WIS, WWA | no washing machine for me

YOU GUYS. The delivery men got here with the new washing machine yesterday, and...it was dented.

Like, seriously dented on both sides. So it had to go back onto the truck.

I was terribly disappointed, because I had been thrilled at the prospect of having a functioning washing machine again!

And I had waited so long for a day when a delivery option matched up with a day I was not at work.

I know this is an extremely first-world problem, but I'm not gonna lie, I was pretty sad. However, the good news is that a new one is scheduled for delivery on Saturday. 

This time, though, I am keeping my hopes low. Because who knows? This next one may be dented as well.

I will hold my excitement until the new one is actually in place. 😉 

Anyway. Hello from me and my not-really-working washing machine.

What We Ate 

Saturday

I cooked up the last of the bag of Trader Joe's fried rice and topped it with some teriyaki-marinated chicken thighs.

Sunday

I made burrito bowls, using this chicken, plus cilantro lime rice, sauteed peppers and onions, some queso fresco, and a blended lime-cilantro sauce.

Some of you asked about the sauce, and honestly, I just eyeball it every time. I use about a 3/1 ratio of sour cream and mayo, add in a big handful of cilantro, however many green onions I have on hand, the juice of a lime, plus black pepper, garlic powder, and salt.

And I blend it all up. Oh, and I add some jalapeno if I happen to have one on hand.

It's sort of a hard thing to mess up, honestly; give it a try! 

I made enough burrito bowl material to pack for my Monday-Wednesday lunches and that worked out great.

Monday

I threw some homemade frozen hamburgers in the fridge before work, and then grilled them when I got home.

Tuesday

We had chicken tikka masala on naan, using a jar of sauce from Aldi. 

Wednesday

I had a wild day at work and didn't eat my lunch until 3:30 in the afternoon.

(Thank goodness I had a granola bar in my bag to tide me over!)

Because I ate lunch so late, I wasn't really hungry when I got home at 8:15. So I just ate some cottage cheese and fruit, left my dirty dishes in the kitchen, showered, and went to bed.

Sometimes, you need to prioritize sleep and just go to sleep with a messy kitchen. You can always wash your dishes the next day.

Thursday

Honestly, I was TIRED after all those shifts, which is usually how it goes after a long string of shifts: on that first day off, I get some things done, but I am nowhere near my usual levels of productivity. 

By the second day off, I'm usually back to normal, though; I just need one sluggish day and then I'm good. 

Anyway, I did not feel at all like cooking dinner, so we got takeout Panera with a gift card (from my credit card rewards).

Friday

I should be back in Regular Kristen mode today! So I will organize my fridge and get my kitchen life back together and make a menu plan.

  1. I am so sorry about the washing machine! I'm rewatching a show I loved as a kid called Once and Again and in the last episode I saw, the main character was also having washing machine woes (along with dealing with money issues as a single mother).

    This is a dumb question but do you cook the burrito bowl the night before? I'm always leary of reheating rice.

    This week's eats:

    Saturday: Baked sweet potato with a mushroom omelette.

    Sunday: Tortillas with various vegetable fillings (I made all of this from scratch including the sauce, and while it was probably healthier, it was a LOT of effort and washing-up afterwards!).

    Monday: Pasta with cream cheese, spinach, garlic and mushroom.

    Tuesday: I went to the cinema after work so treated myself to pizza.

    Wednesday: Chilli mac and cheese

    Thursday: Leftovers

    Friday: Undecided. I might make another omelette or a stir-fry.

      If you put an ice cube in the middle of a rice bowl and then microwave it, it helps keep it hydrated and fluffy. The ice cube doesn’t even melt because microwaves are like wizards!

    3. Yes, I cooked the rice that night and then used it in my reheated lunches.

      I know there are some food safety concerns with reheated rice, but what I've read is that as long as you cool it quickly after first cooking it, keep it cold, and then reheat it thoroughly, the risk are very low. 🙂

      And all that is honestly just good practice in general for food safety!

