WIS, WWA | with a little clarification

Hello, everyone!

Since I'm on spring break this week, I booked a little cabin Airbnb for two nights, and it wasn't until I got there that I realized there was no wifi. Whoops!

I'd written blog posts ahead of time but I couldn't really respond to comments since I only had my phone, and cell service was pretty sketchy too.

ANYWAY.

I got back home last night and was working through all the comments. I responded to a bunch, but I also wanted to clarify a few things that got brought up in the comments about motivation. I feel like I must have done a poor job of explaining myself in the post, so:

  • I do show up to my job with a cheerful attitude, but I also think that kind healthcare requires reading the room and considering the patient as an individual. A loud, "cheerful" attitude would be very unkind when someone is in terrible pain or has just received a discouraging diagnosis. Compassion and empathy always need to be present, and we can "rejoice with those who rejoice, and weep with those who weep." Sometimes this is making a joke, sometimes listening and nodding, sometimes just holding someone's hand.
  • People have varied and complicated reasons for the things they do/don't do. Kindness in healthcare means trying to listen and understand, and it also means we need to recognize that the playing field isn't level for everyone.
  • People deserve kindness and compassion regardless of whether they follow doctor's orders. I can be thrilled to pieces when someone quits smoking, but I also am still going to take good care of a patient who continues to smoke.
  • People vary when it comes to what helps and inspires them. I am still new at figuring this out, but I hope that as I gain more experience and watch other coworkers, I will get better and better at giving individualized help, and I'll get more and more ideas about how to help my patients.

One last thing...when I am having a day where I do not feel inspired to do what I need to do, I often will text a friend and say, "Mannnnnn, I cannot find my motivation pills today." 

So, I sometimes wish that I had motivation pills to dispense to myself! 😉

What We Ate

Saturday 

I realize this looks like some kind of soup, but it's mashed potatoes topped with fried eggs.

To make the sauce I sauteed red onions and tomatoes, deglazed the pan with chicken broth, stirred in some cream, and seasoned it with salt and pepper.

Sunday 

More mashed potatoes and eggs, this time with some sauteed asparagus.

Monday 

I had some strawberries that needed to be used in a hurry and I also had a half loaf of French bread that was sitting in my freezer, so....we had French toast with berries and whipped cream. 🙂

Tuesday 

I made chorizo and potato tacos, and I added the leftover filling to my scrambled eggs the next morning. So good!

Wednesday

Mashed potatoes, some Hungry Harvest asparagus, and some sauteed shrimp.

Thursday

I had a late lunch and wasn't hungry at dinnertime. It was just me here, so I did not need to cook dinner.

Well, since I already had mashed potatoes three times this week, I will likely make something that is not based on mashed potatoes. 😉

  1. I think I spent right around $70 this week, and that included some non-food items. Some of my meals were better than others...
    Monday - Chick-Fil-A after work. My go-to is small mac and cheese and 8 grilled nuggets. It like my "lets get this weekend started" meal.
    Tuesday - Chopped Salad with added apple, orange bell pepper, and rotisserie chicken from the freezer.
    Wednesday - Seasoned rice with thawed frozen shrimp and bell pepper. This was yuck.
    Thursday - Baked Chicken Drums, a baked potato, some sauteed cabbage. This made two meals. I also made a cake yesterday...
    Friday - I will either eat the leftovers, or pack them in my lunches. I am leaning towards picking up take-out as I have a full day ahead of me. I could also make a big salad with some chicken or pork from the freezer - we shall see how tired I am.

  2. Our week also featured mashed potatoes. I made a huge batch and it has been used as a basis for breakfast, lunch, dinner, and snacks. Neither of us are complaining. My husband was particularly excited by your “eggs on mashed potatoes” idea, Kristen!

  3. Sunday - We hosted my side of the family for my birthday. My husband made a seafood fest with a few different kinds of shrimp and some fish fillets, plus a caesar salad, cheddar bay biscuits, cheesecake, and a chocolate mousse pie.

