WIS, WWA | and now we are two
What I Spent
Lisey left on Wednesday of this week, so from here on out, I'm usually only going to be feeding Zoe and me. It's been a long time since I was cooking for just two!
I spent:
- $9 at McDonald's
- $22 at Chick Fil A
- $72 at Aldi
So, $103 for me.
It'll be interesting to see if I notice a difference in groceries with Lisey gone. She definitely didn't eat all her meals here, since she was often out with friends, so I don't know if much will change.
Time will tell!
What We Ate
Saturday
The girls came back from their trip pretty late; I'd had a late lunch, so I wasn't hungry. But they were, so we picked up some McDonald's for them on the way home.
Sunday
Zoe was with a friend, so for Lisey and me, I made pesto tortellini with sautéed veggies and shrimp.
Monday
I made fried rice with chicken and veggies.
Tuesday
I grilled burgers. Still so excited to have a grill again!

I grilled the buns too.
I added sliced jalapeños to my burger toppings and it was a delightfully spicy experience.
Wednesday
This is the day that Lisey flew out to Hawaii, so Zoe and I treated ourselves to a visit with all the cats at the cat shelter and then we went to Chick-Fil A for dinner.
The day when Lisey moves halfway across the world, a bit of treating is in order for those of us who are left behind. 😉
Thursday
I went out for a belated Mother's Day meal with my sisters-in-law, my sister, and my mom.
I had shrimp and grits with fried green tomatoes, and OHHHH it was so good.
I love shrimp and grits, but now that I'm feeding just me and Zoe, I probably won't make it that often. Zoe's allergic to shrimp, and making a whole batch of shrimp and grits just for me is a little too much work.
So, a restaurant version was perfect. 🙂

Friday
I have a day with a million and one things to do so I probably will do something very easy for dinner. I have some bacon in the fridge, so maybe BLTs are in order.










WIS: $14 at a local Elks Lodge's Memorial Day chicken BBQ, $36 at Trader Joe's, and $14 at Aldi.
WIA: I didn't make anything remarkable myself, but the fundraiser chicken BBQs of Central NY and the Finger Lakes (such as the one I attended at the Elks Lodge) are worth mentioning. They use a special recipe developed at Cornell, and the chicken is utterly delicious--as even this expat Southerner must admit!
@A. Marie, I was just talking with my husband about the chicken barbecues! I miss them. They seemed to be getting fewer in number the last years we were there--I suspect because the men who spent so much time and effort on them were getting older--and I was wondering if they were dying out completely. I'm so pleased to hear they are not. Oh, and Cornell chicken is actually really easy to make yourself. It's only the grilling of it that takes forever. 🙂
@kristin @ going country, it's true that there are fewer chicken BBQs than there used to be, for the reason you mention. (I also suspect that some weren't resumed after the pandemic shutdown.) But I know of two Elks Lodges, a couple of American Legions, and several churches and volunteer fire departments in my area that still hold them.
@A. Marie, Cornell chicken (from Brooks in Oneonta) may be my dessert island food. It's so darn good!!
I make it at home but it's just not the same.
@Battra92, I wouldn't try making it at home even if I still had a grill, which I don't. (DH was the grillmeister around here, and I put our old burned-out grill on the curb last year.) But I enjoy going to a few of the fundraisers every summer and helping keep the tradition alive.
WIS: 59.06 on takeout pizza for lunch when my mother-in-law visited, 241.73 @Aldi, 175.38 for my husband's order of protein powder, and 20.42 on another box of wine, for a total of 496.59. Sigh. Moving on.
WWA:
Fri: salad (lettuce, feta, dressing made from tomato marinade), watermelon cubes, focaccia with tomatoes, bacon, mozzarella and parmesan cheeses.
Sat: baby carrots, ranch dressing, breakfast biscuit braid (2 rolls of crescent dough-1 for the bottom and one to make it look like a braid over the filling: scrambled eggs with cream, sliced turkey lunch meat and swiss cheese)
Sun: grapes, cubed cantaloupe, sunday gravy (tomato sauce with meatballs, Italian sausages and pork ribs), angel hair pasta, shredded parmesan/romano cheese.
Mon: salad (lettuce, cucumber, feta, crispy onions and balsamic vinaigrette), homemade hoagie rolls topped with leftover Sunday gravy (only meatballs left) and shredded mozzarella cheese.
Tue: smash burger tacos topped with cheddar cheese slices, shredded lettuce, diced tomatoes, diced pickles, diced onion, and a sauce that was sort of like big Mac sauce, but spicier.
Wed: grapes, cucumber spears, Aldi cheese take and bake pizzas, donuts to celebrate the removal of the splinter from my son's finger. We put a mini powdered white donut on top of a mini chocolate donut, then pierced the tower with a pretzel rod (to represent the giant splinter, of course). The kids thought this was hilarious.
Thu: salad (pretty purple lettuce, sliced radishes, crumbled feta cheese, chocolate granola, olive oil and balsamic vinegar), chicken legs made in the instapot, leftover chicken and rice, more splinter donuts.
Tonight: salad and focaccia, as usual.

