On to the food talk….

Since I didn’t do any flying on a jet plane this week, I did actually try a new recipe!

As promised, I made the Arroz con Pollo recipe from a recent Cook’s Country magazine.

Since this wasn’t from my quick family cookbook, it took a little more time than some of the other recipes I’ve tried this year.   But we thought this was pretty tasty, and I think I’ll probably make it again.

(I’m sorry for the terrible lighting. I’m quite ready for daylight saving time, thank you very much.)

A nice thing is that the recipe uses chicken thighs, which are very affordable.

And it calls for chicken broth, so it’s a nice non-soup way to get some more of that lovely bone broth nutrition into my family’s bodies.

Of course, I saved the bones from the cooked thighs and threw them into the chicken bone bag in my freezer for a future broth-making session.

I left out the olives and peas, and I added some red bell pepper for color (the red in the magazine picture is from the pimiento-stuffed olives).

So, my friend Stacy from Humorous Homemaking shared a link to this spicy sausage pasta recipe, and when I saw it was from ATK, I decided I probably should try it. 😉

Although, there are a number of people in my house who really do not dig spicy, so I may use regular tomatoes in place of the Rotel.

Maybe I’ll just divide it up when it’s time to add the rotel and make half spicy and half not.

We’ll see how motivated I am. 😉

We didn't try anything new this week but your recipe looks good.

Anyways, the spicy sausage chicken is really good. My kids love it. It is one of those items where I usually have all the ingredients on hand so I make it frequently...

Just wanted to say thank you for the summit ticket -- and your interview was great! -- so spot on and helpful. So true about considering daily expenses vs. only worrying about the biggies that only happen a couple times, such as marriage or buying a house. This is my struggle right now.

When he asked how people could be accountable in their own lives, I wanted to say how much your blog and some others are so helpful with exactly that. I seriously think about what I will be writing in the "How much I spent" or "5 frugal things" as I go through the week, so again, thank you -- great job!

I love that spicy pasta recipe! I add steamed broccoli to the pasta near the end (before baking briefly- although sometimes I skip the baking all together). Hope you enjoy!

I made a chorizo/potato/onion "custard" in a casserole dish. Actually, it's more of a quiche. But if I call it a quiche, the family won't eat it. Call it a custard and they love it. Go figure.

This week, I want to give homemade pizza a try. The recipes here look so incredible and delish that i'm thinking of making one. Or two.

I also want to try crepes. I'm not sure of fillings so I'll need to look into that. My personal favorite is lekvar but I know that I'd be the only one eating it. So I'll need to see about other types and get everyone's opinions.

Yes! That pasta dish is delicious. I love that it cooks in one pot. I do find it a bit spicy, so I'd definitely go with just tomatoes for your first time. (I like spice, but it surprised me the punch that Rotel had. Maybe I got the hot flavor instead of mild.)