    Monday - Leftover shrimp, leftover biscuits, corn, brussel sprouts, and zucchini

    Tuesday - Quesadillas and strawberries

    Wednesday - This was my actual birthday, but my oldest was at play rehearsal over dinnertime, so it felt weird. We just had leftover fish fillets, mixed veggies, and dark chocolate-covered dried pineapple rings. (I did enjoy freebies from Starbucks, McDonald's, and Tropical Smoothie Cafe throughout the day.)

    Thursday - Chicken, fruit, hawaiian rolls, and sweet potatoes

    Friday - Kristen's enchiladas and fruit

      Happy belated birthday! In my family, we call birthday celebrations that go on for longer than the actual day (or start before the actual day) the "birthday extravaganza". Ha ha. I didn't know Tropical Smoothie Cafe offers a birthday freebie! Duly noted for next year. 🙂

  4. What I spent: $38 each at Kroger and Tom Thumb, so $76 total. I didn't plan to spend the same amount at both stores, it just worked out that way.

    What I ate:
    Friday, Saturday: meatless tacos with Mexican rice on the side.
    Sunday: I was out of tortillas, but still had some beans and diced tomato and a bit of rice left. I warmed up the rice with margarine and ate that, then mixed the beans and tomatoes together and used as a dip for tortilla chips.
    Monday: smoked sausage and tater tots
    Tuesday: gluten free pasta with red sauce and chopped smoked sausage
    Wednesday: mac and cheese with sausage
    Thursday: same as Tuesday
    Tonight I'll have pasta again to use up the sauce.

  5. WIS: $86 @ Aldi
    WWA: On Monday while shopping at Aldi I bought a pork butt roast marked down to $5.51. Brought that baby home, gave it a rub of olive oil, ginger, garlic, smoked paprika, salt and pepper. Cooked in a Dutch oven on a bed of carrots, peppers, celery and onions. Made a big salad to go with it. That combo with baked potatoes fed us through last night, when DH ate the last of it and I had cottage cheese and strawberries. One night I was not in the mood for meat and had a bowl of white bean-tomato soup (a New York Times recipe) with cheese toast.

    1. @Ruby, your pork butt sounds delicious! I will have to try that combination of spices next time I make one. Since we became empty nesters I usually will get a pork butt on sale and cut it into 2-3 smaller portions and put them in the freezer. Will pull out one at a time and cook in the crockpot until falling apart for carnitas, pulled pork sandwiches, BBQ pork over potatoes (or tater tots), etc

    Sunday: I made a roast dinner. I don't make these very frequently because roast dinners take a while to cook, but it was worth it! I made a fruit crumble for dessert as well.

    Monday: Veggie stir-fry

    Tuesday: Chilli mac and cheese

    Wednesday: Leftovers

    Thursday: Naan bread topped with some vegetables and hummus

    Friday: I'm going to have pizza (the base is premade and I'll figure out the toppings later!)

  7. For dinner this week:

    Sunday - pork chops, applesauce, mashed potatoes, carrots/broccoli, and rolls. My in-laws came over so we had a proper Sunday dinner.

    Monday - Salmon, salad, and leftover mashed potatoes.

    Tuesday - Leftovers! We used up tuna salad, salmon, pork chops, quinoa, and black beans that were hanging out in the fridge. Everyone ate something different.

    Wedneday - Take out. We had a 4 pm baseball game followed by 6 pm softball practice and we ended our day near Culver's on the opposite side of town.

    Thursday - Waffles, chicken sausage, and fruit.

    Tonight is Friday March Madness mania, I think we're having burgers, freezer fries, and fruit.

  8. Saturday: I had made dinner for my family, though I didn't know exactly when the would get home from their trip or who would be hungry. Only a couple of kids wanted to eat, so I just gave them some of the leftover barbecue meatballs and some rice I had made.

    Sunday: The ram and chickpea curry I had made the day before, plus rice.

    Monday: Our tradition is to have pasta with pesto for St. Patrick's Day. Not Irish, but green. Then we had a green salad, and some Italian sausage.

    Tuesday: A friend brought by some beef pot roast to share with me, so we had that with leftover pasta, plus cucumbers with salt and vinegar

    Wednesday: I made more rice for the last of the ram curry, and then everyone had yogurt with apricot jam.