@Becca, How big was the splinter? Did he have to go to a doctor to remove it? Last year my oldest son jumped for a football on the playground while wearing shorts and came down on a tree stump, embedding a two-inch-long piece of wood in his thigh (thankfully it went in horizontally just under the skin, not straight in). Miraculously, another student's mom happened to be there, and she's a nurse. She removed it, and he brought it home to show us. It was yikes. So glad that mom was there, because it's 90 miles to the nearest hospital or urgent care. He still has a scar there.

I just bought protein powder this week and WOW! never noticed that sticker before. My son started to use it during track season and I think he was trying to hide the fact, but his sister outed him! lol Now that HS season is over she is back to hard core lifting to prepare for college track and she asked me to pick some up. She tried brothers chocolate and asked for vanilla. I grabbed 1 of each at ALDI and that was almost $40 just for those 2 items! I KNOW higher quality brands are $$$

It was about 3mm long, but wedged in at a right angle towards his joint at approximately twice the depth of the splinter. Five doctors at six different appointments over the course of seven and a half weeks were unable (or unwilling, more accurately) to remove it. I was told everything from "we don't want to hit a vessel," "you're causing the infection by picking at it," "he's throwing up from a virus, not a blood infection" and even "if there is any splinter left, it's miniscule and the body will just absorb it." He had three rounds of antibiotics, and at the final appointment we had with the "hand specialist," we were told that the plan was to allow the body to completely encapsulate the foreign object over the course of eight more weeks, at which point the hand specialist would put him under anesthesia, remove the entire ball of scar tissue and give him two stitches. Meanwhile, he was in constant pain. I understandably said @#$& no to that plan and dug it out myself with a needle. The only way I could get him to hold still long enough was to promise him a donut party. Ultimately, it was an accomplishment rivalled only by my recent success in curing my cat of diabetes.

Yeah, it's crazy expensive, but he says he likes it as a meal replacer because then he doesn't have to think about what to eat when he's hungry, especially in the morning. I spend an equally insane amount on vitamins and probiotics, so I figure I can't complain. I hesitated to include it in my grocery totals, but he does use it for one and sometimes two meals a day, so I figured I should count it.

@Becca, Your poor son in such pain and the story of his hero mom is lovely. Now, what’s up with curing your kitty of diabetes?

He had diabetes induced by a round of steroids. Curing required obsessive online research, temporary insulin shots, constant blood checks with a home glucose monitor, copious note taking and glucose charting, and a pretty severe diet change. It took about about a month for his pancreas to heal, but he now no longer needs the insulin and has regained the four pounds he suddenly lost while diabetic.

I do not remember anything else! Tonight, either tacos or floor steak. Possibly just floor steak for the boy and something else for me and my daughter, possibly more salad since we have a ton of it with chicken or something on top.
My guess would be more sandwiches and eggs+ meals will be featured here. 🙂
Saturday: Sauteed shrimp, some of the processed bull meat from the freezer that had enchilada sauce in it and fried with the last of the leftover chili (because there wasn't enough shrimp for everyone), mashed potatoes, raw broccoli, chocolate chip/raisin/oatmeal/almond cookies
Sunday: Cheeseburgers on homemade sourdough buns, baked beans from the freezer, pots de creme
Monday: Ground beef and bean soft tacos on homemade corn tortillas, banana fake ice cream
Tuesday: Patties I made from throwing pressure-canned bull meat in the food processor with onion, mayonnaise, mustard, lots of parsley, bread crumbs, and eggs. I fried the patties just like tuna or salmon patties. These were eaten, but will not be a repeat preparation. We also had rice and raw kohlrabi (from the garden, yay!)
Wednesday: I had more of the uncooked bull mixture, so I mixed that with leftover rice and grated cheddar to make a casserole. This was much better than the patties. The bull meat does best in casseroles, for sure. I also made rhubarb pudding, which was, as ever, eaten with puddles of heavy cream. 🙂
Thursday: Pork steaks, pureed sweet potatoes, baked whole garlic (my husband pulled a few plants from the sheep pasture), green salad with a very herby dressing made from mayonnaise, sour cream, yogurt, and lots of finely chopped garlic scapes, dill, and parsley. The last three came from the garden, and made for a delicious salad dressing. I had also made gingersnaps earlier in the day, so of course those were dessert.
Tonight: I still have to go freezer diving, but I had one child request spaghetti, so I think I might get out ground beef and make meatballs with the spaghetti. Also another green salad. I have store lettuce to use up before my own lettuce is ready to harvest in a few days.

