Have you considered the 25lb bags? I don't use all that much flour but I am thinking of starting to buy stuff in bulk.

Costco has the only price I can really find online and they are selling 25lb bags of ConAgra AP for $7.10. That's $1.42 a 5lb bag sure but when you get caught it might not be so bad.

Can I be the third person to pester you and ask about how you store the bulk flour? I make the no-knead bread a few times a week and usually use the same flour you do. I never buy more than a bag or two at a time even if it is on sale.
How do you store your bags to keep them fresh and bug free?

I love unbleached Gold Medal also. King Arthur is great too but I only buy that when it is a great sale. Right now my local Pricerite has unbleached Gold Medal for $1.79. They only carry it around the holidays, so every week I buy two 5 lbs bags to stock up. I store my flour in my freezer. I normally have enough room to store it. If I run out of room, I just leave it in the freezer for 24 hours to kill any eggs or stuff in the flour and then put the bags in a storage tub. This works for me!

I've been waiting for the same sale, esp because I have a coupon for .50/1 from here: http://www.eatbetteramerica.com/coupons/ . But I guess when you are really stocking up, this one coupon doesn't make a big difference. Unless you have multiple computers to print from.

Found your website yesterday and am really enjoying it. So funny to read your flour plea. It has been on my mind as well so I was especially thankful when it went on sale today (Pillsbury, all types) for 99 cents a bag at Harris Teeter (NC) I guess I should consider myself lucky. And I'm with you, I prefer unbleached.
I'm also holding on to two Gold Medal coupons for 50 cents off that I printed here:
http://www.eatbetteramerica.com/coupons/. Hoping for a great deal real soon. Lucky for me, we live in the land of doubles (every day) and triples once a month.

Angela, bleached flour is, well, bleached! It's a lot whiter than unbleached flour is. And for some reason, when Cook's tested flours, the unbleached was a lot better for bread. I think the bleaching affects the flavor some too.

Bleached and unbleached can be used in the same recipes, though, without too much change in the result.

Self-rising flour has baking soda and baking powder in it, but I'm not entirely sure of the proportions. Because of that, I'd be leery of using it in any recipe that doesn't specifically call for it.

I never buy self-rising flour. I figure that it's more than easy to add my own baking powder and baking soda!