    Thursday: Barbecue beef sandwiches made with more of the pot roast, pinto-bean baked beans, green salad with vinaigrette, and a baked custard to celebrate the first day of spring.

    Tonight: I have some rice left over, so I think I'll take some chili beans (pintos spiced like chili) out of the freezer and combine the two into a burrito filling for our meatless Friday. I'll also put some peaches in the refrigerator to chill and everyone can have those, too, with or without cottage cheese as they prefer.

  9. You'll be such a good nurse, Kristen!

    WIS: Nada, it was the off-week for shopping. I picked up a farm order, but it had been paid for for almost two weeks before pick up.

    WIA: "I did the cook once, eat it a lot" thing this week. As I mentioned before, I made chicken vegetable soup, which I ate twice in the evening.

    I cooked a package of cubed beef steak, from a local ranch, in the pressure cooker, making smothered cubed steak with lots of onions and garlic, gravy and mushrooms. I made a chopped salad with store-bought Persian cucumbers, sweet peppers and home-grown carrots. I had this three times, one time with green peas and a bowl of blueberries instead of salad.

    I "grilled" a piece of GF bread in butter and topped it with a slice of mild cheese and a fried egg, and had that with a side of spinach (I love spinach) and a bowl of peaches. Still working on cleaning out the frozen fruit in my freezer.

    Tonight I'm not sure, but I have the rest of the ground beef to use up. Tacos? Cuban Picadillo? We'll see.

    1. @JD, I like adding fresh spinach to sandwiches, especially tuna salad. The occasional times I eat Subway, I get the "look" when a) I don't want (more mayo) on my sandwich, b) pass on cheese, and c) want pickles and spinach only.

  10. I love reading your very gracious, thoughtful approach to your patients. If you choose labor and delivery as your specialty and want to work in NC, I’d be grateful to have you as my nurse (we’re expecting a fourth in August, I can’t remember if you’ll be fully practicing by then). 😉

      I hope to take my NCLEX not too long after I graduate, and then I plan to join the August new grad cohort at my hospital. For a while after I'm hired, I will be supervised by an experienced RN, just to make sure I get trained properly and I know what I'm doing. 🙂

  11. WIS: $17 at Trader Joe's, $20 at Wegmans, and (ulp!) $107 at Price Chopper (about half of which was for BOGO supplements and lidocaine patches).

    WIA: The pork stew with Guinness I described last week kept me fed for a few more days. After that, I had turkey thighs (Reduced for Quick Sale at Price Chopper) with sweet potatoes, and then a homemade pizza (my usual olive, onion, and mushroom).

  12. WIS: $29.85 on groceries, and $42.44 on lunch out with friends – I paid for me and the friend who treated me to lunch last week. Everyone else was on their own! So $180.04 on groceries and $42.44 eating out for the first three weeks of March. Exceeding my self-imposed $200/month food budget by $22.48, and still 10 days to go. :-{

    WIA: High protein Oikos Greek Yogurt with wild blueberries and pumpkin and flax seed granola; bagged salad with chicken cut up in bite-sized pieces and marinated in the Maple Bourbon Bacon dressing that came with the salad (highly recommend!); chicken fajitas with grilled corn and refried beans. For lunch out (and dinner the next day, and the day after), a massive (but delicious!) French Dip sandwich (shaved roast beef au jus with melted provolone and sauteed onions on a toasted baguette) and a side of onion rings. And a side of good friends of 20+ years…

  13. I missed the conversation on motivation with patients earlier this week. Kristen, you are right on target with today's comments. Reading the room is crucially important, regardless of what area of medical care you practice. My first two years of working as a professional (OT) in a mental health inpatient setting seemed, at the time, to be counter to where I wanted my career to be. I couldn't have been more wrong. Working there gave me a greater understanding of the factors that can impact behavior, emotions, and motivation. Since then, I have worked in a variety of settings, both inpatient and outpatient. Guess what? Medical issues impact everyone, regardless of whether you also experience schizophrenia, neurodivergence, depression, alcoholism .... you get the idea. We owe it to our patients to try to find the best path forward towards health, and it looks different for everyone. Can you tell that I'm passionate about this topic? 🙂

  14. Excellent words on motivation and the varied approaches to different situations. Brings to mind Proverbs 27:14: “If a man loudly blesses his neighbor early in the morning, it will be taken as a curse”.

