the grill. Potato salad. Slaw.
My kitchen has a big window almost 8' wide over the kitchen sink that faces due east. I love the morning light, but it isn't much help after 2 pm or so, since there is a porch roof over it.
Becca, I thought you misspelled "fancy" at first, but no, you meant facey! Cute dinner idea!
WIS: nothing, it was my non-shopping week. I don't count animal food in my bill, which is good, because I spent $92 Wednesday at the pet food store, and have to buy bird seed today, which I buy in 20 lb. bags.
WIA: I seem to have had repeats a lot. Almost everything on this menu ended with a bowl of fruit salad for dessert, as I ate up the leftover from Easter.
"Pizza" on a cassava crust that just doesn't compare to a real, wheat flour, yeasted crust, but it works and it's gluten-free. I topped it with ground beef, mushrooms, onions and olives, which should please A. Marie. There was no cheese, because I forgot to get the shredded cheese out of the freezer; I had cheddar in the refrigerator, but I don't like cheddar on pizza.
I had thawed a pack of farm ground beef, hence the beef on the pizza as well as:
A bunless burger, with pan-fried sliced potatoes n' onions. My white potato eating experimentation seems to be going well, thankfully.
Mac n' Cheese casserole made with cassava pasta, cheddar, ground beef and random veggies. Green salad on the side. I had this twice
Brats with sweet potato salad and a green salad, which I also had twice.
Nothing adventurous this week, but I got fed, which is what counts.
@JD, to tell you the truth, I've never put ground beef on a pizza; pizza is one of the few things where I prefer the vegetarian option. (In most other respects, I am an unrepentant carnivore.) But certainly if you have the ground beef out and enjoy that on a pizza, you go, girl! I've often thought that personal preferences in pizza toppings are as distinctive as fingerprints.
@A. Marie,
I usually prefer meatless - I don't even like pepperoni. But the beef was there and thawed, so I went into "use it up" mode.
@JD, Ooh, recipe for the cassava crust?
This week, we enjoyed:
* Spinach mushroom pizza at restaurant (had enough left over for two more meals)
* Fruit and popcorn
* Roasted Brussels sprouts and roasted potatoes
* Pasta with broccoli, parmesan and walnuts
* Salad of mixed greens sprayed with olive oil and sprinkled with rice vinegar, black beans, radishes, sunflower seeds, and shredded cheese
* Cold cereal
Saturday - the kids were invited to their friends house for an Easter egg hunt and the other family treated us to pizza!
Sunday - we were supposed to have Easter dinner with my in-laws but I got switched to a breakfast last minute so then we didn’t have dinner plans. We ended up with a not so traditional Easter meal of takeout sushi and udon noodles
Monday - chicken thighs, mashed red potatoes, turkey gravy (had a jar left from thanksgiving), steamed broccoli
Tuesday - one pot beef(using beyond beef) and mushroom stroganoff which turned out wrong because I bought a new type of egg noodle that clumped together and turned to mush. My kids picked out the cooked mushrooms and ate those and my husband and I ate some and then tossed the rest.
Wednesday - chicken corn chowder and pilsbury biscuits
Thursday - cheesy chicken, vegetable and rice casserole
Friday - hot dogs and sausage, veggie burger on a salad for me, steamed broccoli and baby corn
Sunday: Easter dinner. My grandma was hosting, and she asked for people to bring toppings for Hawaiian haystacks.
Monday: I had my cook book club at the library. This month was pie themed, so there were lots of sweet and savory pies to try.
Tuesday: Preschooler's choice, she chose mac and cheese.
Wednesday: Leftovers
Thursday: Pupusas! This would normally be a weekend thing since it's more involved, but it's spring break. My daughter really liked making the pupusas out of the masa, it has a similar texture to playdough.
Friday: I'm going to try the Bisteeya inspired chicken phyllo pie from Sohla El Waylly's new book.
Saturday: Leftovers
It has been a hectic week with lots of projects getting wrapped up on the home repair front. I spent about $300 at Walmart this week but this was mostly for stocking up allergy meds (pollen season in GA is no joke!), epsom salts (hello bootcamp workouts & gardening), fruit, energy drinks, & protein drinks.
I had not planned on cooking Easter dinner but plans changed.
Sunday: Ham, green beans with baby gold potatoes, crowder peas & macaroni and cheese. Chocolate chip cookies with Easter colored M&M's.
Monday: Leftovers
Tuesday: Prime Rib to go along with all Easter leftovers
Wednesday: Take out from Arby's as I was running all over town getting things done
Thursday: Medical procedure day and we ate dinner at Texas Roadhouse
Friday: I have no plans but it may be a pizza night in our house.
We are eating out far more often and I have to say I am not sorry about it. Going through home renovations is not for the faint of heart and I am giving myself grace.
