		<description>I&#039;m not sure if you&#039;ll see this comment, but here&#039;s a restaurant trick for getting dough to NOT bounce back (rather to stick to where you want it) - use vegetable shortening instead of oil.  It&#039;s miraculous!  Helps to give the crust a little satisfying crunch too.  Nice recipe!</description>

		<description>I think that would give the crust a weird color and flavor.  If I remember right, Cooks doesn&#039;t even recommend using other white potatoes besides russets.</description>