    Looking forward to seeing photos from your cabin getaway! (The word “cabin” always grabs my attention, since my art business is called “Cabin Art”.)

  15. WIS: $47.48 (I was trying for a no-spend week, but an impromptu nice day sent me to the store for stuff for burgers, dessert, etc)
    WWA:
    Sunday: I made "Thanksgiving dinner" for the crew who was helping us move furniture before our flooring install on 3/17. I made turkey, mashed potatoes, gravy, stuffing, carrots, we had artisan bread too (which I didn't make)
    Monday: takeout pizza for furniture movers
    Tuesday: leftovers from Sunday
    Wednesday: (nice sunny day, rare of spring in our area) we grilled burgers and made bacon cheeseburgers, french fries, cottage cheese and pickles. Ice cream for dessert
    Thursday: orange chicken over rice, cottage cheese
    Friday: tonight will be fish of some sort and maybe some coconut shrimp to go with it, etc.

  16. Friday: It’s fish fry season so we headed to a restaurant that serves delicious fish.

    Saturday: My husband and I went to his childhood friend’s house for a birthday dinner. The friend’s girlfriend is a trained chef and made delicious Chicken Cordon Bleu.

    Sunday: Lasagna Soup with garlic bread

    Monday: Cottage Pie

    Tuesday: My son finished the lasagna soup. My husband and I tried some pot pies from the freezer that he ordered from a British specialty food shop. (Steak and Mushroom & Chicken, Bacon, Leek)

    Wednesday: Egg Roll in a Bowl over ramen-y noodles – fridge clean out meal.

    Thursday: Pantry Raid Casserole: spaghetti, cooked chicken, onion, red bell pepper, green enchilada sauce, milk, pepper jack cheese. It was a hit and used up some odds and ends.

  17. A cabin with no wifi sounds fabulous. WWA:

    Saturday - fried rice using up last week’s Hawaiian sausage tray bake leftovers
    Sunday - pan fried rib eye steaks (were on sale), baked potatoes, asparagus
    Monday - big green salad with leftover steak and a bit of Stilton on top
    Tuesday - steelhead trout (also on sale) baked in a packet with lemons, asparagus, zucchini, red pepper, and dill with leftover rice I had stashed in the freezer
    Wednesday - we went out for fish and chips, coleslaw
    Thursday - chicken skewers with tzatziki, grilled pita, green salad
    Friday - will likely be Hungarian mushroom soup, baguette

  18. On your note about patient care, have you watched any videos by Jen Hamilton? She's a labor and delivery nurse who advocates for her patients. And how she talks to each one of them is so unique and different (differing levels of care required!). I love following her on TikTok and IG--plus she has chickens. Everytime I watch a video of hers i wonder what you would think of her patient care!

    I think this post is also a sign that I need to eat more mashed potatoes....

  19. Mm, that sounds good. I love mashed potatoes, but we have them rarely. It's not something I grew up eating. We had a very long week.

    Saturday: Mr. B was out, so the toddler and I had a snacky meal of toast of veggies

    Sunday: Sausages, rice, and sauteed gai lan

    Monday: baked chicken katsu and vegetable fried rice (I prepped the veggies on Sunday and used the leftover rice.)

    Tuesday: pasta with meat sauce

    Wednesday: I was on evening call (until 11pm) and my eating schedule was thrown off so I had sushi at around 5pm and then a bag of chips later.

    Thursday: Mr. B picked up pizza at the grocery store.

    Friday: My mom is joining us and is picking up some prepared food at the grocery store.

  20. I spent $25 at Kroger and Trader Joe’s. I’m eating things from the freezer, and items I canned last summer. Now that the weather is getting warmer, I realize that I need to pick up the pace if I want to finish last year’s produce before this year’s gets ripe!

    Our meals:

    Pork and cabbage stir fry over jasmine rice, canned pears.

    Irish stew, soda bread, home made jam, canned pears.

