What I Spent

I wrote last week's WIS, WWA post in a 15-minute span from 9:15-9:30 pm and I am sitting here at exactly 9:15 again, doing the same thing on a Thursday night.

I worked today and I work tomorrow, then I have two days off, and then I'm back at the hospital again for two days.

I was telling my friend (who also works in healthcare) that it is a wild experience to live a long day in the chaos of a hospital, clock out, and then come home to your regular life.

The hospital is almost like its own world. And sometimes the things I see and experience there do feel rather like I'm living a whole different life than my normal one!

This week I spent:

  • $30 on a Hungry Harvest box
  • $27 at Safeway
  • $73 at Aldi

And that makes $130 for me.

What We Ate

Saturday

I had a bag of Trader Joe's orange chicken in the freezer, so we had that, plus I cooked up a little pot of jasmine rice. Fruit on the side.

Sunday

We had some cheese quesadillas, plus some cut-up fruit.

I realized I had a little backlog of bread on the counter, so we had French toast for dinner.

I ate shrimp, some roasted potatoes, and a green salad.

Zoe got home late from work and had some other leftovers.

Wednesday

I made some spaghetti and meatballs with a green salad.

Thursday

I honestly came home and ate the rest of my overnight oats, plus a few random meatballs, plus a peach.

I did eat a very organized lunch of spaghetti leftovers, bean salad, fruit, cottage cheese, and tomatoes. But my dinner was decidedly haphazard.

Friday

I have another tidy lunch packed, but after work, I think I might use a Panera gift card to pick up some dinner for Zoe and me. 🙂

And it's 9:31 pm so I'm off to bed after I schedule this post!

    WWA:

    Fri: mixed greens, focaccia topped with cherry tomatoes, mozzarella and Parmesan cheese and chicken chorizo. Chocolate covered rolled wafer cookies for dessert.

    Sat: sliced heirloom tomatoes, cabbage steaks, pizza bagels using heirloom tomato slices on top of homemade bagels and topped with mozzarella cheese.

    Sun: mixed greens, el quesadilla grande (utilizing leftover rice and beans) topped with avocado, diced tomatoes and sour cream.

    Mon: mixed greens, sliced cucumbers, sliced heirloom tomatoes, cherries and strawberries, waffles, and scrambled eggs.

    Tue: homemade lemonade, sliced heirloom tomatoes, riced cauliflower, stir fried tofu and peppers, jasmine rice. Chocolate chip skillet cookie for dessert.

    Wed: sliced cucumbers, tomato pie, and eggplant keftethes with sour cream and ketchup. Leftover skillet cookie.

    Thu: a hodgepodge of leftovers.

    Tonight: focaccia, of course.

  2. Saturday - Pizza and breadsticks

    Sunday - We ate lunch at a pool party where we took chips, carrots, and lemonade. I had a roast in the crock-pot for dinner, but everyone was so tired and not very hungry that we just reheated the leftover pizza and breadsticks.

    Monday - The ate the roast that was not eaten on Sunday, plus green beans, asparagus, and baby taters. The asparagus and potatoes were both from our garden! A week or two prior, we had mowed down our asparagus patch because it was so full of weeds and the asparagus started growing again! We're getting plenty of it now, which was completely unexpected.

    Tuesday - Tacos and watermelon

    Wednesday - Copycat Panera mac and cheese, asparagus, and carrots

    Thursday - Turkey, zucchini, and baked beans

    Friday - Probably turkey broccoli fettuccine alfredo. I have the next 8 meals planned out, but not the order of them.

  3. WIS: $38 at Wegmans (reflecting actual spending this time; I didn't realize I'd forgotten to give the cashier $10 in bottle slips till I was halfway out of the parking lot!) and $18 at various local produce stands.

    WIA: The week's highlights were (a) another ratatouille and (b) a smoked fish salad. Dr. Bestest Neighbor gave me half a smoked whitefish (he likes to get this when he and Ms. BN are at their lake house, but Ms. BN is not a fan), and I had a bit of smoked trout in the fridge; these came to about 2 cups when flaked and combined. So I added a bit of mayo, Dijon mustard, celery, and homemade "capers" (pickled unripe nasturtium seeds) from last year's jar.