That's all I can remember....my boys were gone for one night and my daughter was sick, so there was less cooking (and more eating leftovers) than usual.

Oh, my goodness your meals look so good this week! In particular the shrimp and grits, but all of it sounds like a menu I could work up for moiself. This week at my house:
Monday - kitchen closed. I had a burger and fries from P. Terry's. Its right on my way home and less than $4 for dinner. (https://pterrys.com/)
Tuesday - (freezer) Tamales, cilantro rice, zucchini
Wednesday - Grilled Chicken over salad with romaine, purple onion, olives, cucumber, tomato, croutons. This was crisp and crunchy and so good. I made a giant chocolate chip cookie for dessert and split it with my son.
Thursday - Focaccia Pizza, HEB deli soup. The soup flavor was Thai curry. I added more cheese, and some sliced bell pepper and purple onion to the focaccia as the toppings they put on were wimpy.
Tonight - BBQ Pork Chop, broccoli, twice baked potato. Might use my grill as I cleaned it up and its ready to go.
Saturday and Sunday - kitchen closed. I'm going to try to avoid Taco Bell, but last week I did have a really good grilled chicken ranch burrito there and yes, it is also on the way home from work...

Sunday: We were out at my parents' house.
Monday: Pasta with tomato sauce and cucumber salad
Tuesday: Scrambled eggs and cucumbers on the side. Mr. B was working late, so I made that for my daughter and I snacked later.
Wednesday: I was working from home, so I made beef stew to use up the beef from the freezer, rice, and cucumber salad.
Thursday: Mr. B made salmon, buttered noodles, and cucumber salad.
Friday: I have no idea. We have some bone-in chicken breasts that would be nice with rice and...cucumber salad haha
Cucumbers are one of my two favourite vegetables (the other is green beans, which are sadly always a bit pricey, and I don't like them frozen.)

@Meira@meirathebear, have you ever tried the frozen whole green beans from Aldi or Walmart? Frozen green beans are not my favorite either but these are great especially par-cooked then sauteed with garlic & seasonings.

@Jennifer G, No, I haven't. Thanks for the recommendation! I'll pick them up next time I'm there. I do like using frozen vegetables for quick side dishes.
Sunday- I went grocery shopping knowing I HAD to get back to cooking at home now that HS track was officially over and the babes graduated.. So I bought lots of healthy stuff and when I realized the kids were no where to be found the husband and I went to our favorite Mexican place and shared a fajita dinner... it was worth it
Monday-We were using our Holiday to get stuff caught up around the house. I pulled a pack of hot dogs out of the freezer and pressed the easy button. Had those with the corn on the cob I picked up the day before. Chopped down a head of cauliflower and seasoned and airfried that. Served with fresh berries and melon.
Tuesday- just us adults again.. Stuffed baked potatoes for supper. Hubby wanted to try some non-meat crumbles so I sautéed that up and he seasoned it like chili. He used that on his.. I went with bacon and broccoli. Kids wandered in and ate last of the bacon. Ate with last of corn on the cob and fruit.
Wednesday-The girl was home and wanted healthy orange chicken.. So I diced up some chicken breasts and cooked those. added carrots, snow peas and zucchini. served with white rice and it was a sauce your own event.
Thursday- I marinated a thin london broil and had hubby grill.. not the best but still edible. served with quinoa and seasoned green beans.
Friday- today is supposed to be in 90's...no clue