    Pork chops, mashed potatoes, soda bread, jam, asparagus.

    Chicken tikka masala (with frozen peppers and chicken from the freezer), basmati rice, canned pears.

    Tonight’s dinner will be homemade pizza.

    I made cherry clafoutis for dessert, because I have a freezer full of cherries. I’ll make a pie for the kids who will be home for spring break next week. I’m also experimenting with cherry smoothies. 😉 Yes, some of the jam is cherry jam!

    1. @Ann on the farm, your canned foods will last. YMMV on items from the freezer. So perhaps freezer items are more of a priority in the event of a less than expected harvest.

  21. What I spent; what we ate

    I spent $146 at Sam’s - about $90 of that on steaks for the next month or so.
    I spent $62 at Kroger.

    When we got married just more than 30 years ago, my husband, an always-hungry bachelor who didn't cook, asked me if we could have steak every Sunday. With very few exceptions over the years, we've always done that. I kinda call it “steak-in Sunday.” It's saved us a ton of money vs. going out for steak and I cook them on the grill year round. Sam's has really good meat and I always get our steaks there, lately strip steaks at about $12 a pound. I make 2 steaks unless someone is joining us and hubby has the half of mine that I don't eat for lunch the next day.

    Monday – corned beef, cabbage, potatoes, onions and carrots for St. Paddy's Day. I simmered the corned beef on low in the crockpot all day. I added toasted and buttered slices of Italian bread.

    Tuesday – soup and toasted roast beef and cheese sandwiches – I made a pot of the Pioneer Woman's Ham, Collard and Bean soup using collards from our garden. In the South here, the plants can survive the winter and put out new growth in the spring. So I cut off a lot of the new leaves for the soup. It was excellent!

    Wednesday – more soup, baked shake and bake pork chops, leftover potatoes, cabbage, carrots, onions from St. Patty’s Day, green beans and garlic bread made from half a loaf of marked down ltalian bread I bought and froze.

    Thursday – we ordered pizza and a salad for dinner as we were both busy with appointments today. And since Arkansas was in the NCAA basketball playoff game that started around dinner time and I didn't feel like cooking, pizza and salad was an easy choice.

    Friday – we'll eat leftover pizza and I'll add a lettuce salad.

    1. @Joyce from Arkansas, or you can freeze your half (I rarely consume my entire steak) for a future meal of steak skillet - potatoes, onions, mushrooms, peppers, etc with the leftover steak. I too like steak once a week. It was a low red meat week for me so I plan on "catching up" this weekend.

  23. This has inadvertently been a no-spend week for me. Not on purpose, it just happened to turn out that way as I've been trying to use up stuff on hand before we head out of town for several days.

    WWA:
    Saturday--salad, mashed potatoes and grilled chicken (thighs and drumsticks)

    Sunday--made a sort of chicken alfredo with leftover chicken, some fresh mushrooms, remainder of bell pepper in fridge, egg noodles and cream

    Monday--burritos (beef, refried beans, cheese, lettuce, diced tomato)

    Tuesday--grilled pork loin chops, sweet potato fries in the oven and green beans

    Wednesday--salad, turkey noodle casserole

    Thursday--venison chili

    Friday--tonight is going to be elk steak, the rest of the fresh mushrooms in the fridge and?? probably a potato of some style to go with it.

  24. Kristen, you did an exceptional job of further discussing the varied elements of motivation and how one deals with all kinds of patients.

    I am copying this to hand out, if needed, to any medical professionals along the way who forget that care is PATIENT centric! Thank you. It really is one of the best things I've ever read outlining HOW IT SHOULD BE.

    Please know that we here, for sure, never doubted that you are flexible in dealing with patients as needed. I think some of us just needed to bring up the finer points.

    Meanwhile, I continue to be in awe of how well you eat from the pantry. Due to T2D, I can't have potatoes multiple times, but I can always add another veggie.

    I do wonder how you manage to not have to throw out veggies. Four days in the fridge, with two meals using the veg, means that there is still some stuff to throw away as veggies don't always lend themselves to the freezer and there isn't always room in the freezer.

