On to the food talk....

Since I didn't do any flying on a jet plane this week, I did actually try a new recipe!

As promised, I made the Arroz con Pollo recipe from a recent Cook's Country magazine.

Since this wasn't from my quick family cookbook, it took a little more time than some of the other recipes I've tried this year.   But we thought this was pretty tasty, and I think I'll probably make it again.

(I'm sorry for the terrible lighting. I'm quite ready for daylight saving time, thank you very much.)

A nice thing is that the recipe uses chicken thighs, which are very affordable.

And it calls for chicken broth, so it's a nice non-soup way to get some more of that lovely bone broth nutrition into my family's bodies.

Of course, I saved the bones from the cooked thighs and threw them into the chicken bone bag in my freezer for a future broth-making session.

I left out the olives and peas, and I added some red bell pepper for color (the red in the magazine picture is from the pimiento-stuffed olives).

So, my friend Stacy from Humorous Homemaking shared a link to this spicy sausage pasta recipe, and when I saw it was from ATK, I decided I probably should try it. 😉

Although, there are a number of people in my house who really do not dig spicy, so I may use regular tomatoes in place of the Rotel.

Maybe I'll just divide it up when it's time to add the rotel and make half spicy and half not.

We'll see how motivated I am. 😉

  1. I wish I could try this recipe as I am sure I can alter this to my diet. Looking forward to the sausage recipe.

    My recipe this week has been improving chicken stock without using onion or garlic. It almosts tasted like ordinary stock so I am happy. I keep talking about this FODMAP diet but it is all consuming for me.

    1. You need to find some asafoetida. It will give you the onion and garlic flavour while still being low FODMAP friendly.

      1. I was on the low FODMAP diet for 3 1/2 years! So restrictive. I wound up subbing fresh ginger in for garlic a lot of the time, and using lots of green onions.
        As of the past few months I’ve been able to completely return to a regular diet with all symptoms gone!! I can’t even tell you how exciting that is.

  2. Both recipes look great. Is there an actual link to the Arroz con Pollo that I'm just missing? I'm definitely giving that one a go soon.

  3. Both of those dishes sound really good! I am making a Turkey Stir Fry on this week's menus that involves already cooked turkey and some broccoli slaw. Should be fast and easy! The recipe is from one of those 100 Things You Can Do With a Rotisserie Chicken cookbooks. It was a gift from a friend - I have about 99 of those type recipes up my sleeve already.     Next week I am going to master homemade brownies that promise to be moist and fudgey - that's the reason I usually buy a mix, but Kitchn posted a recipe that sounds good!

  4. That looks delicious! Glad it was a success.

    This week we are trying a new pizza recipe...white broccoli sausage pizza. It reminds me of one of my favorite pizzas from a wood-fired pizzeria near us. Not sure we will be able to replicate the wood fired aspect of it, but I am excited to try!

    1. Yeah, home ovens are never quite the same! But a home oven can make a pretty nice pizza crust as long as it's super hot.

  5. Not a new recipe per se, but I made a chickweed salad with fresh chickweed cuttings and wild violet flowers --pretty and tasty, if you like the fresh green taste, which I do. I didn't even use dressing on it. It looked so springy. Chickweed is only here in cooler weather, so I have to use it while I have it. Until I took an herbal class, I didn't even know it was edible.

  6. It is interesting that it calls for regular peas. My husband is Puerto Rican, and they use pigeon peas (aka gandules) and green olives in their rice. Pigeon peas don't taste like regular peas at all, and the rice wouldn't have the normal flavor without the olives. My kids usually pick around the olives and one actively avoids the pigeon peas but it wouldn't be the same recipe without them.

  7. That looks really tasty!! I'm tempted to try it out but we're a little "chickened" out, so I'll save it for another week. 🙂

    This week we're trying a few new things. Tomorrow night we're making kung pao chicken (for me) and shrimp (for Mr. Picky Pincher). We're serving them over noodles. It should be mighty tasty! It's tougher to do wok meals like this on weeknights since we both have to work. Sigh.

    On Saturday I also want to make slow-cooker roast beef sandwiches with an avocado aioli. We have sub rolls that we need to use up, so this'll be a perfect and tasty way to make meals from our pantry. 🙂

  8. I make the spicy sausage pasta all the time, and I would recommend the rotel. I think it is not too spicy. My kids like it and they are not spicy fans. I have made it with mild rotel before, and it was just not as tasty. The cheese and cream really balance out the spicy. It is also a great recipe for using homemade broth.

  9. I did not try anything new this week because again, I have a house full of sick people. Plus with a toddler who is turning into a very fussy eater it's really hard.

    She did like the couple bites of strip steak we gave her on Valentine's Day but we sure as heck were not giving her a large portion to herself.

  10. Kristen, I just watched your talk on the Simple Living Summit and loved it. You did a great job of explaining your ideas. However, I was even more delighted to see you. It was like sitting down with you and having a chat and that makes your blog seem much less remote. I can, now, imagine your laugh and smile and easy going manner. Thanks for sharing more with us.

    1. Aww, I'm so glad you enjoyed it. It always takes a little bit of bravery for me to do video stuff because I am so much more comfortable typing than talking. But every now and then I put on my big girl pants and do it! Heh.

  11. Yum! I want to try this recipe. This week we (ok Hubs) made steaks! They were delicious. We also caramelized some onions, and grilled asparagus and cheese-stuffed mushrooms. It was such a good reminder that you don't need to eat out to have a delicious meal.

  12. This week, instead of a brand new shiny recipe, I took another stab at my own version of chicken pot pie. I have tried a million recipes and can not find the perfect one so I have been developing my own. It was good, but can be still be improved upon. I also used puff pastry for the crust this time (I only do top crusts) but that was more for the sake of using up extra holiday food stuff than for any other reason. It was tasty though. Puff pastry is pretty much delicious in any application if you ask me.

  13. Yes! That pasta dish is delicious. I love that it cooks in one pot. I do find it a bit spicy, so I'd definitely go with just tomatoes for your first time. (I like spice, but it surprised me the punch that Rotel had. Maybe I got the hot flavor instead of mild.)

  14. I made a chorizo/potato/onion "custard" in a casserole dish. Actually, it's more of a quiche. But if I call it a quiche, the family won't eat it. Call it a custard and they love it. Go figure.

    This week, I want to give homemade pizza a try. The recipes here look so incredible and delish that i'm thinking of making one. Or two.

    I also want to try crepes. I'm not sure of fillings so I'll need to look into that. My personal favorite is lekvar but I know that I'd be the only one eating it. So I'll need to see about other types and get everyone's opinions.

  15. I love that spicy pasta recipe! I add steamed broccoli to the pasta near the end (before baking briefly- although sometimes I skip the baking all together). Hope you enjoy!

  16. Just wanted to say thank you for the summit ticket -- and your interview was great! -- so spot on and helpful. So true about considering daily expenses vs. only worrying about the biggies that only happen a couple times, such as marriage or buying a house. This is my struggle right now.

    When he asked how people could be accountable in their own lives, I wanted to say how much your blog and some others are so helpful with exactly that. I seriously think about what I will be writing in the "How much I spent" or "5 frugal things" as I go through the week, so again, thank you -- great job!
