52 New Recipes, Week 8 | Sausage Pasta

This Week's Recipe

I originally saw this recipe on Kevin and Amanda's blog, but I read that they got the recipe from an ATK cookbook, which I promptly put on hold at the library.

One can never try too many ATK cookbooks, people.

(It's their Best Simple Recipe cookbook.)

Anyway!   The original recipe called for chorizo, Rotel, and pepper jack cheese.   And I'd totally have used all of those things except...I have four hot-food-wusses at my house.

And Joshua, who is my only spicy food lover, wasn't at home the night I made this.

So I made a pretty vanilla version of this with kielbasa, regular diced tomatoes, and plain Monterey Jack cheese.   My girls all loved it.

But if I make this again when Joshua is home, I'll probably split the mixture between two pans when it's time to add the tomatoes and I'll use Ro-tel in one pan.

Something kind of funny: I made this on the night when Sonia and Zoe have dance class. I get home from that right around the time we eat, so I need something speedy for dinner.

I chopped and prepped everything ahead of time so I could get dinner on the table quickly after class, and we headed off to dance.

Once we got there, we realized that oh! Dance class is apparently off the week of President's Day.   Whoops.

But hey, it was handy to have everything chopped and portioned and ready to go. Ha.

Next Week's Recipe

In a my June/July 2016 Cook's Country magazine, there's a recipe for pulled turkey sandwiches with a white BBQ sauce.

I make pulled chicken, pork, and beef, but the concept of pulled turkey is new to me. And the white sauce sounds very interesting.

I have the turkey breasts and the foil pans, but I'm going to need to find some wood chips, which I've never used on the grill before.

Adventure awaits!

I see that wood chips are available on Amazon, but they appear to be cheaper at home/hardware stores.   So I think I'll look for them there.

    1. Accomplished goal of coverings for windows to keep my apt and me warm from Vancouver BC winter chill!

      Some 15 ft by 4 ft. of single glazed window to cover. Used heavy gauge clear plastic and sheets of Styrofoam & aluminum sheets you would use to keep out sun on your car windshield window & package of 1" screw nails & medium green colored plastic sheets to keep out excess sunlight & give some protection from droughts. Found a few wooden window frames which seemed a gift from the Divine.

      Scheme Worked!
      Yes, hydro bill was slightly higher for Dec/Jan from last year (Vancouver BC weather much colder this past Dec/Jan than in previous periods of time.) at same time period, the apartment & me felt noticeable warmer!

  1. On Monday, I made broccoli soup and popovers. My family thought the popovers were a great side to the soup, and a welcome change from bread. Thank you Kristen! The broccoli soup was a variation of an allrecipes.com recipe.

  2. I'm so thrilled! I saw this recipe on Kevin and Amanda a million years ago, and we make it regularly. I don't even know what Ro-tel is so I use standard pork sausages, a normal can of chopped tomato and it all turns out great... everytime

    1. Rotel is canned chopped tomatoes in juice/liquid, with spices added - sort of a cross between pico de gallo and jarred salsa. There are several versions including standard (med-low spicy). mild (a little spicy), hot, roast tomato. It's a great addition to a wide variety of Tex-Mex food. For example, I make a quick meal out of a can of refries, a can of rotel, and extra garlic; nuke it and eat with chips.

  3. That looks delicious! I am always looking for easy pasta dishes (yummy for adults, and toddlers) I have been pretty successful in trying new recipes each week...we have found some great dishes that we love! I think we might try this one next week 🙂

  4. Not really a "new"recipe for us, but new combination. I made turkey and havarti quesadillas with spicy sweet potato fries last night. You just can't go wrong with quesadillas. They can come together with so many different cheese, meats, or veggies. And my peeps like those one pot pan pastas, too. Sausage in that is especially wonderful!

  5. I made modge-posh hash last night to use up some odds and ends in the fridge/freezer. I browned some breakfast sausage, added leftover Southwest hasbrowns, and then topped it with four eggs and cheese. Nothing fancy, but boy was it tasty! I had a Western Bagels Alternative Bagel (so good and Weight Watchers friendly!) on the side.

  6. I only recently got into eating spicy food, but the original recipe with chorizo and Rotel sounds SO GOOD. We have a huge stockpile of sausage in our freezer now, so it'd be a perfect way to use it up.

    Pulled turkey is totally delicious. It's super moist and delightful. 🙂

    We haven't been too creative with meals this week, but gyros on homemade pita were our new thing of the week. I made some last week as a freezer meal. Initially Mr. Picky Pincher thought homemade gyros sounded disgusting but once he had a taste he loved them! They're now a part of our menu rotation. 🙂

  7. I also used a can of Rotel tomatoes this week, to make Santa Fe Chicken, a terrific crockpot dish that I adapted from :www.skinnytaste.com. It made a lot, and is heart healthy and moderate carb. Last night I rolled the chicken-bean-Rotel-corn mixture into tortillas and added sharp Cheddar; it was so good we are having leftovers tonight.

      1. It does look pretty but it must take a lot of work to keep up with. Mine is almost never that full and it still gets out of control if I don't do a survey/reorg once a week.

        1. I always think that maybe the problem is that my fridge is a bit on the small side. But I dunno...maybe I'd fill up a huge fridge too!