    I do a chart and stagger the days when a new veggie is cooked to try and not have waste, but I have a small appetite and I just can't eat the same veg three or more days in a row.

    What are the veggies you rely on? Do you include frozen (purchased frozen versus frozen after cooking) veggies. I'm big on broccoli rabe, asparagus (in season), bok choy, collard greens, broccoli, spinach (steamed, not fresh), spaghetti squash and brussel sprouts.

      I don't tend to eat many frozen veggies even though I know they are cheap and usually just as nutritious. I just don't like them very much, unfortunately!

      What I eat is somewhat determined by my Hungry Harvest box, so I just try to work around what they send me. I prioritize what will go bad fastest (spinach, asparagus) and leave more hardy veggies for later (bell peppers, carrots).

      And I do eat pretty big portions of veggies so that I can use them up; for instance, when I make a single serving dish for myself, I put an entire big red bell pepper in the dish.

      I find that soups help a lot (like a pureed asparagus soup), and also salads and scrambled eggs (because you can add basically any veggie into those). Roasting vegetables makes me eat more of them too; for instance, I can eat a ridiculous quantity of roasted carrots!

      I never get it perfect; there's always an odd thing here or there that goes bad before I eat it. But for the most part, my waste is at a minimum thanks to years of practice.

    We just spent three nights in Joshua Tree NP with friends. Four days with no signal at all (not even cell) was a glorious reset.

    WIS, WWA posts are probably my least favorite (don't worry, I still love 'em all),
    but today's prelude to WIS/WWA was amazing! We should all be so lucky to interact with medical providers who care as much as you do.

    Now I'm off to search for some Motivation Pills...

    Sat: salad, watermelon, a cheese charcuterie board and deep fried “corn” dogs that were battered with pancake mix. Also, leftover pie.

    Sun: salad, watermelon, pink lemonade and chicken salad sandwiches in sourdough bagels.

    Mon: watermelon, colcannon made with Swiss chard instead of cabbage and with added sausages.

    Tue: salad and younger son made stuffed shells.

    Wed: rice and beans in homemade sourdough discard tortillas and watermelon.

    Thu: salad and older son made scrambled eggs with fancy Irish cheese and a pancake bake that had strawberries, blackberries and chocolate chips on it.

    Tonight: we had salad and focaccia, as usual.

  28. I am still chipping away at using up what's in my freezer and pantry but I did spend $30 on mostly snacks at Natural Grocers and $20 on mostly produce at Trader Joes. I just had to have some more sumo oranges before they go for the season!

    Saturday and Sunday- slice of olive and mushroom pizza. Orange slices for dessert.
    Monday - I don't care for corned beef and cabbage but in the spirit of St Patrick's day I ate green but thawing some cream of asparagus of soup from the freezer and ate that with cheese toast.
    Tuesday - Asparagus soup again, but this time, no toast.
    Wednesday - I tried the viral cottage cheese wrap recipe, spread it with laughing cow cheese and added turkey slices and tomato. Definitely very filling with all the protein, but not sure I liked it enough to add those wraps to my usual rotation.
    Thursday - Kettle corn. Yep.
    Friday - Navy bean soup from the freezer and orange slices.

  29. We had two very different trips last week. Trip 1 was a ski trip for DS18's 18th birthday, along with 5 friends. Then I met my girlfriends in Sedona for a hiking trip.

    Saturday - we bought takeout Italian for the teens, and DH & I went to an appetizer style place. We shared prime rib sliders, & a few other nibbles.
    Sunday - we took all of the teens out for DS18's birthday at an Irish pub. I had a bowl of colcannon/leek/potato soup, which is my favorite.
    Monday - we stopped at Costco for gas mid-drive, and everyone ate at the food court. I had a Costco hot dog. Please don't be jealous of my gourmet meal.
    Tuesday - now in Sedona. Went for Mexican with my sister & BFF. We shared a Mexican style Cobb salad (delicious) & tacos
    Wednesday - Fajitas & chips/queso
    Thursday - leftovers back in our hotel room/kitchen.
    Friday - I made spaghetti & meatballs (freezer) + garlic bread when I got back from the airport
