I had a bell pepper and a cantaloupe go bad this week. I am not sure why the pepper turned, as I bought 3 others at the same time and they are fine. The cataloupe was pushed to the back and it got too cold and partially froze. It was really mushy when thawed. I haven't tossed it yet, because I might try using it in a smoothie.

I try to catch bread and throw it in the freezer to toast and smash up for bread crumbs. I have just started reading this blog, and love this idea. I have been trying to limit food waste here, and this week it was one ear of corn on the cob. I had only bought 4, but hubby didn't 'feel' like corn the night we cooked them. Unfortunatly, 5 days in the fridge later.... yuck.

If you don't have enough leftover fish for fish tacos, toss any leftovers (minus the breading if fried) into vegetable soup at the last minute...just long enough before eating to give the soup time to warm the fish that has been cut into bites. For those folks who add beef to their veg soup this wouldn't work, but leftover fish works well in tomato based soups.

How about fish tacos or put it on top a salad with vinegrette dressing.

Yum @Brandy! I love fish tacos!

We had a lot of leftovers go into the trash earlier this week. They were all from last week and I knew it was going to happen, but I just couldn't bring myself to eat another serving of squash casserole. Reheated squash just doesn't do it for me.

A really awful, terrible week of waste here, the worst being a whole gallon of milk left out for seven hours in the hot car. Lots of other stuff as well: lettuce, spinach, a whole package of dates, an avocado and more milk, so we can only hope to do better next week.

Leftover tilapia screams fish taco to me. This would be a double whammy if you have any of that pesky cilantro around that so many of us have trouble with.

I am been really lacking on the food waste commitment. Life has gotten cray busy (no excuse) and I have not been making a good enough effort. I am going to get back on track this week and hopefully have a good report next Friday. Thank you Kristen for always being consistent and being here when I need a reminder. :)

Can you dice up the fish, mix it with tuna and some herbs, and use it on a sandwich like tuna?
