It’s been a busy day…

Today I made four quarts of yogurt, cooked a bunch of winter squash(for making muffins), made hamburger buns, granola bars(recipe is forthcoming), and banana bread. So, all you get today is a food waste photo, which(happily!) is a pretty empty picture. I made banana bread with several spotty bananas today, but I decided that this one was a bit far gone even for banana bread, so off to the compost bin it went.

My fridge is looking delightfully empty and organized, and it has only a few leftovers in too, so maybe next week’s photo will be equally(or more) empty.

Toss that baby in the freezer, don't even need to peel it, and use later for anything that needs pureed bananas: banana bread, lowfat quickbreads, smoothies, flavored yogurt.

Over ripe bananas make the best banana cakes and muffins, the ripes the better. Remove the skin, wrap in plastic wrap and freeze until you have enough to make up a recipe. Frozen ripe bananas make healthy, and popular treats for children, and adults too.

Put bananas in the freezer until you have enough or the time to make banana bread or muffins.

When I (frequently) have a banana like this I just throw it in the freezer.

Some weeks (or months) later, I take them out and put them in a bowl or dish to thaw. They release a lot of liquid when they are thawing. Then I pull a little slit in the skin and they just slip right out.

Works great and no more wasted bananas. Ever.

My fridge is getting a good cleaning today changing positions of some of the shelving and reorganizing condiments, etc. Hopefully this will help me to keep track of things better. My basset hound would have loved to have that banana! He LOVES bananas, even mushy ones. Going to make your hamburger buns today to go with pork BBQ.