    (Which reminds me that I need to pick more of these seeds for this year's jar! The pickling's very easy, BTW: I absolutely don't do anything else except cover the seeds in apple cider vinegar and put the jar in the fridge.)

    1. @A. Marie, THANK YOU for giving the "recipe" for homemade capers! I've always wanted to do that and never exactly knew how.

    2. @L, my pleasure. Just be sure to pick the seeds while they're still green, before the hard brown coating forms.

      That is interesting about the capers. I will have to try that. On annother note, I absolutely love ratatouille Especially this time of year when everything is fresh. I used to make an I used to make a huge pan of it for my younger son and me.
      Unfortunately, DH won’t willing eat eggplant. I do sneak it into my spaghetti sauce from time to time. He doesn’t know it’s there and it is really good for him.
      Do you know if you can freeze it, A. Marie.

    4. @Bee, I regard ratatouille as a seasonal treat, so I've never tried freezing it--and I'm not sure how well the eggplant and zucchini (aubergine and courgette, for our UK and European readers) would freeze. Has anyone else ever tried it?

      I'm 100% in the same eggplant camp as your husband. I've tried it various ways, and....nope. It would have to be well hidden to get me to eat it.

    6. @A. Marie, yes, you can freeze ratatouille! Let it cool overnight in the fridge to firm up, portion into airtight containers or bags, leaving any excess liquid behind in the pan. Keeps at least three months in tip top condition, and then another three in decent shape (obviously food-safe indefinitely as long as it stays frozen, but gets less tasty as time goes on)

    1. @Tarynkay, I wish I had mycologist neighbors. I love mushrooms and would enjoy doing some experimenting with what's locally available. I suppose I should get in touch with the local forestry school to see if there's a local mycologist group.

    2. @A. Marie, A former neighbor of mine, a Russian immigrant, got me started hunting wild mushrooms. (Russians are known for this.) But she sadly moved to California and I still feel nervous about it. I keep meaning to find a local foraging group.

      I feel the same way. I need to find friends or neighbors who are mycologists, or experienced foragers who are willing to take me along. A friend of mine forages for morels, but is reluctant to share her secret foraging spots (which I do understand).

      Lucky you for having had that opportunity in the past....I'd feel nervous, too, doing it on my own.

    5. @Liz B., The problem is, foraging wise, is that people around here are super tight lipped about their favorite spots. So far, wild things look bad and tiny. The beach plums are tiny and I'm worried about the wild grapes. Some years they look like raisins instead of grapes. We'll see, I guess.

      I do know how to find hen o' the woods shrooms, except that I don't really like them.

    6. @A. Marie, There's a lot to learn online. My nephew is an active forager and has learned so much! (Pretty impressive considering all four limbs are paralyzed.)

  5. WIS: Approximately $130, which is about $10 over budget. Ground beef was on a good price at Aldi and I acted accordingly, plus buying extra gluten-free snacks for my husband's all-day stint as an election worker yesterday.

    WWA: Leftover pot roast with sweet onions and green peppers from the garden. Roasted chicken with Penzey's Arizona Dreaming salt-free seasoning. Wasa crackers with soft cheese, protein shakes, nuts, watermelon, nectarines, radishes, grapes and strawberries. Loads of cherry tomatoes and little cucumbers from the garden. Leftover vegetarian casserole.

    1. @Natalie J, I second you on thanks to @Ruby's husband. Being an election worker in this year of all years should probably merit extra pay for effort above and beyond the call of duty.

    2. @A. Marie, yeah I am rather concerned. To the point I need to find out if I can legally carry a taser. Scary part is the building in which the polling place is located has very poor cell reception (metal building). We've already had a "you want a copy of a DVD "proving" the 2020 election was stolen" voter back in was 2021 (local elections) or 2022? Ugh.

  6. My week of food this week was much more like yours are, since four of the six members of my family were in New York, and my son that was here with me was sick all week. I made him a lot of jello--which in our house is lemon juice, sugar, water, and plain gelatin --my rice. This is what I ate . . .