  2. Fingers crossed that Saturday ia more successful for the washing machine! Mmm that sauce looks amazing and easy.

    Menu highlights:
    DH made a squash bake with sausage, peppers, onions, and cheese. It's always incredible.

    I'm in love with some specific refrigerated tortillas so I make 2 tortillas, 2 eggs, and add whatever is in the fridge and strikes me as yummy. Endless combos.

    Last night made a salad and topped it with air fried fish sticks. I didn't have a bottled dressing I like, so blended spicy pickle juice and mayo. Was great!

    Deer meat in the slow cooker with plenty of potatoes and onions. So nourishing.

  3. That stinks about the washer, no pun intended. It's... impressive, shall we say, that they still tried to deliver it like nothing was amiss!

    1. I think it was in the cardboard in the truck; they took it off the truck, took it out of the cardboard in my driveway and then they were like, uhhhhhh, this is dented.

      So to their credit, they did not try to bring it in the house!

    2. @Kristen, DH and I routinely bought "scratch and dent" appliances--but we never got one as badly dented as that washer! I join everyone else in hoping the new one comes tomorrow with no dents.

    3. @Kristen, That's good to hear! I'd shrug off dents like that on our $125 Habitat Restore washer (which for the record, is NOT dented) but definitely not a brand new one.

  4. I took yesterday off almost entirely, living in my pj's and not leaving the house. So I say: some days are just like that and you have to recharge your batteries when you can. (:
    Monday - kitchen closed. I had a cup of tea at home, read my book, crashed
    Tuesday - (freezer) Beef Fajita Tacos, refrieds, rice
    Wednesday - Chicken Thighs and butternut squash
    Thursday - I was supposed to have tilapia, but instead ate a grilled cheese sammie and butternut squash soup I made in my crockpot.
    Friday - Probably going to have the thawed tilapia and the rest of the butternut I already prepped. Maybe a garlic roll.
    Saturday and Sunday - kitchen closed, but I made meals for work and I will have cinnamon tea and a book when I get home. (my new favorite thing)

    1. @Gina from The Cannary Family, Pajama Days are the best! I live with sweet Bella the 14 year old black cat who doesn't care what I wear. So I have Pajama days regularly. If I have to go somewhere in the afternoon I don't get dressed until time to go. Also, no bras on in the house. The girls may be hitting my knees soon, but my back and shoulders feel sooo much better. And yes I wear the correct size, just have arthritis everywhere.

      Which leads me to something I have wondered about. Kristen, is it possible to get arthritis in our skull? We don't have joints but we have fused seams. Odd thoughts from an odd brain.

  5. Booh for your washing machine troubles. The washing machine is definitely a device that has drastically improved the lives of mankind! My mum as a teenager working as a maid had to wash snotty handkerchiefs by hand. Only one generation away in Western Europe, people!

    This week we had potatoes and veg/meat multiple times, as well as a lovely vegetarian dinner at my sibling's and an easy mac n cheese by my husband. Today I am making slowcooker split pea soup with plenty of veg, homemade vegetable broth, and sausage. And I am inspired to try out some vegetarian recipes next week.

    Seriously though, that was a super dented washing machine! Like what did they do? Practice round house kicks on it? Such a bummer. Fingers crossed that Saturday’s is pristine!

      Yes! And I want to make another one for my job that says “No fun.” On the front and then “I said cut it out!” On the back. 😉

  7. OH NOOOO! I am so disappointed for you that you still don't have a fully functioning washing machine. But yeah, that was beyond dented. That looks like it actually fell out of a truck.

    Saturday: It was just me and my two youngest children for dinner this night. I had frozen some cooked pork chops a couple of weeks earlier, so I took those out, chopped them up, and fried them in butter with leftover rice and frozen peas.

    Sunday: Meatloaf, baked potatoes, tomato salad, chocolate ice cream. The ice cream was completely unnecessary after a week of Halloween candy, but the Sunday dessert is set in stone by this point. They didn't get to have very much, though.

