What I Spent

I spent $118 on food this week, including Tuesday’s dinner out (see below!)

August Spending

Week 1: $166

What We Ate

Monday

Bacon-wrapped jalapeno chicken, watermelon, potato chips, and caprese salad.

Tuesday

We had dinner at a local quick Tex-Mex place. Including chips and guacamole, of COURSE.

Wednesday

We had grilled hot dogs, grilled summer squash, fresh peaches, and broccoli.

We are eating a lot of peaches right now because of my $15 box of bruised peaches.

Thursday

Stir fry!

Friday

We’re having dinner with my parents tonight, so we are eating whatever they are cooking.

I’m sure it will be delicious, as is everything that someone else cooks for me.

(If you are the main chef at your house, you will definitely resonate with that!)

Sept/Oct issue of Cook's Country has a peach capresse salad( I despise raw tomatoes). It was so tasty with farmer's market peaches. I made a small serving, cutting the peaches into small chunks and using mozarella balls( small size). I used a touch of pesto in the dressing. It was the perfect combination of sweet and savory.

Sunday: veggie burgers, potato wedges, and corn all cooked on the grill Monday: pasta with jar of red sauce and veggies stirred in Tuesday: the most frugal meal of the week (except for the left-overs on Wed!): tomato pie made from a base I found in the freezer, cheese I bought to make another pie the previous week, and tomatoes and basil from the garden; with salad and green beans Wednesday: leftovers from a work lunch--salmon, mashed potatoes, veggies, and rosemary rolls Thursday: work dinner (tacos)

I've been spending less at the store ($85-95 per week, just two of us) but I've been unadventurous in the kitchen of late.

I am not sure how much I spent last week. I need to be better about that. But I did eat mostly from the pantry and freezer so that's good. Not a banner week for cooking but here goes:

Sunday/Monday was velvet porkchops with roasted potatoes. Sunday I ate that with an artichoke. Monday I had zucchini for a veg.

Tuesday - hot dog and baked zucchini fries.

Wednesday - I can't remember but I think it might have just been a can of soup.

Thursday - I made a bean and cheese burrito.

Friday - I made a fried egg on an English muffin and had a side of beans.

I have a bad cold so I see more easy meals in my future . . . .

This was week two of being back to work full time after six years at home. It was also week one of the school year. Throw in some evening sports practices and I am proud to say we made it! I need to look into meals that I can make ahead - I am no gone too long to use a crock pot- over 10 hours so looking for suggestions!

Monday: DH worked from home for the first day of school! He made Cat Cora's Cinnamon Chicken- so easy and so yummy! We serve it over rice.

Tuesday - Brats and Tots with cut up green pepper

Wednesday- BLT sandwiches with something...

Thursday - Sloppy Joes with corn on the cob

Friday- - Pork Chops on the grill with more corn on the cob ( best time to eat it in season.)

amy, if you use an instant pot as a slow coomer it will keep the food safe for up to 10 hours after cooking. i used to have the same crockpot problem!

We're also in peach heaven right now.

Meals this week:

Monday - Brown rice? I truly don't know what happened this day.

Tuesday - Steak, roast potatoes and green beans from the garden.

Wednesday - Ground beef with zucchini, carrots and brown rice. SO EXCITING. heh.

Thursday - Had a birthday dinner for my MIL. I made greek salad and black rice and then we had salmon, corn and green beens as well. SO GOOD!

Friday - My hubby phoned to say he wasn't coming home for dinner, so I took that opportunity to cancel the rest of my cooking plans. I already had a roast beef in the oven, so we ate that on wraps with raw veggies.
