I am going to try making this with Rice Chex for a gluten free alternative.

I have not had any luck trying to make chocolate mint desserts, but chocolate and peanut butter is a close second in my opinion!

We must've had a mind meld because these have been in the back of my head for the last couple weeks now. Haven't had them in years, but seeing these pictures is enough to get me to the store tomorrow for all the missing ingredients!

(As an aside, when I used to make these somewhat frequently and wanted to avoid making a mess with the powdered sugar, I'd put it all in a ziploc baggy and do a sort of shake 'n' bake kind of thing.)

On chocolate and mint - I hear you! My favorite candy is Andies mints. I've read that you can make a really good chocolate-mint dessert by first making fudgy brownies, then making a ganache frosting from mint-infused heavy cream. I have not tried such concoction (requires finding good mint, then chopping it and infusing it in cold cream overnight, then straining the cream), but just a thought... ;-)