    Monday: A skillet of leftover baked potatoes chopped and fried with leftover chopped meatloaf. And some people had some of the leftover Spanish tortilla, also chopped up and fried. Frying in butter is definitely the best way to re-heat leftovers.

    Tuesday: I pretty much just made macaroni and cheese, to which I added a can of tuna. And then a tomato and cucumber salad.

    Wednesday: Lamb ribs, chicken and gravy for those who do not care for lamb ribs (they are very fatty with a very lamb-y flavor), mashed potatoes, green peas

    Thursday: I combined the rest of the tuna mac with the last of the chicken and gravy for two kids. The other two had mashed potatoes and cheese with fried eggs. My husband had lamb ribs, mashed potatoes, and peas. I ate everyone's leftovers as I was getting them ready to go to a volleyball game.

    Tonight: Pizza. I don't have any pepperoni on hand, so I will use chopped bacon instead on one pizza. Maybe pickled onions.

  8. Gosh, this felt like a long week.

    Monday: Mr. B defrosted some hidden veggie bolognese. We were low on pasta so I had mine with toast.

    Tuesday: Mr. B mads roast chicken, rice, and peas.

    Wednesday: I was working late and got takeout. It wasn't good.

    Thursday: I got home a bit early and made soy-ginger (frozen) basa with rice and cooked up the remaining veggies dumplings I made and froze several months ago. Hooray for clearing space in the freezer!

    Friday: Mr. B is making salmon, as usual.

    WIA: My best effort so far this week was Leah Chase's Gumbo, as I think I've mentioned previously. But I got a whole chicken for 50% off at Tops yesterday and will roast that today, with a Honeynut squash alongside it.

  10. I wonder what they did to that poor washer to dent it so badly! When we replaced our fridge, they delivered it damaged (though nothing like this). It had clearly been damaged loading it on to the truck and they seemed to already know this, so I was extra annoyed because I had to sit there all day waiting for the delivery just to send it back (which they already knew I was going to do).

    1. Yes, that is the annoying part; that you work out your schedule to make it happen, and then you just have to do it again!

  11. How did that washer even make it on the truck? Holy cow!

    WIS - I can't be sure. It was a crazy week.

    Saturday and Sunday - I made a pot of chicken pumpkin chili. We ate it for dinner both evenings with typical toppings of avocado, sour cream, corn chips and cheese.

    Monday - DH made dinner. We had hamburgers, french fries and salad.

    Tuesday - On the first Tuesday of every month, I have a club meeting. This also coincides with our community's Food Truck Tuesday. I ate at my meeting. DH enjoyed food truck cuisine.

    Wednesday - I had a late lunch from Panera, so I had yogurt for dinner. DH ate his food truck leftovers.

    Thursday - I made a trip into Costco yesterday. I bought a $4.99 rotisserie chicken. we made a quick pot of rice and a vegetable.

    Friday - My son has invited us to dinner at his house. He has asked me to bring the wine. I believe he is makinga venison roast.

  12. I may not sneeze in the sun, but I sure have that thing that makes cilantro taste like soap. I'm sure that sauce is delicious to those who don't taste soap - the ingredients sound great, except for the cilantro - but just the thought of the cilantro in it makes me want to back far away.

    I spent right at $159 on groceries for two weeks, including a farm order.
    I don't have my menu with me today, so here's what I remember:

    I made a pot of bean-less white chicken chili. It's got a lot of garlic in it, but no chili powder, so it's more of a soup than a chili. It's a copy-cat recipe of the chili from Paleo On The Go.

    I cooked a sheet pan meal of farm pork chops with seasonings, onion, carrot, parsnip and something else I forget.

    I made a skillet meal of ground goat, cabbage, carrots, onions, mushrooms and curry paste. Garden greens on the side.

    I ate all of the above as lunches, too.

    I ate fish one night, but I can't remember with what.

