This looks interesting. I'd think it would be great with a cream cheese frosting. I'm a little leery of boiled frostings (or anything like that), so if I ruined it, I'd probably just put a cream cheese one it. My whole family likes it and they'd probably eat the zucchini sweets just to get the frosting!

Thanks for the recipe yesterday. I"m going to try that tomorrow, I think, for dinner.

I love your humour! Glad you could still find a use for the first batch of frosting!

I'm going to be glad to be able to come back to these recipes in the summer!

Do you squeeze the water out of the zucchinis for this recipe, like in the previous one? Or is the water intended?

Another nice way to hide zucchini is soup. Yesterday I cooked up potatoes, zucchini, and all sorts of other garden veggie leftovers (green tomato, celeriac tops, yellow pepper) in chicken broth till soft. Then run the stick-blender through, add some flour shaken in milk, and some ham-pieces and spicing as desired. It was very yum.
Today zucchini went into the chili that's in the slow-cooker.
Tomorrow... I don't know yet.

I have enjoyed your zucchini recipes this week. I am always looking for new ways to serve zucchini and summer squash. I think my family is secretly looking forward to the first freeze, so my squash will die.
