ATK 6 Ingredient Solution

Remember the America’s Test Kitchen DIY cookbook I gave away last year?

Well, ATK has just come out with another cookbook that’s very similar in size and format. It’s called The Six-Ingredient Solution,
and is filled with recipes that call for only six ingredients.

corn, potatoes, and shrimp

So, if you generally think that recipes from ATK are too complicated or long, you’ll really like this book.

Fortunately, ATK is quite against using super-processed “cheat” sort of ingredients, so this book doesn’t call for things like canned soups as an ingredient. Instead, they call for high-impact things like sun-dried tomatoes, chipotles in chili sauce, and Parmesan cheese.

(Also, they don’t count salt and pepper as ingredients, because that would make six-ingredient dishes nigh onto impossible! They ARE included in almost every recipe, though.)

(Well, not the dessert recipes.)

In addition to using high-impact ingredients, the ATK editors also focused on using cooking techniques (such as high heat) to develop flavor, instead of multiple ingredients.

Like the DIY cookbook, this one has lots of photos, which makes me happy, of course.

I love photos.

Some of the recipes call for ingredients that are slightly on the expensive side, like mini fresh mozzarella balls, or Phyllo dough.

However!

If buying a slightly expensive ingredient allows you to make dinner quickly and prevents you from eating takeout, then it’s money very well-spent.

(Because you have to work pretty hard to spend more on a meal at the grocery store than you’d spend eating out.)

Rest assured, though, that there are plenty of recipes, like the Grilled Chicken Soft Tacos, that rely on everyday, inexpensive ingredients. And actually, the chicken soft tacos were one of my favorite recipes…the chipotle sour cream was so delicious.

Oh, and as you can see in some of the photos, there are helpful little sidebars that have ingredient advice, letting you know what the best tortilla brand is, or how to choose the best olive oil for the recipe. Love that.

My hurry up dinners all start with having a monthly menu plan -- that way there's no standing in the middle of the kitchen wondering, "what will I cook tonight?!?"

I try to get as much as I can prepared for dinner during my kids' naptime.

Speed cooking is not my specialty! In order to get a meal on the table quickly, the key for me is plannig ahead. On the nights I know I'm going to be pressed for time I have several strategies. 1. Make dishes ahead that only have to be heated; 2. Grill (or cook) meat ahead of time so only have to add some vegetables; 3. Do a one pot meal or salad; or 4. There is always planned-overs (as opposed to left-overs ;).

I save time by freezer cooking ahead of time. It has also saved my sanity. And I really need this cookbook. Thanks!