    Last night I was tired and ate a peanut butter sandwich on homemade lower-gluten bread, with cucumbers and ranch dressing and pickled onions.

    Tonight, I don't know, but I have leftovers, so it will probably be that.

      My DH has the gene that makes cilantro taste like soap. Myself, guessing it's not genetic, but beets, truffles (truffle oil, anything truffle-related) and saffron all taste like dirt to me.

    2. @Liz B., Beets tasting like dirt is a genetic thing, like cilantro tasting like soap. I have the beet/dirt thing too. My mom loved beets, but they tasted like dirt to my dad.

    3. @Nancy in Eastern Washington, I also have the beets taste like dirt gene, and while cilantro does not taste like soap to me, it does taste just so strong and . . . verdant. Blech

  13. Saturday was the last day of a two week all out sprint at work, so when I got home I treated myself to some sushi, took a shower, and went to bed!

    Sunday was catch up on all of the things that fell by the wayside due to said sprint day, which included picking up some groceries. $60 at Sam’s, $55 at Aldi, plus what I already have will get us thru until my next payday in a couple weeks. Dinner was a roasted root veggie and brat sheet pan dinner.

    Monday—turkey breast (99 cents per pound on sale), mashed potatoes, gravy, and steamed veggies. Between Sun and Mon leftovers, I was set for…

    YOYO! Tuesday-Thursday

    Tonight is stuffed peppers and garlic bread, followed by an evening of madly trying to finish the first of three library hold books that came in at the same time. (I know there’s a postpone option, but I had hold hubris, and here we are!)

    Happy Friday, everyone! We spent $130 ($30 at Target, $48 at Fresh Thyme, and $52 at Trader Joe's).

    - Plant-based chicken nuggets with mustard/mayo dip
    - French onion soup made with vegetarian beef broth, ladled on top of a slice of toasted sourdough bread with melted Swiss cheese (ate this three times, although I could probably eat it every single day for the rest of my life and not tire of it)
    - Vegetarian egg rolls and small salad
    - Crackers and sun-dried tomato spread along with cottage cheese and peaches
    - Popcorn and fruit

  16. Big Scores at Grocery Outlet yesterday. I spent $207 but got a lot with my money including:

    32 ounce Better than Eggs for .97. These freeze if I don't use them up but I will. Each container is equal to 32 eggs.

    12 oz Hebrew National Beef Salami for $1.50. I bought the pre sliced extra sharp cheese and made lunchables for my dieting husband.

    I bought red-sticker turkey sausage and made a huge pot of chili with pinto beans I had cooked in the Instapot. I topped with 1.99 shredded cheese. I buy Anderhouse House soup mix on Black Friday. This might not be the cheapest way to go but I am not a natural cook and Spices often go bad with me. These are fresh and creative and Hubby love'[s them. All in All I get 8 dinner servings of heartiness for about $11.00 and no preservatives.

    I bought a bag of carrots and a head of cabbage for salads for the week. Chopped everything up and put in smaller foodsaver bags. I have decide that I will now buy pre shredded carrots. That clean up of peeling and grating carrots is no longer worth the price saving. I am taking a retirement pass. Luxury.

  17. I spent around $75 at the local grocery store as a fill-in-the-gaps shopping trip. This kind of shopping seems to get more pricey as time goes by.
    We ate mostly quick meals - grilled ham & cheese with chips; Philly cheese/beef with fries; Skyline chili 3-way style; meatballs with gravy over noodles, green beans, Red Lobster cheddar biscuits; chicken tortilla soup. I’m drawing a blank on the other 2 days.