    Saturday: A salad with hardboiled eggs and feta for the protein, and ice cream.

    Sunday: Hardboiled eggs again, but this time I just mashed them up with some leftover ranch dressing. I also ate half of one of the huge Armenian cucumbers from my garden. And more ice cream.

    Monday: I cooked! Sorta. I had stashed some extra formed hamburger patties in the freezer last time I made hamburgers, so I fried one of those. I also made a cucumber, tomato, and feta salad. And yes, I had more ice cream. It was gross and hot all week. That's my excuse, anyway.

    Tuesday: Taking a page from your book, Kristen, I bought a rotisserie chicken at Walmart when I went there to buy school supplies. I actually bought it hoping the ill child could eat it--he loves chicken--but I mostly ended up eating it. I had some more cucumbers with the last of the ranch dressing, and then I shredded some chicken right into the bowl the cucumbers had been in, because there was a little ranch dressing left. Ice cream? You betcha.

    Wednesday: Another salad with eggs and feta. Also a beet, green onions, and cucumber from the garden, which made me happy. Bet you can guess what I had after that.

    Thursday: The travelers returned, and I made taco rice with the rice I had cooked for the sick kid that he never ate, ground bull, salsa, spices, and cheese. Also cucumbers with salt and vinegar, and the other three kids finished the lemon jello.

    Tonight: Dunno. I need to go freezer diving. It's going to be relatively cool today, but I'll probably be at the county fair until late afternoon, so I need to find something quick to cook.

    1. @Jaime, I grow them, too, which gives you some idea of how adaptable they are since Kristin@going country lives in some hot as hell place and I live in one of the coldest parts of Alaska. I have never had them get bitter, even when I have lost track of them and suddenly they are the size of Venice gondolas.

      Interesting. Melons are my favorite fruit but I've never seen any of those here. I'll have to keep my eye out for them.

  7. I was alone much of this week, as my husband is in Tennessee helping our back-to-work teacher daughter with childcare while her husband is away at a conference. (I'm here overseeing our outdoor re-landscaping project. But in that it's in the 70's here, and in the high and humid 90's where he is, I'm not complaining 🙂 ).

    WIS: $63, primarily due to doing some on-sale protein stock up. As you can see below, my eating was pretty pathetic- because while I genuinely love to cook for others, I simply. cannot find any motivation when cooking for just me!

    Sat- Both husband and granddaughter still here, and we had chicken with lemony potatoes and spinach.
    Sun- Last day with granddaughter, so we went out to eat to celebrate the end of her visit here.
    Mon- Solo me had leftovers from Saturday.
    Tue- Solo me had more, and the last of, Saturday leftovers.
    Wed- Solo me had cheese, crackers, and fruit.
    Thur- Solo me had a piece of mushroom lasagna from the freezer, plus salad. ( I cut up leftover homemade lasagna into squares before freezing, so I can easily pull out just one piece at a time.)
    Fri- A girlfriend is coming down for the weekend, and we're starting things off by going out to a jazz event tonight that includes dinner.

  8. As usual, your meals sound perfectly reasonable! I spent around $200 this week FOR ME ALONE and the bulk of that was supplements and cleaning products. The fridge still looks kinda bare but its meal prep day, so it won't be that way for long. I fixed:
    Monday - kitchen closed. I had a turkey sammie on brioche bun and it was delightful.
    Tuesday - Garlic Herb chicken breast strips over a salad with avocado, bell pepper, tomato
    Wednesday - Blackened Skillet Shrimp, some ramen noodles, green beans
    Thursday - Beef Broccoli, a bit of rice, a peach
    Tonight - Pork Chop, some white beans, spinach or the rest of the broccoli (going to make two plates so I have one for work)
    Saturday and Sunday - kitchen closed, but I have meals planned for myself
    *Its been quite nice cooking for just one!

  9. I wanted to chime in, Kristen, about the hospital being another world in itself. When my husband was going through his allo transplant at UCD hospital Floor 8, it is really a world unto itself. The nurses and doctors are amazing and their dedication really shows. He was there a month, so we got to see alot of the goings on. Recently, he had to have a biopsy ( unfortunately, cancer again), and I felt thrown right back into that world of medicine. It's very different especially when you're on the outside looking in. UCD is a training hospital for doctors so they are always there in groups.

