52 New Recipes, Week 4 | Caribbean Chicken with Couscous

Sooo, I still didn't try that Thai Chicken Soup.
<sheepish face>
I ended up making a soup on Monday night and then I didn't feel like I wanted to make soup again the next night or two.
Instead, I made grilled Caribbean chicken breasts with couscous salad.
I'll give you one guess which cookbook it was from. 😉
For this recipe, you make a marinade, set some of it aside to dress the couscous, and then mix the remainder with the chicken before you grill it.
This is pretty handy...one sauce, two applications.
You grill red pepper and pineapple (plus I added onion) alongside the chicken, then chop the grilled produce and mix it with the couscous.
Aldi was out of chicken breasts the day I went shopping, so I made this with chicken tenders instead.
Joshua missed this dinner because he was at work, but most of the rest of us liked it (Zoe just didn't like the couscous because she is pretty opposed to red peppers in any form!).
I love how fast couscous is to make. And since we don't often eat couscous, it was a nice change of pace.

Everyone thought it was really good, even my pickiest eaters. I did add some diced potatoes to it to add an extra bit of heartiness. Perfect for a winter supper!

I've been trying to eat all the leftovers in my freezer. I also have a head of cabbage I need to shred for cole slaw. I'm thinking a new recipe next week sounds good- maybe a Thai one! Grocery bill this week was pretty non-existent YAY.
We have TWO cabbages from our CSA. Thankfully they last a while. DH made cooked shredded cabbage with bacon, which tastes better than it sounds, with one of them.
I feel your pain! At one point I had two green cabbages and one purple cabbage from my produce box.
I made a slow cooker Creamy Cajun Chicken. Everyone liked it, but I thought it was so-so. Kinda mushy. I ate it over cauliflower "rice", the kids and hubby had it over rice. I might make it again since it was SO EASY.
I always feel that way about slow-cooked chicken. It's not tender, it's mushy.
Oh, I love chicken in slow cooker! But, I agree, it gets "mushy". It's a pulled-pork texture, really. Yummy!

I made this taco meat from Kitchn as I went about my day yesterday:

I shredded it by putting in my mixer on low, drizzling in the cooking liquid as I went, and it was ready to store in a flash. It's tonight meal so all I will need to do is heat it up. I just need to remember to pick up more tortillas while out today - no biggie if I don't we could eat it as lettuce wraps...
I made myself a special vegetable dish, and I was amazed at it. (Herbs, milk, swiss cheese, and orange??? I was skeptical but adventurous.) I served it with oven fries and oven-grilled chicken breast on the first night, but thought it went just great as an entree in its own right with some steamed rice.

I LOVE this series! 🙂 And you "meal plan" like me....I'll have a list of about 10-12 menu ideas on the fridge and what ever "sounds good" or needs to be used up are the ones I will make. And sometimes things get moved to the next list. 🙂

My slow cooker pork tacos from last week were ok but not fantastic.
No recipe to link to since I winged it, but I made "kabobs" last night at my daughter's request. Chopped up onions, peppers and added cherry tomatoes. Pork tenderloin and chicken thighs cut in chunks and marinated in Oy Vay Island Teriyaki sauce for a few hours. Cooked it all on a couple of foil lined sheet pans @ 450 for 25-30 minutes and served with rice. Since I didn't put them on skewers, it didn't take that long to prep. This was the hit of the past week I'd say.

