Peanut Butter and Bananas

This combination has saved many a banana from the compost bin.

My two youngest are the most dependable banana/peanut butter eaters…they eat this combo for breakfast, for lunch, and for a snack sometimes too.

my favorite “use up the squishy bananas” trick is to coarsely chop a banana into a microwave-safe bowl, add about a Tb. each of butter and brown sugar, cover the bowl and microwave for about a minute, then stir well. This makes wonderful “banana syrup” that my kids enjoy on pancakes (and I enjoy eating straight with a spoon!).

An easy recipe for a great banana cake
You can pop over ripened bananas in the freezer to defrost and use later for this recipe

3 ripe bananas mashed
1 yellow cake mix
1 pkg instant banana pudding (or vanilla works just fine)
1/2 cup oil
1/2 cup water
3 eggs
nuts if you like them

Mix all ingredients
Bake at 350 till done
op with your favorite glaze or icing……yum!
P.S. you can also use this recipe to make 2 loaves of banana bread

Our pediatrician recently told us to try and get any kind of protein into our child that we can….and another mama told me he’s old enough to eat P.B. now—and he really likes it! We’ll be trying this ASAP!!!

When I was growing up, overripe bananas were mashed with some sour cream–HEAVEN! Nowadays I do the same with my homemade yogurt. It’s delicious!

Oh, and if you want the best bread ever, try out Rose Levy Berenbaum’s “Banana feather bread”. It is the lightest, fluffiest, most delicious bread I’ve ever made–and it’s great with peanut butter! It’s not like any banana bread you’ve ever had–you can barely taste the banana. From now on, overripe bananas are going in the freezer so I have a steady supply for this bread!

We hardly ever have any bananas that are in danger of going bad here. My kids love banana dogs for breakfast. Peanut butter & banana on a hotdog bun. :)

MMM! Frozen Banana Milkshakes! My favorite use for ripe bananas is to freeze them after peeling them and cutting them into chunks. (freeze on a cookie pan or plate, then transfer to a freezer bag) Using milk or soy milk and peanut butter, blend in blender to consistency of ice cream or a thick shake.

My freezer if full of bananas waiting to be used in smoothies. I’m pretty picky about the texture of banana that I like to eat so if I can’t eat them fast enough they go into the smoothie stash.

We always have leftover bananas, since I don’t like them and my boyfriend eats them slowly. So I just toss them in the freezer to make banana bread or banana nut muffins with. Saves them from being wasted but gives me a good stretch past when they’re about to expire before I have to use them.

Yum! I just discovered this and i love it. I also tried the infamous peanut butter+banana sandwich (it was in the healthy diet of Elvis!) and it was great :)

My favorite is the following . Take a bowl, add 2 tbsp of plain old white sugar and 2 tbsp of ghee ( melted butter) and dip each banana slice as shown in your picture into the bowl such that the tip is coated with a mixture of sugar and ghee, and you are ready to take a bite into sweet heaven !

Problem is, this is not really great if you are trying to lose weight/counting calories. However, this snack reminds me of my own childhood days, and to this day, when I have banana like this, I believe it really is the best way to finish up bananas.
