		<description>Jen, I put it in the food processor with garlic, lime juice, salt, and olive oil and blend it all up.  You could make a bunch of it and freeze it to use later.

I use it in paninis mostly, but it&#039;s also good over pasta.</description>

It&#039;s great that you were able to use it!  I always have a hard time using up fresh herbs without freezing or drying them.</description>

I recently planted an herb garden on my back porch in strawberry planters and the cilantro is doing quite well- my hubby is not a huge fan, so I am the only one using it, a little at a time. 		<description>I&#039;m so glad you managed to work the cilantro surplus into your meals this week. 

As with your orange, I had a similar issue with a grapefruit. I simply cut off the rotten part (really not so big) and then juiced the rest and it made for a tasty half-glass of juice. Before this challenge I would have just chucked it. Instead I enjoyed a refreshing pick-me-up.  

I had another no waste week, but I&#039;m growing weary of the constant leftovers for lunch and *still* having more than we can eat comfortably. I think I may alter our menu plan to have two nights of leftovers so we won&#039;t have such a surplus.</description>