    Friday - ate out at our favorite steak house on vacation, with all of my friends in Las Vegas. There was so much delicious food!
    Saturday - had shareable Mexican food, ahead of a concert. We had the carnitas & assembled into tacos
    Sunday - DH & I were very tired, as we flew back from the long weekend. I baked a sweet potato & we had that with some Costco chicken + salad
    Monday - I ate at a work event. I had a kale + chicken salad, in an attempt to get back on track after a lot of indulgent meals in Las Vegas
    Tuesday - I was again out at a work event. I had a slice of pizza, salmon & some salmon. It was a strange offering of things on a buffet.
    Wednesday - I once again scrambled to get food together. I baked up chicken & we had that with salad. As you can see, this wasn't my most exciting meal prep week. 😉
    Thursday - I again ate at a work social event (chicken + hummus & dip & the like), so just had a banana at home with DH. For him, I made shrimp scampi (freezer), which he had with leftover cauliflower crust pizza.
    Friday - no clue, but definitely need to sort something out. Maybe defrost the rotisserie chicken & turn that into a dinner of some sort.

    Sun: came off a three day work stretch with overtime and less than 8hrs between shifts. I do not remember if I ate.
    Kristen we keep protein shakes, granola bars and dark chocolate at our station's kitchen.

    Those rice meals look delish! I have a good Jasmine rice stash that I've been looking for ideas for, so thanks for the inspiration.

  21. That sucks about the washing machine! Hope the Saturday delivery is better! This week we had:

    Saturday: Gochujang tofu over noodles with quick pickled veggies with pomegranate from my parents' yard.
    Sunday: Homemade pizzas with persimmons from my in-laws' yard
    Monday: Taquitos & guac made from an avocado from my brother's yard
    Tuesday: gyoza with something...don't remember what. But we did have asian pear and apple on the side (from the grocery store)
    Wednesday: Mexican take out
    Thursday: Crispy tofu bowls with roasted brussel sprouts, delicata squash, pickled veggies, green onions, rice, etc.
    Friday: We'll see...at this point, I don't have a plan, which isn't great but I'll figure it out. Maybe we'll do grilled cheese, fries, and fruit.

  22. I really cannot recall what I spent this week because there was a lot of pet food and non-food supplies in the grocery cart.

    WWA: Roasted chicken drumsticks with baked potatoes. A sweet chili pork and veggies dish that used up some bone-in loin chops. Both those dishes were for DH, who can't have wheat, cow's milk, and is a diabetic with extreme pickiness about food. I ate some leftover turkey goulash that was heavy on the vegetables, spicy red beans and rice, tuna mac and cheese with peas and onions, various vegetarian sandwiches, and a couple of homemade protein and berries smoothies.

  23. Friday: Frozen pizza – we didn’t feel like making anything after handing out Halloween candy and the cauliflower crust pizza from Costco is always a win.

    Saturday: We took my father in law and his wife out to celebrate his retirement. We went to a restaurant that serves multiple courses and had a great time.

    Sunday: Chili and Jalapeno Cheddar biscuits – my husband has a chili cook off at work and wanted to try out a new recipe

    Monday: BBQ pulled pork over baked potatoes

    Tuesday: Leftover pulled pork pizza (using a Greek yogurt crust) and green salad

    Wednesday: Swedish Meatballs over mashed potatoes (husband’s request)

    Thursday: Team dinner at a Cuban restaurant at one of the hotels on the Las Vegas Strip

    WWA, First week of nurse aide training edition (aka I cooked next to nothing this week)

    Weekend: homemade pizzas. I guess that counts as me cooking, as each Friday I make a triple batch of par-baked personal crusts, and a batch of sauce, and some toppings for Friday.

    Monday: DH baked salmon, made mashed potatoes, and I think green peas on the side. Very good it was, too, a meal somebody else made after I sat in lecture for 8 hours.

    Tuesday: DS#2 made vegetable chili with some chicken breast chunks in it. We're trying to eat less beef.

    Wednesday: DS#3 made lasagna.

    Thursday: DH made pasta with homemade alfredo sauce, some more chicken breast chunks, and veggies. So good.

    Tonight: DS#1 is making turkey stew, DS#4 is making his favorite mac and cheese. I spent the morning making the fixings for the weekend pizzas.