I made African Tomato Peanut Soup. It was seriously delicious, and vegetarian for those who may be interested in a meatless meal. Part of my challenge with these recipes is to primarily use recipes from my cookbook collection which is extensive and underused. This one is from Vegetarian Planet by Didi Emmons.
Your chicken and couscous looks amazing! I really love the flavors of grilled pineapple and red peppers together.
That looks SO tasty. I tried couscous in the past and royally messed it up, so I think I want to get back on the couscous train after seeing this. 🙂
I kept the recipes kind of calm this week since we're mostly eating out of our pantry. We've had a few tasty wins, though!
On Monday I needed to use up alfredo sauce so I made an alfredo pasta bake with leftover white meat chicken, bacon, green onions, and cheese. It was pretty good!
Tonight we're having homemade pizza. I'm a little nervous since I have to let the dough rise slowly in the fridge all day while I'm at work. We'll see if it's any good *shrug*.
I tried a chicken cheese and tortilla bake. Surprisingly, we didn't think it was that great. I really didn't like the black olives the recipe called for, but DH wasn't bothered by them.
I am going to try that Caribbean chicken recipe. It sounds yummy. I have that cookbook but haven't used it extensively. I think because the binder rings are off and its hard to turn the pages.
Anyhoo. I tried 2 new recipes this week. One was for a crockpot chicken recipe that is all over the internet, known variously as Italian creamy chicken, crockpot cheesy chicken, and a million other things. I don't mind the texture of crockpot chicken when it is shredded like this recipe was. It was OK. A little too salty for my taste.
I also tried an adaptation of Ina Garten's Easy Cheese Danish recipe in order to use up some puff pastry sheets I had leftover from the holidays. Those were delicious and I ate far too many of them.
Aww, you're not sharing the Caribbean chicken recipe? I'd like to try that one!
My recipe this week was a dessert because my sweet tooth has been acting up. I was looking for a scone recipe, but what turned out was more like a yummy chocolate coconut (think almond joy) cookie. Oh, and it's a paleo recipe as well. It doesn't have to be and can easily be modified.

Hubby got a smoker from the guys at work for Christmas, and smoked a week's worth of meat this past weekend! We have been trying all kinds of smoked items. Very nice for me, since I just have to heat up some meat, and add a couple of sides! I'm hoping this happens much more often! 😉
I had a package of frozen ground lamb from a grocery store meat counter that grinds their unsold chops and roasts at the end of the day and puts the results in their sale item freezer section. I tried a recipe that was actually for a biscuit topped lamb and veggie pie, but I left off the biscuit topping -- we don't need that much bread. It turned out to be quite tasty, I thought (don't have the recipe with me and can't think where I found it online). Without the biscuit topping, it is simply a one-pan type skillet dish, and easy to make. My picky, picky husband tasted it and said "It's alright but I don't eat lamb." Soooooo he had the leftover ground beef meatloaf and I get to eat all the yummy lamb dish. I froze it in portions for future lunches at work.
The new-to-me recipe I tried this week was a slow-cooker potato soup found here ==> http://www.gimmesomeoven.com/slow-cooker-potato-soup-recipe/. I ended up making it on the stovetop since I didn't have enough time to prep for the slow-cooker and it turned out to be really good. I served it with bacon and shredded cheddar on top and the whole family enjoyed it.
Another new baked good recipe this week (crazy busy week, so mostly eating from the freezer for main dishes). I made the ATK gluten free oatmeal raisin cookies (and ate way too many as "breakfast cookies" 🙂 ).

I didn't make anything new, just a dish that I haven't made in about 2 years. It was new to my kids.
I am concentrating on using every little leftover. I came home from Europe to a fridge full of rotten vegetables and have thrown so much out. So nothing new here. Just old fashioned use it up stuff.
We tried your (well not yours but your recommendation) Japanese Pork and Ramen soup! It was a huge hit. Now I did use pork chops, no miso, and no mushrooms. My son feels the same about mushrooms as your daughter feels about red peppers. But we loved it and will enjoy it for a couple of days. My husband whole-heartedly said we need to make this often! And it was so easy to throw together. Next time I am going to try it with some miso and mushrooms. 🙂
My wife made this delicious crock pot italian sausage pasta dish, she even made it a second time in 2 weeks. The Thai Chicken recipe looks really delicious, but with a 3 year old and a 5 month old my wife likes the easiest of recipes.
