Ok! I’m back to insert my picture. I’ve got a few slices of roast beef that I should have thrown out last week. For some reason I didn’t find them. I’m pretty bummed about wasting this, because I really do love roast beef!
I also have a small piece of grilled chicken. I had several pieces of leftover grilled chicken which I used to make cilantro chicken panini. However, I didn’t end up using this little piece, and it’s beyond tasty now.
In happier news, I bought a big bunch of cilantro yesterday and promptly used about half of it to make some fajitas for dinner last night. Then I offered the other half on Freecycle, and a fellow freecycler (who also happens to be one of my blog readers…hi, Kathleen!) came and picked it up. I’m very happy that I don’t have the responsibility of using the rest of it up this week.

We had some cream crackers that were soft. I made a savoury crumble for them, but most went out for the birds. Considering I’m on a major declutter this week, I’m really pleased with our lack of food waste!
I have been very good about food waste this week. Yesterday for lunch I ate leftover rice with melted cheddar cheese, salsa and a small amount of avocado on top. I also finished up a small amount of yogurt from my husband’s lunch with about-to-be-too-old-for-consumption strawberries mixed in.
The piece I wrote for The Non-Consumer Advocate was about letting good food go bad in the freezer.

I’m stunned that someone would drive to pick up cilantro as it only costs 99 cents a bunch here. You could always make cilantro pesto( cilantro, pumpkin seeds, oil, parmesean or cojita cheese, lemon juice) and freeze it. Mix with some mayo and there ya go, you’re golden.
Randi-if my fellow freecycler needed cilantro, she’d have to drive to a grocery store to get it, and from what I remember, she lives closer to me than she does to a grocery store.
I offered some other produce that day too, and one of my other takers lives just at the end of my street. She dropped by here on the way home from the local grocery store.
I would never have offered something like that to a freecycle group outside of my immediate area, but since this group is small, I felt fine offering it.
I’m pretty disappointed in my food wasting this week. I’ve been away for a bit, which accounts for some of it. The rest is because I lost the items in my fridge. Sigh. What a waste.
Why not dry any Cilantro that you don’t use right away. I have a dehydrator. It drys very quickly. Then I store in an air tight container. Works just as well as fresh in recipes!!!
You can also air dry or use a very low heat in your oven.
Try growing some yourself, then you have it on hand all the time. Very easy to grow.
I was thinking about your cilantro problem the other day (while I was looking at my parsley), and it occurred to me that perhaps the solution for you to waste less cilantro is to simply grow it. You could grow it in a pot, and it would not only save you the money on buying it, but you’d waste less since you only cut what you need. Even if it bolts and goes to seed, you can save the seeds for growing more later or to use as a spice.