Cheers to the weekend ahead friends - looks like it is going to be a beautiful one!
As usual, the struggle to remember what we ate is real!
I know we had steak & mashed potatoes on Easter (x2)
And, pad Thai with edamame
Chicken & pasta
Tacos (x2)
As for tonight, I'm flying to Portland with DS17 & DS18 for the final DS18 college tour. DS17 is interested in this school as well, so he's tagging along. My mom is hosting a family dinner for us on Saturday night. My sister is picking us up at the airport, and we're eating at a place on the water front tonight, which should be fun. For Sunday, DH will be in charge of sorting dinner, and picking us up at the airport.
Friday: Vacation dinner. We went to a local Italian restaurant which was amazing. The sweetest part of the night was when a couple came in and mentioned that it was their first anniversary. The tables around them cheered and announced how long they had been married and gave very loving advice.
Saturday: Vacation dinner. Fancy restaurant fare, I went for the burger. I figure if you only have a few items on your menu and one of them is a burger you must be proud of it. It was delicious.
Sunday: Spaghetti. Not traditional Easter dinner, but we flew home and had frozen spaghetti sauce in the freezer. We invited my parents to stay for dinner since they had been house sitting for us while we were out of town.
Monday: Asian Pork Skewers and Sweet & Spicy Cauliflower over brown rice
Tuesday: Birthday dinner for my husband at our favorite Mexican restaurant
Wednesday: Trout with sautéed sweet potatoes and aioli
Thursday: Chicken Tamale Casserole
Let's see if I can remember...
Thursday: Chana masala, naan, rice, and dahl
Wednesday: Met some friends for dinner out since the kids are on spring break.
Tuesday: Garlic Chili noodles
Monday: Taquitos
Sunday: Homemade Lentil soup and Pizza (so warmy on a rainy night!)
Saturday: Cheesy Zucchini Bake
For dinner tonight, I think I'm going to try a tempeh bowl recipe from budget bytes that includes polenta since I have some corn meal I'd like to use up.
Shelley loves Gilmore Girls! haha
WIS: a big $0 this week (although I might run to the store for some fresh stuff later today) as I went grocery shopping late last week and we mainly eat from the freezer, pantry and cellar (last year's garden and orchard produce, plus hunted/homegrown meat).
WWA:
Sat. I don't remember, lol, it's a blur being the day before having kids and grandkids for the big Easter gathering.
Sun. Snacked on a veggie platter and cheese tray brought by my youngest daughter prior to the grandkids hunting for Easter eggs. Official dinner was ham, mashed potatoes, ham gravy, green beans, corn, rolls, salad and a slice of chocolate pudding pie (pie contributed by my mom) or rhubarb pie (made by me, rhubarb from the freezer).
Mon. (Leftover) salad with spaghetti (sauce made from scratch and containing elk burger), garlic bread
Tues. Leftover ham, potatoes, gravy and veggies from Easter.
Wed. Bean soup using the ham bone from Easter, zucchini muffins (from shredded zucchini in freezer).
Thurs. Beef and bean enchiladas
Fri. I'm attempting to make lengua using the tongue from our 1/2 beef that's been in the freezer since late October '22. One of those meat cuts that's intimidating (because tongue eww! Who wants to touch that?!?) and I put off using. . .
@Kris S, You might be surprised. My mother loved having it for lunch back in the day, and when my son asked for oxtail soup I had to gather all my courage to make it but it was delicious.
@Kris S, The worst part about cooking tongue is peeling tongue. It tastes fine, but it has a soft texture that I do not care for, so it's a dog food for us.
@Rose,
Oxtail soup sounds fine to me as I assume it's just a really boney piece of meat similar to a turkey neck and if you're making soup with it, the bones are what give it that deep bone flavor, right?
Tongue, on the other hand? Barf.
I said it.
@Becca,
And before anyone goes accusing me of "yucking their yum," let me just be clear here...that is exactly what I am doing. Yuck.
@Becca, The real problem for most people with these two things is that they look exactly like what they are. So when you put the meat in the pot for the soup, it really is a jointed tail you're coiling up into the pot. No mistaking it for anything else. Same with the tongue. Most people do not enjoy being able to identify body parts while they're cooking. 🙂
WWS: +/- $100 at abattoir (but had a gift certificate so no out-of-pocket money spent); $18 Market Basket; $27 Armenian market; $5 Stop & Shop
WWA:
Sat: no idea!
Sun: grilled tri-tip with Santa Maria rub & served with a feta-tarragon sauce, potatoes roasted in duck fat, carrots with star anise, arugula and fennel salad, Hawaiian rolls
Mon: pork & leek dumplings with stir fried cabbage, carrots & broccoli
Tues: Budget Bytes chili mac with kale
Wedn: Budget Bytes chili mac with kale
Thur: frozen pizza
Fri: pan-fried flounder with leftover roasted potatoes & fennel and cabbage slaw
I spent $42 on groceries at Walmart, though it was mostly for stocking the pantry, not for this week's meals.