  9. I haven't made a new recipe yet for this week, and may not get to make one, but I'm going to aim for it.
    My husband really, really doesn't like turkey (some of you may remember that I've posted before about his pickiness). I like it a lot. I wonder if he would like turkey made that way? I'd have to buy turkey on a really good sale before I tried it, because I'd hate to spend much money on a recipe I'm going to have to finish entirely by myself, even if I love it.
    Do you know I have never used Ro-tel tomatoes? My husband is a big spicy fan, too, so why haven't I? Hm, maybe my next new recipe will be the one Kristen just made, using Ro-tel. Does anyone know if there is an organic version of Ro-tel?

    I didn't make anything new since we made a ham this weekend and everyone we invited cancelled on us. So it was a whole ham for two adults and a toddler. So we've eaten ham leftovers for a while. My wife did make pulled chicken for burritos last night and that was okay. We'll probably eat the leftovers tonight.

  11. I got a bag of 50 smallish frozen shrimp for 4.00. Then I found decently okay marked down grape tomatoes for a dollar. 1.00 box of pasta. 99 cent black olives and homemade pesto from garden grown basil in the freezer ( harvest september 2016.

    Get a big bowl. Put in grape tomatoes cut in half. One can black olives sliced. Pesto. Stir it up.

    cook pasta....last four mins of cooking time throw in bag of frozen shrimp.

    Delicious! ( my kids hate black olives but they are one of my husbands VERY FAVE THINGS).

    We only have this easy dinner once or twice a year.....YUM

    1. I first read that as marked down grapes, and I was super confused.

      But this recipe (when I read it correctly, ha) sounds really yummy!

  12. I finally made another new recipe. I took advantage of my girls spending the weekend with their dad to make Smitten Kitchen's baked pasta with broccoli rabe and sausage. My oldest girl does not like anything broccoli-ish at all, and it's one of my favorite veggies. The pasta dish was fantastic and I've been enjoying the leftovers for lunch this week.

  13. That looks really good, I love sausage in my pasta. This week my husband made homemade wonton soup from scratch. It was very time consuming but so worth it.

  14. We made quinoa with almonds and coconut flakes. We already had leftover quinoa from earlier in the week so we just toasted the almond slivers and coconut, added them to reheated quinoa, and added a bit of salt. We thought it was quite good.

  15. I made up a recipe that turned out pretty good, or so my family said. Taco sliders. I used groung turkey and packaged taco mix tomake the meat. Hawiana sweet rolls, and four cheese Mexican mix. Topped with shredded lettuce and dribbled with ranch. I assembled it all minus lettuce and ranch, butter tops of rolls and baked. Usually when I make something up it's not that good, so I wanted to share. lol

  16. We made "French bread pizzas" tonight--good for those nights when you don't feel like making pizza dough. A neighbor had brought over a good day-old baguette she picked up, so we split it in half and put pizza toppings: sauce, shredded mozzarella, a dollop of pesto, and green and black olives, then put it under the broiler. My husband added an interesting spinach sautee with sunflower seeds--I put some Siracha on mine, which I have just recently discovered and love.

  17. I actually made this spicy sausage pasta too and everyone loved it!! I improvised with the ingredients I had on hand and it worked out great. There was enough for a second meal of it.

  18. I've made your recipe a thousand times. I don't know where I got it but my recipe didn't have the Chorizo so I've always just used whatever sausage I have on hand. I think the Rotel adds a great flavor to it with the chiles. At our store they sell it "mild" not sure if you girls could tolerate mild version.

    I was good and made a new recipe from Maratha Stewart. It was super quick for a busy night. It is called Sausage and Pepper Ragu over Polenta. The only issue I had was I couldn't find quick cooking polenta. So, when I made it took 30 minutes to cook the polenta. I started that first and then, made everything else. Still done in about 40 minutes not too shabby.

  19. I made lentil dahl with wilted baby arugula. It turned out OK, but I think I'll use mung beans or yellow split peas instead of lentils next time.

  20. I tried a new recipe for cheesecake this week, to serve at the most recent meeting of my book club. It turned out really, really well.

    Your sausage and pasta dish looks very yummy! I make something similar using smoked sausage and Rotel -- kind of splitting the difference in spice, I guess (mostly this is because I've never cooked with chorizo -- something I need to rectify!).

  21. I made a version of an American recipe. It was interesting because we didn't have all the ingredients and I also had to alter it to suit the FODMAP diet. It was called a lasagna but really it was potato bake and instead of white sauce I used a little strongly flavoured cheese and a little cream. The layers were potato slices, ham and then the cheese. IT pleased mum and I could eat it so that as good.

  22. We are still doing the "new recipe of the week" too! And I am really enjoying this. In fact, we decided to include our daughters in the process. They are 5 and 7 so I'm sure we will get some interesting ideas from them! This week, hubby's recipe was a beef in a chocolate-coffee sauce, and my 7 year old choice was a shrimps and pasta salad. This coming week, my husband is making a green curry, I'm planning a mac-and-cheese with a sauce hiding lots of veggies, and my 5 yo decided on rolled ricotta-spinach lasagnas. Yummy!

    We also had pizza on naan bread and.... can't remember what else...
