52 New Recipes, Week 4 | Caribbean Chicken with Couscous

Sooo, I still didn’t try that Thai Chicken Soup.

<sheepish face>

I ended up making a soup on Monday night and then I didn’t feel like I wanted to make soup again the next night or two.

Instead, I made grilled Caribbean chicken breasts with couscous salad.

I’ll give you one guess which cookbook it was from.   😉

For this recipe, you make a marinade, set some of it aside to dress the couscous, and then mix the remainder with the chicken before you grill it.

This is pretty handy…one sauce, two applications.

You grill red pepper and pineapple (plus I added onion) alongside the chicken, then chop the grilled produce and mix it with the couscous.

Aldi was out of chicken breasts the day I went shopping, so I made this with chicken tenders instead.

Joshua missed this dinner because he was at work, but most of the rest of us liked it (Zoe just didn’t like the couscous because she is pretty opposed to red peppers in any form!).

I love how fast couscous is to make. And since we don’t often eat couscous, it was a nice change of pace.

My wife made this delicious crock pot italian sausage pasta dish, she even made it a second time in 2 weeks. The Thai Chicken recipe looks really delicious, but with a 3 year old and a 5 month old my wife likes the easiest of recipes.

We tried your (well not yours but your recommendation) Japanese Pork and Ramen soup! It was a huge hit. Now I did use pork chops, no miso, and no mushrooms. My son feels the same about mushrooms as your daughter feels about red peppers. But we loved it and will enjoy it for a couple of days. My husband whole-heartedly said we need to make this often! And it was so easy to throw together. Next time I am going to try it with some miso and mushrooms. :)

I am concentrating on using every little leftover. I came home from Europe to a fridge full of rotten vegetables and have thrown so much out. So nothing new here. Just old fashioned use it up stuff.