    1. @christina, I'm sorry that you have been in and out of Hospital World. Having only escaped last year from Nursing Home World (some differences but many similarities), I hear you. And I agree that good staff members like our Kristen can make a huge contribution to the experience in both settings.

  10. What a bad week! As much as I spent at Walmart and TJ, I should have plenty left so I won't have to buy so much this week - geesh!

    Wednesday - Burgers on the grill and Ore-Ida fries
    Thursday - I had Salmon, roasted potatoes and green beans. I ordered pizza for the guys

  11. Saturday - my husband picked up takeout cheesesteaks, mine was veggie only and really good, I’m finding so many good veggie takeout options lately. Kids aren’t into cheesesteaks so they had chicken strips from the same restaurant.

    Sunday - our last night at home before vacation so I tried to use up a lot of produce and anything else that might go bad. We had impossible burger for the husband, black bean burger for me, sautéed Yukon gold potatoes (I cut up my burger had it over the potatoes with a cilantro sauce I’d made rather than on a bun), corn on the cob, and lots of fresh fruit (we have fresh fruit with dinner every night but had some extra tonight) I also chopped a bunch of fruit and veggies and brought them with us since our room had a mini fridge and we ate all of it throughout the week so no food waste!

    Monday - Our first night of vacation, we ordered room service since I’d booked this trip back in January and it came as part of a package with a daily food and beverage credit. I had veggie pasta, son had butter and Parmesan pasta and husband and daughter had cheeseburgers (another reason I was glad I brought the fruit and veggies, to supplement the lack of veggies in our dining out meals)

    Tuesday - we went to the boardwalk in the evening which has carnival type food. The kids had corn dogs, I had nachos with beans, husband had a cheeseburger again (I don’t ever cook burgers at home except impossible burgers so my husband was getting his burger fill on this trip haha) We all got soft serve ice cream for dessert

    Wednesday - our friends recently moved near where we were vacationing so they invited us over for dinner. They made a Burrata salad, roasted vegetables, saffron rice, and roast chicken thighs, rice pudding for dessert. I told them it was the best meal we’d had on our trip! It was so good to see them and their kids are the same age as ours so we stayed late and talked since the kids were all having fun together.

    Thursday - home from vacation, I made spaghetti and meatballs (regular and veggie meatballs from the freezer, jarred sauce) with steamed baby corn and baby carrots. I also mixed some frozen kale into my serving, trying to keep up my veggie intake.

  12. Boy, I love spaghetti. It's the one food that always gives me that satiated feeling after.

    Tonight: pad thai. Gonna try the wok over the fire pit.
    Last night: Skipped dinner after enormous lunch.
    Wednesday: Sausage & pepper heroes.
    Tuesday: more cobb salad.
    Monday: IDK.

  13. I ran across this post for 20 high protein meals that can be prepped ahead. There are some good ideas and after Kristen’s recent post, I thought some of you might be interested.

    WIS: $155 Costco (food only) monthly stock up, $42 Publix, and $75 eating out.
    This is a total of $272.

    WWA
    Friday: Freshly caught red snapper, rice, spinach/berry salad

    Saturday: Costco rotisserie chicken, green beans, DH had rice again.

    Sunday: Spinach salad with avocado, leftover chicken, tomatoes, cucumbers and a few tortilla chips.

    Monday: ?

    Tuesday: Hamburger and summer peach salad. DH had buns and fries.

    Wednesday: No AC. Panera salads and hung out in the air conditioned dining room.

    Thursday: No AC. Drive through Panera for hubby again and I ate happy hour dinner with a friend. No alcohol for me but grilled fish and salad. My dear friend gave me a few of her super yummy French fries.

    Friday: I don’t know. They are here installing the AC, but it may be close to 6 when they are done. My kitchen is the hottest room in the house in the afternoon. It is on the Southwest corner, but we will figure out something.

  14. Hey, we had French toast due to too much bread too! This is my last week of freedom, I go back to school next week (I'm a teacher).

