52 New Recipes | Pork Tinga

This week, I picked a recipe from my most recent Cook's Country issue: a recipe called Pork Tinga.

Basically, it's slow-cooked pork butt, which is served on tostada shells and topped with things like cilantro and avocado.

We know how I feel about cilantro and avocado, right?

I'm pleased to say that this was very easy (basically you dump everything into the crock pot!), and that my family all liked it.

Which is serious cause for celebration.

The recipe includes directions for baking your own tostada shells, but I used the ready-made tostada shells from Aldi.

Because, easy.

Pork butt is quite a lovely and relatively inexpensive cut of meat, which becomes quite tender if you cook it properly (low and slow!). It's the same cut that this pulled pork recipe calls for, and that always turns out so tender and delicious.

The only thing that bummed me out about this recipe is that it called for chipotle chili powder, which smelled super delicious and smoky when I measured it out.   But then somehow the finished product didn't have that much smoky flavor, which is weird.

I think next time I'll probably add some canned chipotles to my serving for some extra smoke and heat.

  1. I saw your title and the picture right below it and got a bit confused hehe. We eat a lot of pork at our house too. We would take pork bone soup and stir-fried pork pretty often. My MIL and hubby are pros at cooking pork. We have never tried this recipe before.

    I made rice pudding last weekend suing some whole milk, leftover rice, and sugar. And it was delicious!

  2. Thank you so much for sharing this recipe! Pork butt is one of those things I put in the deep freezer when I see a super sale and then forget to get back around to it. I have one waiting for this recipe right now. A slow cooker recipe is just so perfect for this colder season. I might be making this one over the weekend....yay!

      1. Well...this sat in the crock pot all day yesterday and was a HUGE hit! My pork butt was 8 lbs!!!!! So, we have lots of leftovers and I will probably freeze a few portions. Yay for extra meals made ahead of time.

  4. Eh, we tried ZERO new recipes this week. After traveling for Thanksgiving, I guess we just wanted to chill out with old favorites. Thanks for the tostada recipe. It looks fab!

  6. Yum! Pork butt is so cheap! Hubs likes to smoke it, which is great for me because I don't have to do any of the work 🙂 This week we tried Hello Fresh, because Hubs got a coupon. We have enjoyed the recipes, but it certainly wouldn't save us money. Meals for two cost more than TWO restaurant meals for us (we go to cheap restaurants :D). So we probably won't continue. But it was fun to try some new recipes!

  7. I haven't really made any new recipes but I always wing it on the ingredients for my fruitcake and I did it again this week so does that count? More dried cranberries than apricots this year, pineapple juice instead of apple juice, only lemon zest instead of orange and lemon and apple brandy instead of peach brandy. It always turns out though.
    I need to try a new main dish recipe again. Maybe this weekend.

  8. 1) Revisited Cook's Illustrated's recipe for Chicken Stew to see if it's a keeper. It is.

    Their version uses chicken wings to enrich the stock, then chicken thighs for the meat. Since my homemade stock is already flavorful I skipped the wings (so much pricier than thighs). I also skipped the dumplings - there are enough starches in my diet at this time of year.

    2) Tried a modified version of a CI recipe for lamb pitas, turning it into lamb burgers instead. Not to everyone's taste but I liked it, so more for me.

    1. I've never tried it! I prefer to have paper copies of my recipes, but if you love electronic recipes, then by all means, go the Kindle route.

      1. I do look for recipes online but I love looking through cookbooks & keep folders of cut out recipes ones friends & family have given me & ones printed off the computer. I write notes on the recipe page jotting down things like who gave me the recipe, the date I made something, I rate it, & add in any adjustments I made or suggestions for the next time.
        I do like the recipes from the free coles mag http://www.coles.com.au though, all the ones I've made so far were easy and delicious. They do 'feed a family of four for $10" recipes with just a few ingredients. There are times I love to spend the day cooking and other times I can't face a recipe with 20 ingredients.

  9. The original Pork Tinga recipe (which is stove top and fried 🙂 corn tortillas is a family favorite. And yes, we use chipotle peppers. And it freezes well.
    I like the stove top version because you boil the meat first, which renders a lot of the fat.

  10. I would like to eat that pork for dinner, followed by those cookies. As long as someone else makes them for me.

    (I would also like to not cook dinner tonight. As if you couldn't tell from the above comment.)

  11. This sounds yummy! FYI, sometimes I add liquid smoke for more smoky flavor in crock pot recipes like this. It doesn't take much!

Well I had my doubts with its turning out but I tried it anyway..weirdly enough maple crockpot (yes you read that right) granola with walnuts, dried cranberries and golden raisens is awsome. we've been topping yogurt with it for breakfast and snacking on it...fyi...it's pretty stellar on a hot sweet potato with some butter to...
    Oh and my love affair with avacados must rival yours???
    I'll have to try this pork butt recipie...any excuse to eat more avacados...:)

  13. Found a good recipe for leftover turkey for banh mi (I think that's right). It's a Vietnamese-style sandwich on French bread with a sauce made of leftover cranberry sauce, jalepenos, garlic, cilantro, carrots, radishes (surprisingly, northern Illinois gardens are still producing some stuff- amazing!), mayo, onion. It actually was pretty easy, though it sounds like a lot of stuff, and it was really good. The recipe was in the newspaper.
    I see pork butt but hav never bought it because it looks so fatty and weird, but I guess I should give it a try!
    Also, had never bought steak from Aldi, but did buy a strip steak to try, and it was excellent- about half the price of the Jewel grocery store.

    1. Pork butt is a great cut. Nicely flavorful, it works for anything cooked low-and-slow (roast, smoked, crockpot, braised), pressure cooker, or ground.

  14. Yum, our grocery store has pork butts on sale this week so I will definitely try this one out. I didn't try a new recipe this week but I posted one on my blog:) Thanks for sharing all of these great recipes, my cooking repertoire gets boring very quickly around here.
