My friend Elizabeth stopped by yesterday while I was in the process of making a yogurt smoothie…I had layered a banana, homemade yogurt, frozen blueberries, and spinach in the  blender, and both she and her husband were like, “What are you making??”.

They left before I blended it up, so Elizabeth, here’s a picture of the finished product.  It doesn’t look very spinach-y, does it?? And though it is hard to believe, it doesn’t taste spinach-y either.

My favorite way to use of the remnants of the produce drawer! I’ve also swapped kale for the spinach, added a brown banana, or last sliver of avocado. Whatever is on hand.

I have to say, when I saw my name in the title of your post, I kinda freaked out for just a split second! What does she want to say to me in front of the whole world? Ah yes, the smoothie! It looks yummy. I thought it would look a little green. Too bad I didn’t stick around to have a taste! I totally want to try it!

Just thought it was funny that the title of this post was Hey Elizabeth this is for you. Since I’m also Elizabeth I had to read on- and now I so want one of those. The picture is so good I’m practically salivating over it. I think I’ll be blending some up real soon- I know I have blueberries in the freezer.

I’m an Elizabeth, too, so had to check! :-) I’ve wasted raw baby spinach before – it never occurred to me to throw it into a smoothie, great idea!