I haven't written down anything that's not vital for the last week of school chaos, so I'm going straight off memory.
Saturday: We had a couple of graduation parties and ate there
Sunday: Memorial weekend cookout with my family. We brought fruit and asparagus.
Monday: I don't remember dinner, but for lunch we went to a friend's house after a parade and brought fruit and deviled eggs.
Tuesday: I neglected to put dinner in the crockpot before we were gone all day for Field Day, so I switched menu plan days and we had chicken sandwiches, corn on the cob, and broccoli with cheese
Wednesday: I remembered the venison roast! The recipe I tried this time is definitely a keeper. I cooked it with carrots and potatoes. Pineapple on the side.
Thursday: Freezer meal! Salsa verde shredded pork tacos with chips and queso
Friday: Planning on making Kristen's orzo with sausage and asparagus. I haven't looked at the recipe yet this week, so hopefully I have everything I need for it! In a couple of hours I will have all 3 kids at home and I am for sure not running to the store for one missing ingredient. Ha! Today is the last day of school and we're going out for ice cream after dinner.
This was a week in which I didn't put a lot of effort into meals. I also didn't grocery shop - I'll do that tonight.
One night I was tired but knew I needed to use up some bananas, so I made grain-free banana chocolate-chip muffins and ate some of them for supper. No, it wasn't the healthiest choice, but I didn't care. I froze the rest of the muffins to pull out one at a time for a treat.
One night I cooked bacon, drained (and saved!) most of the grease, then sautéed collard greens in the same skillet. I think I had fruit on the side one night and roasted sweet potato with it the other night.
Memorial Day was a cookout at my daughter's. We had from-the-farm ribs and brats grilled over charcoal, vegan cole-slaw, and my daughter made mashed potatoes. I made frozen yogurt and served it over sliced peaches from the freezer for dessert.
I made a hamburger in the grill pan and had it with refrigerator pickles and some cole slaw.
I crumbled the rest of the ground beef and fried it with mushrooms, onion and garlic, serving it with green peas and a slice of GF toast. I followed that with a small bowl of boysenberries from my vines.
@JD, I too (a) save unused bacon grease and (b) use the pan I've just cooked bacon in for other things--usually scrambled eggs, but I saute greens this way from time to time. (I've even sauteed purslane this way.) Another way in which I'm true to my Southern roots.

Did you childhood home also have a cannister with the word "grease" embossed on the side? 🙂
I mean, we have to save the bacon grease! I've never sautéed purslane in it - now I'll have to try that.
@JD, my grandmother, mother, sister & I all saved/save bacon grease. My grandmother had the metal grease can; the rest of us use a coffee cup. Great for fried potatoes & fried corn!
@JD, my mother always just used an empty tin can with "Grease" scrawled on the side in Magic Marker, and an aluminum foil topping. Since I've gone upscale in my old age :-), I use any of my vast collection of Ball canning jars that have gone tattletale gray from too many trips through the dishwasher.
@JD, I just googled to see if my mother’s grease container was made for grease and it was. A fat little bowl with a lid … Jewel Tea china in Autumn Leaf design. I’m surprised since she was the thriftiest person I ever knew.
@JD, My aunt has a 'grease' canister! It has a lid with a strainer insert inside of it. I told her years ago that she could put it in her will to leave for me. 😉

Friday and Saturday: We're going to be in Idaho, so we'll eat whatever my in laws decide to serve 🙂

Friday – I had the night to myself so I met up with some friends for Mexican food and margaritas!
Saturday – My parents came over and we made Santa Maria BBQ. Dad grilled a tri-tip, I made beans and garlic bread, and mom brought over mashed potatoes. We paired all the goodies with salsa and a red wine from Paso Robles. It tasted just like living in California again!
Sunday – Buffalo Chicken Wraps and zucchini fries.
Monday – Veggie enchiladas, roasted broccoli, and zucchini fries.
Tuesday – Italian Chopped Salad with Brussels sprouts as the base.
Wednesday – Swordfish steaks, brown rice, and a cucumber/carrot salad.
Thursday – Low Country Boil packets (shrimp, andouille, potatoes, corn, so much Old Bay seasoning)
It was an abnormal week, with my mom in town for part of it + a soccer tournament over the weekend.
Friday - we went out to eat at my mom's favorite restaurant. I took her as a thank you for helping me with some volunteering. We shared a salad & burger + wine
Saturday - My 16 y.o., mom & I went to In & Out at 9:30 for dinner, after a late soccer match
Sunday - we ordered delivery pizza, again, after a late soccer day
Monday - we had grilled chicken, caprese salad & green salad
Tuesday - leftover pizza + green salad + fruit salad
Wednesday - again grilled chicken, caprese salad & green salad
Thursday - one diner got home late from working on a group final, so he reheated the last two pieces of pizza. The rest of us had orange chicken from Trader Joes + salad & berries
As for tonight: probably a clean out the fridge kind of meal. We have burgers & leftover buns, so my guess is the adults will have that, and I'll make a couple of chicken patties for the teens (on the buns). And, caprese salad to use up the rest of the fresh mozzarella, and some of the very plentiful basil in our garden.
WIS: $148 @ Costco and $133 @ Walmart