    Just wanted to update that my first chemo transfusion went swimmingly today! One down and 15 to go! And I know it’s not thankful Thursday, but I just wanted to say that my nurse was awesome! She took one look at my arm port and said “You’re taking me back to the early nineties! I love it!” It’s very me to be old school. 😉 Also, I’m incredibly thankful for my husband who is the best support person ever, and I’m thankful for all of your supportive words here! I feel very loved! ❤️

      Also, I spent about 300 on food this week and we ate our normal fare. So far I have no appetite issues, so fingers crossed it stays that way.

  26. Ugggghhhh, rotten news about the new washing machine! You have been waiting so patiently for it. That's exciting that it might be there as soon as Saturday though. That would be a quick turnaround. Fingers crossed for you guys!!! Washing that first load in the new machine will feel so good!

  28. Totally off topic but I adopted a tuxedo kitty today!! His name is Mr Mittens, he is 1 year old, and he's hiding somewhere in my house.

    1. @Suellen, Oh, congratulations on your kitty! Clark (the Commodore) hid for the first few days, but came out when he realized the food was not being brought to him by butlers after all. I hope Mr. Mittens comes out soon and starts settling in for you. It took Clark about three days to stop hiding, three weeks to start warming up to us, and three months to feel really comfortable in his new digs.

  29. My dad had THREE OVENS that came that were smashed in on one or both sides. Finally he drove all the way over to the store and said he wanted to see the unit before allowing it to be delivered. The first one they opened in store after grousing about it - damaged. Then they got it. Based on that I went to a store to buy my oven a few years ago and they had to open three before they found one not severely damaged. I told my husband just blame me for making them do that. I was so frustrated.

    This also happened with my husband's large toolbox. The store clerk said they just send them back and they're all shipped the same way and all arrive damaged.

    Sorry for the long rant.

  30. What we ate this week:
    Saturday - I was home alone. I made KD with butter and heavy cream... It was really good.
    Sunday- fish, roasted veggies and mashed potatoes.
    Monday - pork chops, rice, corn and salad
    Tuesday - we went out for supper. I had braised beef ribs. I ate half and saved the rest for lunch on Wednesday.
    Wednesday - I finished the ribs for lunch, and ended up with a gallbladder attack. I took my meds and slept off and on the rest of the day. The girls made pasta with smoked tofu.
    Thursday - I make chicken strips ( dusted in corn starch, dipped in ranch and milk, coated with panko crumbs and old bay seasoning). They were amazing! Mashed potatoes and roasted broccoli
    Friday - I used the rest of the chicken up with a shawarma marinade, Greek style pita, veggies and tzatziki. Salad on the side. The girls had leftover fries too.

    I spent about 200 in groceries and 125 for supper out.

  31. I'm having trouble viewing your posts--no new ones will show up for days and days, then like ten days' worth all show up at once. I don't know why that would be particular to one reader, but have you heard of this issue before?

      It happens for me, too. If you clear your cookies, it usually fixes it, but then you lose other little helpful things that your computer remembers for you like log in user names, etc. You can also just refresh the most recent post page you read and then click on the next blog post icon at the bottom of the post before the comments.

  32. That dented washer makes me so sad! How did they not notice it beforehand?

    My meals this week have been pretty simple. I thawed some vegetable barley soup I made some time ago, and it was dinner for three nights. Finally it's gone! On another night I made a veggie platter of a baked onion, mashed potatoes, and green beans sauteed with almonds. Yesterday, I was gifted a bag of King crab legs that had been frozen after an event. I thawed them and scraped out the meat (quite a process!) and made crab salad. I didn't do too great a job because there were tiny pieces of the shell in the final product. Grrrr.   33. I think it's so interesting to see how your new job creates new routines, different patterns, etc. It's so NEAT to get to follow along with this new and exciting part of life with you! I am reading this from a regional airport in the deep south where my flights are indeed still in existence and on time...thanks for giving me something interesting to read while I pass the time!