    Sunday: Fideos. We used to make this all the time, but hadn't in a while. It's delicious, and it's definitely going back into a more regular rotation.
    Monday: French toast (there was a grocery mixup, and we had double the bread).
    Tuesday: Preschooler's choice, she's on a spaghetti kick. We mixed the leftover jarred sauce from last week with some cream, it greatly improved it.
    Wednesday: Leftovers with veggies and ranch.
    Thursday: We were supposed to cook butter chicken, but life got in the way and we ended up at the Chick fil a with a play place, where my child happily played for over an hour. No regrets.
    Friday: Work dinner tonight with my principal.
    Saturday: We'll get around to that butter chicken.

  15. $44, but we mostly ate stuff we had.
    Saturday was leftovers
    Sunday: ham and cheese sliders with onion rings and salad
    Monday: grilled butter chicken with curried potatoes and air fryer okra
    Tuesday: tacos/refried beans and rice
    Wednesday: We both ate leftover taco meat or grilled chicken with big salads
    Thursday: DH's birthday and I made chicago style pizza
    Tonight: The kids are all coming for DH's birthday. Fish fry with hushpuppies, jalapeno poppers, pasta salad and tiramisu rather than birthday cake....most all DH's favorites. This is where most of my grocery bill went as I didn't have mascarpone cheese or fish in the house.

  16. Sunday: A relative is having a sad time, so we went over with chocolate cupcakes and sushi.

    Monday: I wound up working late and my mom came over unexpectedly (she asked first! we just weren't expecting her) so Mr. B made hot dogs and salad. Yum!

    Tuesday: I made roasted chicken and cut raw cucumbers and strawberries

    Wednesday: I was out for dinner with friends and I had massaman fish curry and rice. It was very good but quite rich.

    Thursday: Mr. B made veggie burritos

    Friday: Mr. B usually makes salmon and veggies and buys challah for Shabbat. And we go out for ice cream near the park 🙂

    1. @Meira @meirathebear, the choice of chocolate cupcakes and sushi for cheering up a relative who needs cheering seems inspired to me. It would certainly get me off the mat. 🙂

  17. I did a big grocery stock up last week and spent $175 @ Aldi and $342 @ Costco. I also spent and odd $35 @ Publix to take advantage of some great BOGO sales.
    Saturday: I cannot remember
    Sunday: Cube Steak in the Instant Pot with mashed potatoes and mixed Normandy veggies from the freezer.
    Monday: Turkey Meatloaf, rice & green peas
    Tuesday: Cashew Chicken without the cashews because I was out. I threw in lots of extra veg & we had jasmine rice to go with it
    Wednesday: a quick chicken soup using some chicken breasts, leftover rice & veggies from the freezer
    Thursday: Italian Pork Tenderloin roasted in the oven, protein pasta with Marinara & a mixed green salad
    Friday: I have no idea but it will be something easy like chicken tacos. This has been a long week and I am hoping for a restful weekend if possible.

  18. Hospital / healthcare life is wild. I am currently in it and have loved the last 20 ish years I’ve been in it. It’s fun to hear your introductory thoughts bc it is a little hard to describe to someone who’s never experienced it. Your summer job will be a good test drive to your future- cheers!

  20. We were out of town at a myriad of different things, so here goes:

    Friday - ate at the airport lounge. The orange chicken with broccoli was surprisingly tasty.
    Saturday - ate at my aunt's 70th birthday party. I had 1/2 a hot dog, various salads & cheetos. I don't keep cheetos at my house, and it's a once a year splurge to eat the very unhealthy & fake cheetos, but I do adore them.
    Sunday - we had Thai food takeout at my sister's house
    Monday - DS18 & I drove to his college orientation & walked to a nearby restaurant. I had a cobb salad, with a few of his delicious fries.
    Tuesday - DS18 had a terrible migraine, so he skipped dinner. I grabbed a sandwich at Safeway.
    Wednesday - DS18 & I headed back to my sister's house & we made "Freezer dinner" out of a variety of freezer options (chicken, spring rolls, etc)
    Thursday - DS18, DS17, & my nephew flew home with us. DS18 invited his girlfriend over for dinner, so there were 6 of us. We had takeout pizza, salad & watermelon.