Saturday: Baked salmon, roasted broccoli, corn and baby potatoes with fresh herbs
Sunday: Baked chicken thighs with homemade peach BBQ sauce, roasted potatoes
Monday: I defrosted two chuck roasts and made chipotle shredded beef in the crockpot. (Easiest thing ever and it tastes like you spent hours slaving & you are a professional chef.) We ate the beef with tortillas, guac, cheese, black beans,...all the usual stuff. Fresh cantaloupe after dinner.
Tuesday: I made sheetpan nachos with the leftover shredded beef. Yum!
Wednesday: Some ate leftovers, some ate takeout
Thursday: Chicken breasts, mixed veggies and stuffing. Ugh this was a very uninspired dinner due to plans being shaken up. Oh well. We were all fed.
Friday: I have absolutely no idea. Maybe turkey meatloaf?

WWA: Meatloaf, cheese, fresh peppers, radishes, the last of the Cara Cara oranges, some Morroccan-style frozen dishes with spicy cauliflower and chickpeas, homemade bread, bran muffins and chocolate cupcakes. Last night was time to cook again and I made a big roasting pan of seasoned chicken thighs and green salads with cherry tomatoes, radishes, sweet peppers, carrots, almonds and golden raisins. Husband and son are knocking out the last of the cupcakes.
So busy on the farm, dinners were easy and loose. I did make a 4 head of lettuce green salad and filled 6 quart jars for easy pour salads to put with random proteins for easy dinners.
WIS - $75 @ Costco, $35 at scratch and dent store & $15 to cousin for ocean fish.

We got our new garage freezer to replace the ancient one that wasn’t working well at all. It will be nice to have one we can trust again-I’m afraid lots of things in the old one are not worth saving.
We discovered Cowboy Candy (candied pickled jalapenos) 2 years ago and those are so great on burgers!
I did well...until the unexpected vinegar purchase...but it will last a while

Fri- We have homemade ricotta that needs using up...and its almost 90 degrees today so no oven for lasagna. We might try a skillet one w/ dehydrated zucchini strips or a spaghetti and dehydrated zoodle dish. We need to eat some lettuce so most likely a salad also.

We only have a couple weeks left of school and both of us are teachers. We are TIRED. So I said I wanted any dinner that I didn't have to spend a lot of time cooking. Or any time really. So we had fish tacos (fish sticks cooked in the air fryer in corn tortillas with coleslaw mix and a sauce from Costco) and then frozen chicken burgers with corn on the cob. With just 2 of us I don't bother making a different meal every night, we will both happily eat the same meal for even 3 or 4 days.

169 spent at Kroger pickup. 22 dollars spent on DINNERLY. It was fun to try but too many steps for my kind of cooking.

Chicken and sweet potato Nicoise. Piripiri pork with roasted zucchini and tomato. Very tough wah!!! BBQ steak with ranch potato salad. Ravioli and marinara with hot Italian sausage. It was scorched earth hottt this week and DINNERLY kept saying preheat the oven to 450 degrees! Help!! Meals were pretty yummy tho small.
I have been making nice cucumber and cabbage salads with lots of fresh herbs from my kitchen garden.
We are in Legoland for the second half of this week so not a usual week! Really enjoying ourselves though, the first big trip we’ve taken in quite awhile!
Saturday - we had family over for my daughters birthday so we had pizza and I made a chocolate cream pie and cupcakes for dessert
Sunday - leftover clean out before our trip, we had a mix of pizza, chicken and orzo, chopped salad
Monday - easy chicken Parmesan (frozen chicken patty with marinara and mozzarella on top), butter pasta, steamed broccoli
Tuesday - sausages, steamed green beans and baby corn, chopped salad
Wednesday - Friday: in Legoland so various hotel and theme park meals, all pretty good so far and the pits of Lego bricks in the restaurant have been nice, so we can actually eat while the kids play!
In no particular order:
- Yogurt/berries/granola parfait
- Pasta with spinach and pink sauce (x2)
- Pasta with roasted butternut squash and a vegetarian chicken patty
- Stewed lentils and tomatoes
- Enchilada casserole
- Salad sampler: red cabbage slaw, avocado/grape tomatoes/black bean salad, and remainder of beet salad from restaurant lunch
Sunday-subs
Monday-salad with bacon on top
Tuesday-chicken/ rice/ peas casserole
Wednesday-salmon/couscous/ sweet potato
Thursday-leftover chicken/rice/peas casserole
Friday-cauliflower/ bacon casserole
Saturday-Mezeh
