Food Waste Photo-11.14(come share yours too!)

Soooo…I didn’t manage to do two no-waste weeks in a row. I did still manage to keep up with my pattern of wasting one thing per week, though! And happily, my waste this week can be composted.

On Tuesday of this week, I tried a Cook’s recipe for Roesti, made with potatoes. I’d never had Roesti before, but it looked really good in the pictures…light, crispy potato-ey goodness. Unfortunately, it didn’t turn out quite like I’d imagined. So, either I did something wrong, or I just don’t like Roesti. It was eerily reminiscent of the dreaded potato pancakes of my childhood, and while I ate some the night that I made it, the leftovers were highly unappetizing. And unfortunately, I couldn’t really think of anything to make with them. I considered trying potato bread, but then I worried that the browned potato flavor would make the bread taste weird, and then I would have wasted potatoes AND flour, water, yeast, salt, and sugar, not to mention the time involved in making the bread.

So, my Roesti is headed off to the compost bin.

Roesti is a Swiss dish (I'm Swiss and my mother made it all the time).

Roesti is a *fine* dish for people who are trying to not waste food; you must use your left-over boiled potatoes. (You'd have many of those if you were a Swiss farmer eating Raclette during the winter!)

If you don't have left over potatoes, pre-boil them and let them 'age' a few days in the fridge. The potatoes needs to be *dry* when you fry them in the butter.

The next trick is to use more butter than the recipe calls for ;).

mmmm. Roesti. Makes me miss my momma.

Macaroni & cheese! I actually cooked earlier this week and, as usual, had leftovers. I managed to finish off the pork chops, green beans. . . within a couple of days, but still ended up with 3/4 pot of macaroni & cheese that I'll have to throw out. Most of my food waste comes from cooking or buying too much for a single person. After years, you'd think I'd have it down.

We've finally managed to round up some food and take piccies! It is soooo hard trying to take pictures of your food waste with housemates around... they would have thought that we're crazy taking photos of our rubbish!!

Hey, one wasted item is not bad!

I wish I could get composting down. Every time I try it, I wind up discovering some sort of new plant growing. Usualy some type of cucurbit that never bears me fruit so I can identify it.

So instead, I've been developing my skill to use up every aspect of each food, even the parts we normally think of as trash.