    As for tonight, I'm actually cooking! It will be either tacos or chicken shawarma.

  21. WIS: $30.46 on groceries, and a nearly equal amount ($28.46) on a single dinner out with friends. So … $58.92.

    WIA: Chicken with yellow rice and roasted broccoli; stir fried zucchini with ramen; a ton of organic strawberries I raced to finish before they turned to strawberry mush; filet mignon for dinner out and its leftovers for lunch and another dinner thereafter.

    Like Becca, je ne regrette rien.

    1. @JDinNM, Try dehydrating strawberries that will go bad if you don't force-feed to yourself. Nice mid-winter treat to pull them out then.

  22. 86 dollars at grocery. 8 and some change at dollar store. 3 and some change at Quik Trip.

    Monday and Tuesday: Fried chicken. Corn on the cob. Lettuce salad.
    Wednesday: hosted a cook out with friends. Brats. Corn on the cob. Baked beans. Chips. Brownies.
    Thursday: cook out with family. Did not host. Yummy summer salads. Hot dogs on grill. Chips. Fruit. I contributed a strawberry jello cake desert.
    Friday: leftovers!

    Sometime this week end I need to make a marinated pork loin bought on mark down with potatoes and carrot chunks in the slow cooker. I am also craving a cold tuna noodle salad with boiled eggs in it and lots of home grown fresh herbs.

  25. WIS: Market Basket $50+ I needed coffee and bread (lol)
    I don't know what we had last Friday or Saturday. aha, I remember. This is a good memory game to work on weekly: WIA, WIS.

    Friday: Mac&Cheese because my 5.5 yr old grandson stayed overnight with me for the first time and he likes M&C. He had 3 helpings for Saturday breakfast.
    Saturday: Yogurt. I had spent a good portion of the day helping my daughter & SIL open boxes in her new home.
    Sunday: BLTs. Was hankering for some seasonally farm fresh tomatoes.
    Monday: Tried a hash brown/egg dish--It was okay. Needs work.
    Tuesday: Leftovers. Arrived home late from work
    Wednesday: Marinated steak and roasted squashes.
    Thursday, I went out to dinner. My boss does a summer outing and an after Christmas holiday outing.
    Last night (Friday) we had my granddaughter's 13 birthday celebration. My daughter did a taco bar and she made an ice cream cake.
    Sadly the aunt on my SIL's side could not come. Her husband was doing some yard work and somehow ended up with a branch (twig, stick) that he was cutting down into his chest. I guess did hit a lung but it could have been worse. Hopefully his recovery will be without issue. I'm sure my granddaughter will remember this birthday.

  26. There is a hospital near me where you work 7 12 hour shifts and then have 7 days off

  27. I don't remember which days where which dinner, but amazingly I actually remember what we ate.

    --homemade pizza on whole wheat crust (slices divided up with ham & green olives/ just ham/ & just sweet red pepper & a tiny bit of cheese), carrot and celery sticks
    --bowl of fiber flakes cereal with blueberries and banana, and two apples (on my own for dinner)
    --homemade black bean burgers with spinach & condiments, apples
    --shrimp, rice, spinach salad
    --salmon, rice, spinach salad
    --tomatoes on cottage cheese, smashed avocado & 15 tortilla chips, the entire 1 lb box of strawberries cleaned/halved/and sugared with 1 1/2 teasp raw sugar (on my own for dinner again)
    --veggie soup from the freezer, a toasted almond butter & apricot jam sandwich, & apple (just me again)

  28. Friday: Chicken and Cabbage with a side of mashed potatoes

    Saturday: I had a work event – taco bowls on a boat cruise

    Sunday: French Bread pizza and buffalo cauliflower

    Monday: Roasted Shrimp Enchiladas over brown rice

    Tuesday: Chicken and Yellow Rice, roasted veggies, naan, white sauce

    Wednesday: leftovers

    Thursday: I picked up two cheese pizzas from Aldi and added the last of the pepperoni from Sunday and mushrooms
