What We Ate
Monday
Bacon-wrapped jalapeno chicken, watermelon, potato chips, and caprese salad.
Tuesday
We had dinner at a local quick Tex-Mex place. Including chips and guacamole, of COURSE.
Wednesday
We had grilled hot dogs, grilled summer squash, fresh peaches, and broccoli.
We are eating a lot of peaches right now because of my $15 box of bruised peaches.
Thursday
Stir fry!
Friday
We're having dinner with my parents tonight, so we are eating whatever they are cooking.
I'm sure it will be delicious, as is everything that someone else cooks for me.
(If you are the main chef at your house, you will definitely resonate with that!)

Hooray for food you don't have to cook!
Monday: Tuna patties, roasted potatoes, roasted zucchini/onion/bell pepper, cucumber slices
Tuesday: Pulled pork sandwiches from leftover pork shoulder, coleslaw, canned baked beans
Wednesday: Beef tacos, pinto beans. This is Pinto Bean Country--as well as beef country--so both will feature heavily in my kitchen now, I should imagine.
Thursday: Scrambled eggs, chorizo and regular breakfast sausage, tortillas and cheese, cucumber and tomato salad
Tonight: I took out some pork chops. That's as far as my plan goes. We're supposed to go to a lake beach about an hour away today, and I suspect after hours in the sun, I'm going to punk out with something like pork chops, bread and butter, and cucumber slices.
Monday: Pork chops using a bbq rub from ATK. My daughter wasn't thrilled with it and I could tell the wife didn't care for it. We also had salads and rice.
Tuesday: Fish with tater tots. Not the most gourmet but we had a lot going on.
Wednesday: Spaghetti and meat sauce for the wife and daughter. I ate various leftovers (I don't eat pasta.)
Thursday: Krull night at the movies so the wife and I went out to dinner. We decided to try a new place to us: Texas Roadhouse and we were incredibly underwhelmed. Our daughter had macaroni and cheese (or noodle cheese as she calls it) with her grandparents.
Friday: Doing a clean out the fridge night. I might do a bunch of different things like potato pancakes or actual pancakes. I'm not sure yet.

I made a salmon alfredo lasagna, a beef lasagna and sweet and sour meat balls this week.
I spent $12 at Aldi, I can't wait for them to finish with the remodel. I bought peppers, Take n Bake, cookies, animal crackers & a couple of bags of Asian veggies. I spent another $15 at the our local fresh produce market.
We had salads each night with pizza, corn on the cob and Costco Tortellini.
This weekend even though it is to be hot I need to get my all "ripen at once" tomatoes cooked up and froze for soup. Might even make some soup.
I stopped shopping at Aldi about a year ago because our son had just joined our family, and pushing his wheel chair while pulling a cart was really tough with the Aldi set up. I was just back in to our Aldi this last week, and it's been remodeled, and now I can shop there again! So excited to have that option again! We love the new design!
Ooh, that stir fry looks good! We had stir fry last night with fake beef, broccoli, zucchini, mushrooms, and tomatoes (because the deluge of tomatoes from our garden continues and everything I cook has tomatoes). It was awesome.
We've also had veggie soup, pizza, beans and rice, Cajun pasta, and truffle mac and cheese. I still have a half of a baseball bat-sized zucchini to use up, and a single head of broccoli, so that'll be an adventure! 🙂
Your spending continues to amaze me! We have only 4 eaters in our family and we budget for $155/week, and cut it close!

