Orange-Coconut Granola Bars

This is perhaps not the healthiest of granola bar recipes, but if you like orange and coconut,
you will find them to be very delicious (and as a bonus, they’re very easy to make).

As an  aside, if you don’t have a place to buy walnuts in bulk, this will end up being a not-so-thrifty
recipe. I seriously cannot believe how much nuts cost at the grocery store.

Because I’m lazy about this sort of thing, I haven’t done a cost-comparison between these
and store-bought granola bars. I’m pretty sure they’re not more expensive, at least, and
they definitely produce less trash than packaged granola bars do.

Plus, they have no corn syrup  and no preservatives either, which is always nice.

Orange-Coconut Granola Bars

* 4 cups quick-cooking oats
* 1 cup packed brown sugar
* 1 teaspoon salt
* 1-1/2 cups chopped walnuts
* 1 cup flaked coconut
* 3/4 cup butter, melted
* 3/4 cup orange marmalade

Mix oatmeal, brown sugar, salt, walnuts, and coconut in a bowl.

Add the orange marmalade and melted butter; mix well.

Spread evenly into a greased 10×15 inch jelly roll pan.

Bake at 350 for 15-20 minutes or until lightly browned.

I didn’t bake this batch quite long enough, which is why this picture looks almost exactly like the last one! They’ll be edible if you don’t bake them long enough, but they’ll fall apart more easily.

I cut them into bars while they’re still a bit warm, and then I let them finish cooling. And of course, I store them in an airtight container. Enjoy!

Just found your blog after seeing a vid on Youtube! yay lots of good stuff to read, thank you! and brill recipe.... i actually have walnuts and coconut and marmalade in my kitchen with little idea of what i was ever going to do with them! i would never have imagined putting those three together and coming up with a recipe! many thanks!

excellent - thanks. I'm going to adapt these for my daughter, who can't eat sugar; I think she will love them and coconut gives a natural sweetness, orange is her favourite flavour so I think these will be a hit :)

Yep, I think pecans would work just fine...in fact, the bars would probably be tastier with pecans! I just use walnuts because they cost less.

Kristen, do you think they'd be okay with some other sort of nut? I HATE walnuts but I can hang with, say, pecans.