Sunday: leftover dyed eggs and homemade chocolate chip muffins from breakfast
Monday: gluten free pasta with tomato sauce and turkey sausage
Tuesday: panfried hash browns with hot dog slices mixed in
Wednesday: a mashed potato bowl with turkey sausage and spinach (thanks for the idea!)
Thursday: a hodgepodge of things - the last muffin, a spoonful of Sunbutter, and a couple of corn tortillas with canned chicken on top, warmed in the microwave
Friday: planning to have canned beef and vegetable soup and cook some gluten free pasta to mix in
WIS: Neighborhood-$22; S&S-$22; Flashfood-$48; Milk delivery-$15; Popcorn-$50 Total-$157
WWA: Saturday- pork pizzaiola over polenta
Sunday- Easter dinner at my parents- ham, potato salad, carrots
Monday- pork enchiladas w/ leftover cuban style rice and black beans
Tuesday- crostini w/ fava beans and burrata, leftover pork pizzaiola over polenta
Wednesday- sweet chili chicken, bok choy, and rice w/ greens
Thursday- crostini w/ fava beans and burrata, pasta w/ shrimp and asparagus
Friday- crostini w/ asparagus and burrata, bean and chard soup, steak & potatoes
Three restaurant mystery shops this week, so no money spent there plus I was paid $30 total to go out to eat. Three more days were cauliflower cheese soup with other random vegetables thrown in before I used the immersion blender on the whole thing to make the vegetables palatable to the husband and also it thickens the soup. Today, the seventh day of the week it is Filet 'o Fish for me and beans and hot dogs for him (a favorite of his while I can barely stand the smell of the beans). Total spent this week for food was just under $15 for milk and a pineapple. Cheap week. Good thing because the CV joints on the vehicle are getting brittle and need replacing. (Found this out when we did a mystery oil change shop.)
Don't do the grocery (edibles that is) so no idea.
Saturday - salmon and steak w/actually pretty good instant mash potatoes. Asparagus too.
Sunday - Our favorite Mexican restaurant
Monday - Leftovers from Sat/Sun
Tuesday - beef stew - our butcher shop has the best stew meat. Better half braised it this time and that made the meal even better.
Wednesday - stuffed pork chops w/taters and carrots
Thursday - hamburgers w/sauteed red peppers and onions and co-jack cheese. Pickles too. Plus leftover potatoes from Tue/Wed.
Friday - leftover pizza from last Friday (dinner w/my Dad) for better half. For both of us, salad w/radishes, mushrooms, cherry tomatoes, blue cheese. I had leftover steak with mine as better half had the pizza.
Not wasting food is an inflation buster as well as budget friendly.
I made a beef roast, lots of taters and carrots in big slow cooker. We had hamburgers. With a husband and son who works long factory hours, meat is a necessity. Husband made a big bowl of pasta seafood salad. Easter was at our house so lots of meat leftovers from smoker so I made a huge kettle of chicken soup with leftover chicken. Son had smoked turkey and gravy. I made gooey can't leave alone bars.
Oh Chiquita! 🙂
We had:
- Chicken, bean and rice burrito bowls with various toppings.
- pasta bake
- We were taken out to a Chinese buffet
- Tonight we had a dinner meeting at Dairy Queen and the kids stayed home and had nachos.
- And that's all I can remember
WIS: $13 @ Grocery Outlet, $17 @ Scratch & Dent & $44 @ Costco
Sun: Chix fried steak fingers, green salad, roasted veggies
Mon: Green Salad + leftover steak fingers
Tue: BLT's using first greenhouse tomato
Wed: Halibut pan fried, coleslaw and roasted asparagus
Th: Fish tacos w/leftover fried fish, cilantro lime cabbage, cotija, pintos & salsa
Fri: Late lunch with quilting group friends - will eat lunch leftovers
Sat: Take a trip to the bay to get fresh oysters to bbq with the neighbor. Fresh garlic bread + green salad
I have a West facing kitchen window and it is so cheerful!
WIA
Monday - Quinoia with chickpeas, fried egg, hummus, avocado, and mixed greens
Tuesday - bbq with sweet potato fries and asparagus (asparagus has been on super sale this month!)
Wednesday - rice with salmon and stir fry veggies
Thursday - dinner was… not a winner. The preschooler helped with cooking and menu planning and it showed haha cheddar sausage, oven fries, roasted asparagus with Parmesan cheese, and roasted cauliflower. It just didn’t taste great, but they don’t always have to be home runs
Friday - was Korean takeout and it was amazing!
Oooh, your Monday meal sounds so tasty!