Monday- breaded chicken with mango salsa and southwest salad
Tuesday- BLTAs with homemade sourdough bread and caesar salad
Wednesday-Jamaican Jerk Pork Tenderloin with turmeric rice (fusion meal I guess) and salad
Thursday- Mac and Cheese (my husband was in charge of the meal since I was out all day doing appointments, meetings, ballet, etc.)
Friday-Curry with rice
Main cook in my house and totally love and appreciate whenever we dine at someone else's home!
Monday: sauteed mushroom, onion, green pepper, with lentils over brown rice
Tuesday: roasted chicken (Sunday dinner leftovers) / lentils (Monday dinner leftovers) with farro and spinach
Wednesday: Cooked dinner on the grill: Burgers/grilled cheese, grilled peppers and tomatoes, peaches
Thursday: Turkey meatloaf, oven-roasted carrots, cubed watermelon (I actually ate pickles instead of meatloaf)
Friday: Probably egg salad sandwiches because I have dozens of eggs.
Tonight we are having 30+ kids over for a *summer is never gonna end* bonfire....So they are roasting hot dogs, lots of marshmallows, random snacks and watermelon.. I have a Aldi take n bake in the oven right now...
Last night was busy with school pick up night so fresh green salad and hamburger helper lasagna..lol
Weds... random leftovers before her volleyball game... I cannot recall what it was...
Tues- I believe this is the night I grilled chicken.. and made homemade oven fried zucchini....
Monday- work.. i have no idea what the dad and kids ate..
My work preparing for preschool to start is ramping up super fast... Kids are not going back this year until after labor day... the weeks are a blur!
We're also in peach heaven right now.
Meals this week:
Monday - Brown rice? I truly don't know what happened this day.
Tuesday - Steak, roast potatoes and green beans from the garden.
Wednesday - Ground beef with zucchini, carrots and brown rice. SO EXCITING. heh.
Thursday - Had a birthday dinner for my MIL. I made greek salad and black rice and then we had salmon, corn and green beens as well. SO GOOD!
Friday - My hubby phoned to say he wasn't coming home for dinner, so I took that opportunity to cancel the rest of my cooking plans. I already had a roast beef in the oven, so we ate that on wraps with raw veggies.
This was week two of being back to work full time after six years at home. It was also week one of the school year. Throw in some evening sports practices and I am proud to say we made it!
I need to look into meals that I can make ahead - I am no gone too long to use a crock pot- over 10 hours so looking for suggestions!
Monday: DH worked from home for the first day of school! He made Cat Cora's Cinnamon Chicken- so easy and so yummy! We serve it over rice.
Tuesday - Brats and Tots with cut up green pepper
Wednesday- BLT sandwiches with something...
Thursday - Sloppy Joes with corn on the cob
Friday- - Pork Chops on the grill with more corn on the cob ( best time to eat it in season.)
amy, if you use an instant pot as a slow coomer it will keep the food safe for up to 10 hours after cooking. i used to have the same crockpot problem!
I am not sure how much I spent last week. I need to be better about that. But I did eat mostly from the pantry and freezer so that's good. Not a banner week for cooking but here goes:
Sunday/Monday was velvet porkchops with roasted potatoes. Sunday I ate that with an artichoke. Monday I had zucchini for a veg.
Tuesday - hot dog and baked zucchini fries.
Wednesday - I can't remember but I think it might have just been a can of soup.
Thursday - I made a bean and cheese burrito.
Friday - I made a fried egg on an English muffin and had a side of beans.
I have a bad cold so I see more easy meals in my future . . . .
Sunday: veggie burgers, potato wedges, and corn all cooked on the grill
Monday: pasta with jar of red sauce and veggies stirred in
Tuesday: the most frugal meal of the week (except for the left-overs on Wed!): tomato pie made from a base I found in the freezer, cheese I bought to make another pie the previous week, and tomatoes and basil from the garden; with salad and green beans
Wednesday: leftovers from a work lunch--salmon, mashed potatoes, veggies, and rosemary rolls
Thursday: work dinner (tacos)
I've been spending less at the store ($85-95 per week, just two of us) but I've been unadventurous in the kitchen of late.
Sept/Oct issue of Cook's Country has a peach capresse salad( I despise raw tomatoes). It was so tasty with farmer's market peaches. I made a small serving, cutting the peaches into small chunks and using mozarella balls( small size). I used a touch of pesto in the dressing. It was the perfect combination of sweet and savory.
Yes! I saw that and wanted to try it.
